Abstract:The rapid determination of thichener concent in milk beverages by near infrared spectroscopy(NIR) method was studied.Milk drinks containing thickening agent was deteced through NIR scanning and NIRCAL optimization analysis and get a quantitative mathematical model had a better prediction effect under the condi-tion of single type of thickening agent. At the same time, the study also found that attention should be paid to model applicable scope and substrate concentration. The application of NIR in quantitative detection method of thickening agent in the milk beverage product quality as enterprise internal control was feasible, But this ap-proach as a thickening agent in milk beverages of qualitative and quantitative still needed the further experimen-tal research.

Abstract:Study on the method of determining content of protein,fat and lactose in milk powder based on near infrared spectrum.80 samples of different brands and compound milk powder was collected.The range of diffuse reflectance spectra was between 10 000 and 3 500 cm-1 with 32 scanning times and 2 cm-1 resolution.After the preprocess of spectrum,PLS method was used to model.Correlation coefficient(R) and root mean square errors of prediction(σ1) was used to evaluate the stable and accuracy of model.The results showed that near-infrared spectroscopy can quickly detect protein,fat and lactose content in the multi-brand,multi-formula milk powder,forecast R was 0.9618,0.9458 and 0.9306 respectively,and σ1 was 0.842,1.925 and 2.324.

Abstract:The present study is concerning qualitative and quantitative detection of minced pork quality based on FT-near infrared (FT-NIR) spectroscopy and achieving the rapid approach to detecting the minced pork quality. Firstly, FT-NIR spectroscopy combined with partial least squares (PLS) and least squares-support vector machine (LS-SVM) was used for minced pork quality prediction including discrimination of the different muscle type of pig and quantitative detection of the fat, protein and moisture content of pork. The result indicated that 100% recognition ratio for calibration and 96% recognition ratio for validation were achieved by PLSDA for 4 different muscle types of pig. These two methods for chemical composition detection both have good performances in predicting fat and moisture content, the correlation coefficient for calibration and validation was all more than 0.9, but the models for protein content prediction were of less well performances, the correlation coefficients for calibration and validation, RMSEC, RMSEP and RMSECV respectively were 0.722, 0.593, 1.595, 1.550 and 1.888, respectively. The LS-SVM method is more accurate in predicting each quality index than the PLSR method. The result shows that the prediction models for fat and moisture content based on LS-SVM have a better performance with high precision, good stability and adaptability and can be used to predict the fat and moisture content of minced pork rapidly, and provide a fast approach to discrimination of the different muscle type of pig.

Abstract:In order to discriminate the rice flour processed by different doses of irradiation,a fast and nondestructive method was proposed based on the visible-near infrared spectroscopy.Four groups of rice flour were irradiated using different doses of 60Coγ-rays,and 200 test samples were obtained.The reflection spectrum data of all samples were collected by using ASD visible-near infrared spectrometer,and the data were analyzed by principal component analysis(PCA)method.Taking the first 6 principal components(PCs)as the inputs of the back-propagation artificial neural network(BP-ANN),an identification model was established.The results showed that the identification accuracy of the model for predicting samples could reach up to 100%in the setting of standard deviation of±0.1.The proposed method has good classification and identification effects,which can provide a new technical method for fast identification of irradiation rice flour products.

Abstract:This paper establishes a novel and rapid method for detecting pure melamine in milk powder using near infrared (NIR) spectroscopy based on least squares-support vector machine (LS-SVM). Partial least square discriminant analysis (PLS-DA) was used for the extraction of principal components (PCs). The scores of the first two PCs have been applied as inputs to LS-SVM. Compared to PLS-DA, the performance of LS-SVM was better, with higher classification accuracy, both 100% for the training and testing set. The detection limit was lower than 1 ppm. Based on the results, it was concluded that NIR spectroscopy combined with LS-SVM could be used as a rapid and accurate method for detecting pure melamine in milk powder.

