Abstract:Natural pigments are increasingly favored in the food industry for their vibrant colors, fewer side effects and potential health benefits compared to synthetic pigments. However, their application in food industry is hindered by their instability under harsh environmental conditions. This review evaluates current strategies aimed at enhancing the stability and bioactivity of natural pigments. Advanced physicochemical methods have shown promise in enhancing the stability of natural pigments, enabling their incorporation into food products to enhance sensory attributes, texture, and bioactive properties. Moreover, recent studies demonstrated that most natural pigments offer health benefits. Importantly, they have been found to positively influence gut microbiota, in particular their regulation of the beneficial and harmful flora of the gut microbiome, the reduction of ecological dysbiosis through changes in the composition of the gut microbiome, and the alleviation of systemic inflammation caused by a high-fat diet in mice, suggesting a beneficial role in dietary interventions.

Abstract:Carotenoids are one of the most important groups of natural food colorants beneficial for human health. Carotenoids exist widely in higher plants, alga, a few microorganisms and some animals, while biosynthetic pathways and compositions of carotenoids accumulated vary greatly. Through optimization of culture conditions, application of genetic transformation and hydrolases-assisted extraction, production of carotenoids was greatly improved and the cost reduced, facilitating the wider consumption of natural carotenoids as healthy food colorants.

Abstract:Abstract In current years, natural pigments are facing a fast-growing global market due to the increase of people’s awareness of health and the discovery of novel pharmacological effects of various natural pigments, e.g., carotenoids, flavonoids, and curcuminoids. However, the traditional production approaches are source-dependent and generally subject to the low contents of target pigment compounds. In order to scale-up industrial production, many efforts have been devoted to increasing pigment production from natural producers, via development of both in vitro plant cell/tissue culture systems, as well as optimization of microbial cultivation approaches. Moreover, synthetic biology has opened the door for heterologous biosynthesis of pigments via design and re-construction of novel biological modules as well as biological systems in bio-platforms. In this review, the innovative methods and strategies for optimization and engineering of both native and heterologous producers of natural pigments are comprehensively summarized. Current progress in the production of several representative high-value natural pigments is also presented; and the remaining challenges and future perspectives are discussed. Graphical Abstract

Abstract:Pigments find widespread application in the fields of food, medicine, textiles, and cosmetics. At present, synthetic colorants dominate the global pigment market. However, the environmental and health hazards associated with synthetic colorants have spurred extensive research on eco-friendly and safe alternatives. Natural pigments are particularly intriguing for meeting consumer demands and sustainable development, as they not only exhibit various vibrant color shades without discernible toxic side effects but also offer additional healthful features such as antibacterial, antioxidant, anticancer, and antiviral properties compared with their synthetic counterparts. Among natural sources, bacterial strains share distinct advantages for large-scale pigment production because of their intrinsic robustness of cellular metabolic systems. This review comprehensively outlines the bacterial sources, extraction and purification methods, structural characteristics, biological activities, and potential applications of typical pigments, including but not limited to violacein, indigoidine, melanin, carotenoids, prodigiosin, and rhodopsin. Additionally, it underscores the primary obstacles to the development and production of bacterial pigments for commercial applications, discussing feasible strategies for overcoming production bottlenecks. This work also provides valuable insights for the scientific and rational advancement of bacterial pigment development.

Abstract:Color in food has multiple effects on consumers, since this parameter is related to the quality of a product, its freshness, and even its nutrient content. Each food has a characteristic color; however, this can be affected by the technological treatments that are applied during its manufacturing process, as well as its storage. Therefore, the development of new food products should take into account consumer preferences, the physical properties of a product, food safety standards, the economy, and applications of technology. With all of this, the use of food additives, such as dyes, is increasingly important due to the interest in the natural coloring of foods, strict regulatory pressure, problems with the toxicity of synthetic food colors, and the need for globally approved colors, in addition to current food market trends that focus on the consumption of healthy, organic, and natural products. It is for this reason that there is a growing demand for natural pigments that drives the food industry to seek or improve extraction techniques, as well as to study different stability processes, considering their interactions with the food matrix, in order to meet the needs and expectations of consumers.

