Abstract:Large quantities of organic waste water was produced during the processing of soybean products.The direct discharge of the waste water not only polluted the environment but wasted the resources,since many kinds of nutrient substances were contained in it.The article introduced the research progress on extracting functional matter from waste water in soy product processing,such as soybean oligosaccharides,soybean whey protein,soybean isoflavone,soybean saponin,soybean polysaccharide,and etc,which provided academic and practical base for the comprehensive utilization of waste water from soybean processing.

Abstract:Biogenic amines (BAs) are a class of bioactive organics produced during the fermentation of soy sauce. A high concentration of BAs may bring about serious physiological and toxicological effects on the human body. In this study, we reported an optimized process to produce soy sauce with lower BA concentration and found the contents of putrescine, cadaverine and histamine increased with the increase of fermentation temperature but decreased with the increase of NaCl concentration. The final content of total BAs with improved fermentation was 105.56 +/- 0.13 mg/L, which was reduced by 89.11% compared to traditional brewing. Besides, the pilot production test was performed to verify the optimized conditions and physicochemical indexes were measured to better understand the change principle of the chemical compounds. Taken together, we present an effective process to inhibit the formation of BAs while ensuring that characteristic nutrients are not lost.
Efficacy and Mechanisms of Rotating Algal Biofilm System in Remediation of Soy Sauce Wastewater

Abstract:This study investigated the efficacy of the rotating algal biofilm (RAB) for treating soy sauce wastewater (SW) and its related treatment mechanisms. The RAB system demonstrated superior nutrient removal (chemical oxygen demand, ammonium nitrogen, total nitrogen, and phosphorus for 92 %, 94 %, 91 %, and 82 %, respectively) and biofilm productivity (14 g m- 2 d-1) at optimized 5-day harvest time and 2-day hydraulic retention time. This was mainly attributed to the synergistic interactions within the algae-fungi (Apiotrichum)-bacteria (Acinetobacter and Rhizobia) consortium, which effectively assimilated certain extracellular polymeric substances into biomass to enhance algal biofilm growth. Increased algal productivity notably improved protein and essential amino acid contents in the biomass, suggesting a potential for animal feed applications. This study not only demonstrates a sustainable approach for managing SW but also provides insight into the nutrient removal and biomass conversion, offering a viable strategy for large-scale applications in nutrient recovery and wastewater treatment.

Abstract:Soy sauce is one of the most common condiments in East Asian cuisines. Its manufacturing process generates a large amount of organic-rich soy sauce wastewater, which is difficult to treat through traditional processes. In this study, Spirulina NCU-Sm was used to treat soy sauce wastewater and simultaneously produce value-added biomass. The results showed that NCU-Sm grew well in 100% (undiluted) raw soy sauce wastewater (RSW). The maximum biomass yield of NCU-Sm reached 1.984 g/L, and the removal efficiencies of NH4+-N, TN, COD, chromaticity, and salinity in RSW reached 93.86, 81.76, 84.08, 40.93, and 63.08%, respectively. High COD removal efficiency in 100% RSW proved NCU-Sm grew in mixotrophic mode. pH and light spectrum, two major factors affecting growth of soy sauce wastewater-grown Spirulina NCU-Sm, were further studied. When the initial pH of RSW was adjusted to 8, NCU-Sm biomass yield was increased by 11.11%, and the contents of protein, chlorophyll-a, and carotenoid were increased by 8.69, 37.14, 40.40%, and reached 65.57%, 7.57 and 2.78 mg/g, respectively. The removal efficiencies of NH4+-N, TN, and chromaticity in RSW with pH 8 were improved to 99.34, 88.29, 43.18%, respectively. Red light enhanced the photosynthetic oxygen release efficiency of NCU-Sm and increased the carotenoid content of NCU-Sm by 117.95%, reaching 5.95 mg/g. Blue light was adverse to the growth and reduced the protein content of NCU-Sm but significantly increased its chlorophyll-a content to up to 10.99 mg/g. These results suggest that cultivation of Spirulina in soy sauce wastewater serves dual roles in soy sauce wastewater treatment, as well as value-added algal biomass (such as high-quality protein and natural pigments raw materials) production.

Abstract:In this study, the gradient purification process of "pretreatment+ultrafiltration+nanofiltration" was applied to the treatment of asparagus canning wastewater to solve the problems of environmental pollution and resource waste of food processing wastewater. Firstly, sodium carbonate was selected as the best flocculant, and the pretreatment process was optimized (adding ratio 0.3 %, time 2 h, temperature 55 °C). After treatment, the contents of inorganic elements, COD Mn and turbidity in the wastewater were significantly reduced. After analyzing the flux decay rate of different ultrafiltration membranes, the change of wastewater component content and the single factor experiment of membrane flux, the optimal ultrafiltration membrane aperture (20,000 Da) was selected and the ultrafiltration process was optimized (pressure difference 0.10 MPa, time 30 min, temperature 60 °C), and the main types of pollutants on the super surface were preliminarily analyzed by infrared spectroscopy. The effects of different conditions on ultrafiltration rate were clarified by rate kinetics. And the kinetic model of saponin recovery in ultrafiltration process was established, the model has strongly fitting ( R 2 > 0.9). Finally, the purified wastewater was successfully obtained by nanofiltration treatment. The combined process has great application potential in the gradient purification of wastewater and resource reuse, and can provide theoretical guidance for the harmless treatment of food industry wastewater in the future.

