Abstract:Pumpkin seed oil (PSO), a rich source of nutrients, is extracted from the seeds of different pumpkin varieties for food and medicines. This article aims to provide an evidence-based review of the literature and to explore the extraction technologies, nutritional properties, and biological activity of PSO. From previous literature, PSO contains a large proportion of unsaturated fatty acids, with linoleic acid as the main component, and an amount of tocopherol, phytosterol, and phenolic acids. Some differences in the yield, composition, and physicochemical properties of PSO can be associated with the pumpkin's cultivars and the extraction methods. Some novel technologies involved in supercritical fluid extraction, enzyme-assisted aqueous extraction, and ultrasound-assisted extraction have been replacing the conventional technologies gradually as promising methods for the safe, non-polluting, and effective recovery of PSO. This healthy vegetable oil was reported by several in vitro and in vivo studies to have potential protective roles in oxidative stress, inflammation, cancer, and cardiovascular diseases. © 2023 Society of Chemical Industry.

Abstract:This paper introduces the present productive state of seeding-pumpkin. We found a conclusion that seeding-pumpkin contain higher oil, comparing with content of other oil crops. Both the nutrition value and digestibility of pumpkin oil were similar as soybean and peanuts oil, superior to rape oil. So seeding-pumpkin was regarded as a new oil crops, it also discusses new objective of pumpkin with high oil content.

Abstract:The pumpkin belongs to the family of Cucurbitaceae, is a well-known edible plant that has been frequently used as functional food or herbal medicine. Pumpkins contain rich unsaturated fatty acids, phytoestrogens and vitamins E in their seeds that have potential pharmaceutical, nutraceutical, and cosmeceutical properties. Information regarding their nutritional components and therapeutic properties of pumpkin seeds has expanded dynamically in the recent years and this review focus on the three main components of pumpkin seeds that described before. Several types of unsaturated fatty acids are the dominant component in pumpkin seeds which can play a role in the disease prevention and promote health. Pumpkin seeds also contain the important phytoestrogen compounds, i.e., secoisolariciresinol and lariciresinol that have estrogenic-like effect such as preventing hyperlipidemia and osteoporosis for menopausal women. Phytoestrogens in pumpkin seeds also could be related to a reduced hormone-dependent tumor. Pumpkin seeds are rich in vitamin E contents as an emerging free radical scavenger, anti-aging and antioxidant such as a-tocopherol and g-tocopherol. Findings of these studies prove that patents field for the innovation product of pumpkin seeds holds promise for the future along with their immense nutraceutical properties.

Abstract:Pumpkin seed oil is a by-product, abundant in nutrients and bioactive components that promote several health benefits. This study aimed to compare chemical compositions, antioxidant, and pharmacological activities of pumpkin seed oils extracted from Cucurbita moschata Duch. Ex Poir. (PSO1) and Cucurbita moschata (Japanese pumpkin) (PSO2) by aqueous enzymatic extraction. An enzyme mixture consisting of pectinase, cellulase, and protease (1:1:1) was used in the enzymatic extraction process. Fatty acid composition of the oils was determined using fatty acid methyl ester/gas chromatographic-mass spectrometry. Antioxidant activity assays were measured by using stable free radical diphenylpicrylhydrazyl, radical cation 2,2′-azinobis-(3-ethylbenzothiazoline-6-sulfonate, ferric reducing/antioxidant power, and ferric thiocyanate assay. Inhibition of enzymes involving skin aging and whitening process was investigated. Linoleic acid was a major component of all pumpkin seed oils. Additionally, there was also a significant amount of oleic acid, palmitic acid, and stearic acid detected. PSO2 possessed the highest antioxidant activities compared to PSO1 and commercial pumpkin seed oils (COM1 and COM2). Both PSO1 and PSO2 exhibited higher inhibitory effects on hyaluronidase, collagenase, and tyrosinase than the commercials. Therefore, aqueous enzymatic extraction could yield pumpkin seed oils with higher antioxidant, anti-aging, and whitening activities. This is beneficial for further pharmacological studies and can be used as a functional food for skin benefits.

