Abstract:The market demand is directly affected by food freshness and the post-harvest spoilage of raw fresh foods,which causes incalculable economic losses and therefore motivates the development of preservation technologies.High voltage electric field (HVEF) is a safe and environment-friendly technology for food processing.HVEF is one of the most promising technologies to preserve raw fresh foods that requires very small energy consumption with no heat effect and only a small temperature increase in the processed foods and causes little effect on the quality of the foods themselves.This manuscript outlines the basic principle of HVEF and provides a systematic elucidation of its mechanism for preserving fruits and vegetables,aquatic products and meat products with respect to membrane potential,enzyme activities and microstructure.Furthermore,future research prospects are discussed.

Abstract:Fruit tissue is heavily damaged during fresh-cut processing, which induces a series of physiological disorders such as softening, browning and microbial infection. Rapid deterioration and short shelf-life are the major hurdle to the commercial marketing of fresh-cut fruit. This paper introduces physiological and biochemical characteristics and summarizes key biotechnologies for fresh-cut processed fruit to provide practical and theoretical basis for the development of fresh-cut fruit industry.

Abstract:The effects of glycerol monolaurate（GML）,lactic acid and the compound on preservation of chilled pork under 4℃ were studied using color（redness）,total viable count,TVB-N,coliforms MPN value,the rate of water loss and pH value.The results indicated that the GML compounded with lactic acid had a good antibacterial action and water holding capacity,it could inhibit microbial growth and reduce the juice loss of meat effectively,extend the shelf life chilled pork.The best combination of the compound was 0.5% GML（70%）and 1% lactic acid.

Abstract:Low temperature environments can effectively inhibit the growth of microorganisms in raw meat products due to the reduced activity of enzymes, which is conducive to the long-term preservation of foodstuffs. At present, mainstream technologies include ultrasonic-assisted freezing, high-voltage electric and magnetic field-assisted freezing, and liquid nitrogen freezing technologies are widely used in the freezing process. In this paper, the freezing processes and devices for the fresh meat products were reviewed. The formation mechanism of ice crystals during the freezing of meat products was analyzed. The influence of the shape and size of ice crystals on their quality was studied. Also, the effect of different freezing processes and freezing device on the quality of meat products was studied. The key technologies regarding cold chain storage and transportation of meat products should move in the direction of intelligence, information, efficiency, and the unmanned. Finally, the key processes and device regarding freezing, cold chain, storage, and transportation were planned for the future development.

Abstract:Cryogenic freezing is widely used in the preservation of fresh seafood, the quality of seafood is significantly affected by the form of ice crystals during the frozen storage. The formation mechanism of ice crystals in the frozen process was explained, and the effect of ice crystals on a series of nutritional indicators was described such as protein, fat, moisture, color and texture in order to provide the theoretical reference for searching the ice crystals form mechanism and improving the quality of frozen seafood in a better way.

Abstract:Quality changes in grass carp during superchilled storage at -2C were evaluated in terms of the microstructure, drip loss, pH value, total volatile basic nitrogen (TVB-N), trimethylamine nitrogen (TMA-N), water holding capacity (WHC), salt soluble protein (SSP) and Ca2+-ATPase activity by comparison with frozen storage at -18C. The microstructure of grass carp muscle was seriously damaged with the exhibition of myofibril shrinkage and breakage under frozen storage. Both TVB-N and TMA-N contents in superchilled grass carp were controlled under the acceptable values within 21 days of storage. Significant lower drip loss and higher WHC under superchilled storage was observed compared with frozen storage. Superchilling attenuated the denaturation of myofibrillar protein and the damage of muscle structure associated with freezing, where extractability of SSP and Ca2+-ATPase activity were reduced. A shelf life of 21 days for superchilled grass carp could be estimated by the overall quality evaluation.PRACTICAL APPLICATIONSTraditional frozen fish can be extended for a long time. However, large amounts of water frozen out lead to serious texture change and drip loss after thawing. This study evaluated the potential of superchilling technology to keep the quality of grass carp with little damage caused by freezing storage. The results confirmed that superchilled grass carp could maintain the fresh quality up to 3 weeks. The present study provided a possible application of superchilling for medium period storage of freshwater fish.

Abstract:Aquatic product, known as one of the good resources for white meat, has been widely accepted by the consumers due to its high protein, low fat, especially low cholesterol. With the fast development of living standards around the world, the consumer demands for high quality, nutrition, safety and freshness of fishery food are increasing. Thus, high efficient preservation technologies for aquatic products become particularly important. Superchilling is one of the controlled-temperature preservation technologies for seafood. Aquatic products can be kept in better quality under superchilling conditions. This review introduced the principle and development of superchilling process, mainly focusing on research progresses and technical difficulties of superchilling. The growth mechanism of ice crystals and the feasibility of application of computational fluid dynamics in analyzing the temperatures variation and ice crystals during superchilling progress were also discussed, which will provide theoretical foundation for its improvement and application.

