Abstract:This work was undertaken to evaluate whether it is possible to determine the variety of a Chinese wine on the basis of its volatile compounds, and to investigate if discrimination models could be developed with the experimental wines that could be used for the commercial ones. A headspace solid-phase microextraction gas chromatographic (HS-SPME-GC) procedure was used to determine the volatile compounds and a blind analysis based on Ac/Ais (peak area of volatile compound/peak area of internal standard) was carried out for statistical purposes. One way analysis of variance (ANOVA), principal component analysis (PCA) and stepwise linear discriminant analysis (SLDA) were used to process data and to develop discriminant models. Only 11 peaks enabled to differentiate and classify the experimental wines. SLDA allowed 100% recognition ability for three grape varieties, 100% prediction ability for Cabernet Sauvignon and Cabernet Gernischt wines, but only 92.31% for Merlot wines. A more valid and robust way was to use the PCA scores to do the discriminant analysis. When we performed SLDA this way, 100% recognition ability and 100% prediction ability were obtained. At last, 11 peaks which selected by SLDA from raw analysis set had been identified. When we demonstrated the models using commercial wines, the models showed 100% recognition ability for the wines collected directly from winery and without ageing, but only 65% for the others. Therefore, the varietal factor was currently discredited as a differentiating parameter for commercial wines in China. Nevertheless, this method could be applied as a screening tool and as a complement to other methods for grape base liquors which do not need ageing and blending procedures.
Analysis Of Aroma Compounds Of Three Mono-Variety Dry Red Wines With Le-Gc-Ms

Abstract:Aroma compounds of three mono-variety dry red wines of 2005 from the Eastern region of Helan Mountain were analyzed by Liquid Extraction-Gas Chromatography-Mass Spectrometry (LE-GC-MS) to evaluate this method on separation of different wines. Aroma compounds were extracted by dichloromethane. After being concentrated by rotary evaporator, collected dichloromethane was analyzed by GC-MS. Only 34 compounds were identified in sample wines, including 9 esters, 10 alcohols, 8 acids, 4 ketones, 2 sulfur compounds and I nitrogen. PCA results showed that Cabernet Sauvignon, Merlot and Cabernet Gernischt wines can be clearly separated by scores of the first two PCs. Ethyl lactate, isobutyl alcohol, 3-methylthio-1-propanol, 2-methyl tetrahydro-thiophene, N-(3-methylbutyl)-acetamide and dihydro 2(3H)-furanone were the characteristic aroma compounds of sample wines.

Abstract:The complex aroma compounds affected the wine quality characteristic and quantification analysis of the aroma compounds could provide the theory basis for the wine original production.The chemical constituents of the volatile compounds of the dry red wine of Cabernet Sauvignon from Changli original producing area were extracted by solvent micro extraction and analyzed by GC/MS,meanwhile their relative contents were determined by peak area normalization method.43 compounds were separated,and 35 of them were identified.These constituents represented 99.06% of the total peak areas.The RSD of 35 aroma compositions were all lower than 10.Through the experimental proof the solvent micro extraction method has high accuracy,and analysis result is reliable,which can reflect grape wine aroma compounds composition truly,and is suitable for the grape wine aroma compounds analysis.In addition,the main characteristic of aroma components in wine from Changli in 2005 were phenylethyl alcohol,butanedioic acid,monoethyl ester,3-methyl-1-butanol,butanedioic acid diethyl ester,1-propanol,and 3-(methylthio)S etc.
Aroma Evaluation of Dry Red Wine with Active Odorants

Abstract:s Solid phase micro-extraction and gas chromatography-mass spectrometry(SPME-GC-MS) were used to detect aroma compounds in Merlot wines from four good wine producing districts in China. Fifty-seven aroma compounds were quantified, and Odor Active Value(OAV) analysis showed that thirty ones were active. According to aroma descriptions of eleven impact odorants which were active in all sample wines, the collective aroma characters of Chinese Merlot red wine were complex. Its main flavor is that of some tropical and temperate fruits, such as banana, pineapple, green apple, pear and strawberry, along with lactic flavor from Malo-lactic fermentation. It also had some traits of processed fruits, Muscat and floral pollen. Moreover, different districts gave Merlot wine distinct characters. Changli wine had strong fruity aroma, obvious nuances of lactic and nut, and other traits; Helanshan wine gave weak fusel flavor, and some fruity of lemon; Shacheng wine smelled weak fusel flavor, along with green grass, and some fruity of raspberry and violet; Manasi wine had odor of unpleasant fatty acids and phenol due to its overmuch fatty acids and volatile phenol. Finally, results of sensory analysis confirmed the aroma prediction from active odorants of sample wines.

