Abstract:Proteins are the main components of dairy products and milk.Mainly methods specificed in available standards of the detection protein in dairy products are as follows:Kjeldahl method,near-infrared spectroscopy,UV Absorption method and so on.To lay a strong standard basis to the formulation of standard of rational and effective detection of the protein content of dairy products in China,this article found out the standard of detection of the protein content of dairy products in China,the United States and Australia,translate the available standards of three countries above,and then make comparison of China-US-AUS standards on the determination of protein contents of dairy products.
Chinese Consumers' Preferences For Attributes Of Fresh Milk: A Best-Worst Approach

Abstract:Fresh milk represents a major type of dairy product in China, while it remains at a low level in terms of consumption. Consumers' preferences are a crucial factor determining consumers' attitudes and behavior towards fresh milk consumption. However, little is known about what drives consumers' preferences for fresh milk. This study intends to fill this gap based on a survey with a sample of 1248 respondents in ten cities in China. The best-worst scaling (BWS) method was employed to measure the importance of different attributes that consumers consider when selecting fresh milk. The BWS result indicates that safety certification, shelf-life, and nutrition were ranked as the most important attributes of fresh milk, whereas origin, purchasing location, and package were found to be the least preferred attributes. Furthermore, the study also explored heterogeneities by dividing all samples into a developed area and a less developed area, and a latent class model (LCM) was then applied to classify consumers based on their preferences and demographics in these two areas, respectively. In developed areas, consumers were divided into "Safety First" and "Taste Sensitive", and Gender and Age were significant determinants of class membership. In less developed areas, consumers were classified as "Quality Sensitive" and "Brand Sensitive", while Education, Pregnancy, and Health condition were significant determinants of class membership. The findings might be useful for the government in terms of encouraging dairy companies to implement safety management certification, and suggest that companies should design differentiated strategies in different areas.

Abstract:Purpose This study aims to explore the degree of Chinese consumers' trust and confidence in the Chinese dairy products supply chain and the relationships between trust and overall confidence in dairy products safety and quality. Design/methodology/approach This study collected data from 1,278 respondents by field survey from five provinces of China. The data were analyzed using ordered logit model. Findings This study shows the following results: (1) Chinese consumer confidence in domestic dairy products and trust in actors of the dairy chain are at a moderate-to-low level. (2) Government regulators are considered to take the most responsibility, with both an optimism-enhancing and a pessimism-reducing effect (the former effect is greater), while perceived trust in dairy farmers and retailers has little effect. (3) Perceived care has both an optimism-enhancing and a pessimism-reducing effect, and the former effect is stronger. Competence and openness have an optimism-enhancing effect and a pessimism-reducing effect, respectively. (4) The importance of the three dimensions of trust related to optimism-increasing and pessimism-reduction is limited, except in the case of government regulators. Originality/value This study contributes to a better understanding of consumer trust in food safety and also help demonstrate to the actors and institutions involved in the dairy supply chain the best way to improve the performance of their duties to meet the consumers' needs for safe and quality dairy products.

Abstract:With the continuous expansion of the global dairy trade market, the quality and safety of the Chinese dairy market have a wide and far-reaching impact on the world. Based on the development of the dairy scandal in the past few years in China, this study illustrates the serious damage of melamine on human health and the negative impact on the dairy industry in China. This study shows that the lack of effective government regulations is a key reason for dairy market failure. Consumers are lacking confidence in the quality of Chinese dairy products and the government's market regulations. The Chinese dairy market will continue to rely on imported dairy products. By analyzing the typical cases of the dairy market in China, this study aims to provide a guide for dairy industries in other countries.

