Abstract:A new method for rice sensory quality assessment was developed by using radar chart analysis method in this paper.Gel consistency,alkali spreading value,aspect ratio,amylose content and protein content were selected as evaluating indicators in the radar chart analysis due to their relatively important influence on rice sensory quality.The radar chart was drawn with the five evaluating indicators after dimensionless processed.In order to eliminate the differences caused by the arrangement of evaluating indicators,average area and average perimeter of radar map were chosen as the feature vectors for constructing final evaluation function.The developed method was applied to assess sensory quality of 10 rice samples and compared to traditional sensory evaluation.The sensory quality ranking obtained with developed method was consistent with the traditional sensory evaluation,which indicated that the developed method is a useful method for preliminary assessment of rice sensory quality.

Abstract:Three spectrum regions (6100-4250 cm -1, 61 00 -5450 cm -1 and 4600-4250 cm -1, 7500-5450 cm -1and 4600-4250 cm -1) and four pretreatment methods (straight line subtraction, multiplicati ve scattering correction, vector normalization; first derivation ) were compare d to form a model for testing fat content in milled rice by using near infrared reflectance spectroscopy (NIRS). It was found that spectrum regions and pretreat ment methods had large effects on the model construction. In order to estimate the forecast result of the model, the feasibility of testing fat content in mil led rice by using NIRS and its application in breeding was discussed.

Abstract:Visible/near-infrared (Vis/NIR) spectroscopy was applied to determine the ripeness of melons ( Cucumis melo L.). The total soluble solids (TSS) and flesh color distribution around the equator fracture surface was studied, and a high correlation between TSS and flesh color in the outer mesocarp region was observed. A new ripeness index, defined as the edible ratio (ER), was proposed. One hundred and twenty melons with similar sizes were selected as samples and divided into a calibration set and a prediction set. Spectra of melons were acquired separately under transmittance and interactance modes. A machine vision system was established to acquire images of the melon fracture surfaces to further calculate the ER values of the melons. Partial least squares (PLS) calibration models were developed to predict the melon ripeness indices, including TSS, surface color (SC), and ER value. The results were promising for TSS, Hunter a , and ER value. For Hunter b , the results were insufficient. In addition, by comparing the performances of the calibration models developed under different detection modes, it was concluded that the best calibration results for TSS and ER were achieved under the transmittance mode, while for Hunter a , the best result was obtained using interactance spectra.

Abstract:In this article, Chinese quince (Cydonia oblonga Miller) freshness determination method was investigated using surface acoustic wave resonator, electronic nose, and surface acoustic wave resonator combined with electronic nose. Human sensory evaluation and weight loss index were examined as freshness reference. Results indicated that quince freshness decreased during storage procedure. Surface acoustic wave resonator output frequency and electronic nose measurement data stochastic resonance signal-to-noise ratio Eigen values characterized quince quality under different storage time. Freshness predictive models were developed using surface acoustic wave resonator frequency, electronic nose signal-to-noise ratio spectrum Eigen values, and their hybrid model. Validating experiments results demonstrated that the hybrid predictive model presented higher predicting accuracy (R-2 = 0.987) than other two models. The proposed method is promising in fruit quality rapid analysis.

Abstract:Yellow-coloured rice in mass rice was detected by manual method presently, therefore it is difficult to meet the need of fast testing. So a yellow-coloured rice detect system was developed. The RGB chromatic information obtained by the scanner was translated to L*a*b* chromatic information automatically by which to judge the rice according to the chromatic threshold and proportional threshold which were set by the user based on the breed and producing area. It is proved to be an effective way to detect yellow-coloured rice.

Abstract:Free fatty acids (FFAs) are an important indicator of the freshness and quality of rice. In this study, the vibration response of C-H chemical bonds (-CH3 , -CH2 , H-C = C-H) of FFAs in the near-infrared region was determined by analyzing the standard reagent. In addition, the spectral data of different physical forms of rice and chemometrics, such as partial least squares (PLS), synergy interval-PLS, and competitive adaptive reweighted sampling (CARS), were applied to develop an optimal regression model for rice FFAs determination. The performance of the FFAs model established by using the polished rice granule spectrum (PRG) combined with CARS was the best, the correlation coefficients of the calibration set and prediction set were 0.99 (root mean squared errors of the calibration = 2.00 mg/100 g) and 0.98 (root mean squared errors of the prediction = 3.21 mg/100 g), respectively, and the ratio of performance-to-deviation was 4.50. Compared with the rice powder spectral, the PRG spectral can better retain the information of FFAs. The result shows that NIRS can rapidly, non-destructively, and accurately detect FFAs in rice granules, which will help rice business and food regulatory authorities to establish an early warning mechanism of rice aging. PRACTICAL APPLICATION: Free fatty acids (FFAs) in rice are an important indicator for evaluating the freshness of rice, and their high responsiveness to the deterioration of rice quality. The real-time detection of FFAs in rice can timely adjust the parameters of the rice storage environment, which is very meaningful to ensure the quality of rice.