Abstract:Color is the first attribute that influences the acceptance of foods as they become more attractive to consumers when they are more intense and uniform. In recent years, the interest of producers and consumers in purchasing products containing natural ingredients have constantly increased. Natural pigments are commonly extracted from fruits and vegetables, and have been proven to provide health benefits to reduce the risk of diseases such as type-1 diabetes, obesity, and coronary diseases. Additionally, advanced extraction and encapsulation technologies that make food matrices more efficient are useful tools for improving the use of these pigments. In this review, the state-of-the-art of pigments such as carotenoids, anthocyanins, and betalains of plant origin are discussed, including their main sources of production and the factors that affect their physicochemical stability. In addition, different extraction methods are discussed, listing their advantages and disadvantages, and providing some applications of natural pigments in food.

Abstract:Colorants have played a crucial role in various applications, particularly in food processing, with natural sources such as mineral ores, plants, insects, and animals being commonly used. However, the nineteenth century saw the development of synthetic dyes, which replaced these natural colorants. In recent years, there has been a growing demand for natural products, driving an increased interest in natural colorants. Microbial pigments have emerged as promising sources of natural pigments due to their numerous health benefits. They can be produced in large quantities rapidly and from more affordable substrates, making them economically attractive. This review focuses on the current advancements in the low-cost synthesis of microbial pigments, exploring their biological activities and commercial applications. Microbial pigments offer a sustainable and economically viable alternative to natural and synthetic colorants, meeting the growing demand for natural products. These pigments are relatively nontoxic and exhibit significant health benefits, making them suitable for a wide range of applications. As interest in natural products continues to rise, microbial pigments hold great potential in shaping the future of colorant production across various sectors.

Research advances on natural purple corm pigment

Abstract:Purple corn pigment is anthocyanins,a kind of natural pigment from the purple corm plant,purple corm cob and purple seed,which is a kind of safety,not poisonous edible.It clearly had antioxidant activity,anti-tumor,anti-aging,reducing blood pressure,regulating blood lipids and blood glucose level and so on.The purple corm pigment was extracted in acid solvent,containing 9 anthocyanins at least and the main active components of red pigment was anthocyanins-3-glucoside.Purple corn pigment is a type of existing natural food additives,and can be used to color for food,medicine,cosmetics,dyes and other industries.Based on the latest research results of home and abroad in recent 10 years,the extraction process,the chemical constitution,the physic-chemical property,the biological active functions,and application of purple corm pigment were summarized.This information may lead to a reference value in depth study,the comprehensive development and application of the purple corm pigment.

Abstract:This comprehensive review article delves into the complex world of natural edible pigments, with a primary focus on their stability and the factors that influence them. The study primarily explores four classes of pigments: anthocyanins, betalains, chlorophylls and carotenoids by investigating both their intrinsic and extrinsic stability factors. The review examines factors affecting the stability of anthocyanins which act as intrinsic factors like their structure, intermolecular and intramolecular interactions, copigmentation, and self-association as well as extrinsic factors such as temperature, light exposure, metal ions, and enzymatic activities. The scrutiny extends to betalains which are nitrogen-based pigments, and delves into intrinsic factors like chemical composition and glycosylation, as well as extrinsic factors like temperature, light exposure, and oxygen levels affecting for their stability. Carotenoids are analyzed concerning their intrinsic and extrinsic stability factors. The article emphasizes the role of chemical structure, isomerization, and copigmentation as intrinsic factors and discusses how light, temperature, oxygen, and moisture levels influence carotenoid stability. The impacts of food processing methods on carotenoid preservation are explored by offering guidance on maximizing retention and nutritional value. Chlorophyll is examined for its sensitivity to external factors like light, temperature, oxygen exposure, pH, metal ions, enzymatic actions, and the food matrix composition. In conclusion, this review article provides a comprehensive exploration of the stability of natural edible pigments, highlighting the intricate interplay of intrinsic and extrinsic factors. In addition, it is important to note that all the references cited in this review article are within the past five years, ensuring the most up-to-date and relevant sources have been considered in the analysis.

Abstract:Natural pigments and colorants are widely used in the world in many industries such as textile dying, food processing or cosmetic manufacturing. Among the natural products of interest are various compounds belonging to carotenoids, anthocyanins, chlorophylls, melanins, betalains… The review emphasizes pigments with anthraquinoid skeleton and gives an overview on hydroxyanthraquinoids described in Nature, the first one ever published. Trends in consumption, production and regulation of natural food grade colorants are given, in the current global market. The second part focuses on the description of the chemical structures of the main anthraquinoid colouring compounds, their properties and their biosynthetic pathways. Main natural sources of such pigments are summarized, followed by discussion about toxicity and carcinogenicity observed in some cases. As a conclusion, current industrial applications of natural hydroxyanthraquinoids are described with two examples, carminic acid from an insect and Arpink red™ from a filamentous fungus.Graphical abstract