Abstract:An evaluation index system is developed to assess food safety supervision in the sales links of dairy products. Evaluation research is conducted using the fuzzy-ANP comprehensive evaluation model to assess the product safety supervision of dairy products in the sales link based on 307,705 survey data acquired from 1,501 online and offline dairy businesses in China. Evaluation results show that (1) the overall situation of dairy product safety supervision in the sales link is encumbered by the fact that the online situation of dairy product safety supervision in the sales link is general. It does not achieve a relatively good level; (2) the investment in food safety supervision of dairy products in the sales link is insufficient for the online e-commerce platforms. Especially, the processes of reviewing and approving relevant business sales qualification must be improved; (3) online business types do not directly determine the situation of dairy product safety supervision in the sales link, but the operating environment, sales staff quality, and warehousing management are common regulatory weaknesses; and (4) for offline provinces, the level of economic development can affect the situation of dairy product safety supervision in the sales link. Aside from emphasizing sales qualifications, economically backward provinces should improve the supervision of the operating environment, sales equipment, sanitary status of workers, and other aspects.
Prevalence, Drug Resistance, and Virulence Genes of Potential Pathogenic Bacteria in Pasteurized Milk of Chinese Fresh Milk Bar.

Abstract:Fresh Milk Bar (FMB), an emerging dairy retail franchise, is used to instantly produce and sell pasteurized milk and other dairy products in China. However, the quality and safety of pasteurized milk in FMB have received little attention. The objective of this study was to investigate the prevalence, antimicrobial resistance, and virulence genes of Escherichia coli, Staphylococcus aureus, and Streptococcus in 205 pasteurized milk samples collected from FMBs in China. Four (2.0%) isolates of E. coli, seven (3.4%) isolates of S. aureus, and three (1.5%) isolates of Streptococcus agalactiae were isolated and identified. The E. coli isolates were resistant to amikacin (100%), streptomycin (50%), and tetracycline (50%). Their detected resistance genes include aac(3)-III (75%), blaTEM (25%), aadA (25%), aac(3)-II (25%), catI (25%), and qnrB (25%). The S. aureus isolates were mainly resistant to penicillin G (71.4%), trimethoprim-sulfamethoxazole (71.4%), kanamycin (57.1%), gentamicin (57.1%), amikacin (57.1%), and clindamycin (57.1%). blaZ (42.9%), mecA (28.6%), ermB (14.3%), and ermC (14.3%) were detected as their resistance genes. The Streptococcus strains were mainly resistant to tetracycline (66.7%) and contained the resistance genes pbp2b (33.3%) and tetM (33.3%). The virulence genes eae and stx2 were only found in one E. coli strain (25%), sec was detected in two S. aureus strains (28.6%), and bca was detected in one S. agalactiae strain (33.3%). The results of this study indicate that bacteria with drug resistance and virulence genes isolated from the pasteurized milk of FMB are a potential risk to consumers' health.

Abstract:Purpose - The purpose of this paper is to empirically examine how China's food safety standards affect agricultural trade in the case of dairy products. Design/methodology/approach - A gravity model is applied to quantitatively address the impacts of changing food safety standards in China in the case of its dairy imports. The paper considers the trade impacts of not only a specific hazard substance but also overall strictness of safety standards. Findings - The paper shows that changes in food safety standards of dairy products have no effect on China's dairy imports. The finding is not particularly surprising considering special characteristics of China's food safety standards. Given the fact that China's safety standards are relatively lower than that in its major exporters, the trade-impeding effect may not be substantial. Research limitations/implications - First, this study is unable to estimate the trade-enhancing and trade-impending effects separately. Second, the study does not account for a potential endogeneity issue associated with food safety standards. Originality/value - This paper contributes to the debate on how food safety standards affect trade by demonstrating that safety standards in developing countries like China can affect international trade differently from that in developed countries. Although results are specific to China's dairy imports, the explanations are applicable to food safety standards in other developing countries.

