Abstract:Pork quality is affected by both genetic and nutritional factors. However, few researches focused simultaneously on the effects of these two kinds of factors. In order to study the co-effects of these two kinds of factors simultaneously, we implemented this experiment, 136 PIC hybrid pigs with about 65 kg body weight were randomly divided into 4 groups; each group was fed with a different kind of rations. After 35 days of feeding, the pigs were slaughtered at about 95 kg body weight and the pork quality was evaluated. Then the polymorphism of H-FABP gene was analyzed and an association analysis was conducted. The results are as follows: (1) feed ingredient has very significant effect on meat color (MC), pH24, intramuscular fat (IMF, %), and intramuscular protein (IMP, %); (2) H-FABP gene polymorphism has very significant effect on IMF (%) and IMP (%); (3) the interaction between gene and feed ingredient has significant effect on pH and IMF (%), and pH and IMF (%) were the highest for AA genotype in group 0 and group 1, respectively. These results suggest that both genetic and nutritional factors should be concerned in the improvement of pork quality.

Abstract:The quality of pork determines consumers' purchase intention, which directly affects the economic value of pork. Minimizing the proportion of inferior pork and producing high quality pork are the ultimate goals of the pig industry. Muscle energy metabolism, serving as a regulative hub in organism energy expenditure and storage as a fat deposit, is compatible with myofiber type composition, affecting meat color, intramuscular fat content, tenderness, pH values and drip loss. Increasing data illustrate that dietary nutrients and bioactive ingredients affect muscle energy metabolism, white adipose browning and fat distribution, and myofiber type composition in humans, and rodents. Recently, some studies have shown that modulating muscle energy metabolism and lipid accumulation through nutritional approaches could effectively improve meat quality. This article reviews the progress and development in this field, and specifically discusses the impacts of dietary supply of amino acids, lipids, and gut microbiota as well as maternal nutrition on skeletal muscle energy metabolism, lipid accumulation and meat quality of pigs, so as to provide comprehensive overview with respect to effective avenues for improving meat quality.

Abstract:A 35 days feeding experiment and an evaluation of meat quality were carried out to evaluate the effects of supplemental vitamin E and organic trace mineral on pork quality with 170 PIC hybrid commercial pigs. The study was conducted as a 5(dietary treatments) x 2(sex) factorial randomized complete block design. The dietary treatment supplements were: ① Control (standard finishing diet with 30 mg · kg-1 vitamin E); ② Vitamin E (200 mg· kg-1); ③ Organic trace mineral (organic iron, copper and zinc (amino acid chelates) as a substitute for inorganic trace minerals); ④ Organic Se (added Se replaced by yeast Se); ⑤ Combination of vitamin E (200 mg · kg-1) and organic trace mineral (added iron, copper and zinc as amino acid chelates). The results showed that: ① High supplementation of vitamin E (200 mg · kg- 1), not only increased muscle vitamin E content significantly ( P ＜0. 01 ),but it also improved pork pH, and intra - muscular fat content ( P ＜0. 05 ) . ② The impact on pork quality using organic iron,copper, zinc as a substitute for inorganic mineral was similar to that of increasing the amount of vitamin E. Both the vitamin E and organic mineral groups had better performance than the one of organic Se group. ③ There were no interactions between diet and sex on pork quality traits; however, there was a difference in fresh pork color between boars and gilts ( P ＜0.05 ) . The results can be concluded that high supplementation of vitamin E or using organic iron, copper, zinc can improve prok quality.

Abstract:As the improving of living conditions, peoples gradually concern about the food safety. Pork is one of the most important foods in our daily meals, so its quality affect on our health directly. But pork quality is a very complicated concept and system, which is influenced by many aspects. Based on lots of materials, this paper reviewed the research progress in and abroad from these aspects below, freshness, color, drop loss, shear force, Water-Hold Capacity (WHC), Infiltrated Fat (IMF), protein and water. And then it talked about the state of recent researches respectively and analyzed the problems during former studies. Although there are a lot of reports about pork quality, most of them only concerned about one aspect but not multi-aspects. So how to build the multi-aspects pork evaluation system will be the main problem needed to resolve in future.

Abstract:Pork is one of the main meats consumed by people, and its nutritional value is closely related to human health. The lipid deposition and composition of pork not only affect the sensory quality but also determine the nutritional quality of pork. The lipids in pork include triglycerides（TAG） and a small amount of cholesterol and phospholipids. TAG are the main lipids in skeletal muscle fat, which is divided into intermuscular fat and intramuscular fat（IMF）. In addition to TAG, IMF also contains phospholipids,which are important factors affecting pork flavour. There are three types of fatty acids in TAG: saturated fatty acids（SFA）, monounsaturated fatty acids（MUFA）, and polyunsaturated fatty acids（PUFA）. PUFA,such as n-3 PUFA, have a beneficial effect on health, including the regulation of whole-body energy metabolism and protection against cardiovascular diseases. Therefore, regulating lipid deposition,especially the fatty acid composition, in pork is important for improving the nutritional quality for human health. Notably, several strategies, such as breeding, environmental control, and the nutritional regulation of lipid composition and deposition in pork, have been studied. More recently, faecal transplantation, molecular design breeding and non-coding RNA have been studied and proven useful for regulating lipid deposition in pigs. In this review, we mainly summarized and discussed the research findings to date on the lipid composition and regulation mechanisms of fatty acid deposition and provide new insights into efficient means of improving the lipid composition and lipo-nutritional quality of pork.
Effects of Dietary Supplementation of Wet Fermented Feed on Quality and Antioxidant Property of Fattening Pork

