Abstract:A novel nutritional sausage was made based on traditional ingredients with the addition of carrot and celery juices.One-factor-at-a-time experiments were conducted to investigate the effects of different levels of the mixed vegetable juice obtained from carrot and celery at a weight ratio of 1:1,corn starch and textured soybean protein on sensory and texture characteristics of sausage.The ingredients were optimized using an orthogonal array design for maximizing sensory evaluation score.The results showed that the mixed vegetable juice had the greatest effect on the sensory quality and flavor formation of sausage.Textured soybean protein was the key to the texture of sausage.The optimal levels of the mixed vegetable juice,textured soybean protein and corn starch were 18%,6% and 10%,respectively.

Abstract:ABSTRACT Cantonese sausage is one of the traditional meat products in China. In the present study, eight Cantonese sausage samples from different manufacturers were collected. Their microbial and textural properties were characterized. The chemical compositions were determined as follows: moisture, 15.18 ± 3.40%; protein, 33.75 ± 7.26% (expressed in dry matter); fat, 42.12 ± 6.64% (expressed in dry matter); total carbohydrates, 9.11 ± 3.73%; sodium chloride, 6.13 ± 0.41%; and sodium nitrite, 35.55 ± 6.69 mg/kg. The pH was determined to be 6.22 ± 0.14, while the acid value was 2.02 ± 0.71 mg potassium hydroxide/g lipid, and the peroxide value was 0.03 ± 0.04 g potassium iodide/100 g lipid. The total viable counts were 5.55 ± 1.48 log10 cfu/g, lactic acid bacteria were 3.59 ± 0.68 log10 cfu/g, staphylococci/micrococci were 3.96 ± 0.54 log10 cfu/g and yeasts/molds were 3.55 ± 0.47 log10 cfu/g. Staphylococci/micrococci were the dominant microbial group in Cantonese sausage. This was different from other sausages. The textural profiles of Cantonese sausage were determined as follows: average values of hardness, springiness, cohesiveness, gumminess and chewiness were 3,066.56 g, 0.96 mm, 0.57, 1,736.76 g and 1,658.26 g × mm, respectively. Analysis of between‐variable relationships indicated that the pH value of Cantonese sausage was significantly correlated to its microbial and textural properties.PRACTICAL APPLICATIONSCantonese sausage has gained much popularity and acceptance in China and many other countries. Commercial products from different manufacturers were collected in this work. The microbiological and textural characteristics of Cantonese sausage as well as the chemical compositions were evaluated. It is helpful to understand this type of sausage in order to improve its quality.

Abstract:In this study, edible mushroom and soybean protein isolate (SPI) were used to prepare a fibrous meat analogue using thermos-extrusion and the extruded mushroom-based meat analogue as meat replacer was further developed with different formulations in fabricating sausage analogues. The effect of water content (35%, 70% and 100%), three types of edible mushroom (Lentinus edodes, Pleurotus ostreatus, Coprinus comatus and a mixture of equal proportions) and their amounts (from 15% to 100%) on the physicochemical and structural profiles were studied. The results showed that the extruded mushroom-based meat analogue prepared from Coprinus comatus (15% addition) and SPI with a water content of 35% exhibited close textural profiles to real beef. Furthermore, a texture profile analysis (TPA) combined with a principal component analysis (PCA) was conducted to compare and assess the textural traits of the sausage analogues with similar commercial products. The characterization and comparison of the flavor profile of post-processing mushroom-based meat sausage analogues (MMSA) were performed using headspace-phase microextraction (HS-SPME), coupled with gas chromatography-mass spectrometry (GC-MS). A total of 64 volatile compounds were identified, and the content in dried-processing treatment was significantly higher than for steamed-processing, which indicated that the natural fermentation process contributed to the increase in aroma substances in the non-animal sourced sausage. This study developed a feasible method to fabricate a meat replacement and to create high added-value products, which offer an opportunity for developing non-animal products with satisfactory sensory properties and flavor profiles.

