Abstract:Non-thermal processing technology has shown unparalleled advantages in improving food quality and safety, making it develop rapidly in recent years and become a new research hotspot in food processing. Food irradiation, a typical non-thermal food processing technology, has the advantages of rapid, efficient, low-cost, and pollution-free, which has received extensive attention and gradually become one of the widely accepted modern food processing methods. Especially in recent years, with the deepening of related research, food irradiation has made remarkable research progress in food preservation, sterilization, and degradation of harmful substances, showing a broad application prospect. In view of this, this article introduces the mechanism and characteristics of food irradiation technology in detail, reviews its related research on improving food nutritional value and reducing harmful substances, and illustrates to clarify the application potential of food irradiation technology in improving food quality and safety. The development direction of food irradiation technology was further discussed to provide theoretical guidance and reference for its further development and application in the food industry.

The influence of γ-irradiation and the better technology on the drying for apple slice

Abstract:The technology of drying by hot-air has some defects such as the low efficiency and the inferior quality of the dried products, which becomes the obstacle for its further application. A new technology is introduced, that is, to dry bio-products by hot-air after they are pretreated with irradiation. Experiments are made to study the influence of different dosage of irradiation on the rate of dehydration of irradiated apples. A conclusion is reached that the more the dosage is, the greater the rate of dehydration of apple is. On the basis of quadratic orthogonal rotary combination experiments, the regression equations were established in which the influence of dosage of irradiation, temperature of hot air, thickness of the apple slice on the qualities of appearance, rate of dehydration, VC content of dried apple and the ability of absorbing moisture. Optimal combinations of the three factors on the four objects were respectively obtained. By means of multiple objective nonlinear programming method, the better combination of the three factors on the multiple objects were also obtained.

Abstract:Food irradiation is over 100 years old, with the original patent for X-ray treatment of foods being issued in early 1905, 20 years after there discovery by W. C. Roentgen in 1885. Since then, food irradiation technology has become one of the most extensively studied food processing technologies in the history of mankind. Unfortunately, it is the one of the most misunderstood technologies with the result that there are rampant misunderstandings of the core technology, the ideal applications, and how to use it effectively to derive the maximum benefits. There are a number of books, book chapters, and review articles that provide overviews of this technology [25, 32, 36, 39]. Over the last decade or so, the technology has come into greater focus because many of the other pathogen intervention technologies have been unable to provide sustainable solutions on how to address pathogen contamination in foods. The uniqueness of food irradiation is that this technology is a non-thermal food processing technology, which unto itself is a clear high-value differentiator from other competing technologies.

Decontamination of Barley Seedling Powder and Effect on Its Nutritional Components by Irradiation

Abstract:Decontamination of barley seedling powder by 60 Co γ -ray and effect on its nutritional components were studied. Results showed that irradiation was very effective in killing microorganisms in barley seedling powder. The population of microorganisms, such as aerobic bacterial count, moulds and coliform bacteria, decreased with increase of irradiation dose. The D_ 10 values for aerobic bacterial count, moulds and coliform bacteria were 3.18 kGy, 4.55 kGy and 2.32 kGy, respectively. Barley seedling powder, irradiated with 11 kGy, did not have obvious changes in main chemical components, including protein, total polysaccharide, free amino acid, crude fiber, while vitamin E reduced by 38%. It may be concluded that the treatment of irradiation sterilization can increase barley seedling powder quality-guarantee period much longer. The suggested optimal doses are from 7.5 to 11 kGy.

Abstract:This review will look at the irradiation-based food preservation method. A country’s ability to successfully adopt new technologies hinges on the availability of a suitable infrastructure. Irradiation has a low operating cost and utilizes minimal energy, but it requires significant capital investments and a minimum output volume to be economical. Over a specific threshold concentration, off tastes might develop and organoleptic changes can occur. At low quantities, however, not all pathogens and their poisons will be eliminated. Radiation therapy can be difficult to standardize because the results vary. How effectively the therapy works depends on several factors, including the commodity and cultivar, radiation dose, level of maturity, physiological status, temperature and environment before and after treatment, pre-and post-harvest treatments, and the sensitivity of the microorganisms to be controlled. Tolerance varies with the maturity level. Depending on public perception, regulatory actions, economics, and logistics associated with specific conditions, irradiation as a method of reducing foodborne diseases will be used. Not all foods can be irradiated in all situations due to technological and financial restrictions. Irradiation cannot indefinitely extend the shelf life of fresh food because the enzymes in foods like fruits, vegetables, fish, shellfish, meat, and poultry are still active and resistant to even high-dose radiation. If foods are exposed to too much radiation, they may lose flavor, especially if they are high in fat. Irradiated grains and legumes must be packaged carefully to prevent insect infestations because irradiation does not leave behind any harmful residue that would deter insects. Irradiation produces very little chemical changes in food, and the changes are similar to those by other preservation methods like heat. The application of irradiation technology will benefit farmers whose post-harvest grain lost value as a result of food spoilage, consumers who experience health problems as a result of virus exposure, exporters of such cereals, and ultimately the government, which gains economically from the hard cash generated. It will also benefit firms that package food, extension agents, technical assistants, and researchers. Radiation processing of food has been approved by various international statutory bodies and organizations to ensure ‘Food Security & Safety’, and overcome ‘Technical barrier to International Trade’ and currently is being practiced in more than 60 countries worldwide.
Effects of ~(60)Co Gamma-Irradiation as Pretreatment on Quality of Rice