Abstract:This research was designed to explore the effects of adding 10% wet fermented feed to fattening pork quality and antioxidant properties. In this study, ternary pig research subjects added 10% wet fermentation feed (including fermented soybean meal, fermented corn and fermented bran) to the diet of the experimental group. After the pigs came out of the pen, the buttocks were selected for experimentation. The relevant indicator changes in the control group and the experimental group were analyzed and the sensory assessment was performed. The results showed that the drip loss rate of the 10% wet fermentation feed group was significantly reduced by 29.80% compared with the control group (P<0.05). There was no significant difference in shear force (P>0.05). The meat redness value (a*) and yellowness value (b*) of the experimental group were significantly increased (P<0.05), which indicated that the flesh color of the group was more plump and vivid. There were significant differences in antioxidant capacity between the two groups (P<0.05). Among them, the total antioxidant capacity (T-AOC), superoxide dismutase (SOD) activity and glutathione peroxidase (GSH-PX) activity in the experimental group were significantly higher than those in the control group (P<0.05), with 51.90%, 37.51% and 29.63% respectively. malonaldehyde (MDA) content was significantly reduced by 10.73% (P<0.05), and protein free carbonyl content was not significantly reduced (P>0.05). The results of the electronic nose experiment showed that the flavor difference between the two groups of meat samples was larger, and the meat sample flavor of the experimental group was more abundant. The sensory evaluation results showed that the experimental group was significantly higher than the control group in terms of total score, flavor, juiciness and overall evaluation (P<0.05). In conclusion, the addition of 10% wet fermented feed in the diet could improve the water holding capacity and antioxidant properties, thereby improving pork quality.

Abstract:The effect of fermented feed without antibiotics microorganism and with antibiotics added to corn-soybean type basal diets on the quality of fat organ in pork and subsurface was studied.The control group was fed on basal diets.The antibiotics group was fed on basal diets with 15% additive aureomycin.The fermented feed group was fed on basal diets with 15%～20% fermented feed.The experiment was conducted in stages of 25～60 kg and 60～100 kg.The results showed that adding fermented feed to diets could significantly increase the content of fat in muscle and decrease the contents of linoleic acid,polyunsaturated fatty acid and the ratio of n-6:n-3,increase the contents of α-linolenic acid and monounsaturated fatty acid,decrease TBARS value.

Effect of Compound Organic Trace Minerals on Growth Performance,serum Indexes and Micromineral Excretion in Fattening Pigs

Abstract:To investigate the effects of low-dose compound organic trace minerals (Fe, Cu, Mn and Zn) on growth performance, serum trace mineral contents, antioxidative indexes and fecal trace element excretion in fattening pigs with different trace element feeding backgrounds,a total of 192 Duroc×Landrace×Large White pigs with similar body mass [(61.2±4.4)kg] and identical parity were selected and divided into four groups with four replicates each (12 pigs per pen) in a 2×2 factorial design.The first factor was feeding background(backgroundⅠ:commercial dosages of inorganic Fe, Cu, Mn, Zn were fed to suckling pigs, nursery pigs and growing pigs;background O: organic Fe, Cu, Mn, Zn at 50%, 30% and 20% commercial recommended levels were fed to suckling pigs, nursery pigs and growing pigs, respectively), while the second factor was dietary treatment [inorganic trace mineral (ITM): basal diet+inorganic Fe, Cu, Mn, Zn of 100, 20, 25, 100 mg/kg, respectively;organic trace mineral (OTM): basal diet+organic Fe, Cu, Mn, Zn of 20, 4, 5, 20 mg/kg, respectively). The feeding period lasted for 82 days,with 38 days for early finishing stage and 44 days for late finishing stage.The results showed that: 1)The feeding background and dietary treatment both had no significant influences on the growth performance of fattening pigs (P>0.05) during the whole period. 2) The OTM diet increased the Zn content (P<0.05) and Mn-superoxide dismutase (SOD) activity (P=0.05) in the serum of fattening pigs at early finishing stage, and decreased the malonaldehyde (MDA) content (P=0.05). 3) The OTM diet significantly reduced the Fe, Mn, Cu and Zn emissions (P<0.05) in manure during whole phases; while the background O significantly decreased the Fe emission at the early finishing stage and Fe,Cu,Zn emissions at the late finishing stage in manure (P<0.05).The background O and OTM had an interaction (P<0.05) on reducing Fe content in fattening pig manure at the late finishing stage.The above results indicate that the addition of low-dose organic trace minerals in the basal diet can significantly reduce the heavy metal emissions in the fattening pig manure,and improve antioxidant level of growing-fattening pigs without affecting its growth performance; while feeding background at early growth stages can also significantly influence the heavy metal emissions in fattening pigs.

