Abstract:Tea polyphenols is an ideal natural anti-oxidant,which has being widely applied in many fields.The methods of extraction of tea polyphenols from green tea have been become one of hot points of tea research.In the present paper,methods of extraction of tea polyphonols from green tea were reviewed,including solvent extraction,ionic precipitation,supercritical CO2 extraction,resin adsorption,ultrasonic assistant extraction,microwave assistant extraction and so on.We also discussed basic principle,producing routine and advantage or disadvantage of each method at the same time.

Abstract:The cooking meat was prepared with fresh pork through refrigeration,adding of tea polyphenol with the concentration of 0.6 g/kg,vacuum packaging,sterilizing,then stored at 4℃,and the cooking meat without addition of tea polyphenol was set as control.Both the experimental group and the control group were determined periodically for the indicators of pH,microbiological(total viable count),total volatile basic nitrogen(TVB-N),peroxide value(POV),the scavenging rate of 2,2-Di(4-tert-octyiphenyl)-1-picryl-hydrazyl free radical and sensory characteristics.The results showed that,tea polyphenol could decrease pH,TVB-N,POV and total viable plate count of the cooking meat significantly,inhibit the growth and propagation of the bacteria,slow down the decrease of sensory quality,clean out DPPH· free radical efficiently.Tea polyphenol had good anti-oxidative and bacteriostasis activity,and could be applied for preservation of the cooking meat.

Abstract:Plant polyphenols,widely present in vegetables,fruits,legumes,cereals,tea and other plants,are a class of secondary metabolites with a polyphenol structure.Plant polyphenols can be used as antioxidants or preservatives in meat products.This article compares the advantages and disadvantages of five methods used to extract plant polyphenols.Compared with three other methods,microwave-assisted extraction and enzymatic extraction have many advantages such as lower cost,time saving and less environmental pollution.Moreover,recent applications of plant polyphenols for the preservation and quality improvement of meat products such as sausage,Chinese bacon and ham are reviewed with the aim of providing references for developing natural antioxidants and preservatives.

Abstract:Polyphenol is a kind of natural non-toxic oxidation inhibitor, which can inhibit lipid oxidation by chelating metal ions, scavenging free radicals and carbonyl compounds. It is widely used in storage research of meat products, improving the quality of meat products and extending the shelf life. In this paper, the process of lipid oxidation and the mechanism of polyphenols inhibiting lipid oxidation are summarized, and the application progress of polyphenols in inhibiting lipid oxidation in meat products is reviewed. Finally, the application prospect of polyphenols in meat products is prospected in order to provide some theoretical guidance for promoting the application of polyphenols in preventing lipid oxidation.

Abstract:The antioxidative and preservation effect of tea polyphenols supplementation at level of 0, 0.25, 0.75, 1.25, 1.75 and 2.25 persent on the chilled pork meat stored at 4 ℃ were investigated. Total bacteria number, colour and physical and chemical indicators such as pH,TVB-N value and TBARS were determined regularly during the storage time. The results showed that the tea polyphenols treated could inhibit the grow speed of bacteria and lipid oxidation obviously , slow down the increase in TVB-N value. It was to enable the good quality characteristics to be retained for longer and to extend the shief life during the storage.

Abstract:Tea polyphenols is a kind of natural compound extracted from the green tea, with 30 polyphenois variety. According to its chemical structure, it is classified into eatechins, flavone and flavonol, anthocyanidin, phenolic acid and condensed phenolic acid. Polyphenols are most definitely antioxidants, which means that they could reduce free radicals and improve immunity, as well polyphenols could reduce odor as a deodorant. So,polyphenols additive play important roles during swine production.Tea polyphenol supplement of 400 mg/kg could improve pork quality and immune system, also ean reduce stink in the pig house.

Abstract:Phenolics are the main bioactive components in tea and greatly contribute to human health. Three phenolic-enriched extracts, the ethyl acetate fraction (TEF), n-butanol fraction (TBF), and water fraction (TWF), were obtained from Tieguanyin oolong tea, which is considered a typical type of semi-fermented tea. The chemicals in the extracts and their antioxidant activity and cytotoxicity against 4T1 breast cancer cells were investigated in the present work. TEF was found to have the highest contents of phenolics, flavonoids, procyanidins, sugars, and catechin monomers. Meanwhile, TEF exhibited the strongest antioxidant capacity, which may be due to its abundant bioactive compounds, as validated by Pearson correlation and hierarchical clustering analysis. Furthermore, TEF showed greater inhibition of the growth of 4T1 murine breast cancer cells than TBF and TWF. Practical applications Fermentation during the processing of oolong tea causes many alterations in polyphenols, leading to different bioactivities. In the present work, three phenolic-enriched extracts, the ethyl acetate fraction (TEF), n-butanol fraction (TBF), and water fraction (TWF), were obtained from Tieguanyin oolong tea. Further tests showed that TEF and TBF from Tieguanyin oolong tea possessed remarkable antioxidant activity and inhibitory potential inhibition of the growth of 4T1 murine breast cancer cells in vitro due to their main bioactive compounds, including phenolics and flavonoids. Thus, the phenolic-enriched extracts from Tieguanyin tea are expected to have a potential application in the food and pharmaceutical industries after further study.
Safety Evaluation and Antihyperlipidemia Effect of Aqueous Extracts from Fermented Puerh Tea

