Abstract:The influences of different factors in the osmotic dehydration efficie ncy of carrots were studied by the orthogonal experiment, which were the density of sucrose solution/%, ratio of solid to liquid/kg·kg -1 , osmotic d ehydration tim e/min, blanching, slicing direction, thickness of slice, and coring. The results showed that blanching was the most important factor influencing the dewatering rate; the high-density sucrose solution can be helpful to preserve the color; m o st of the dewatering happened in the first 120 minutes of dehydration; and the t hinner was the slices, the higher was the dewatering rate. At last, the optimum method of osmotic dehydration of carrots was put forward.

Texture Changes of High Pressure Processed Fresh-Cut Carrots Combined Pretreatment

Abstract:The effects of high pressure processing on changes of hardness, microstructure and damage to cell members (relative electrolyte leakage) of fresh-cut carrot slices were assessed. Carrots were treated in a pressure range from 0.1MPa to 600MPa at 20C with/without pretreatment, and pressure holding time was 5min. Then processed samples were stored at 4C for 9 days. The effects of pretreatment temperature (60C), calcium chloride concentration (1.0%) and their complex interaction on hardness have been studied. Results showed that, all samples without pretreatment caused a loss of hardness (about 8.73% to 31.35%), and this loss increased with higher pressure below 300MPa. However, no significant changes in texture loss were observed between 300MPa and 400MPa, but when pressure increasing (from 400 to 600MPa), texture loss was decreased, which can be explained by the tissue recovery during the processing and the premise is that the damage never increase above 300MPa. Pretreatments studied can reduce the loss in hardness (10% to 22%) and hardness of products can be reserved as raw material in some conditions. Relative electrolyte leakage (REL) of 19.95, 41.23 and 52.86 % were found respectively for treatments at 100, 200 and 300MPa, while no further increase in REL was observed at higher pressure levels. Analysis of microscopy images and relative electrolyte leakage provided the high correlations between tissue hardness. The biochemical reactions may play a very important role in hardness reserve in higher pressure.
Effect of Chinese cooking on the resistant starch and other main nutrient elements in potatoes

Abstract:The contents of resistant starch and other main nutrients in potatoes before and after five Chinese cooking methods(stir-frying,stewing after frying,deep-frying,steaming and boiling) were investigated,which provided theory evidences for Chinese residents to evaluate their daily diet nutritions and to select the right cooking methods.The potatoes were washed,pared off and sliced into pieces before cooking.The content of resistant starch was determined by Akerberg A K E method,while the quantities of starch,protein,fat and water were evaluated using GB methods.The results showed that the content of resistant starch in potatoes decreased greatly after all of the cooking methods.For the methods of stir-frying and stewing after frying the reserve factors of resistant starch were high,34% and 30% respectively.However,in boiling procedure,the resistant starch degraded much more and the reserve factor was only 24%.The contents of total starch and protein in potatoes after cooking both decreased compared with the fresh potatoes,whereas the concentration changes of water and fat were not in the same rules with starch and protein.

Abstract:Effect of high pressure (HP) treatment (200-600MPa; 0-20 min) on quality of fresh-cut carrot slices was evaluated after presoaking in selected calcium salt solutions (1% calcium chloride, 1% calcium lactate, 1% calcium gluconate, and distilled water as control) for one hour. Results showed that calcium chloride (CaCl2) solution pretreatment was most effective for preserving the hardness of carrot slices at 400 and 600MPa and this treatment also resulted in the least amount of color change in carrots, followed by calcium lactate, gluconate, and control pretreatments. The average sensory evaluation scores during 9 days of refrigerated storage at 4 degrees C in control, CaCl2, calcium lactate, and calcium gluconate presoaking treatments followed by HP treatment were 6.4 +/- 0.5, 8.0 +/- 0.5, 7.8 +/- 0.4, and 7.6 +/- 0.3, respectively, on a zero to 9 scale for quality.

Abstract:Effects of different slice sickness, dehydration temperature and rehydration conditions on sliced carrots' rehydration performance were studied.On the base of single factor experiments, orthogonally rotational combination design was adopted to optimize rehydration conditions.Results showed that when carrots were cut into less than 4mm with the dehydration temperature of 65 ℃, the rehydration ability of dried carrots was best.During the rehydration process, rehydration ratio of sliced carrots was affected in successive order by soaking temperature, soaking time and water capacity.The optimum rehydration conditions were:soaking temperature 77 ℃, soaking time 145 min and water capacity 200 mL/ 3 g dry products.

