Abstract:Carotenoids is a family of nutrient and bioactive components in vegetable and fruits.Recently considerable epidemical studies found that the vegetable and fruits containing carotenoids could reduce the risk of some chronic diseases.The bioactivities of carotenoids except for the sources of VA are focused on again,especially the common antioxidant activity of all the carotenoids,the preventing of prostate cancer of lycopene,the protecting of eyes and skin and the preventing of osteoporosis.The paper briefly introduced the structure and occurrence in food and human body,emphasized especially the new researches of bioactivities,and discussed the problems and possible researching fields.

Abstract:It is a hot research topic on natural antioxidant to find efficient,non-toxic and safe antioxidant from natural products.Natural plant extracts are important source of natural antioxidants;evaluating antioxidant activity precisely has become a hot spot in research area.Recent studies of antioxidant activity evaluation methods in home and abroad were summarized in this article,such as scavenging free radical evaluation method,reduction of metal ions evaluation method,inhibition of lipid peroxidation evaluation method and cell evaluation method,especially about the principles and advantages and disadvantages of these methods.Also,the future research of antioxidant activity evaluation method in vitro was prospected so that to provide reference of standard system of the antioxidant activity evaluation methods.

Abstract:Fruit and vegetable fermented beverages, a functional non-dairy fermented product, are popular worldwide due to their health-promoting attributes. It is reported that a variety of nutrients and chemical composition are found in fruit and vegetable fermented beverages, and health-promoting effects also have been reported. In addition, the quality and consumer acceptance of products is largely affected by probiotics starter, fermentation process, juice sterilization process and beverage enhancements. Considering the extensive reports on fruit and vegetable fermented beverages, the summary of these aspects is rare and not comprehensive enough. In view of this, we realized that it is necessary to update influencing factors of the quality and consumer acceptance of fruit and vegetable fermented beverages and some of the technologies involved, as well as nutrients, chemical properties and health benefits. Based on recent developments, it can be anticipated that fruit and vegetable fermented beverages will continue to be an important part of the functional food market.

Abstract:Since the dietary regimen rich in fruits is being widely recognized and encouraged, Citrus L. fruits have been growing in popularity worldwide due to their high amounts of health-promoting phytonutrients and bioactive compounds, such as flavonoids, phenolic acids, vitamins, carotenoids, pectins, and fatty acids. The diverse physicochemical properties and multiple utilization of citrus fruits in food industry are associated with their unique chemical compositions. Throughout the world, citrus has been used for producing various value-added and nutritionally enhanced products, including juices, wines, jams, canned citrus, and dried citrus. However, the current studies regarding the phytochemical and nutritional characteristics and food applications of citrus are scattered. This review systematically summarizes the existing bibliography on the chemical characteristics, functional and nutraceutical benefits, processing, and potential applications of citrus. A thorough understanding of this information may provide scientific guidance for better utilizing citrus as a functional fruit and benefit the extension of citrus value chain.

Abstract:Flavonoids are the representative active substances of citrus with various biological activities and high nutritional value. In order to evaluate and utilize citrus flavonoids, isolation and purification are necessary steps. This manuscript reviewed the research advances in the extraction and purification of citrus flavonoids. The structure classification, the plant and nutritional functions, and the biosynthesis of citrus flavonoids were summarized. The characteristics of citrus flavonoids and the selection of separation strategies were explained. The technical system of extraction and purification of citrus flavonoids was systematically described. Finally, outlook and research directions were proposed.