Abstract:Chemical constituents of the volatile compounds from the Cabernet sauvignon,Cabernet gernischt,Chardonnay varieties of wine-grape berries from xiangning County Shanxi province of Loess Plateau region were analyzed and compared by headspace solid-phase micro-extraction(HS-SPME) followed by gas chromatography-mass spectrometry(GC-MS).The result showed 24,20,23 and 27 compounds from Cabernet sauvignon of slope land,Cabernet sauvignon of flat land,Cabernet gernischt and Chardonnay varieties grapes.These volatile compounds belong to five classes whereby their contents decrease in descending order: alcohol,aldehyde,acid and cyclic olefin;as far as single compound concerned,the contents of 1-butanol,hexanal,acetic acid and hexanoic acid were higher.Besides,terrains of vineyards could indeed affect the composition and content of the volatile compounds,although their aromatic profiles were basically consistent.

Abstract:Aroma components in 8804 fruit and dry red wine were extracted by solvent extraction and analyzed by GC/MS.Their relative contents were determined by area normalization.Results showed 29 kinds of aroma components were identified in the grape.According to the relative content,the first five components were dibutyl phthalate(17.77%);1,2-Benzenedicarboxylic acid.diisooctyl ester(8.25%);2-furaldehyde(7.10%);3,7-Octadiene-2,6-diol,2,6-dimethyl-.(5.53%) and oleic acid(4.50%),respectively;31 kinds of aroma components were identified in the dry red wine,and the first five components of wine were Phenylethyl Alcohol(26.78%);Thiophene,tetrahydro-2-methyl-(12.04%);Octanoic acid,ethyl ester(7.02%);1,3-Butanediol(5.20%);Hexanoic acid,ethyl ester(4.55%),respectively.

Abstract:In order to evaluate the influence of terroir and variety on wine aroma, the compositions and levels of aromatic compounds of Cabernet Sauvignon and Merlot wines from Helan mountain of Ningxia and Shacheng of Hebei were investigated by the means of solid phase micro extraction combined with gas-chromatography-mass-spectrometry (GC-MS). The results showed that both Cabernet Sauvignon and Merlot wines from Shacheng region were characterized by 3-methylthio-1-propanol, and wines of Helan mountains region were characterized by 1-pentanol, 4-methyl-1-pentanol and 3-methyl-1-pentanol. The wines from Shacheng region contained higher level of esters than those from Helan mountain. Principal component analysis indicated that the influence of regional factor on wine aromatic components was greater than that of varietial factor.
Aroma Components in Cabernet Sauvignon Dry Red Wine Fermented with Three Species of Yeast Strains

Abstract:The aromatic components in Cabernet Sauvignon dry red wine fermented with DHS-1, BM45 and Angel yeast were compared using liquid-liquid extraction method and gas chromatography-mass spectrometry (GC-MS). Results showed that the three wines had the same aroma component. However, the relative contents of 15 aroma components had significant difference among the three wins. So S. cerevisiae has an important influence on the aroma characteristics of Cabernet Sauvignon dry wine.

Aroma Compounds Of Merlot Wine From Changli District (China)

Abstract:The volatile compositions of young red wines from Vitis vinifera cv. Merlot in Changli County (China), have been studied by GC-MS. HS-SPME (headspace solid-phase microextraction) was used to extract and concentrate the volatile and semi-volatile compounds in wine. This is the first time that an HS-SPME-GC-MS analysis has been reported in wines made from Merlot in Changli County. The quantitative chemical study has shown 60 volatile compounds. Higher alcohols make up about 83.751% of the total level of the volatiles and this group is composed mainly by isobutyl alcohol, 2-phenyl-ethanol, isopentyl alcohol and 2,3-butanediol. Acetates and ethyl esters make up 15.532% of the total volatile, of which acetates make up 0.867% and ethyl esters 14.665%. Fatty acids made up 0.572% of the total volatiles. Among compounds with small quantity, terpenes, norisoprenoid and D-limonene have concentrations above their respective olfactive perception thresholds, so they play significant role in wine aroma.