Abstract:Natural pigments from plant sources are often stabilized by several types of protection systems, including incorporation of co-pigment compounds, formation of supramolecular complexes, and encapsulation or loading using nano-carriers. Inspired by Maya blue, clay minerals as a kind of promising nano-carriers are employed to stabilize the natural pigments due to their unique structural characteristics, abundant reserves, cheap and eco-friendly nature. The unique features in the structures and physicochemical properties of clay minerals provide the opportunity to stabilize these natural pigments. This review summarizes the most recent studies and provides the insight into the natural or synthetic clay minerals for enhancing the environmental stability of natural pigments extracted from various fruits, vegetables and flowers. Based on the cognition and accumulation combining reviewing the literatures with our relevant research achievements, several suggestions are proposed for the design and the potential applications of hybrid materials composed of clay mineral and natural pigments.

Abstract:Synthetic pigments from petrochemicals have been extensively used in a wide range of food products. However, these pigments have adverse effects on human health that has rendered it obligatory to the scientific community in order to explore for much safer, natural, and eco-friendly pigments. In this regard, exploiting the potential of agri-food wastes presumes importance, extracted mainly by employing green processing and extraction technologies. Of late, pigments market size is growing rapidly owing to their extensive uses. Hence, there is a need for sustainable production of pigments from renewable bioresources. Valorization of vegetal wastes (fruits and vegetables) and their by-products (e.g. peels, seeds or pomace) can meet the demands of natural pigment production at the industrial levels for potential food, pharmaceuticals, and cosmeceuticals applications. These wastes/by-products are a rich source of natural pigments such as: anthocyanins, betalains, carotenoids, and chlorophylls. It is envisaged that these natural pigments can contribute significantly to the development of functional foods as well as impart rich biotherapeutic potential. With a sustainability approach, we have critically reviewed vital research information and developments made on natural pigments from vegetal wastes, greener extraction and processing technologies, encapsulation techniques and potential bioactivities. Abstract:Natural pigments, including carotenoids, flavonoids and anthocyanidins, determine the attractive color of fruits. These natural pigments are essential secondary metabolites, which play multiple roles in the whole life cycle of plants and are characterized by powerful antioxidant activity. After decades of research and development, multiple benefits of these natural pigments to human health have been explored and recognized and have shown bright application prospects in food, medicine, cosmetics and other industries. In this paper, the research progress of natural fruit pigments in recent years was reviewed, including the structural characteristics and classification, distribution in fruits and analysis methods, biosynthetic process, antioxidant capacity and mechanism, bioaccessibility and bioavailability, and health benefits. Overall, this paper summarizes the recent advances in antioxidant activity and other biological functions of natural fruit pigments, which aims to provide guidance for future research.

Abstract:A challenge for the future is the valorization of food waste to obtain a plethora of food additives, chemicals, biodegradable polymers, materials, and energy, with the overarching goal of mitigating the environmental impact of these residues. Many of these wastes are an important source of natural pigments with biofunctional properties. Furthermore, the growing awareness of the potential side effects of synthetic colorants and the demand for healthier foods featuring clean labels have driven to new techniques for extracting these coloring compounds from natural sources. Non-conventional green extraction techniques are gaining momentum due to their higher extraction yields, low environmental impact, and better protection of pigments against degradation compared to conventional extraction methods. On the other hand, encapsulation of biocompounds is presented as the alternative to improve pigment stability. In this concise review, cutting-edge methodologies and innovations used in the extraction and stabilization of natural pigments by encapsulation will be discussed.

Abstract:There is an on-going demand in recent years for safer and "greener" hair coloring agents with the global consumer awareness of the adverse effects of synthetic hair dyes. The belief in sustainability and health benefits has focused the attention of the scientific community towards natural colorants that serve to replace their synthetic toxic counterparts. This review article encompasses the historical applications of a vast array of natural plant hair dyes and summarizes the possible coloration mechanisms (direct dyeing and mordant dyeing). Current information on phytochemicals (quinones, tannins, flavonoids, indigo, curcuminoids and carotenoids) used for hair dyeing are summarized, including their botanical sources, color chemistry and biological/toxicological activities. A particular focus is given on research into new natural hair dye sources along with eco-friendly, robust and cost-effective technologies for their processing and applications, such as the synthetic biology approach for colorant production, encapsulation techniques for stabilization and the development of inorganic nanocarriers. In addition, innovative in vitro approaches for the toxicological assessments of natural hair dye cosmetics are highlighted.
