Abstract:Tea Polyphenols (TP) and Tea Catechin(TC) were extracted by Ethyl Acetate(Et Ac), and discussed influences of tea soup content, pH, ionic content and extracting temperature on the extracting effect were also discussed. The optimal technological conditions were obtained by orthogonal test: the tea soup content at 4 %, pH 5, ionic strength at 6 % and extracting temperature at 30 ℃, TP and TC were extracted by the optimal technological was exercisable, practicable and valuable to industrialized production.