Abstract:The present work evaluated the influence of extraction method and species on the physicochemical properties, oxidative stability, fatty acid profiles, and rheological behaviour of pumpkin seed oils. The seeds of two pumpkin species (Cucurbita argyrosperma Huber [CA] and Cucurbita moschata Duchesne [CM]) were obtained from small-scale pumpkin processors in Yucatán, Mexico. The oils were extracted by two methods: mechanical pressing (MP) and organic solvent (OS). It was found that the oil extraction method, species, and their interaction significantly influenced the physicochemical properties and oxidative stability of the seed oils. The composition and fatty acid content of the oils were comparable to those of other pumpkin species. The oil yield from the MP method was lower than that from the OS method. Also, CA oil extracted by MP had an olive-green colour as compared to the reddish-yellow colour of CM oil, and also had a higher oxidative stability. The viscosity of CA oil extracted by MP was superior to that extracted by OS. Also, CA oil had a higher content of iron, monounsaturated fatty acids (MUFA), stearic acid, and oleic acid as well as viscosity in comparison to CM oil, although CM oil had a higher content of linoleic acid. This information can be used to obtain more stable pumpkin oils with enhanced properties that would benefit both producers and processors.

Abstract:The goal of the current work was to assess the nutritional profile and phytochemical properties of cucurbit (Cucurbita maxima L.) seeds, seed oils and oil extraction by-products (e.g., seed-cakes). Our results suggest a high nutritional value for both cucurbit seeds and cucurbit cake, while γ-tocopherol was the richest compound, with traces of α, β and δ-tocopherol compounds also detected. Regarding the free sugars composition, there were recorded significant statistical differences between seeds and cucurbit seed-cake, although sucrose content was the highest for both matrices (1.97 and 2.9 g/100 g dw, respectively) followed by trehalose (0.26 and 0.25 g/100 g dw, respectively), fructose (0.20 and 0.34 g/100 g dw, respectively) and glucose (0.21 and 0.19 g/100 g dw, respectively). In terms of organic acids, oxalic was the only compound detected in seed cake (0.006 g/100 g dw), while in seeds only traces of oxalic and malic acid were detected. In relation to fatty acid composition, linolenic acid was the most abundant compound in both seeds and seed-cake (43.9% and 41.5%, respectively), while oleic acid (37.0% and 36.3%, respectively), palmitic acid (12.2% and 14.0%, respectively) and stearic acid (4.83% and 5.46%, respectively) were detected in lesser amounts. Moreover, polyunsaturated fatty acids (PUFA) were the major fatty acids class (44.5% and 42.3% in seeds and seed cake, respectively) compared to monounsaturated fatty acids (MUFA; 37.4% and 36.7% in seeds and seed cake, respectively) and saturated fatty acids (SFA; 18.1% and 21.0% in seeds and seed cake, respectively) which were detected in lower amounts. Furthermore, the tested extracts did not present any cytotoxic or hepatoxic activity at the maximum tested concentration (GI50 > 400 μg/mL), while seed oils presented satisfactory antimicrobial properties with inhibitory activity against the studied bacterial strains and fungi. Our findings provide valuable knowledge regarding the exploitation of pumpkin seeds and seed by-products as valuable natural sources of nutrients and phytochemicals in the food industry sector within the context of a circular economy.

Abstract:Pumpkin is a dicotyledonous seed vegetable with many nutritional components, including pumpkin polysaccharides, active proteins, essential amino acids, carotenoids, minerals and so on. It has been received considerable attentions in recent years because of the nutritional and health protective value of these components. Pumpkin is a traditional vegetable in many countries and is believed to have health benefits. In the past decades, many researches have focused on scientific evaluation of the characterization of pumpkin principal nutritional components and preparation as food or medicine functional components. Pumpkin extracts used for antidiabetic, antihypertensive, antitumor, immunomodulation, antibacterial, antihypercholesterolemia, intestinal antiparasitia, antiinflammation, and antalgic purposes have been reported. Pumpkin has tremendous potential as a raw material in the manufacture of natural health foods, but the contribution of pumpkin to minerals, vitamins and proteins in human nutrition is limited due to the presence of antinutrients. Although technologies such as germination and fermentation could be used to improve pumpkin’s nutritional value and reduce these anti-nutritional substances, it is still important to identify and analyze the effect of functional components and antinutrients in pumpkin for further development of pumpkin-based health foods. Abstract:Dietary plants and herbal preparations have been traditionally used as medicine in developing countries and obtained a resurgence of use in the United States and Europe. Research carried out in last few decades has validated several such claims of use of traditional medicine plants. Popularity of pumpkin in various systems of traditional medicine for several ailments (antidiabetic, antihypertensive, antitumor, immunomodulation, antibacterial, antihypercholesterolemia, intestinal antiparasitia, antiinflammation, antalgic) focused the investigators' attention on this plant. Considerable evidence from several epidemiological studies concerning bioactivities leads have stimulated a number of animal model, cell culture studies and clinical trials designed to test this pharmacological actions. In addition, it was found that technologies such as germination and fermentation could reduce antinutritional materials and affect the pharmacological activities of pumpkin. This review will focus on the main medicinal properties and technologies of pumpkin, and point out areas for future research to further elucidate mechanisms whereby this compound may reduce disease risk.