Abstract:A new technology of pretreating late short-grain rice by gamma-irradiation and then drying the rice with hot-air was introduced in this work.It was found by microstructure observation that the starch granules in the irradiated rice endosperm were tore up more with increasing the irradiation dose.The milling and eating quality of the irradiated rice were studied.Results show that the irradiation pretreatment leads no decrease to rice milling quality;on the contrary,it leads the improvement of rice eating quality evidently.Further more,for the eating quality improvement,the technics of irradiation before drying is more effective than the technics of irradiation after drying.A quadratic rotation-orthogonal composite experimental design,with three variables(irradiation dose,drying temperature,and initial moisture content,at five levels) and three response functions(apparent amylose content,gel consistency,and gelatinization temperature) were employed to study the effects of the three variables on the response functions.The three response functions significantly correlate with these variables by second order polynomials consisting of linear,quadratic and interaction terms.The optimum levels of the three variables for obtaining optimum magnitude(maximum or minimum) of the three response functions are obtained.The response surfaces analysis,with X and Y axes representing two of the most influential variables while keeping another variable constant at their optimum point,are presented to aid in visualizing the effect of the variables.

Abstract:Few studies on the irradiation effects on dehydration characteristics and quality of dried-product ha ve been reported in the past three decades. This study focuses on drying characteristics of bio-products by hot-air after they are pretreated by gamma irradiation. Experiments were made to study the influence of different irradiation dose, air temperature, slice thickness of apple on the dehydration rate, and appearance quality (L-values), vitamin C content, and the rehydration ratio of dried apple. A conclusion is reached that the three factors of irradiation dose, hot-air temperature, and initial slice thickness significantly affected the four indices of appearance quality (L-values), vitamin C content, dehydration rate and rehydration ratio.

Abstract:Agricultural food commodities are highly susceptible to contamination by fungi and mycotoxins, which cause great economic losses and threaten public health. New technologies such as gamma ray irradiation, ultraviolet radiation, electron beam irradiation, microwave irradiation, pulsed light, pulsed electric fields, plasma, ozone, etc. can solve the problem of fungal and mycotoxin contamination which cannot be effectively solved by traditional food processing methods. This paper summarizes recent advancements in emerging food decontamination technologies used to control various fungi and their associated toxin contamination in food. It discusses the problems and challenges faced by the various methods currently used to control mycotoxins, looks forward to the new trends in the development of mycotoxin degradation methods in the future food industry, and proposes new research directions.

Abstract:Summaryγ irradiation is known to be effective when used to reduce post‐harvest losses and control micro‐organisms and insects in stored products. It has been commonly used for processing dehydrated vegetables and fruits. However, few studies have been reported on the use of a γ irradiation treatment combined with a drying process. This study focuses on improving current technology as well as introducing a new technology by which bioproducts, dried by hot‐air, are pretreated with γ irradiation. Experiments were done to study the influence of irradiation dose air temperature and slice thickness on the dehydration rate and internal temperature of irradiated potato. These three factors were found to affect the dehydration rate and internal temperature of the potato, with an increase in irradiation dose, increasing the rate of dehydration and the internal temperature. The greater the dose, the lower the vitamin C content and the lower the rehydration ratio. The L‐colour values of the dried‐product under low dose irradiation were greater than for non‐irradiation, and at >6 kGy, the higher the dose, the lower the L‐value.

Abstract:The trend for healthy food and lifestyle has enabled consumers to include fruits and vegetables in their daily diet. Fruits and vegetables are vulnerable to rapid deterioration while improper management of fresh produce also adds to unfruitful disposal causing environmental pollution and economic problems resultantly. Also, the consumer refusal of chemical additives and losses of the food bioactive compounds due to thermal processing has attracted the attention of the research fraternity to look for better alternatives. Ionizing radiation treatment of fresh produce is a non-thermal approach that holds the potential to stretch the shelf-life of fruits and vegetables with numerous benefits over thermal approaches. Ionizing irradiation is a physical method of food preservation apt for microbial inactivation, shelf-life improvement, and sprout-inhibition without nutritional losses and chemical residues. Ionizing irradiation treatment of horticultural produce involves exposure to radiations from sources viz. X-rays, gamma-rays, electron beam. Reviewing the performances of ionizing radiation for perishable food systems, the current article has been summarized to provide an insight into the concept, application, its effects, together with a market outlook covering consumer attitude and pertaining legislations. Furthermore, it also provides a gleam into the future prospective of the technology to nurture the agro-food realm.