Abstract:Sausages are loved by people for their unique texture, satisfying chewiness, and pleasant flavor. However, in the production of sausages, red meat and a large amount of fat are mainly used, and long-term consumption will increase the risk of diseases such as obesity, heart disease, hypertension, and cancer. Our previous studies have shown that the intake of red meat and fat can be reduced through the replacement of lean meat and fat in sausages by Lentinula edodes and Pleaurotus eryngii mushrooms, but this will lead to the deterioration of the gel of sausage products and seriously affect the sensory quality of sausages. In this study, the response surface method was used to optimize the amount of balsa fish skin gelatin, soy protein isolate, and starch added to, and the proportion of Lentinula edodes mushrooms replacing lean meat in, the new sausage, with Pleaurotus eryngii mushrooms replacing fat. The results show that Lentinula edodes mushrooms replaced 36.1% of the lean meat, and the addition of 0.96% balsa fish skin gelatin, 10.61% starch, and 9.94% soy protein isolate resulted in the highest sensory score and the sensory quality being the closest to that of traditional sausages. Compared with the control group, this novel sausage exhibits characteristics such as lower fat and saturated fatty acid content, reduced energy levels, and higher levels of amino acids (aspartic acid, glutamic acid, cysteine, methionine, and proline) and polyunsaturated fatty acids. The total phenolic content of the novel sausage is 12.52 times higher than that of the control. In comparison with the control group, the novel sausage demonstrates a 65.58% increase in DPPH radical scavenging activity and a 3.88-fold improvement in ABTS+ radical scavenging activity. These findings highlight the outstanding antioxidant performance of the novel sausage. This study provides new ideas for improving the sensory quality of new sausages, promoting the healthy development of the sausage industry, and promoting the high-value utilization of edible mushrooms.

Abstract:Cantonese sausage is a traditional Chinese meat product that is well accepted by consumers all over the world due to its unique qualities. Proteins and lipids (the majority components) undergo compositional changes during Cantonese sausage processing and storage. Peptides released from proteolysis possess a wide range of biological activities, and more attention has been paid to this in recent years. Nitrite as a curing agent plays an important role in ripening of Cantonese sausage, but is a health risk to humans. The present paper reviews the current knowledge on compositional changes of protein and lipid during Cantonese sausage processing and storage. The changes in antioxidant activities and content of peptides released from proteolysis are reported. The evolution of nitrite during processing is also presented.

Abstract:According to the single factor experiment and Box-Behnken design,the process of mixed bacteria fermentation for preparation of duck sausage is firstly optimized in the paper.And then the effect of grape seed extract on oxidation properties of sausage is studied.At last,the product quality standards are established.The results show that the best processing conditions of duck sausage are strains proportion of 2 ∶ 1,inoculation quantity of 5 mL/kg,fermentation temperature of 35 ℃, fermentation time of 20.3 h,baking temperature of 76 ℃ and baking time of 5.4 h.Under the optimum conditions,the sensory score is 86.3.Grape seed extract can significantly increase the oxidation resistance properties of duck sausage.

Abstract:ABSTRACT Two strains, Staphylococcus condimenti and Micrococcus caseolyticus, were screened and isolated from Cantonese sausage in this study. The effects of these two strains on the flavor of Cantonese sausage were also investigated. Three Cantonese sausage samples were prepared: control, sausage inoculated with S. condimenti (SC) and sausage inoculated with M. caseolyticus (MC). The volatile compounds were extracted by a headspace solid‐phase microextraction method, quantified and identified by gas chromatography–mass spectrometry. A total of 22, 22 and 25 volatile compounds were identified from the three samples, respectively. Larger amounts of volatile compounds (alcohols, aldehydes, ketones and esters) were detected in SC and MC, particularly for aldehydes and ethyl esters, whereas the amounts of hydrocarbons and heterocyclic compounds decreased. The results showed that both strains could accelerate the degradation and oxidation of lipids and proteins, and improve the flavor characteristics of Cantonese sausage.PRACTICAL APPLICATIONSCantonese sausage is a traditional Chinese meat product that is well accepted by consumers over the world. In order to improve the flavor characteristics of this sausage, two strains, Staphylococcus condimenti and Micrococcus caseolyticus, were used as starter cultures for Cantonese sausage preparation in this work. The volatile compounds were identified by gas chromatography–mass spectrometry. The results showed that these two strains could be good flavor enhancers of Cantonese sausage. Therefore, application of S. condimenti or M. caseolyticus on the Cantonese sausage will be of great significance in improving the quality of this traditional food.
Influence of different concentrations of taro paste on the sensory characteristics of poultry meat sausages