Abstract:In this work, two methods, which were visible near-infrared spectroscopy (VNIRS) and visible near-infrared spectroscopy combined with colorimetric sensor array (VNIRS-CSA), were used to identify the volatile compound changes of rice samples stored for 0 to 6 months. Principal component analysis (PCA), interval partial least squares (iPLS), and synergy interval partial least squares (SiPLS) were used for qualitative classification. A prediction model was established by linear discriminant analysis (LDA), which was compared with the traditional VNIRS detection technology. The results revealed that the VNIRS-CSA got better performance than VNIRS and exhibited a good result based on iPLS/SiPLS-PCA/LDA models. Furthermore, spectral data from VNIRS-CSA were the best for LDA with a high prediction value of 0.925 after standard normal variate (SNV) processing and variable selection by SiPLS. The research demonstrated that VNIRS-CSA is a quick, accurate, and non-destructive method for monitoring the storage time of rice. The strategy also has the potential for volatile organic components analysis.

Abstract:(1) Background: To achieve the rapid, non-destructive detection of corn freshness and staleness for better use in the storage, processing and utilization of corn. (2) Methods: In this study, three varieties of corn were subjected to accelerated aging treatment to study the trend in fatty acid values of corn. The study focused on the use of hyperspectral imaging technology to collect information from corn samples with different aging levels. Spectral data were preprocessed by a convolutional smoothing derivative method (SG, SG1, SG2), derivative method (D1, D2), multiple scattering correction (MSC), and standard normal transform (SNV); the characteristic wavelengths were extracted by the competitive adaptive reweighting method (CARS) and successive projection algorithm (SPA); a neural network (BP) and random forest (RF) were utilized to establish a prediction model for the quantification of fatty acid values of corn. And, the distribution of fatty acid values was visualized based on fatty acid values under the corresponding optimal prediction model. (3) Results: With the prolongation of the aging time, all three varieties of corn showed an overall increasing trend. The fatty acid value of corn can be used as the most important index for characterizing the degree of aging of corn. SG2-SPA-RF was the quantitative prediction model for optimal fatty acid values of corn. The model extracted 31 wavelengths, only 12.11% of the total number of wavelengths, where the coefficient of determination RP2 of the test set was 0.9655 and the root mean square error (RMSE) was 3.6255. (4) Conclusions: This study can provide a reliable and effective new method for the rapid non-destructive testing of corn freshness.

Identification of the Rice Wines with Different Marked Ages by Electronic Nose Coupled with Smartphone and Cloud Storage Platform

Abstract:In this study, a portable electronic nose (E-nose) was self-developed to identify rice wines with different marked agesall the operations of the E-nose were controlled by a special Smartphone Application. The sensor array of the E-nose was comprised of 12 MOS sensors and the obtained response values were transmitted to the Smartphone thorough a wireless communication module. Then, Aliyun worked as a cloud storage platform for the storage of responses and identification models. The measurement of the E-nose was composed of the taste information obtained phase (TIOP) and the aftertaste information obtained phase (AIOP). The area feature data obtained from the TIOP and the feature data obtained from the TIOP-AIOP were applied to identify rice wines by using pattern recognition methods. Principal component analysis (PCA), locally linear embedding (LLE) and linear discriminant analysis (LDA) were applied for the classification of those wine samples. LDA based on the area feature data obtained from the TIOP-AIOP proved a powerful tool and showed the best classification results. Partial least-squares regression (PLSR) and support vector machine (SVM) were applied for the predictions of marked ages and SVM (R-2 = 0.9942) worked much better than PLSR.

Abstract:Determination of the rice milling degree by image processing technology was investigated,and the rice image quality can influence the accuracy of the determination result.The proper image acquisition conditions were determined by investigating the following factors: light source,background,resolution,image enhancement,storage format,etc.The results showed that the rice milling degree can be determined accurately by selecting the proper image acquisition conditions,and the correlation coefficient R2 between a system determination value and a value determined by national standard method is equal to 0.935 4.

