Advanced Research on Metabolic Mechanism and Toxicity Protection of Acrylamide:in Vivo

Abstract:Acrylamide(AA) ,a potential carcinogen,has been receiving world-wide attention since it was discovered in heat-processing food in 2002. Further investigations indicate that the detriment of acrylamide to human body is mainly performed by its metabolite—glycidamide(GA) . This review was a summary of recent researches on analytical methods,metabolic mechanisms and genotoxicity of GA. Based on previous studies on acrylamide inhibition in vivo using natural products,proposals were made as regards to the deep protection against AA.