Abstract:Reducing the initial bacteria number from meat and extending its shelf life are crucial factors for ensuring product safety and enhancing economic benefits for enterprises. Currently, controlling enzyme activity and the microbial survival environment is a common approach to reducing the rate of deterioration in raw meat materials, thereby achieving the goal of bacteria reduction during storage and preservation. This review summarizes the commonly used technologies for reducing bacteria in meat, including slightly acidic electrolyzed water (SAEW), organic acids, ozone (O3), ultrasound, irradiation, ultraviolet (UV), cold plasma, high-pressure processing (HPP), and biological bacterial reduction agents. This review outlines the mechanisms and main features of these technologies for reducing bacteria in meat processing. Additionally, it discusses the status of these technologies in meat storage and preservation applications while analyzing associated problems and proposing solutions. The aim is to provide valuable references for research on meat preservation technology.

Abstract:Vacuum freeze-drying technology is the best way to preserve the quality of food at present, which can maintain the nutrition and flavor of food to the maximum extent. It has the characteristics of being green, convenient, and nutritious. Abstract:The nutrients present in food are not only prone to a series of physicochemical reactions but also provide conditions for the growth and reproduction of foodborne microorganisms. In recent years, many innovative methods from different fields have been introduced into food preservation, which extends the shelf life while maximizing the preservation of the original ingredients and properties of food. In this field, there is a lack of a systematic summary of new technologies emerging. In view of this, we overview the innovative methods applied to the field of food preservation in recent 3 years, focusing on a variety of technological approaches such as antimicrobial photodynamic therapy based on nanotechnology, electromagnetic radiation sterilization based on radiation technology, and antimicrobial peptides based on biomolecules. We also discuss the preservation mechanism and the application of the different methods to specific categories of products. We evaluated their advantages and limitations in the food industry, describing their development prospects. In addition, as microorganisms are the main causes of food spoilage, our review also has reference significance for clinical antibacterial treatment.

Abstract:It was studied the effects of ultra high pressure fresh-keeping packaging technology on quality of cold fresh meat in the storage period. Applying different pressure on cold meat and keep a certain time, every 3 days on the sample by one measurement were used to detect the cold fresh meat TVB-N value, color, pH value, and the total number of colonies, to test the UHP fresh-keeping packaging on chilled pork preservation effect. After 15 days of storage, samples of ultra high pressure to maintain 5 min 300 MPa, its TVB-N value is 15.3 mg/100 g, the pH value is 6.6, chromatic values (a*) of 14.1, the total number of colonies is 4.8 × 104 cfu/g, reached the first class standard of national standard of fresh meat, it can be good fresh preservation effect.

Abstract:The cold-sensitive fruits and vegetables occured chilling injury(CI) symptoms under the inappropriate low temperatures conditions.Disease resistance and storability of chilled fruits and vegetables both decreased,it would cause serious decay and quality deterioration,which influenced the edible and commodity values.This paper reviewed the basic CI symptoms characteristics and changes in physiological and biochemical characteristics of fruits and vegetables,summarized the research progress on occurrence mechanism and control technologies of chilling injury of fruits and vegetables,and proposed problems which need further research and solution.

Changes in water holding capacity of chilled fresh pork in controlled freezing-point storage assisted by different modes of electrostatic field action

Abstract:Electrostatic field-assisted low-temperature preservation is considered a novel technology, which provides an effective means of extending the shelf-life of meat. This study aimed to investigate the effects of different output time modes of a high voltage electrostatic field (HVEF) on the water holding capacity (WHC) of chilled fresh pork during controlled freezing-point storage. Under a direct current HVEF generator, chilled fresh pork samples were treated by the single, interval, or continuous HVEF treatment, with a control check group receiving no HVEF treatment. It was determined that the WHC of the continuous HVEF treatment higher than the control check group. This difference was proven by analyzing the moisture content, storage loss, centrifugal loss, cooking loss, and nuclear magnetic resonance imaging. Furthermore, the mechanism behind HVEF-assisted controlled freezing-point storage reduced the moisture loss was conducted by examining the changes in the hydration characteristics of myofibrillar protein. The study revealed that myofibrillar proteins exhibit high solubility and low surface hydrophobicity under continuous HVEF. Additionally, continuous HVEF has been demonstrated to effectively maintain the higher WHC and lower hardness of myofibrillar protein gel by inhibiting the water molecule migration. The demonstration of these results showcases the effectiveness of electrostatic fields for the future physical preservation of meat.
