Abstract:It is a hot research topic on natural antioxidant to find efficient,non-toxic and safe antioxidant from natural products.Natural plant extracts are important source of natural antioxidants;evaluating antioxidant activity precisely has become a hot spot in research area.Recent studies of antioxidant activity evaluation methods in home and abroad were summarized in this article,such as scavenging free radical evaluation method,reduction of metal ions evaluation method,inhibition of lipid peroxidation evaluation method and cell evaluation method,especially about the principles and advantages and disadvantages of these methods.Also,the future research of antioxidant activity evaluation method in vitro was prospected so that to provide reference of standard system of the antioxidant activity evaluation methods.

Abstract:Flavonoids are common phytochemicals in nature.They have a variety of physiological activities and functions, and they have been widely used in food, medicine and other fields.However, the role of natural flavonoids played is limited, and the functional effect is not significant when acting alone.Therefore, enhancing the effect of flavonoids is an urgent problem to be solved.This paper summarizes the experimental progress of flavonoids in synergy with other natural molecules in nature, summarizes the evaluation methods to determine whether there is synergy, and discusses the relevant mechanism of synergistic effect, in order to provide a reference for the development of natural functional food and medicine based on flavonoids.

Abstract:A large number of epidemiological surveys and studies in vitro and in vivo have shown that tea polyphenols and vitamins are important antioxidants.They have strong biological activities such as antioxidant,reducing damage from free radical,sterilization and cancer prevention.The synergy of these two substances and their mechanism are summarized in this review,in order to provide theoretical basis for further study and developing safer and more efficient antioxidants.

Abstract:The antioxidant synergistic effects of Osmanthus fragrans flowers with green tea were evaluated, and their major antioxidant compounds contributed to the total amount of synergy were determined. The antioxidant compounds in O. fragrans flowers with green tea were identified by LC-MS and quantified by UPLC-PDA. The synergistic antioxidant interactions between O. fragrans flowers with green tea and their antioxidant compounds were tested using the Prieto's model after the simulated digestion. The main antioxidant compounds in O. fragrans flowers were acteoside and salideroside, whereas the main antioxidant compounds in green tea were caffeine, gallic acid, and L-epicatechin. The significant synergistic effect between O. fragrans flowers and green tea was observed and among nearly all of the combinations of their antioxidant compounds. Among the combinations, acteoside and gallic acid contributed most to the antioxidant synergy between O. fragrans flowers and green tea. However, the simulated digestion decreased this antioxidant synergy because it reduced the contents and the antioxidant capacities of their compounds, as well as the antioxidant synergy among the compounds.

Abstract:The frequent intake of whole foods and dietary food variety is recommended due to their health benefits, such as prevention of multiple chronic diseases, including cancer, Alzheimer's disease, cardiovascular diseases, and type 2 diabetes mellitus. Often, consuming whole fruits or vegetables showed the enhanced effects than consuming the individual dietary supplement from natural products, which is widely explained by the interactive effects of co-existing phytochemicals in whole foods. Although research relevant to interactive effects among the bioactive compounds mounted up, the mechanism of interaction is still not clear. Especially, biological influence factors such as bioavailability are often neglected. The present review summarizes the progress on the synergistic and antagonistic effects of dietary phytochemicals, the evaluating models for antioxidant interactions, and the possible interaction mechanisms both in vitro and in vivo, and with an emphasis on biological-related molecular mechanisms of phytochemicals. The research on the interaction mechanism is of value for guiding how to take advantage of synergistic effects and avoid antagonistic effects in daily diets or phytochemical-based treatments for preventing chronic diseases.

This article summarized research progress of the components which played the antioxidant function coming from nature plants, such as polysaccharides, flavonoids, polyphenols, alkaloids, saikosaponins, vitamin, etc. The problems and prospects on these relative studies about antioxidants were put forward. These studies were served as a base in the exploitation and utilization of the active antioxidant from natural plants.

