EFFECTS OF TEA POLYPHENOLS AND SALVIA OFFICINALIS ON PORK ANTIOXIDATION

Abstract:The antioxidative effects of tea polyphenols and salvia officinalis on pork were comparatively studied. The determination methods of POV value and TBA value were optimized without extracting fat from pork. The degree of fat oxidation of pork with addition of tea polyphenols (1.0 %) or salvia officinali (1.0 %) and under cold storage at 5 ℃ for 10 d was assayed and organoleptically evaluated at intervals of 2 (0,2,4,6,8,10 d). The results showed the POV values of the control were lower than that of 1.0 % tea polyphenols treatment (P 0.05),however,significantly higher than that of 1.0 % Salvia officinali treatment (P0.01); the TBA values of the three groups were not different (P0.05) during 0 d-4 d,with that of 1.0 % tea polyphenols treatment significantly lower than that of the control (P0.05)after 6 d,and that of 1.0 % Salvia officinali treatment significantly lower than 1.0 % tea polyphenols treatment (P0.05)after 4 d. At day 10,organoleptic evaluation scores were as followed:1.0 % Salvia officinali treatment1.0 % tea polyphenols treatmentthe control. It is concluded that the antioxidative effects of Salvia officinali on pork were better than that of tea polyphenols.