Abstract:Sausage products have a high fat content, which is not the most useful property for a sausage. The purpose of the study is the development of low-fat, nutritionally balanced sausage products. The object of the study was poultry sausages. The subject of research: changes in the quality characteristics of poultry sausage products conditioned by the use of different doses of taro puree, potato starch, and spices. Research methods: physical and chemical properties (moisture, pH, cooking losses, emulsion stability), colour and sensory characteristics of finished products. For the experiment, 500 g of minced poultry meat was prepared (the ratio of duck and chicken meat was 3:2), and 6 experimental groups (D1~D6) to which 0 g, 60 g (12%), 70 g (14%), 80 g (16%), 90 g (18%), 100 g (20%) of taro paste were added, respectively. The optimal amount of taro paste for duck-chicken sausage was determined by analysing sausage pH value, texture, shear stress, cooking loss, emulsion stability, colour, moisture distribution kinetics, and sensory evaluation. It was found that the addition of taro paste changes the structure of the poultry sausage and gives the sausage a unique flavour. Studies have shown that duck-chicken sausage with the addition of 80 g (16%) taro paste had the highest pH. Moisture content, cooking loss, firmness and chewability, and yellowness values were lower (P<0.05). Sausage brightness and redness values have been improved. It was found that duck-chicken sausages with 16% taro puree had the best colour, sensory texture and lower cooking losses. The results obtained allow the development of poultry sausage containing plant material and at the same time provide technical support for the use of taro paste in poultry sausage

Abstract:. The production of sausages without the use of phosphates and sodium nitrite improves the quality and safety of the product, meeting the demand of consumers for natural and healthy food products. The purpose of the study was to investigate various technological aspects of sausage products that would improve their quality indicators, be attractive to the consumer, and have a positive impact on human health. Organoleptic qualities were evaluated by the appearance, consistency, type of minced meat on the cut, smell, taste; protein content – by Kjeldahl method; moisture content – by drying the suspension in a drying cabinet at a temperature of 103 ± 2°C to a constant mass; fat content – by extraction and weight Soxhlet method; moisture retention capacity – by centrifugation; penetration stress – by recalculation of penetration using a needle indenter; output of the finished product – by weighing before and after heat treatment. The replacement of sodium nitrite with organic nitrite based on chard powder was studied together with a bacterial culture that, as a result of interaction, produces nitrate reductase and reduces nitrate to nitrite (samples 1, 2), in samples 3 and 4, chard powder was replaced with beet juice. All samples were pink in colour. Replacing phosphates with amylopectin starch gave the developed sausages an elastic and juicy consistency, increased the moisture retention capacity by 4.6%-6% compared to the control sample, and penetration stress by 31%-53%. The use of sous-vide technology provided the developed sausage samples with a more pronounced good taste of each recipe ingredient separately, a delicate, elastic consistency, a uniform colour on the cut, and a higher yield by 1.8%- 3.3%. Replacing fatty raw materials with dietary ones, and cooking sausages in heat-resistant bags with vacuuming provided an increase in protein by 8.7%-16.7% and a reduction in fat by almost two times. The practical value of the study was to obtain a dietary product that meets the needs of modern people in a healthy diet

Abstract:The aim of this article was to investigate the differences in biochemical characteristics of Cantonese sausage between laboratorial and industrial levels during processing. Results showed that although water-soluble nitrogen (WSN) and nonprotein nitrogen showed similar patterns of proteolysis in both sausages, laboratorial sausage exhibited a more extensive protein degradation than those for industrial sample during processing. Peptides of >10 and 3-5 kDa were the main WSN fractions for both sausages. The textural characteristics, including hardness, fracturability, gumminess and chewiness, showed notable increases during processing for both sausages. The microbiological population in the laboratorial sausage was significantly higher (P < 0.05) than that in industrial sausage. Staphylococci and Micrococci were the major microflora in both sausages. Results from sensory analysis showed that different biochemical parameters and microbial groups led to different sensory profiles.
Development and evaluation of a chicken breakfast sausage manufactured with mechanically deboned chicken meat

Abstract:Leghorn spent hen mechanically deboned chicken meat (MDCM) was utilized in the preparation of a value-added chicken sausage. The sausage was manufactured by combining MDCM with hand-deboned skinless chicken thigh meat, fat replacer ingredients (blend of modified food starch and oat flour), and either 1) no ingredient with antioxidant properties, 2) Colorlife powdered rosemary concentrate, 3) Herbalox Type O oleoresin rosemary extract or 4) Tenox 6 antioxidant. The 454-g sausage chubs were stored at 4 +/- 1 C (refrigerated) and -20 +/- 1 C (frozen) for 10 d and 6 mo, respectively. A shelf life evaluation (based on daily examination of product, panelists responses, and psychrotrophic organism counts) of 8 d and 6 mo was attained for the sausage stored at 4 +/- 1 and -20 +/- 1 C, respectively. Flavor intensity, texture, and color were maintained for all treatments, and no significant (P > 0.05) off-flavors were detected through 8 d and 6 mo storage. Colorlife and Herbalox rosemary ingredients, and Tenox 6 antioxidant had no adverse effects on sensory characteristics of the chicken sausage. Psychrotrophic organisms increased with increased storage time for the refrigerated sausage, and remained static for the frozen sausage.