Abstract:We analyzed vitamin C, beta-carotene and nitrate content in thirty different carrot (Dacus carota var. sativa DC) genotypes sown in the spring and autumn. The genotypes were divided into three classes, high-quality, medium-quality and low-quality, by the cluster analysis method of the NOSA (National Occupational Safety Association) software. In the high-quality class, two genotypes, 'Shenhesusheng' and Japanese 'Sanhongqicun,' were selected to be recommended for fall planting. The Japanese 'Heitianwucun,' was recommended for spring planting.

Abstract:With the internationalization of Chinese culture, ready-to-cook Chinese food has become popular. Vegetables in Chinese preparations are usually cut into slices, cubes, and shreds. Carrots, as a typical Chinese side dish, were selected as the model in this work. The polyphenol content, antioxidant capacity, O2−, hydrogen peroxide, malondialdehyde, lignin, antioxidant enzymes, and other enzymes activities were analyzed. The results indicated that these parameters were insignificantly different between three cutting styles. Therefore, metabolomics is further employed. Pathway enrichment indicated that glyceollin II and 6′′-malonylgenistin were metabolites particularly expressed in the isoflavonoid biosynthesis pathway; (+)-gallocatechin, trans-chlorogenic acid, and (−)-epiafzelechin were specifically identified in the flavonoid biosynthesis pathway after slicing; and shredding caused the expression of coniferyl aldehyde and eugenol, which were specifically expressed in the phenylpropanoid biosynthesis pathway. These results indicate that different cutting styles do not change the physiological indicators of carrots but induce the expression of specific metabolites.

Abstract:The extracting technology of potato starch in the laboratory and several factors which affected the extracting technology have been studied based on the now research.The technology conditions of extracting potato starch were determined by the orthogonal experiment.Taking no peeling,the ratio of potato and water is one to three,the period of settlement 6～8 hours,the lavation number of times is 3 as the laboratory potato starch extracting extraction conditions,the quality of potato starch product is up to the top standard in industry and some items are better than the top standard in industry.
Recipe Design and Development of Composite Fruit-Vegetable Juice Beverage with Apple and Carrot

Abstract:To stuy and manufacture a local-suitable drink composed of vegetable and fruit juices with health care function,preparation experiments showed that the optimum recipe was the system that contented 30% fruit-vegitable juice(the ratio of apple juice to carrot juice was 3∶1),7.0% granulate sugar,0.10% citric acid and 0.20% CMC-Na.It is concluded by trial and evaluation that the obtained formula is reasonable and satisfied,and also the production method is simple and feasible.

Abstract:This study was conducted to evaluate the combined effects of blanching and sonication on carrot juice quality. Carrots were blanched at 100 degrees C for 4 min in normal and acidified water. Juice was extracted and sonicated at 15 degrees C for 2 min keeping pulse duration 5 s on and 5 s off (70% amplitude level and 20 kHz frequency). No significant effect of blanching and sonication was observed on Brix, pH and titratable acidity except acidified blanching that decreased pH and increased acidity significantly. Peroxidase was inactivated after blanching that also significantly decreased total phenol, flavonoids, tannins, free radical scavenging activity, antioxidant capacity and ascorbic acid and increased cloud and color values. Sonication could improve all these parameters significantly. The present results suggest that combination of blanching and sonication may be employed in food industry to produce high-quality carrot juice with reduced enzyme activity and improved nutrition.

Abstract:<span>Dense phase carbon dioxide (DPCD), as a new type of non-thermal technologies, has exhibited a remarkable effect on sterilization to improve the quality of many fruits and vegetables, but little known on the pickled carrot. In this study, the effect of DPCD treatment on physicochemical, textural properties and microbiological quality of pickled carrot treatment was investigated. Our results showed that the optimum condition of DPCD treatment was 30 min under 20 Mpa. Compared with thermal treatment, the DPCD treatment significantly improved the storage quality of the pickled carrot at hardness, color, and <i>β</i>-carotene content. Moreover, DPCD treatment increased the total pectin content and reduced the water-soluble pectin content of the pickled carrot without changing the pectin structures and cell-wall composition. Taken together, our study showed that DPCD is a comprehensive technique to improve the quality of the carrot in pickles processing.</span>