Abstract:Pumpkin ( Cucurbita moschata Duch.) seeds of KH ( Kashi Harit ) cultivar were chosen for oil extraction by three different methods cold press extraction (CPE), soxhlet extraction (SE) and mechanical shaking extraction (MSE) method. SE method showed highest oil yield (38.03%) followed by CPE (33.25%) and MSE (26.36%) methods. Peroxide and acid value were found to be least in the CPE pumpkin seed oil (PSO) whereas oil stability index was highest in this oil. PSO is a good source of essential fatty acids as it contains significant amount (p<0.05) of linoleic acid in the range of 44.38-44.47%. PSO also contains major sterols like campesterol, stigmasterol, β-sitosterol, ∆ 7,22,25 -Stigmastratrienol, ∆ 7,25 -Stigmastadienol, ∆ 5 -Avenasterol, etc. CPE oil showed higher values for tocopherols (α, β, γ and δ) (4.01, 0.77, 12.51 and 6.42 mg/100g, respectively), β-carotene (3.86 mg/kg), TPC (19.26 mg GAE/g), DPPH (46.35%) and squalene (352.63 mg/100g). Thermal analysis of all oil samples revealed that no endothermic reaction occurred beyond 27.5°C and remains at liquid state at room temperature. 1 HNMR fingerprinting of PSO was carried out to determine the composition of major and minor oil constituents like mono and di-glycerides, aliphatic chains and fatty acids.

Abstract:Pumpkin (Cucurbita spp.) has received considerable attention in recent years because of the nutritional and health-protective value of seed oil. The nutritional composition of pumpkin native to central Italy, locally known as "Berrettina" (Cucurbita maxima L.), was evaluated. In particular, the lipid fraction of seed oil was characterized, and the triacylglycerol (TAG) was thoroughly studied by using a stereospecific procedure to obtain the intrapositional fatty acid composition of the three sn-positions of the glycerol backbone of TAG. Moreover, alkaline hydrolysis was carried out to study the main components of the unsaponifiable fraction, i.e., sterols and alcohols. It was observed that monounsaturated fatty acids and polyunsaturated fatty acids were the most abundant (41.7% and 37.2%, respectively) in Berrettina pumpkin seed oil, with high content of oleic and linoleic acid (41.4% and 37.0%, respectively). The main sterols of Berrettina pumpkin seed oil were Δ7,22,25-stigmastatrienol, Δ7,25-stigmastadienol, and spinasterol; with regard to the alcoholic fraction, triterpenic compounds were more abundant than aliphatic compounds (63.2% vs. 36.8%). The obtained data are useful to evaluate pumpkin seed oil from a nutritional point of view. The oil obtained from the seed could be used as a preservative and as a functional ingredient in different areas, e.g., cosmetics, foods, and nutraceuticals.