Abstract:A rapid and simple method was developed for determination of aroma components in red wine(Cabernet Sauvignon) by head space solid-phase micro-extraction(HS-SPME) coupled to capillary gas chromatography-mass spectrometry(GC-MS).Extraction time,extraction temperature and concentration of salt were optimized.In the experiment,applying the SPME and GC-MS method to analyse aroma components,70 kind of compounds were separated and 65 of them were identified according to GC-MS analysis and have reported aroma components.Their relative contents were determined by peak area normalization method,identified aroma constituents represent 98.46% of total peak area.

Abstract:HS-SPME/GC-MS and aroma descriptive analysis were used to gain insights into the volatile and sensory details of 99 red wine samples collected from four varieties in five regions. The general volatile fingerprints of Cabernet Sauvignon and Merlot wine samples in Xinjiang and Ningxia regions were similar, even though chemometric models could not discriminate between them. The main drivers of the diversity were secondary metabolites of grape such as terpenes, benzene-derivatives, and ketones. Fermentation-derivatives (esters and alcohols) were also responsible for region and variety-related differences in wines. Analysis of volatile compounds also showed that the primary factor accounting for diversity in wines in this study was region rather than variety. These results highlight the sensory attributes and volatiles of different regions and varieties, and provide a quantitative basis for screening for differential metabolites and potential markers in wines.

Abstract:The flavoring compositions of two different dry red wines(Cabernet Sauvignon and Merlo) produced in different areas (Tianjin & Ningxia) were analyzed by solid phase microextraction coupled with gas-chromatography-mass-spectrometric (SPME-GC-MS). 75 kinds of flavoring compositions in total were identified in comparison with the mass spectra in the NIST library, 21 of which mainly contributed to wine aroma were quantified. Sensory constitutes analysis and cluster analysis were applied to them respectively to evaluate the effects of wine variety and production palce on wine flavor. The results indicated that wines of different variety or of different production place had its individual properties and minor main flavoring compositions could be used to distinguish the difference between wine products and to identify their varieties and production places.

Abstract:In order to investigate effects of carbonic maceration on aroma components of Vitis quinquangularis Rehd.dry red wine,the aromatic compounds in wines made by traditional technology and carbonic maceration were extracted by liquid-liquid extraction method assistanted by instruments and analyzed by gas chromatography-mass spectrometry(GC-MS).Results indicated that totally 48 kinds of aroma compounds were identified,among which alcohols,esters,acids and phenols were major volatile flavor components and 32 kinds were in traditional wine while 41 in carbonic maceration wine.Comparing with the wine made by traditional technology,while contents of acids decreased slightly in wine made by carbonic maceration,contents of other compounds such as alcohols,esters and phenols,and total content of aroma compounds increased in different level.On the whole,the quality of aroma in wine made by carbonic maceration was better than that in wine made by traditional method.

Abstract:The aromatic composition and key odorants of young red wines produced from Cabernet Sauvignon, Cabernet Franc, and Cabernet Gernischet wines were compared and the reasons for the difference in their aromatic compounds were discussed. Forty-three odorants were detected in Cabernet Sauvignon and Cabernet Franc wines compared to 50 in Cabernet Gernischet wine. Quantitatively, acids formed the most abundant group in the aromatic components of the 3 wines, followed by alcohols and esters. Compared to Cabernet Sauvignon and Cabernet Franc wines, the profiles of alcohols and esters for Cabernet Gernischet wine were more diverse. Monoterpenes, namely, 4-terpinenol, citronellol, and nerol, were found solely in Cabernet Gernischet wine. Only 10 compounds, namely, ethyl octanoate, ethyl hexanoate, isoamyl acetate, ethyl butyrate, ss-damascenone, ethyl decanoate, isoamyl alcohol, acetic acid, octanoic acid, and phenylethyl acetate, were always present in the 3 wines at concentrations higher than their threshold values. However, ethyl octanoate, ethyl hexanoate, and isoamyl acetate were found to jointly contribute to 97%, 98.9%, and 99% of the global aroma of Cabernet Sauvignon, Cabernet Franc, and Cabernet Gernischet wines, respectively. This result showed that the aroma indistinguishableness of the 3 wines was mainly due to the dominance of the fruity notes exerted by the ethylesters and, to a lesser extent, to the contribution of varietal aromatic compounds to the global aroma of the wines.

