Abstract:Zearalenone (ZEA), a global mycotoxin commonly found in a variety of grain products and animal feed, causes damage to the gastrointestinal tract, immune organs, liver and reproductive system. Many treatments, including physical, chemical and biological methods, have been reported for the degradation of ZEA. Each degradation method has different degradation efficacies and distinct mechanisms. In this article, the global pollution status, hazard and toxicity of ZEA are summarized. We also review the biological detoxification methods and nutritional regulation strategies for alleviating the toxicity of ZEA. Moreover, we discuss the molecular detoxification mechanism of ZEA to help explore more efficient detoxification methods to better reduce the global pollution and hazard of ZEA.

Abstract:Summary Soybean meal is an important and inexpensive source of protein in food and animal feed, and contains anti‐nutritional factors such as trypsin inhibitors, antigenic proteins, oligosaccharides, phytic acids and lectins, which limit its application. Microbial fermentation has the capability to improve the nutritional value and biological activities of soybean meal by changing its natural composition. Fermentation results in the degradation of anti‐nutritional factors in soybean meal, an increased amount of small molecular protein peptides and improved content of isoflavone aglycone. However, the nutritional composition and biological activities of the resulting fermented products differ due to the different microbial species and conditions used for fermentation. Compared to soybean meal, fermented soybean meal has several beneficial effects such as digestibility, antioxidant and hypoallergenicity. The objective of this review is to discuss the fermentation processes of soybean meal, as well as outlines some biological activities associated with it. Furthermore, the current application of fermented soybean meal is also summarised.

Abstract:Objective To analyse and evaluate the nutritional composition of transgenic soybeans and soybean meal. Method Soybean was processed into soybean meal with extraction. The composition of nutrients and anti-nutrition factors in RR (Roundup Ready) transgenic glyphosate-tolerant and conventional soybeans and soybean meal were determined by AOAC methods. Results The component of 8 kinds of macronutriment,17 kinds of amino acid,14 kinds of fatty acid and 4 kinds of tracet lement were found in transgenic glyphosate-tolerant and un-genetically modified conventional soybeans and soybean meal,and they were substantially equivalent in nutrition. Also no data of such 4 kinds of anti-nutrition factor as phytate phosphrous,trypsin inhibitor factor,urease activity and protein solubility were obviously different. Conclusion When glyphosate-tolerant soybeans was processed into soybean meal,the changes in all kinds of nutrition and anti-nutrition factor were similar with its conventional breed. The implantation of glyphosate-tolerant gene did not change the nutritional characteristics of soybean during processing.

Abstract:Soybean meal (SBM) is a prevailing plant protein supplement in animal diets because of its nutritional value and availability. This review paper explores the significance of SBM and processed soy products, emphasizing their nutritional and bioactive components, such as isoflavones and soyasaponins. These compounds are known for their antioxidant and anti-inflammatory properties and are associated with a reduced prevalence of chronic diseases. However, the presence of antinutritional compounds in SBM presents a significant challenge. The paper evaluates various processing methods, including ethanol/acid wash, enzyme treatment, and fermentation, which are aimed at enhancing the nutritional value of soy products. It highlights the significance to maintain a balance between nutritional enhancement and the preservation of beneficial bioactive compounds, emphasizing the importance of different processing techniques to fully exploit the health benefits of soy-based products. Therefore, this review illuminates the complex balance between nutritional improvement, bioactive compound preservation, and the overall health implications of soy products.

Abstract:Soybean is widely utilized in the food and feed industries. However, soybean contains many anti-nutritional factors that limit its extended application. The two most important antigenic proteins are glycinin and β-conglycinin. When young animals are fed diets containing soybean protein, a small portion of undigested proteins enters the lymph and blood through gaps between the intestinal epithelial cells. These macromolecules have considerable antigenic activity and stimulate the immune system resulting in specific antigen-antibody reactions and T lymphoid cell-mediated delayed hypersensitivity. A current focus of research is to develop methods to decrease the immuno-reactivity of soybean proteins. Several strategies have been developed to prevent food allergies including those feed processing and plant breeding. The latest studies indicate that certain kinds of immuno-modulators, such as vitamin C and lipoic acid, may specifically block the IgE mediated anaphylaxis and these may provide new insight into the effective prevention of soybean-induced allergy and perhaps other food allergies. This review is divided into seven parts including (1) Allergenic proteins found in soybean; (2) Structure-function relationships of allergenic proteins in soybean; (3) Extraction, purification and detection of allergenic proteins in soybean; (4) Anaphylaxis induced by allergenic proteins in soybean; (5) The potential mechanism of soybean allergy; (6) Prevention and treatment of soybean allergy; (7) The effects of plant breeding on the antigenicity of allergen proteins in soybean. Being fully aware of the soy protein antigen and finding the methods to eliminate anaphylaxis induced by soybean proteins will help to significantly improve efficiency of soybean protein utilization.