Abstract:Rationale Accurate identification of old rice samples from new ones benefits their market circulation and consumers. However, the current detection methods are still not satisfactory because of their insufficient accuracy or (and) time‐consuming process. Methods Chelating carboxylic acids (CCAs) were selectively extracted from rice, by stirring with chelating resin and a dilute Na 2 CO 3 solution. The green analytical chemistry guidelines for sample preparation were investigated by using the green chemistry calculator AGREE prep. The extractant was determined by liquid chromatography–mass spectrometry (LC/MS), and statistical analysis of the analytical data was carried out to evaluate the significance of the difference by ChiPlot. Results The limit of quantitation for the CCAs is in the range of 1 to 50 ng/mL, with a reasonable reproducibility. The CCAs in 23 rice samples were determined within a wide concentration range from 0.03 to 1174 μg/g. Intriguingly, the content of citric acid, malonic acid, α‐ketoglutaric acid and cis ‐aconite acid in new rice was each found to be distinctively higher than that in old rice by several times. Even mixtures of old and new rice were found to show much difference in the concentration of citric acid and malic acid. Conclusion A green analytical method has been developed for the simultaneous determination of CCAs by LC/MS analysis, and the identification of old rice samples from new ones was easily carried out according to their CCA content for the first time. The results indicated that the described method has powerful potential for the accurate identification of old rice samples from new ones.

A Machine Vision Based Instrument for Rice Appearance Quality

Abstract:An instrument, based on embedded computer system, is presented in this paper, which was designed for rice appearance-quality detection. A new watershed algorithm improved from priori knowledge was adopted to kernel image segmentation. BP neural network was selected to detect rice kenrnel chalkiness, the chroma to detect yellow-coloured rice, and a polar-coordinates-based algorithm to detect the kernel shape by measuring the long and short axis of each region. The experimental results show that the detection accuracy of chalky rice numbers, chalk degree, yellow-coloured rice, and rice kernel shape are ±2%, ±1%, ±5%, and ±4% respectively.
Non-Destructive Maturity Evaluation of Citrus by Hue Frequency Sequence Method

Abstract:Non-destructive quality evaluation of agriculture products is the key to determine the suitable harvest date and to grade the agriculture product. A computer vision system for maturity inspecting of citrus was set up, and the color describing method of citrus images was studied. It was founded that HSI color space should be adopted to describe the citrus image, while evaluating the citrus maturity by the information in the visible color image. A new method to describe the color information of citrus image was put forward, in which the color information was depicted by hue frequency sequence--the sequence consisted of the number of pixels corresponding to different hues. A triple-layer feed-forward network was established to mapping the maturity of citrus from the hue frequency sequence. After training, the network mapper was used to inspect the maturity of the test sample set, which was composed of 252 Weizhang citrus with different maturity. The identification accuracy on mature citrus reached 79.1%, on non-mature citrus was 63.6%, and the average identification accuracy was 77.8%. It was concluded that the maturity of Weizhang citrus is related to their surface color information, and it is feasible to nondestructively evaluate the maturity of citrus with the computer vision system and hue frequency sequence method.
Computer Vision Inspection of Rice Seeds Quality with Discriminant Analysis

Abstract:This study was undertaken to develop computer vision-based rice seeds inspection technology for quality control. Color image classification using a discriminant analysis algorithm identifying germinated rice seed was successfully implemented. The hybrid rice seed cultivars involved were Jinyou402, Shanyou10, Zhongyou207 and Jiayou99. Sixteen morphological features and six color features were extracted from sample images belong to training sets. The color feature of 'Huebmean' shows the strongest classification ability among all the features. Computed as the area of seed region divided by area of the smallest convex polygon that can contain the seed region, the feature of 'Solidity' is prior to the other morphological features in germinated seeds recognition. Combined with the two features of 'Huebmean' and 'Solidity', discriminant analysis was used to classify normal rice seeds and seeds germinated on panicle. Results show that the algorithm achieved an overall average accuracy of 98.4% for both of normal seeds and germinated seeds in all cultivars. The combination of 'Huebmean' and 'Solidity' was proved to be a good indicator for germinated seeds. The simple discriminant algorithm using just two features shows high accuracy and good adaptability.

Abstract:An approach,which detects rice appearance quality parameters such as yellow grains,grain shape automatically based on computer vision technology instead of visual observation,is presented.The approach adapts itself to the needs of automation in agricultural engineering.To verify the feasibility of the approach,the research developed an algorithm using MATLAB software.Experiments wone performed on different rice images to measure the appearance quality parameters.The results showed that the approach is effective and reliable.