Abstract:In the last decade studies with the specific objective of improving the sensory quality of pork have come to the forefront of meat research, likely a result of consumer complaints of blandness levelled against modern lean meat and the frequent reference to the more strongly flavored meat that was available years ago. Regardless of the lack of scientific evidence to substantiate or refute these claims, the consumer perception of deteriorated quality is real and presents a challenge for the pork industry. Hence, this review has been undertaken with the aim of providing insight into potential sources of amelioration of the eating quality of fresh pork. Existing works are collated, encompassing animal effects, such as, species, breed, muscle type, fat, and ultimate pH, as well as environmental influences, including pre-slaughter conditions of and housing and exercise, and post-slaughter parameters, such as, electrical stimulation, chilling, and cooking.

Effect of Vitamin D,vitamin E and Magnesium on Pork Quality

Abstract:A total of 60 crossbred pigs were used to study effects of vitamin D(VD),vitamin E(VE) and magnesium(Mg) on pork quality.The results showed: ① Longissimus muscle(LM) b values(yellowness) were not(P0.05) affected by supplementing VD,VE,Mg,VD/Mg and VE/Mg.However,the LM from pigs fed VD,VE,Mg,VD/Mg and VE/Mg were less(P0.05) light and redder(P0.05)(lower L* values and higher a* values,respectively).The L* values for LM were the lowest(P0.05) in feeding VE/Mg group;whereas,the a* values for LM were the highest(P0.05) in feeding VE group.The meat from pigs fed VE,Mg and VE/Mg had a more vivid color(P0.05).② Compared with VD,VE and Mg had the notable effects on LM pH after slaughter at 45 min,14 h and 24 h.Over time,the majority of effects on LM pH occurred in the VE/Mg group followed by the groups of Mg,VE and VD.③ Drip loss for LM from pigs fed VD was higher(P0.05) than those for the LM from pigs fed VE and Mg,whereas,the effects of VD,VE and Mg on share force were opposite.Lower marbling score for LM occurred(P0.05) in VD group followed by the Mg group.VE and Mg could enhance the chroma values for the LM;whereas,VD was suitable for improving the meat tenderness.

Abstract:Pork is an affordable protein source with higher nutrient density. In recent years, meat quality in pigs is getting increasing attention, which has a direct impact on the economic value of pork. Dietary amino acids play a key role in pig production, not only regulating pig growth and health, but also contributing significantly to meat quality. In this review, we discuss the effect of skeletal muscle composition on meat quality. Importantly, we summarize the levels of essential amino acids (EAAs), such as lysine, methionine, threonine, tryptophan and branched-chain amino acids (BCAAs), in diets for finishing pigs to improve meat quality. The beneficial effects of flavor amino acids on meat quality, including flavor production, muscle fiber-type composition and intramuscular fat deposition, are further systematically summarized. We also focus on the impact of dietary amino acid levels on environmental benefits, although research in this area is still limited. Considering that the previously established EAA requirements are based on the principle of maximizing growth rate and feed conversion, this review will provide new insights into the effects of dietary amino acids on aspects of meat quality and highlight the current gaps to promote future research.

Effect of maternal nutrition on offspring growth, development and meat quality in pigs.

Abstract:Based on recent research work in our laboratory,effects of maternal nutrition on progeny carcass quality and the mechanism of progeny compensation in pigs were analyzed.Influences of low maternal nutrition level during pregnancy and lactation on growth performance,organ development,and meat quality for different stages of offspring were expounded to testify whether the maternal nutritional effects and compensatory growth effects existed in the offspring followed-up growth process.Meanwhile,the influence of low maternal nutrition on progeny blood biochemical indicators,hormone level and gene expression were observed in these experiments.Metabolic and molecular mechanism of the maternal effects on progeny growth performance and meat quality traits were analyzed and discussed in this article as new measures for meat quality improvement in pigs.

Abstract:Corn distillers dried grains with soluble(corn DDGS) is a co-product produced by dry mill ethanol plant.It's a valuable source of crude protein,fat,available phosphorus and vitamin for swine.Recent years,with the development of processing technology,the quantity and quality of corn DDGS increases and has increasingly been included in swine diets.However,the high fat content in corn DDGS,especially unsaturated fatty acid,has detrimental effect on pork quality,especially fat quality and fatty acid composition in growing-finishing pigs.The paper reviews the nutritional value of corn DDGS and effect of corn DDGS supplementation on pork quality.
