Abstract:Antioxidant capacity of star anise and its residue are researched with the methods of fenton,pyrogallo and DPPH·.The results indicate that all the extracts represent strong scavenging capacities to hydroxyl radical,superoxide anion radical and DPPH radical,especially to DPPH radical.The highest DPPH·scavenging abilities are 2times more effective than those of ascorbic acids.The DPPH·scavenging abilities decrease in the order of water extract of star anise residue,ethanol extract of star anise residue,water extract of star anise,ethanol extract of star anise,ethanol precipitation extract of star anise.In general,the extracts of star anise residue show better scavenging abilities than those of star anise in the three free radical systems.