Incorporating Djulis is expected to enhance the sausage's texture, flavor, and storage stability due to the presence of antioxidants and nutritional components. However, limited studies focus on product development based on this emerging health-promoting ingredient in the food industry. This study aims to develop Chinese-style sausage enriched with Djulis using the Taguchi L9(34) orthogonal matrix methodology and evaluate the influence of four factors, including un-hulled to hulled Djulis ratios of 0, 50, 100% (A), backfat-to-lean meat ratios of 0/100, 30/70, 50/50% (B), cooking temperature of 55, 75, 95 °C (C), and nitrite content of 0.03, 0.05, 0.07 g/kg (D) on products' sensory and physicochemical properties. The optimal Taguchi formulation was then verified and compared with conventionally formulated sausage (original sausage) in terms of hardness, springiness, gumminess, CIE color values, and peroxide value (POV). The optimal formulation was A3B2C2D3, which consisted of 16.8% hulled Djulis, 30/70 backfat-to-lean meat ratio, 75 °C cooking temperature, and 0.03 g/kg nitrite content. The most influential independent parameters were identified as B > A > C > D, placing Djulis incorporation as the first runner-up, just after the backfat-to-lean meat ratio. Optimized condition verification identified the Signal-to-Noise ratio (S/N) of 16.63. Comparing the optimized Djulis-enriched sample and the original sausage indicated similar CIE L*, a*, b*, hardness, and springiness but different gumminess according to Texture Profile Analysis (TPA). The Djulis-enriched sausage at the optimized formulation had a significantly lower POV compared to the control sample (4.65 vs. 9.64 meq/kg), which was found to be correlated with Djulis antioxidant effects with 2,2-diphenyl-1-picryl-hydrazyl-hydrate (DPPH) free radical antioxidant activity of 62.37%. This suggests that Djulis effectively mitigates sausage organoleptic deterioration. Djulis sausage, with natural antioxidants and reduced fat content, could cater to consumer preferences and enhance the market for the food industry and indigenous farmers.

Abstract:【Objective】 A microorganism strain ym11 causing corn sausage to corrupt and become soft and sticky was isolated from the surface of corn sausage in order to construct control technology to assure safety of corn sausage.Authenticate and optimization of preservatives were studied with the ym11 stain.【Method】 The microorganism stain was identified by using the 16S rDNA sequence analysis,and different preservatives were determined by MICs and optimization of preservatives mixture was also studied.【Result】 The result indicated that it was Bacillus subtilis and homologous similarity was 97%.It was more sensitive to nisin,polylysine,ethylparaben,whose MICs were 39mg·L-1,39 mg·L-1,125 mg·L-1,respectively.Optimization result showed that ym11 in the medium could be reduced two logs when the concentrations of nisin,polylysine,and ethylparaben were 11.30 mg·L-1,10.90 mg·L-1,and 4.80 mg·L-1,respectively.【Conclusion】 The ym11 strain belongs to Bacillus subtilis.It can be sterilized effectively by using preservatives mixture.

Abstract:The effect of a proteolytic starter culture isolated from Nanx Wudl, on microbiological, biochemical and organoleptic attributes of dry fermented sausages was investigated during processing. Based on preliminary screening, the combination of Staphylococcus xylosus SX16 and Lactobacillus plantarum CMRC6, showing excellent proteolytic activity in vitro, was selected as the multi-strain starter (starter LS). For comparison, the single-strain starter culture of L. plantarum CMRC6 (starter LB) and non-inoculated control were also tested. During fermentation, lactic acid bacteria and staphylococci dominated the microbiota and suppressed the Enterobacteriaceae growth in LS-inoculated sausages. The addition of LS starter accelerated acidification and proteolysis during ripening, improving the contents of total free amino acids and several essential free amino acids (Phe, Ile and Leu). Volatile compounds analysis revealed that LS-fermented sausage showed the highest abundance of 3-methyl-1-butanol, probably due to the inoculated S. xylosus. The inoculation of LS starter improved the sensory properties of sausages, especially the flavor attribute. Therefore, S. xylosus SX16 and L. plantarum CMRC6 are promising candidates for inclusion as multi-strain starters in the manufacture of gourmet fermented dry sausage.