Abstract:Fermented puerh tea, having undergone a long period of secondary oxidization and fermentation, has become more and more popular in recent years. In the present paper, a safety evaluation of aqueous extracts from fermented puerh tea (EFPT) was performed, including an oral acute toxicity study in rats and mice, mutation tests, a mouse micronucleus test, mouse sperm abnormality test and a 30 day feeding study in rats. Meanwhile, the antihyperlipidemia effect of EFPT was investigated as well. It was found that the oral maximum tolerated dose of EFPT was more than 10.0 g per kg body weight both in rats and mice. And it had no mutagenicity as judged by negative experimental results of the mutation test. No abnormal symptoms, clinical signs or deaths have been found in rats in each group throughout the experiments. In addition, EFPT in this study showed certain effects on hyperlipidemia.
A Comparative Study on Bioactivities of Tea Polyphenols and Chlorogenic Acid

Abstract:Objective to study the differences of bioactivities of tea polyphenols (TPs) and chlorogenic acid (CHA), methods of POV assay、spectrophotometric determination and MIC were used to compare the antioxidation、 scaventing free radicals and antibacterial action of TPs CHA. Results in the six weeks showed that TPs (100 μg/g、 200 μg/g) could restrain the POV of lard below 10 meq/kg, antioxidation rises with concentrations of TPs, as resemble the effect of CHA (81%). On the free radicals, CHA showed selective scaventing ability, IC50(DPPH、·OH) of CHA (81%) is 65 mg/L and 135 mg/L, and CHA (20%) is 327 mg/L and 1 432 mg/L, but TPs is 52 mg/L and 1908 mg/L; In the antibacterial action, TPs and CHA can obviously inhibit both staphylococcus aureus and escherichia coli., The MIC of CHA (81%) is twice as that of CHA (20%) on staphylococcus aureus, 500 μg/g and 1 000 μg/g respectively, that of TPs is 250 μg/g, on escherichia coli.. Conclusion: TPs (95%) exceeds CHA (81%) and CHA (20%) in the antioxidation、scaventing DPPH and antibacterial activity on staphylococcus aureus, but the reverse was in the scaventing ·OH. It was regarded that TPs may play a more important role than CHA in the food and drug.

Abstract:Tea (Camellia sinensis L.) fruit peel, the main byproduct during the manufacture of tea seed oil, was used as raw material for the recovery of phenolic antioxidants. The effect of ethanol concentration, extraction time, and extraction temperature on total phenolic content (TPC) and ferric-reducing antioxidant power (FRAP) of the extracts from tea fruit peel was investigated. The maximum predicted TPC (47.5 mg GAE/g dry peel) was obtained under the optimum recovery conditions (43% ethanol, 60°C, and 33 min) given by using response surface methodology (RSM). A high correlation (R2 = 0.929, p < 0.01) between TPC and FRAP value was identified by linear regression analysis. Furthermore, gallocatechin (GC) and epigallocatechin (EGC) were found to be the major individual catechins in the extracts from tea fruit peel. Ethanol/aqueous extraction has been presented as an effective method for the recovery of phenolic antioxidants from tea fruit peel.

Abstract:Abstract: Food contamination by foodborne pathogens is still widespread in many countries around the world, and food safety is a major global public health issue. Therefore, novel preservatives that can guarantee safer food are in high demand. Contrary to artificial food preservatives, tea polyphenols (TPs) are getting wide attention as food additives for being "green," "safe," and "healthy." TPs come from many sources, and the purification technology is sophisticated. Compared with other natural antibacterial agents, the antibacterial effect of TPs is more stable, making them excellent natural antibacterial agents. This review includes a systematic summary of the important chemical components of TPs and the antibacterial mechanisms of TPs against various foodborne pathogens. The potential applications of TPs are also discussed. These data provide a theoretical basis for the in-depth study of TPs.