Abstract:Natural antioxidants are widely distributed in food and medicinal plants. These natural antioxidants, especially polyphenols and carotenoids, exhibit a wide range of biological effects, including anti-inflammatory, anti-aging, anti-atherosclerosis and anticancer. The effective extraction and proper assessment of antioxidants from food and medicinal plants are crucial to explore the potential antioxidant sources and promote the application in functional foods, pharmaceuticals and food additives. The present paper provides comprehensive information on the green extraction technologies of natural antioxidants, assessment of antioxidant activity at chemical and cellular based levels and their main resources from food and medicinal plants.

Synergistic effect of biological and chemical combined preservative on orange juice preservation

Abstract:In order to optimize an effective combined preservative applied to the orange juice preservation,the authors studied the(synergistic) effect of biological and chemical combined preservative which contained Nisin,potassium sorbate,EDTA and sodium(isoascorbate) in preservation of orange juice compared to preservation effect of each aforementioned additive in individual use.Results show that the growth of microorganisms can not be inhibited completely using each aforementioned additive in single use.Results of orthogonal experiment show that the growth of microorganisms can be significantly inhibited when the optimal composition of biological and chemical combined preservative contains 0.05 g/kg of Nisin,0.1 g/kg of potassium sorbate,0.01 g/kg of sodium isoascorbate and(0.03) g/kg of EDTA.The inhibitory rates in the 14th,17th and 21st day were determined as 99.9%,99.9% and 99.6%,respectively,the inhibitory effect of which is significantly better than that of any aforementioned preservative in single use.Therefore,(cooperative) and synergistic action can be demonstrated when Nisin and other three materials are added into orange juice for combined use.This combined preservative has good preservation effect on orange juice so that it has a broad application prospect.

Abstract:In this study,the ABTS free radicals scavenging activity was as an indicator,the Chou-Talalay method was used to investigate the synergistic antioxidant effect and structure activity relationship of six kinds of small molecules with different structures.The results showed that the ABTS free radicals scavenging activity of the six kinds of flavonoids was in following order,i.e.,5,6,7-trihydroxy flavone ＞ 6-hydroxyl flavone ＞ 3,7-dihydroxy flavone ＞ 5-hydroxy flavone ＞ 3-hydroxy flavone ＞ 7-hydroxyl flavone ＞ ascorbic acid.Among them,5,6,7-trihydroxy flavone,6-hydroxy flavone and 3,7-dihydroxy flavone oxidation effect significantly,under different concentration and two flavonoid compounds on ABTS free radicals scavenging activity of the combined effect of CI values are quite different,dihydroxy flavone and other five kinds of flavonoids have obvious synergistic effect.h was also found that the synergistic antioxidant effects of the six flavonoid compounds were related to the position and quantity of the hydroxyl group,the main structural feature of the synergistic antioxidant effect of 3,7 dihydroxy.

Abstract:Antioxidant peptides are a class of biologically active peptides with low molecular weights and stable antioxidant properties that are isolated from proteins. In this review, the progress in research on the activity evaluation, action mechanism, and structure-activity relationships of natural antioxidant peptides are summarized. The methods used to evaluate antioxidant activity are mainly classified into three categories: in vitro chemical, in vitro cellular, and in vivo animal methods. Also, the biological effects produced by these three methods are listed: the scavenging of free radicals, chelation of metal ions, inhibition of lipid peroxidation, inhibition of oxidative enzyme activities, and activation of antioxidant enzymes and non-enzymatic systems. The antioxidant effects of natural peptides primarily consist of the regulation of redox signaling pathways, which includes activation of the Nrf2 pathway and the inhibition of the NF-κB pathway. The structure-activity relationships of the antioxidant peptides are investigated, including the effects of peptide molecular weight, amino acid composition and sequence, and secondary structure on antioxidant activity. In addition, four computer-assisted methods (molecular docking, molecular dynamics simulation, quantum chemical calculations, and the determination of quantitative structure-activity relationships) for analyzing the structure-activity effects of natural peptides are summarized. Thus, this review lays a theoretical foundation for the development of new antioxidants, nutraceuticals, and cosmetics.