Abstract:The food processing industry is one of the world's largest consumers of potable water. Agri-food wastewater systems consume about 70% of the world's fresh water and cause at least 80% of deforestation . Food wastewater is characterized by complex composition, a wide range of pollutants, and fluctuating water quality, which can cause huge environmental pollution problems if discharged directly. In recent years, food wastewater has attracted considerable attention as it is considered to have great prospects for resource recovery and reuse due to its rich residues of nutrients and low levels of harmful substances. This review explored and compared the sources and characteristics of different types of food wastewater and methods of wastewater treatment . Particular attention was paid to the different methods of resource recovery and reuse of food wastewater. The diversity of raw materials in the food industry leads to different compositional characteristics of wastewater, which determine the choice and efficiency of wastewater treatment methods. Physicochemical methods, and biological methods alone or in combination have been used for the efficient treatment of food wastewater. Current approaches for recycling and reuse of food wastewater include culture substrates, agricultural irrigation, and bio-organic fertilizers, recovery of high-value products such as proteins, lipids, biopolymers, and bioenergy to alleviate the energy crisis. Food wastewater is a promising substrate for resource recovery and reuse, and its valorization meets the current international policy requirements regarding food waste and environment protection, follows the development trend of the food industry, and is also conducive to energy conservation, emission reduction, and economic development. However, more innovative biotechnologies are necessary to advance the effectiveness of food wastewater treatment and the extent of resource recovery and valorization.

Abstract:At least 80,000 tonnes of the condiments were produced in Malaysia and estimated to increase in volume by 5% by the following year. In addition, one tonne of soy sauce generates about 7–9 tonnes of high strength wastewater. Aerobic granules are known to be regular, smooth, and nearly round in shape with excellent settling ability. They also have dense and strong microbial structure and high biomass retention with the ability to withstand high organic loading. These advantages encouraged recent development of aerobic granulation technology to treat high strength wastewaters such as soy sauce wastewater. Therefore, an efficient Granular Sequencing Batch Reactor (GSBR) treatment system ought to be in place to treat the high strength wastewater. The metagenome sequencing analysis revealed an abundance of microbial diversity accommodating in aerobic granular sludge cultivated with soy sauce wastewater. Existence of 77.52% exopolysaccharides substances (EPS)-producing bacteria such as Pseudomonas and Bacteroides which had the capability in biodegraded waste in wastewater biological treatment were found in aerobic granular sludge. Thus, the performances of aerobic granular sludge in biodegraded organic and nutrient from soy sauce wastewater were in consequence to the bacterial community that occupied in aerobic granules.
Enhancing Biomass Yield, Nutrient Removal, and Decolorization from Soy Sauce Wastewater Using an Algae-Fungus Consortium

Abstract:Soy sauce wastewater (SW), owing to its high levels of nutrients and chromaticity, may cause serious eutro-phication if discharged directly into natural water bodies. Microalgae and fungi have great potential for removing nutrients and chromaticity from wastewater and producing value-added biomass. We determined the most robust algal strain, which was isolated from local water bodies, screened in SW, and identified using 18S rRNA gene sequencing analysis. Subsequently, the algal strain and fungal strain, Penicillium sp. were mono-or co -cultured in SW at different inoculum amounts or ratios for achieving maximum biomass yield, nutrient removal, and decolorization from SW. The results suggested that locally isolated NCU-183 (Nanchang University-183) was the most robust algal strain of the four candidates and was identified as Chlorella pyrenoidosa. In monoculture, the maximum biomass yield (2.2 g L-1) and nutrient removal rates (564.7, 20.2, 22.3, and 3.3 mg L-1 d-1 for chemical oxygen demand (COD), ammonium nitrogen (NH4+-N), total nitrogen (TN), and total phosphorus (TP), respectively) were obtained from algal cultivation with an initial dry weight of 0.25 g L-1 (i.e., 5 x 106 cells mL-1) in 100 % SW; the maximum decolorization rate (55.0 PCU d-1) was attained from fungal cultivation at an inoculum density of 103 spores mL-1. Compared to monoculture, the constructed algae-fungus consortium showed higher biomass yield (2.8 g L-1), nutrient removal rates (616.7, 22.8, 25.0, and 4.1 mg L-1 d-1 for COD, NH4+-N, TN, and TP, respectively), and decolorization rate (61.0 PCU d-1) in 100 % SW at an inoculum ratio of algal cells to fungal spores of 5000:1. The consortium biomass with higher protein content (65.3 %) had great potential as a value-added feedstock for animal/fish feed production as compared to the protein-rich C. pyrenoidosa biomass (62.6 %). In conclusion, the algae-fungus consortium showed practical utility for SW remediation and value-added biomass production.