Abstract:In asymmetric information markets, consumers often rely on certain extrinsic indictors to assess the safety of food products. This study analyzes how consumers in Beijing determined milk safety when they purchased liquid milk using survey data conducted just before the melamine-contaminated infant formula event was disclosed. The key finding indicates that milk brand and purchase venue, on average, were ranked as the first two important safety indicators in fluid milk purchases, suggesting that China's milk safety regulators should put more monitoring resources toward supervising the safety of milk produced from branded firms and milk sold in ostensibly trustable stores and not allow exemptions to inspections. Meanwhile, the findings of this study indicate that the existing milk safety certification system in China might be significantly inefficient, suggesting potential waste of regulatory resources.
Food safety issues in China: a case study of the dairy sector

Abstract:Background: Over the past 10 years, food safety incidents have occurred frequently in China. Food safety issues in the dairy sector have increasingly gained the attention of the Chinese government and the public. The objective of this research is to explore consumption changes of dairy products of different income groups after these dairy safety incidents. Results: The research indicates that consumers' response to dairy safety risk is very intense. Dairy consumption has experienced a declining trend in recent years, and the impact of dairy safety incidents has lasted for at least 5 years. Until 2012, dairy consumption had not yet fully recovered from this influence. Using the random effects model, this study examined the relationship between food safety incident and consumption. Conclusions: Overall, the results show that consumers in the low-income group are more sensitive to safety risk than those in the high-income group. It can be seen from this paper that the decrease of urban residents' dairy consumption was mainly driven by changes in fresh milk consumption, while the decline of milk powder consumption, which was affected by the melamine incident, was relatively moderate, and milk powder consumption for the high-income group even increased.

Abstract:With the dispersion of the melamine shadow and recovery of dairy consumption market, how to do well the analysis and supervision work about dairy products is a serious issue for the supervising department. This paper analyzed the adverse impact of export depression of dairy products on dairy production enterprise in Heilongjiang province. In order to improve the management level and ensure export dairy safety, six measures were proposed in this paper, such as risk analysis, supervision of the production process, improvement of self-controlled capacity, protective measures on dairy, electronic monitoring the management of the enterprise itself, monitoring of product safety indicators, and so on.

Abstract:The objective of this study was to conduct a risk assessment to determine the food poisoning risk from the consumption of milk in China that might be contaminated by Staphylococcus aureus. Data related to prevalence and concentration of S. aureus in fluid raw milk in China were collected from the literature and used to calculate the initial contamination levels. Two main consumption routes were considered and the results of the Monte Carlo simulation model indicated that the storage temperature in the processing plant and heat processing of milk in the home were the primary factors affecting the S. aureus concentration at the processing plant and the home before consumption, respectively. Other important factors were distribution of log (D)-value's for S. aureus, storage temperature and time on farm, temperature of the thermal treatment of milk, and treatment time at the dairy processing plant. To minimize the risk of milk-borne staphylococcal intoxication in China, the key step appears to be the control of storage conditions during the period after heat treatment and before consumption. The risk assessment model developed in present study provides valuable information for Chinese government and dairy processors to improve milk safety. It also could provide valuable recommendations for Chinese consumer education on safe handling of milk products. (C) 2015 Elsevier Ltd. All rights reserved.

Abstract:Cheese is one of the most important dairy foods in the world. Its safety concerns nutrition and health of worldwide consumers. Since the 1990 s,cheese safety events related to cheese contamination with some pathogens like Listeria monocytogenes and Escherichia coli O157: H7 have been frequently happening. In the infancy of the development of cheese industry of our country with recent rapid increase in cheese consumption,it is necessary to acknowledge the current advances of domestic and international cheese safety and quality control techniques in order to establish our own cheese safety and quality control system. Considering this,the research advances of risk factors related to microbial contamination and factors affecting cheese quality during cheese manufacturing are reviewed with respect to cheese milk,additives,cheese processing and package materials. New techniques and materials regarding polymorphism of raw milk protein,membrane technology,extra-high pressure processing technique,ripening enzymes,infrared online monitoring system and antimicrobial materials are also included.