Abstract:Objective: The present investigation was aimed to evaluate the effect of subclinical hypothyroidism and obesity on bone mineral content (BMC) in different body segments. Methods: Thirty-two premenopausal women (age: 37 ± 9.9 years), with a wide range in body mass index (BMI), were studied. Subclinical hypothyroidism was defined by a basal TSH ≧4 µU/l and/or a TRH-stimulated peak ≧30 µU/l. For each subject, weight, height, BMI (weight/height2) and the waist/hip ratio were measured. Total BMC, total bone mineral density (BMD), leg BMC, leg BMD, trunk BMC, trunk BMD, arm BMC and arm BMD were determined using dual-energy X-ray absorptiometry. Thyroid function (basal and TRH-stimulated TSH, free T3 and free T4) were determined from fasting blood samples for all subjects. Results: Anova was conducted within all the groups to observe the effect of thyroid status and/or obesity on BMC and BMD. There was no statistical difference for age. Total BMC was affected by obesity (p < 0.05) but not by thyroid status, BMD of the legs was significantly influenced both by thyroid function and obesity (p < 0.01); total BMD was affected by hypothyroid status (p < 0.05). A direct relationship between leg BMD and TSH was demonstrated. Conclusion: Subclinical thyroid hypofunction and obesity seem to affect BMD differently in the body segments. An influence of gravitational force seems necessary in order to make evident the effect of subclinical hypothyroidism on bone. A condition of subclinical hypothyroidism should be considered when evaluating subjects for osteoporosis, since a BMD measured at the femoral neck may induce underestimation of initial osteoporosis.

Abstract:Carotenoids, vitamin C and flavonoids are mainly enriched in citrus fruits, and the effects of different environmental factors such as light, temperature, pH and humidity on the synthesis of these three nutrients are discussed. Because of its rich nutrients and delicious taste, citrus has become the first choice of fruit in People's Daily life. Carotenoids are important nutrients and natural pigments in citrus, and their synthesis is affected by light, temperature and pH value. However, this paper does not delve into the effects of different environmental factors on the synthesis of common nutrients in plants, such as water, fructose, and fruit acids, which require further discussion. Through these discussions, this review aims to provide a scientific basis for the cultivation of citrus and other fruits, promote sustainable agricultural production, and provide consumers with more healthy and nutritious fruit choices.

Abstract:Vitamin C, also known as ascorbic acid, is an essential nutrient that plays a critical role in many physiological processes in plants and animals. In humans, vitamin C is an antioxidant, reducing agent, and cofactor in diverse chemical processes. The established role of vitamin C as an antioxidant in plants is well recognized. It neutralizes reactive oxygen species (ROS) that can cause damage to cells. Also, it plays an important role in recycling other antioxidants, such as vitamin E, which helps maintain the overall balance of the plant's antioxidant system. However, unlike plants, humans cannot synthesize ascorbic acid or vitamin C in their bodies due to the absence of an enzyme called gulonolactone oxidase. This is why humans need to obtain vitamin C through their diet. Different fruits and vegetables contain varying levels of vitamin C. The biosynthesis of vitamin C in plants occurs primarily in the chloroplasts and the endoplasmic reticulum (ER). The biosynthesis of vitamin C is a complex process regulated by various factors such as light, temperature, and plant hormones. Recent research has identified several key genes that regulate vitamin C biosynthesis, including the GLDH and GLDH genes. The expression of these genes is known to be regulated by various factors such as light, temperature, and plant hormones. Recent studies highlight vitamin C's crucial role in regulating plant stress response pathways, encompassing drought, high salinity, and oxidative stress. The key enzymes in vitamin C biosynthesis are L-galactose dehydrogenase (GLDH) and L-galactono-1, 4-lactone dehydrogenase (GLDH). Genetic studies reveal key genes like GLDH and GLDH in Vitamin C biosynthesis, offering potential for crop improvement. Genetic variations influence nutritional content through their impact on vitamin C levels. Investigating the roles of genes in stress responses provides insights for developing resilient techniques in crop growth. Some fruits and vegetables, such as oranges, lemons, and grapefruits, along with strawberries and kiwi, are rich in vitamin C. Guava. Papaya provides a boost of vitamin C and dietary fiber. At the same time, red and yellow bell peppers, broccoli, pineapple, mangoes, and kale are additional sources of this essential nutrient, promoting overall health. In this review, we will discuss a brief history of Vitamin C and its signaling and biosynthesis pathway and summarize the regulation of its content in various fruits and vegetables.