Abstract:The present experiment was conducted to determine the influence of raw materials on the quality of salty and sweet corn pancake.The special yellow corn meal was obtained from Du’an County,Guangxi.The method of processing technology and ingredient parameters were optimized and verified by orthogonal design test.The optimized ingredient parameters in making salt corn pancake were as follows: applying 40 mesh size of corn meal,adding 130 g of flour,6 g of salt,200 g of egg in 1 kg of corn meal.While for the sweet corn pancake,the parameters worked out are as follows: adding 150 g of sugar,110 g of flour,320 g of egg and 800 g of milk.The descending order of ingredients influencing the quality of salt and sweet corn pancake was saltfloureggsize of corn meal and sugarflourmilkegg,respectively.Using this information,the quality of salt and sweet corn pancake can be improved.

Abstract:Carrot is an important root vegetable to the food industry and consumers due to its nutritional and health benefits. Given the high moisture content and low shelf life of fresh carrots, preserving this highly demanded vegetable is vital. This current research modelled the drying kinetics and evaluated the quality of ultrasonic-assisted gum Arabic and ethanol pretreated and oven-dried carrot slices. Fresh carrots were processed into thin slices and immersed in 3% gum Arabic (GA), ethanol (99.9%), and distilled water (control), followed by ultrasonication (frequency: 50 Hz, power: 500 W, temperature: 25 °C) for 10 min and drying in a hot air oven at 50 °C. The loss of moisture from the carrots was periodically recorded, converted to moisture ratio before fitted to eleven semi-theoretical thin layer drying mathematical models. The effects of the pretreatments on the retention of bioactive compounds and carrots' physical and chemical properties were also evaluated. From the tested models, the Diffusion, Modified Henderson and Pabis, and Two-term models showed the best fitting (R2 = 0.9944-0.9985; RSME = 0.0103-0.0227) to the experimental data from 3% GA and ethanol pretreated carrots, while control samples followed the Aghbasho model (R2 = 0.9999; RMSE = 0.0033). Overall, the 3% GA pretreated carrot slices exhibited better colour (yellowness: 25.82-34.50; total colour differences: 8.12-13.06), water activity (0.37-0.44), total phenolic content (1.34-2.99 mg GAE/100 g DM), β-carotene (7.63-13.07 mg/100 g DM), and DPPH radical scavenging activity (5.67-8.02 mM AAE/100 g DM) than ethanol pretreated carrot slices and control samples. At the same time, 3 % GA pretreatment did not affect the drying rate of the carrot slices. The total soluble solids/titratable acidity ratio, rehydration capacity, and shrinkage ratio did not significantly (p > 0.05) vary among the treatments. The findings of this study can be used to develop an optimal drying protocol for pretreated carrot slices and to produce shelf-stable carrot products that can be used dried, rehydrated, or in combination with other products.

Abstract:Carrots are root vegetables rich in nutrients and antioxidants. Phytochemicals present in them need to be preserved at an appropriate level for human health. Therefore, novel processing techniques have been utilized to maintain the nutritional composition, functional properties, and phytochemical profile of carrots. Furthermore, emerging technologies in carrot processing are also being developed to meet specific consumer demands for safe, wholesome, and minimally processed products. These novel procedures also result in environmentally friendly, sustainable food production methods that consume less energy and water while overcoming the drawbacks of conventional food processing methods. This review seeks to explain the fundamental concepts behind these emerging technologies as well as the current state of knowledge about their effects on biological cells, enzymes, and food components. The discussions on current and new applications will focus on the links between process, structure, function, and recent developments in carrot processing. The primary discoveries in the review paper are centered around the minimal processing of carrots using innovative technologies to satisfy consumer preferences while preserving their fundamental functional quality. While these methods involve mild heat treatment that impacts carrot vegetative cells, they result in increased availability of bioactive components and improvements in texture, flavor, carotenoids, total phenolic content, and more. Additionally, significant key findings include the elimination of microbes and enzymatic inactivation, which extend the shelf life of both raw and processed carrot products.

Abstract:Soft can processing technique of water bamboo with pickled potherb mustard was optimized.The best formula was :water bamboo 100g,pickled potherb mustard 70g,rice wine 15mL,pepper ring 1g,sugar 6g.By cooking and stewing,vacuum packaging,sterilizing in a 95℃water bath for 25min,the soft canned food with a delicious taste,a longer shelf life and convenient to carry was produced.The product shelf life can as long as 3 months without preservatives,better meet the current development trend of food industry and market requirments.