Abstract:Food sterilization is one of the indispensable steps in food processing. This Paper reviewed the development of new sterilization technologies and equipments in food industry, which mainly introduced the development, characteristics and application of 5 new sterilization technologies, including ultra-high pressure sterilization, microwave sterilization, high-voltage pulsed electric field sterilization, radiation sterilization and pulse light sterilization. These new sterilization technologies, especially cold sterilization, can better preserve the quality and flavor of foods and ensure food safety.

Abstract:Food irradiation is a process whereby food is exposed to a carefully measured amount of intense radiant energy, called ionizing radiation. The ionizing radiation has the ability to break the chemical bonds. Irradiation can kill harmful bacteria and other microorganisms in meat, poultry and seafood. Moreover, it can disinfest spices, extend shelf-life of fresh fruits and vegetables, and control sprouting of tubers and bulbs such as potatoes and onions; thus, can be used as a food preservation method. It is a safe process that has been approved by the U.S. Food and Drug Administration (FDA), and more than 60 of other national food control authorities for many types of foods. There are three types of ionizing radiation that can be potentially used in food irradiation including; Gamma rays from Cesium 137 (137Cs) or Cobalt 60 (60Co), X-rays generated from machine sources operating at or below energy level of 5 MeV; and Electrons generated from machine sources operating at or below an energy level of 10 MeV (also known as E-Beam). During the radiation processing of foods, the doses are generally measured in kilograys (kGy = 1,000 Gy). The DNA is very sensitive to irradiation; therefore, food irradiation cause damage to the microbial cells through direct or indirect action on the DNA molecules. However, the accurate dose of food irradiation process is essential to ensure food preservation and safety. This review aimed to provide information on the principles of food irradiation, effect of irradiation on food contaminating microorganisms, and some limitations to its greater use as food preservation method in Nigeria.

Abstract:Food irradiation is a technology to treat foods with ionizing radiation such as gamma rays and electron beams to improve the safety and extends the shelf life of foods by reducing or eliminating microorganisms and insects and by prevention of sprouting. The food irradiated with ionizing radiation is named as “irradiated food.” Ionizing radiation can treat packaged foods and fresh and/or frozen products and effectively and uniformly treat all portions of foods. Many international organizations have approved the safety and usefulness of food irradiation. Food irradiation is an environmentally friendly technology without usage of chemicals and contributes to the solution of food security and food sanitary problems especially reducing postharvest losses of foods and controlling foodborne illness, as an alternative to chemical fumigation with ethylene oxide and methyl bromide gasses. Japan has a 50-year history of food irradiation research. It was legally authorized to irradiate potatoes for preventing germination in 1972, and since 1974 irradiated potatoes have been shipped from the Shihorocho Agricultural Cooperative Association in Hokkaido. Recently, commercial food irradiation has increased significantly in Asia; however, Japan is now far behind other countries, and it is called a “food irradiation underdeveloped country.” To break through the current backward situation, this chapter introduces the latest and objective fact related to food irradiation based on scientific data.

Abstract:The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years, focusing on a variety of technological approaches such as antimicrobial photodynamic therapy based on nanotechnology, electromagnetic radiation sterilization based on radiation technology, and antimicrobial peptides based on biomolecules. We also discuss the preservation mechanism and the application of the different methods to specific categories of products. We evaluated their advantages and limitations in the food industry, describing their development prospects. In addition, as microorganisms are the main causes of food spoilage, our review also has reference significance for clinical antibacterial treatment.

Abstract:We reviewed the principles,main characteristics and development processes of food irradiation technology and its application in bee products.And we presented the regulations and standards of food irradiation technology,particularly evaluation of radiated food safety and detection method of irradiated food.Bee products are functional foods of highly biological activities and thermolability.Choosing appropriate irradiation conditions,bee products could be thoroughly sterilized,also could keep the original compositions and functions in a longer period.At present,domestic and international research on detection methods for radiated bee products is still in its infancy.In order to improve the safety of irradiated bee products,the research on the radiation detection of bee products is particularly urgent.

Abstract:Food irradiation provides an effective means for controlling the physiological processes causing spoilage and for eradication of microbes, insect pests and parasites. Irradiation has multipurpose role in food processing and is applicable for a variety of food commodities such as fruits, vegetables, cereals, pulses, spices, meat, poultry and seafood. Several years of scientific research, evaluation, and testing have resulted in regulatory approvals for the food irradiation technology in a number of countries. Commercial application of this technology has greatly advanced in recent years following the approval of the health authorities of different countries. This review summarises the applications of irradiation technology in controlling pathogens and food spoilage, and the development of irradiation treatment worldwide.