Abstract:Folates deficiency is a global public health problem, has profound effects on human health. Rice is the most important sta-ple crops in the world, and provides most population energy intake in China. Since rice seeds contain very little folates, enhancing fo-lates content in rice would be a cost-effective way to solve folates deficiency in China and some countries and regions where the sta-ple crop is rice. This review introduced the structure and physiological functions of folates, and the influences of folates deficiency. The biosynthetic pathway in plant and progress in folates-biofortification rice were also reported.

Abstract:Fruits are considered as healthy foods because they provide a rich source of vitamins, antioxidants and other nutrients, including a range of essential bioactive flavonoid compounds. Flavonols, with diverse chemical properties and biological activities, are the most ubiquitous flavonoids that occur naturally in fruits and they are nutritionally important to animals and humans. Numerous investigations have emphasized that significant intake of dietary flavonols is associated with lower incidences of degenerative diseases. Here, we review current knowledge concerning the molecular structures, composition and distribution, regulation, and structural modification of fruit flavonols. In addition, we consider biotechnological approaches to enhance the levels of flavonols in plants or microorganism. An understanding of the factors determining production of flavonols in fruit crops will improve breeding programs and facilitate the production of fruits or bio-products with desirable contents of bioactive flavonols of benefit to humans.

Abstract:Fruits and vegetables, as an important part of our daily diet, are rich in nutrients, vitamins, and minerals. Moreover, fruits and vegetables also contain a certain amount of dietary fiber, which is closely related to human health. Increasing research has indicated that various active ingredients such as polysaccharides, polyphenol, saponin, and triterpenoid are isolated from fruits and vegetables. Polysaccharide with non-toxic side effects and strong biological activities is a critical active component in fruits and vegetables. Growing evidence has confirmed that polysaccharides from fruits and vegetables exhibit various biological activities including immunomodulatory, antioxidant, anti-tumor, anti-inflammatory, hypoglycemic, regulating intestinal flora, and other activities. Therefore, a systematic review of the latest research progress and future development prospects of fruits and vegetables polysaccharides (FVPs) is very necessary to better understand them. In this paper, we have systematically summarized the latest knowledge about the extraction and purification methods, structural characteristics, biological activities, and potential molecular mechanisms of FVPs. This review provides some valuable insights and guidance for further research, development, and utilization of FVPs.

Abstract:Vitamins are a class of organic substances essential for maintaining the normal physiological function of organisms. Most vitamins cannot be synthesized by the human body, and a small number of vitamins can only be synthesized in a limited manner, which cannot meet the body needs. Therefore, people need to take food or drugs containing vitamins to meet the body needs. Nowadays, vitamins are widely used in medicine, food or feed additives, cosmetics and other industries, and the demand for vitamins is growing. Vitamins are mainly produced by chemical synthesis and biosynthesis. Compared with chemical synthesis, biosynthesis of vitamins is praised for the environmental friendliness, high safety, and low costs. Therefore, it is of great practical significance to study the biosynthesis methods of vitamins. This paper reviews the research progress in the methods and summarizes the research results in the biosynthesis of water-soluble vitamins (B vitamins and vitamin C) in recent years and then makes an outlook on the future development in this field.

Abstract:Ascorbic acid (AA), or vitamin C, is one of the most important vitamins consumed through the diet due to its critical role in many biological processes. Although the human body cannot synthesize it, AA is essential in maintaining healthy bodily structure, acting as a cofactor of many enzymes involved in collagen synthesis and an efficient immune system. At the same time, AA is used in the cosmetic field for its antioxidant and antipigmentary properties, in the food industry as additive, and in chemical synthesis as reducing agent. AA can be chemically synthesized, produced by the oxidative fermentation of bacteria, or extracted from natural sources. This review addresses the most recent developments in its manufacture, including techniques for extracting vitamin C from plants, fruits, vegetables, algae, and leaves, and focusing on the most commonly used green methods, i.e., ultrasound-assisted extraction, microwave-assisted extraction, pressurized liquid extraction, and supercritical fluid extraction. These methods are based on mild extraction conditions, environmentally friendly solvents, low time, cost, and energy consumption. In contrast, their extraction yields are comparable to or even higher than those of conventional methods.