Abstract:The quality of rice, a widely served staple food in the world, is usually assessed based on the levels of free fatty acids (FFAs). Therefore, a method for the rapid detection and quantification of FFAs in rice grains or even a single rice grain would make rice quality evaluation easier. In this study, we developed a single grain electrospray ionization (SG-ESI) source where a single grain of rice was placed in a small chamber in-line with an electrospray ionization source for mass spectrometric analysis. The characteristic fingerprint of every single rice grain was rapidly recorded by the single grain mass spectrometry without tedious sample pre-treatment (such as off-line extraction, centrifugation and/or separation). Semi-quantitative determination of typical FFAs and pesticides in the single rice grain samples was successfully achieved, providing the limits of detection (LODs) of 0.11–1.30 ng g−1 and the recovery rates of 77.68–91.52% (RSDs ≤ 9.54%). The rice grains of different cultivation areas and/or storage times were differentiated by the full scan mass spectral data processed using multivariate statistical analysis. The experimental results demonstrate that the established single grain mass spectrometry is a useful tool for the direct analysis of rice grains with minimal sample preparation, low sample consumption, high sensitivity and high throughput.
Rapid Quantitative Analysis of Adulterated Rice with Partial Least Squares Regression Using Hyperspectral Imaging System

Abstract:BACKGROUND:Rice adulteration in the food industry that infringes on the interests of consumers is considered very serious. To realize the rapid and precise quantitation of adulterated rice, a visible near infrared (VNIR) hyperspectral imaging system (380-1000 nm) was developed in the present study. A Savitsky-Golay first derivative (SG1) transform was utilized to eliminate the constant spectral baseline offset. Then, the adulterated levels of rice samples were quantified by partial least squares regression (PLSR).RESULTS:A SG1-PLSR model based on full-wavelength was attained with a coefficient of determination of prediction set (RP ) of 0.9909, root-mean-square error of prediction set (RMSEP ) of 0.0447 g kg-1 and residual predictive deviation (RPDP ) of 11.28. Furthermore, fifteen important wavelengths were selected based on the weighted regression coefficients (BW ) and a simplified model (PLSR-15) was established with RP of 0.9769, RMSEP of 0.0708 g kg-1 and RPDP of 3.49. Finally, two visualization maps produced by applying the optimal models (SG1-PLSR and PLSR-15) were used to visualize the adulterated levels of rice.CONCLUSION:These results demonstrate that VNIR hyperspectral imaging system is an effective tool for rapidly quantifying and visualizing the adulterated levels of rice. © 2019 Society of Chemical Industry.
Detection of Defects in Rice Seeds Using Machine Vision

Abstract:Three image-processing algorithms were developed to detect external defects of rice seeds such as germ, disease, and incompletely closed glumes. The rice seeds used for this study involved five varieties: Jinyou402, Shanyou10, Zhongyou207, Jiayou, and IIyou. Images of the samples with both black and white backgrounds were acquired with a color machine vision system. Each original image was preprocessed to create a mask for the seed region. For judging the presence of germ, 16 contour features were extracted and analyzed using principal components analysis. In addition to this, four back-propagation neural networks were created and trained with typical data sets of the four varieties. The algorithm developed for recognition of germ achieved an average accuracy of 99.4% for normal seeds and 91.9% for germinated seeds on panicle. The mean hue value and its deviation of the seed region determined with a block method were extracted as features of disease recognition. The corresponding algorithm developed for inspecting diseased seeds based on color features achieved an accuracy of 92.1% for normal seeds, 94.8% for spot-diseased seeds, and 91.1% for severely diseased seeds. Using radon transform, the group number of post-processing images proved to be a good indicator of incompletely closed glumes. The relevant algorithm was developed and achieved an accuracy of 98.6% for normal seeds, 98.6%,for seeds with fine fissures, and 99.2% for seeds with unclosed glumes. The results showed that the three algorithms achieved desired accuracy.
Identifying freshness of various chilled pork cuts using rapid imaging analysis

Abstract:Background: Determining the freshness of chilled pork is of paramount importance to consumers worldwide. Established freshness indicators such as total viable count, total volatile basic nitrogen and pH are destructive and time-consuming. Color change in chilled pork is also associated with freshness. However, traditional detection methods using handheld colorimeters are expensive, inconvenient and prone to limitations in accuracy. Substantial progress has been made in methods for pork preservation and freshness evaluation. However, traditional methods often necessitate expensive equipment or specialized expertise, restricting their accessibility to general consumers and small-scale traders. Therefore, developing a user-friendly, rapid and economical method is of particular importance. Results: This study conducted image analysis of photographs captured by smartphone cameras of chilled pork stored at 4 °C for 7 days. The analysis tracked color changes, which were then used to develop predictive models for freshness indicators. Compared to handheld colorimeters, smartphone image analysis demonstrated superior stability and accuracy in color data acquisition. Machine learning regression models, particularly the random forest and decision tree models, achieved prediction accuracies of more than 80% and 90%, respectively. Conclusion: Our study provides a feasible and practical non-destructive approach to determining the freshness of chilled pork. © 2024 Society of Chemical Industry.
