Antioxidant Activity,Phenolic Compounds Content of Fifteen Strains of Proso Millet Pericarp

Abstract:Fifteen proso millet varieties with different color of seed pericarp were employed to study the contents and antioxidant activities of phenolic compounds in their seed pericarp.Results showed as follows:in fifteen proso millet varieties,total phenolic compounds contents in 1g whole pericarp flour ranged from 9.357 3 to 19.092 9 mg gallic acid,while most of the phenolic compounds in pericarp were in the bound form.Total flavonoid contents in 1g whole pericarp flour ranged from 0.247 9 to 0.682 4 mg rutin;The darker the proso millet pericarp was,the higher the free phenolic contents and the free flavonoid contents were.In conclusion,the pericarp of proso millet had complicated phenolic compounds and possessed antioxidant activities.