Abstract:It was difficult to treat antibiotic wastewater which originated from the production of raw material with semi-synthesis method.Through the analysis for sewage discharge effluent node in production process,and with different disposal method based on the nature of different sewages,the products and solvents were recovered,and the discharge volume and emission of COD were significantly reduced.Besides,combined with original wastewater treatment process and by using Fenton oxygenation and membrane bioreactor technology,it has been realized to reach the goal that COD ≤ 120 mg.

Abstract:A coupled aerobic-anaerobic process was designed for treating organic wastewater from tomato paste processing.The process was based on a combined reactor of suspended bed and fixed bed to couple aerobic and anaerobic treatment.The removal rates of COD_ Cr , BOD_5 and TP were 93.08%, 95.81% and 83.60% respectively.The pH reached 7.70.The effluent quality was not only up to the GB 18918—2002 Chinese National Second-Grade Effluent Standard, but also fit for recycling to tomato paste processing.After the coupled aerobic-anaerobic process was run for one year, the residual sludge was not discharged.
Disposal and Utilization Measures of the Wastewater Produced in the Tomato Paste Production in Xinjiang

Abstract:Relying on the dominant location and industrial policies,considerable rapid development in industry of the tomato paste production has been making in Xinjiang recently,Xinjiang has become the main tomato paste production in China, sharing about 90 percent of the national total production and sales.At the same time, however, the wastewater produced in the tomato paste production has also been increasing significantly.Large amount untreated effluent discharged into local waters directly resulted in serious environmental issue. Located inland,Xinjiang is a region suffering much from shortage of water resources. In this case,how to make fully and effectively use of the wastewater is of urgent for mitigation of the tension condition of water resources and promotion sustainable development of regional economy and environment. This paper analyzed the characteristics of the wastewater produced in the tomato paste production and the present situation of the wastewater discharged in Xinjiang. In consideration of the national conditions and the distribution of enterprises of the tomato paste production, a utilization method of the wastewater produced in the tomato production, i.e. a method using land treatment was introduced in this paper, in order to be advantageous to the environmental protection and re-utilization of wastewater.

Abstract:Dairy wastewater is rich in soluble organic matters, such as protein, lactose, milk fat and so on, with a high COD value. Because the organic matters in dairy wastewater can be degraded by microorganism, the wastewater can be readily treated with biological treatment alone, or sometimes with the aid of physicochemical treatment. In this paper, the source and the characteristics of the wastewater are introduced, as well as some physicochemical and biological treatments. In addition, the water reclamation and protein recovery from diary wastewater is also reviewed.

Abstract:Microalgal-biofilm-based wastewater treatment refers to a microalgae-dominated biofilm community in non-axenic systems, in which co-existing bacteria and microbial extracellular polymeric substances (EPS) are crucial for the formation of algal biofilm. However, algae-bacteria consortium biofilm-forming mechanism has rarely been studied in wastewaters including soy sauce wastewater (SW). In this study, we conducted algal biofilm cultivation in raw SW (RSW) and sterilized SW (SSW), and determined the characteristics of algal biofilm and its EPS in the two SW treatments. The results demonstrated that the co-existing bacteria in the algal biofilm system significantly enhanced attached biomass and nutrient removal from RSW, compared to SSW without bacteria. The enhancement may be attributed to EPS excreted by dominated Acinetobacter and Comamonas (both Proteobacteria) in the co-existing bacteria community. The algae-bacteria consortium from algal biofilm in RSW excreted the contents of relatively high tightly bound EPS (TB-EPS) and its proteins (TB-PN), which were conducive to forming the algal biofilm. The high TB-EPS content was related to soluble microbial by-product-like substances (mainly proteins), and its high TB-PN content was mainly caused by the increases in hydrophobic glycine and serine contents for stable biofilm formation. Based on these results, we enhanced our understanding of the formation mechanism of algal biofilm in SW remediation, which provided the theoretical basis for biofilm formation by algae-bacteria synergism.

Comprehensive Reviews in Food Science and Food Safety

Abstract:The industrial processing water of fruit and vegetables has raised serious environmental concerns due to the presence of many important bioactive compounds being disposed in the wastewater. Bioactive compounds have great potential for the food industry to optimize their process and to recover these compounds in order to develop value-added products and to reduce environmental impacts. However, to achieve this goal, some challenges need to be addressed such as safety assurance, technology request, product regulations, cost effectiveness, and customer factors. Therefore, this review aims to summarize the recent advances of bioactive compounds recovery and the current challenges in wastewater from fruit and vegetable processing industry, including fruit and beverage, soybean by-products, starch and edible oil industry. Moreover, future direction for novel and green technology of bioactive compounds recovery are discussed, and a prospect of bioactive compounds reuse and sustainable development is proposed.