Abstract:Vitamin C (VC), encompasses a group of related water-soluble substances, which plays an important role in the physiologic processes and health of aquatic animals. Most aquatic animals have a limited capacity to synthesize VC, thus obtaining VC mainly from diets. To date, VC has been widely used as an aquatic feed additive due to its antioxidant, free radical scavenging, and anti-inflammatory abilities. However, the requirement for VC varies greatly among different aquatic animals. This updated review presents a general picture of the possible physiological function of VC for farmed aquatic animals, with emphasis on the information on growth, antioxidant status, immunity, diseases prevention, and reproductive performance, as well as the synergistic effects of VC with other micronutrients such as vitamin E, glucans, and metal elements during recent years. Furthermore, the interaction between dietary VC and the intestinal microbiota of aquatic animals have also been discussed. Understanding the beneficial function and mechanism of VC is of great significance for extending the application of VC in the aquaculture industry.

Abstract:The fruit of the jujube tree is high in nutrients and has various health benefits. China is a major producer of jujube, and it is now cultivated all around the world. Numerous studies have demonstrated the nutritional value and potential health advantages of bioactive compounds found in the jujube tree. Furthermore, the jujube tree has a remarkable 7000-year agricultural history. The jujube plant has developed a rich gene pool, making it a valuable resource for germplasm. Different studies have focused on the developmental stages of jujube fruits to identify the optimal time for harvest and to assess the changes in their bioactive natural compounds or products during the process of development but the molecular mechanism underlying the production of bioactive natural products in Z. jujuba is still poorly understood. Moreover, the potential differential expressed genes (DEGs) identified as responsible for the synthesis of these compounds should be further functionally verified. It has been noticed that the contents of total flavonoids, total phenolic, and vitamin C increase significantly during the ripening process, while the contents of soluble sugars and organic acids decrease gradually. In this review, we have also scrutinized the challenges that hinder the utilization of jujube fruit resources and suggested potential areas for further research. As such, our review serves as a valuable resource for the future development of jujube-based nutritional compounds and the incorporation of their nutritional elements into the functional foods industry.

Abstract:Abstract Vitamins are organic compounds that can be synthesized from other essential nutrients; however, they are required in trace amounts from an exogenous source for normal growth, reproduction and health. Vitamin C (ascorbic acid, AA) is an essential micronutrient for normal growth and physiological function of most aquatic animals. In terrestrial animal nutrition, vitamin C has recently spurred scientific interest because of the increasing knowledge on vitamin C involvement in gene expression, cell cycle and reproduction in mammals; in addition, recent advances in molecular biology techniques allow the more effective estimation of the effect of vitamin C on metabolism and physiology. In contrast, this information is scarce in aquatic animal nutrition, as studies have essentially focused on the estimation of minimum vitamin C requirement for maximum growth and immune response as well as for the formulation of least‐cost diet. This scarcity of information is also due to the lack of well‐established indicators of vitamin C status in aquatic organisms. The present review summarizes and discusses information about vitamin C sources, bioavailability, deficiency and requirement in aquatic animals to plan further studies. In the future, vitamin C nutrition studies in aquaculture should also include immune responses, histopathology of the gills, liver, gonad development, gamete quality and quantity, fecundity, larvae survival and gene expression. Dietary vitamin C requirements should be estimated at every life‐history stage of cultured species. All this information will allow a better understanding of the essentiality of vitamin C in aquatic animal growth, development, reproduction and health.