Abstract:Trypsin inhibitor is a main antinutriton factor in soybean food and fodder. Inactivation of the soybean trypsin inhibitor can obviously improve the nutritional value and edible security of the soybean food and foddey. The inactivating methods for soybean trypsin inhibitor include the treatments with physics, chemistry, bio-reduction and fermentation as well as the complexing method with natuaral compounds. Abstract:Soybeans and their food products exist in the market in various forms, ranging from crude oils and bean meals to nutritious products (e.g. soy milk powers). With the availability of technologies for mass production of soy products and for enrichment of soy components (e.g. phospholipids, saponins, isoflavones, oligosaccharides and edible fiber), the nutritional values of soy products have been enhanced remarkably, offering the potential for functional food development. Among different bioactive components in soybeans, one important component is isoflavones, which have been widely exploited for health implications. While there are studies supporting the health benefits of isoflavones, concerns on adverse effects have been raised in the literature. The objective of this article is to review the recent understanding of the biological activities, adverse effects, and use of isoflavones in functional food development.

Abstract:The study examines technologies for inactivating anti-nutrients in soybeans, such as proteolytic enzyme inhibitors. In addition, soybeans have two trypsin inhibitors that bind cystine and methionine. Protease inhibitors include trypsin and chymotrypsin inhibitors, which are substances that are naturally present in soybeans to protect them from being eaten by birds and rodents and from the development of microflora. According to their heat resistance, antinutrients can be classified into heat-sensitive and heat-resistant. The purpose of the research was to study modern methods and technological solutions aimed at optimizing the preservation of useful characteristics of soybeans and reducing the content of anti-nutrients. To inactivate these anti-nutrients, physical, chemical and biological methods of legume processing are used. As a result of heat treatment, the nutritional value of beans increases, namely, the digestibility of proteins increases by up to 90%, and the contamination of beans with microflora is significantly reduced. The amount of trypsin inhibitor in soybeans after roasting with a roaster significantly decreased by 2.45 times, and lipoxygenase activity - by 2.71 times. One of the most attractive and highly effective, but not sufficiently researched methods is the method of heat treatment of legume seeds called micronization. In this case, the process of inactivation of anti-nutrients in soybeans is very fast - within 50...70 seconds, the nutritional value of protein is significantly increased, and the energy value increases (approximately from 7800 to 16000 kJ/kg). The technology of neutralization of anti-nutrients in soybeans based on their heat treatment in a 2.5 % solution of calcium hydroxide is considered. Processing of soybeans according to the developed technology allows to obtain feed without urease activity, and the content of trypsin inhibitor is at the level of 2-3 mg/g.

Abstract:Abstract Soybean meal (SBM) is a significant source of protein for poultry due to its high concentration of protein and amino acids profile. The primary objective of SBM processing is the reduction and deactivation of anti-nutritional factors (ANFs) to enhance nutrient digestibility. However, eliminating ANFs does not necessarily correlate with increased protein and amino acid content. Several processing methods, such as soaking, cooking, and commercial techniques, improve SBM protein digestibility. To sustain feeding qualities, soybeans must undergo heating to remove inherent chemicals that interfering with poultry digestion. However, both under and over-processing can impair meal digestibility. Extrusion heating significantly contributes to protein and starch digestibility while reducing certain ANFs. Thermomechanical and enzyme-assisted procedures reduce heat-resistant proteins more efficiently than extraction methods, producing soy protein concentrate (SPC) and fermentation. These techniques reduce ANFs in SBM, activating digestive enzymes and alleviating digestive tract pressure, leading to decreased endogenous protein deficits. Exogenous enzyme supplementation is a biotechnological approach for enhancing the nutritional content of SBM and certain other protein-rich products. However, different processing methods not only affect protein digestibility but also impact poultry production, gastrointestinal health, and the environment due to higher nitrogen excrement. Ammonia (NH 3 ) emissions, are a significant environmental concern in chicken farming, resulting from uric acid production during protein consumption. It has a negative impact on the environment and the health of birds/humans. This review investigates the impact of several processing techniques on the digestibility of SBM protein and the reduction of N 2 regarding one health concept. Future research should focus on identifying optimal processing methods maximizing protein digestibility while minimizing environmental nitrogen impacts.