Abstract:Aroma is an important aspect of wine quality and consumer appreciation. The volatile organic compounds (VOCs) and olfactory profiles of Merlot dry red wines from the Eastern Foothill of Helan Mountain (EFHM) were analyzed using gas chromatography-mass spectrometry and quantitative descriptive analysis. The results showed that Merlot wines from EFHM were characterized by intense flavors of drupe and tropical fruits compared with the Gansu region. Nineteen VOCs were defined as essential compounds contributing to the aroma characteristics of the Merlot wines through gas chromatography–olfactometry/mass spectrometry and odor activity value analysis. Predominantly, geranyl isovalerate, which contributed to the herbal odors of the Merlot wines, was detected in the grape wine of EFHM for the first time. The addition experiment revealed that geranyl isovalerate influenced the aroma quality of wine by increasing herbal odors and enhancing the olfactory intensities of tropical fruits. These results are helpful for further understanding the aroma of Merlot wines from EFHM and improving the quality of wine aromas.

Abstract:The detection of volatile constituents in grape wine by IM-SPME-GC-MS had been developed and the extraction conditions and chromatography conditions were optimized.Furthermore,the method was used to determine the volatile constituents in cabernet sauvignon grape wine made in Helanshan Ningxia.The method was simple,rapid,and accurate and especially suitable for the detection of components of strong volatility in grape wine.More than 20 kinds of volatile constituents were isolated from grape wine and identified as follows(the main constituents): isoamyl alcohol,ethyl acetate,D,L-2,3-butanediol,internal compensation-butanediol,diethyl succinate,acetic acid,2-ethyl hydracrylic acid,and phenethyl alcohol etc.(Tran.by YUE Yang)

Abstract:The aroma components from dry red wines of Cabernet Sauvignon produced in 2002 from three areas,Xichang of Sichuan Province,Yangling of Shaanxi Province,and Lantian of Shaanxi Province were analyzed by GC/MS.54 aroma components were detected from 3 wines totaaly,including 3 ketones,11 alcohols,and 18 esters,17 aroma components were detected from the wine from Yanling,22 from Lantian,and 31 from Xichang.Alcohols were the main components in three wines,accounting for 95.48% in the wine from Lantian,65.99% from Yangling,and 42.73% from Xichang.The next were esters,accountion for 37.00% in the wine from Xichang,33.87% from Yangling,and 4.22% from Lantian.Wines from Lantian and Yangling had the highest contents of phenylethanol,accounting for 56.46% and 46.31% respectively.Whereas,wine from Xichang had the highest content of 1-pentanol.Among the esters,wines from Yangling and Lantian had the highest contents of ethyl succinate,18.1% and 2.96% respectively.Whereas wine from Xichang had the highest content of diisooctyl phthalate(18.94%).In addition,other components with low contents were also found from the three wines,such as terpenes,furfurans,and alkanes.

Abstract:This study investigated the contribution of vola-tile compounds to the overall aroma of Cabernet Sauvignon wines from Changli County (China). Wine samples were collected from vintages from 2000 to 2005. Volatile compounds were ex-tracted by PDMS solid-phase micro-extraction fi- bers and identified by Gas Chromatography-Ma- ss Spectrometry (GC-MS). A total of 65 volatile compounds were identified and quantified, in-cluding higher alcohols, ethyl and acetate esters, and fatty acids. According to their odor active values (OA-Vs), 21 volatile compounds were con- sidered to be the powerful impact odorants of Cabernet Sauvignon wines from Changli. Odor descriptions of impact volatiles suggested Cab-ernet Sauvignon red wines from Changli County as having a complex aroma, which included not only pleasant floral and fruity odors, but also cheese, clove flavors, and grassy and smoky aromas.