Abstract:Nowadays, agricultural waste byproducts are exploited in the food industry rather than discarded. Pumpkin is one of the most significant vegetable crops that is widely consumed in farmland and certain urban regions. The current study was designed to measure the phytochemical constituents, food application, health benefits, and toxicity of pumpkin and pumpkin byproducts. Pumpkins and pumpkin byproducts (seeds, leaf, and skin/peel) can be utilized as functional ingredients. Different parts of the pumpkin contain bioactive compounds including carotenoids, lutein, zeaxanthin, vitamin E, ascorbic acid, phytosterols, selenium, and linoleic acid. Pumpkin is used in various food sectors as a functional food, including baking, beverages, meat, and dairy industries. Furthermore, the leaves and pulp of the pumpkin are used to produce soups, purees, jams, and pies. Different parts of pumpkins have several health benefits such as antidiabetic, antioxidant, anticancer, and anti-inflammatory effects. Therefore, this review paper elaborates on the pumpkins and pumpkin byproducts that can be used to develop food products and may be valuable against various diseases.

Abstract:A versatile and popular Cucurbitaceous vegetable, pumpkin has recently gained much attention because of its variety of phytochemicals and health advantages. Pumpkins are a type of winter squash, traditionally with large, spherical, orange fruits and a highly nutrient food. Pumpkin by-products comprise various parts, such as seeds, peels, and pulp residues, with their bioactive composition and many potential benefits poorly explored by the food industry. Pumpkin and their by-products contain a wide range of phytochemicals, including carotenoids, polyphenols, tocopherols, vitamins, minerals, and dietary fibers. Abstract:The chapter reviews the main bioactive components of pumpkin seed oil (PSO) and their biological activity such as, cholesterol-lowering, cancer alleviation, antimicrobial, antiinflammatory and antidiabetic properties. PSO is extracted from pumpkins of the Cucurbitaceae family, notably from Cucurbita maxima, Cucurbita pepo, and Cucurbita moschata as the most cultivated species in mild and subtropical regions of the globe. With 40%–50% oil content based on the extraction method, PSO is naturally rich in a number of health-promoting bioactive compounds such as fatty acids, tocopherols, carotenoids, phenolic compounds, phytosterols, squalene, and minerals. The four major fatty acids in PSO represent linoleic acid (predominant), oleic, palmitic, and stearic acid. For minerals, Mg, K, Ca, Na, Se, and Fe represent the dominant elements in PSO. PSO samples screened against several standard bacterial, fungal, and viral strains showed high antimicrobial activity, it also showed good antiinflammatory and antidiabetic properties. With these features combined, greater attention needs to be paid to PSO as a functional food and therapeutic ingredient.

Abstract:This study investigated the effects of three extraction methods, including cold pressing (CP), microwave pretreatment pressing (MP), and supercritical fluid extraction (SFE), on the yield, physicochemical properties, bioactive compounds content, and antioxidant properties of pumpkin seed oil (PSO). Furthermore, the correlation between bioactive compounds and the antioxidant properties of PSO was determined. The results revealed that the yield of PSO extracted using the three methods was in the order of SFE > MP > CP. Additionally, the PSO generated by SFE showed the highest unsaturated fatty acid content, followed by MP and CP. Additionally, MP-PSO exhibited the highest acid value and saponification value, while SFE-PSO displayed the highest moisture content, peroxide value, and iodine value. Moreover, the PSO generated by MP demonstrated superior antioxidant properties compared to that of PSOs from CP and SFE in the oxidation induction, DPPH, FRAP, and ABTS tests. Finally, the correlation analysis revealed that specific types of bioactive compounds, such as β-sitosterol and γ-tocopherol, were highly correlated with the antioxidant properties of PSOs. Consequently, this study provides comprehensive knowledge regarding PSO extraction, physicochemical properties, bioactive compound extraction, and the correlated antioxidant properties.

Abstract:In recent years, with the accelerated pace of life and the high incidence of chronic diseases, the demand for functional food has been increasingly urgent. Under such circumstances, germinated edible foods have attracted much attention because of their unique physiological effects. This review mainly summarizes recent studies about the physiological and biochemical changes during edible seeds germination. Further, the different germination treatments and the enrichment of γ-amino butyric acid are discussed. Finally, the applications of germinated seeds in the food sector are mentioned. Germination of edible seeds is a complex process of material transformation, which not only improves the nutritional value of raw seeds, but also accumulates a wide variety of bioactive compounds with health benefits. As a potential source of numerous functional ingredients, germinated edible foods have attracted widespread attention for its physiological benefits. Therefore, germinated grain and legume seeds are expected to be functional dietary supplements with a variety of health benefits and medicinal values.
