Abstract:Optimal technological processing parameter of boiled lotus roots in flexible can prepared from fresh material was studied.The results showed that after cleaning and peeling,the fresh lotus root immersing in the mixture of 0.2% NaHSO3,0.2% citric acid and 0.05%Vc for 120min could hold the better color.Then boiling it for 10min at 90℃,and immersing in the mixture of 0.05%Vc and 0.1% citric acid for 60min,this step could prevent fresh lotus root from browning completely.By the means of L9(34)test,the optimal technology were that: adding 0.6% citric acid,0.1%calcium lactate,0.05%Vc,25% dripping and sterilizing at 80℃ for 50min.