Abstract:In the present study, the JASCO Model FTIR-4 000 fourier transform infrared spectrometer (Japan) was used, with a valid range of 7 800-350 cm(-1). Seven brands of milk powder were bought in a local supermarket. Milk powder was compressed into a uniform tablet with a diameter of 5 mm and a thickness of 2 mm, and then scanned by the spectrometer. Each sample was scanned 40 times and the data were averaged. About 60 samples were measured for each brand, and data for 409 samples were obtained. NIRS analysis was based on the range of 4 000 to 6 666 cm(-1), while MIRS analysis was between 400 and 4 000 cm(-1). The protein content was determined by kjeldahl method and the factor 6.38 was used to convert the nitrogen values to protein. The protein content value is the weight of protein per 100 g of milk powder. The NIR data of the milk powder exhibited slight differences. Univariate analysis was not really appropriate for analyzing the data sets. From NIRS region, it could be observed that the trend of different curves is similar. The one around 4 312 cm(-1) embodies the vibration of protein. From MIRS region, it could be determined that there are many differences between transmission value curves. Two troughs around 1 545 and 1 656 cm(-1) stand for the vibration of amide I and II bands of protein. The smoothing way of Savitzky-Golay with 3 segments and zero polynomials and multiplicative scatter correction (MSC) were applied for denoising. First 8 important principle components (PCs), which were obtained from principle component analysis (PCA), were the optimal input feature subset. Least-squares support vector machines was applied to build the protein prediction model based on infrared spectral transmission value. The prediction result was better than that of traditional PLS regression model as the determination coefficient for prediction (R(p)2) is 0.951 7 and root mean square error for prediction (RMSEP) is 0.520 201. These indicate that LS-SVM is a powerful tool for spectral analysis. Moreover, the study compared the prediction results based on near infrared spectral data and mid-infrared spectral data. The results showed that the performance of the model with mid-infrared spectral data was better than the one with near infrared spectra data. It was concluded that infrared spectroscopy technique can do the quantification of protein content in milk powder fast and non-destructively and the process was simple and easy to operate. The results of this study can be used for the design of a simple and non-destructive spectra sensor for the quantitative of protein content in milk powder.

Abstract:The aim of this study was to investigate the potential of the infrared spectroscopy technique for nondestructive measurement of fat content in milk powder. Fat is an important component of milk powder. It is very important to be able to detect the fat content in milk powder using a rapid and nondestructive method. Near and mid infrared spectroscopy techniques were used to achieve this purpose. Least-squares support vector machine (LS-SVM) was applied to developing the fat-content prediction model based on the infrared spectral transmission values. The results based on LS-SVM were better than those of back-propagation artificial neural networks. The determination coefficient for prediction of the results predicted by the LS-SVM model was 0.9796 and the root mean square error was 0.836708. It was concluded that infrared spectroscopy technique could quantify the fat content in milk powder rapidly and nondestructively. The process is simple and easy to operate. Moreover, the prediction results were compared between near infrared and mid infrared spectral data. The results showed that the performances of model with both mid infrared and near infrared spectral data were a little worse than that of the whole infrared spectral data. The results could be beneficial for designing a simple and nondestructive spectral sensor for the quantification of fat content in milk powder.

Abstract:The aim of the present paper was to provide new insight into the short-wave near-infrared (NIR) spectroscopic analysis of milk powder. Near-infrared spectra in the 800- to 1,025-nm region of 350 samples were analyzed to determine the brands and quality of milk powders. Brand identification was done by a least squares support vector machine (LS-SVM) model coupled with fast fixed-point independent component analysis (ICA). The correct answer rate of the ICA-LS-SVM model reached as high as 98%, which was better than that of the LS-SVM (95%). Contents of fat, protein, and carbohydrate were determined by the LS-SVM and ICA-LS-SVM models. Both processes offered good determination performance for analyzing the main components in milk powder based on short-wave NIR spectra. The coefficients of determination for prediction and root mean square error of prediction of ICA-LS-SVM were 0.983, 0.231, and 0.982, and 0.161, 0.980, and 0.410, respectively, for the 3 components. However, there were less than 10 input variables in the ICA-LS-SVM model compared with 225 in the LS-SVM model. Thus, the processing time was much shorter and the model was simpler. The results presented in this paper demonstrate that the short-wave NIR region is promising for fast and reliable determination of the brand and main components in milk powder.

Abstract:Fat is an important component in milk powder. It is very important to detect the fat content in milk powder fast and non-destructively. To achieve this purpose, near and mid-infrared (400 similar to 6666 cm(-1)) spectroscopy technique was used and least-squares support vector machine was applied to build a fat prediction model based on infrared spectra transmission value. The prediction result obtained from our model is better than that obtained from the back propagation neural networks (BP-NN) while the determination coefficient for prediction (R-p(2)) is 0.9796 and root mean square error for prediction (RM-SEP) is 0.8367. It is concluded that infrared spectroscopy technique can detect the fat content in milk powder fast and non-destructively, and the process is simple and easy to operate. Moreover, the prediction results based on the whole infrared spectra were compared with those based only on near infrared spectra or mid-infrared spectra data. The results show that the performances of the model based only on mid-infrared spectra or near infrared spectra data are a little worse than those based on the whole infrared spectra data.

Abstract:The method based on miniature near-infrared spectrometer combined with Y fiber optic probe to detect the protein and fat in milk powder by diffuse reflectance spectroscopy in the wavelength range of 900-1 700 nm was proposed. By selecting the appropriate spectral bands, the correction models of protein and fat were established with partial least squares algorithm using Unscrambler 9.7 Chemometrics software. The determination coefficients R2 of the correction modes are 0.987 and 0.986 for protein and fat respectively, and the root mean square errors RMSEC are 0.385 and 0.419 respectively. Using these correction models to predict the protein and fat contents with 30 sets of forecast sample data, the prediction standard deviation is SEP(Protein) = 0.751 for protein, and is SEP(Fat) = 1.109 for fat. The results indicate that these correction models have prediction capability with unknown samples and meet the on line requirements.