Detection and Analysis of Main Antinutritional Factors Content in Soybean Products

Abstract:This experiment was conducted to determine the content of main soybean antinutritional factors ( gly-cinin, β-conglycinin and trypsin inhibitor) and the content of sucrose, raffinose and stachyose in soybean used the competitive indirect enzyme linked immunosorbent assay ( ELISA) method and chromatographic method. The contents of glycinin, β-conglycinin and trypsin inhibitor in 257 soybean products were detected and ana-lyzed by ELISA reagent kits. A high sensitivity and accurate detection system for the sucrose, raffinose and stachyose was established which used ion chromatography, and the content of oligosaccharide in 92 soybean products were detected and analyzed. The results showed that the contents of glycinin,β-conglycinin and tryp-sin inhibitor in fermented soybean meal, extruded soybean, soybean protein concentrate and soybean protein i-solate were lower than those in the others. The ion chromatography method which used for detected the su-crose, raffinose and stachyose had high sensitivity and accurate and good repeatability, and suitable for detec-ted the oligosaccharide in soybean. The contents of sucrose, raffinose and stachyose in fermented soybean meal and soybean protein isolate were lower than those in the others. These data of main soybean antinutritional fac-tors in soybean products with different processing technology can be useful for the high efficient utilization of soybean in feeds for livestock.

Abstract:In this study, the effects of high hydrostatic pressure (HHP) at elevated temperature (60 °C) and 2 dielectric heating (DH) methods (radio frequency [RF], and microwaving [MW]) on the nutritional compositions and removal of antinutritional factors in black soybeans were studied. Each treatment caused <2% reduction in protein, and 3.3% to 7.0% decline in total amino acid content. However, the proportion of essential amino acid slightly increased in DH treated samples. The treatment decreased fat content (14.0% to 35.7%), but had small influence on fatty acid proportion. Antinutritional factors including trypsin inhibitor, tannins, saponins, and phytic acid were all declined by the 3 treatments, and DH treatment was generally more efficient. The most abundant saponins was decreased >22% in DH treated samples. MW and HHP led to higher in vitro protein digestibility, RF and MW promoted protein aggregation from atomic force microscope topography, but HHP caused more damages on protein subunits as seen from SDS-PAGE image.

Abstract:Abstract. Soybean has shown over the years to be a reliable plant protein source to excellently substitute the high cost fishmeal in aquaculture diets. However, antinutritional factors (ANFs) limit its usage in aquaculture feeds. Therefore, the current study was designed to test the efficacy of three substrates containing different microorganisms that are capable of reducing soybean ANFs in a 3-month period at a low pH of 2.8. Full fat soybean (USB) was fermented using Anaerobic waste extract from Recirculating Aquaculture System sludge trap (RASW); Biocentric® Feed probiotic powder (BIOP); Oakland® double cream yoghurt (3x 106 CFU ml ̄1) (OY), Control treatment which had no substrate that contained fermenting microorganism (SRR). Each treatment was conducted in three replicates at 2.8 pH. The untreated soybean granules recorded a numerical protein content of 48.56%. The BIOP fermented soybean recorded significantly higher protein content as compared to the other soybean meal fermented with the other substrates. There was also a significant decrease in the soybean content of the amino acid lysine upon fermentation with the four treatments. Fermentation of the soybean with the four treatments was not significantly different in relation with their soybean lipid content, crude fibre content, methionine + cysteine, dry matter content, urease activity and gross energy content (P > 0.05). There was an overall significant decrease in the ANFs when soybean was fermented with the four treatments, with four out of six analysed ANFs parameters content showing a significant decrease upon fermentation (P < 0.05). Fermentation of the soybean with RASW resulted in a significant decrease of trypsin inhibitor content as compared to the rest of the treatments. The USB recorded a numerical value of 43.80 for trypsin inhibitor, whereas RASW fermented soybean recorded least trypsin inhibitor of 3815 ± 010 mg/g. In conclusion, the current study showed that the fermentation substrates used are capable of reducing soybean ANFs, with a slight decrease in soybean protein content.

Abstract:The aim of this article is to increase the nutritional value of soybean meal while reducing the content of antinutrients by microbial fermentation of soybean meal with a mixed culture of probiotic microorganisms (Bacillus subtilis, Aspergillus niger, Saccharomyces cerevisiae, Lactiplantibacillus plantarum) at two different hydromodules. The addition of microorganisms increased the content of easily digestible protein and amine nitrogen in fermented soybean meal (30:110 and 30:130, hydromodulus soybean meal:water) while decreasing urease activity (hydromodulus 30:110). The positive effect of microbial fermentation on the mineral composition of soybean meal was demonstrated. The ability of microorganisms in the fermentation process to increase the content of protein, essential amino acids, and macro- and microelements in soybean meal while decreasing anti-nutritional factors opens up possibilities for using this technology to advance animal husbandry.