Abstract:In order to improve milk quality management by detecting milk constituents in real time, the paper designs a near-infrared diffuse reflectance spectroscopy for testing milk ingredient. Aiming at the spectral characteristics for milk ingredients and the practicality of small and medium enterprises, this paper determines the hardware structure. The spectrometer hardware used stepper motor to control the grating system, a single point of expansion-type InGaAs detector and an integrating sphere, which has a significant reduction in costs comparing with imported equipment. Experiments show that the system's accuracy and stability meet the analysis requirements. This design has practical significance in promoting using NIR technology in the small and medium enterprises.

Abstract:The present study has aimed at providing new insight into short-wave near-infrared (short-wave NIR) spectroscopy of fat of milk powder. To do that, we analyzed NIR spectra in the 800-1025nm region of 350 milk powder samples. Based on the whole short-wave NIR spectra, performances of least-square support vector machine (LS-SVM) and partial least squares (PLS) are good. Determination coefficients for prediction were up than 0.95, and the root mean square error of prediction (RMSEP) are less than 0.5. The loading weights of PLS and regression coefficients of PLS and LS-SVM were used to determine the sensitive wavelengths for fat content of milk powder. Optimal four sensitive wavelengths, namely 900, 928, 990, and 1018nm, were obtained, and the spectra at these wavelengths were used for the content determination. Rp2 of LS-SVM models are up than 0.97, and RMSEP are less than 0.26. Thus these wavelengths would be useful for the development of portable instrument or online applications to discriminate the fat content of milk powder.
Content Determination of Proteins in Milk Powder Using Short-Wave Near-Infrared Spectroscopy

Abstract:Short-wave near-infrared (SWNIR) technique was applied to determine the protein contents in milk powder. NIR spectra in the 800-1025nm region of 350 milk powder samples were analyzed. Based on the whole SWNIR spectra, least-square support vector machine (LS-SVM) obtained the best performance than partial least squares (PLS). Determination coefficient for prediction (Rp2) and root mean square error of prediction (RMSEP) were 0.98 and 0.23, respectively. Loading weights and regression coefficients of PLS and LS-SVM were used to determine the sensitive bands for protein content, as 906, 949, 987, 1002, and 1025nm. Based on these sensitive bands, Rp2 of 0.977 and RMSEP of 0.178 were obtained. It is concluded that some wavelengths at short-wave NIR region can be used to predict protein content in milk powder.

Abstract:The objective of this study was to examine the possibility of applying visible and near-infrared spectroscopy to the quantitative detection of irradiation dose of irradiated milk powder. A total of 150 samples were used: 100 for the calibration set and 50 for the validation set. The samples were irradiated at 5 different dose levels in the dose range 0 to 6.0kGy. Six different pretreatment methods were compared. The prediction results of full spectra given by linear and nonlinear calibration methods suggested that Savitzky-Golay smoothing and first derivative were suitable pretreatment methods in this study. Regression coefficient analysis was applied to select effective wavelengths (EW). Less than 10 EW were selected and they were useful for portable detection instrument or sensor development. Partial least squares, extreme learning machine, and least squares support vector machine were used. The best prediction performance was achieved by the EW-extreme learning machine model with first-derivative spectra, and correlation coefficients=0.97 and root mean square error of prediction=0.844. This study provided a new approach for the fast detection of irradiation dose of milk powder. The results could be helpful for quality detection and safety monitoring of milk powder.

Abstract:Testing the amount of protein and fat contained in the milk based on the near infrared spectroscopy is a popular research, that near infrared reflectance spectroscopy, the spectral information of near infrared diffuse reflectance spectroscopy and near infrared transmission spectroscopy is the main method. In this paper the models about main components concentration of the milk and the light absorption value, absorption ratio, absorbance were built respectively using PLS(partial least squares) by mathematical transformation of the original data. The issue about improving the precision of the PLS models was discussed, after the three models with different ways were compared.

Abstract:Different wavelengths of near-infrared spectroscopy were used to test the quality of main components of raw milk. The quantitative an alysis model of protein content, fat content and lactose content was established by 2 kinds of near-infrared spectroscopy based on reflection and diffuse reflection spectra. The results gave the correlation coefficients of 0.9311, 0.9218, 0.8288 for protein, fat and lactose, respectively, with the root mean square error of prediction（RMSEP） of 1.9144, 2.0143, and 2.804. The measurements and concentration had a good correlation.The results demonstrated that near-infrared spectrometry was a valuable, rapid and nondestruction tool for the quantitative analysis of the principle components in row milk.
