Effects of Osmotic Pressure on Viscosities and Degree of Substitution of Cross-linking Reaction of Corn Starch

Abstract:The experiment was designed to find out the relations between osmotic pressure and degree of substitution, viscosity of starch paste. When sodium chloride and sodium sulfate as an osmotic pressure enhancer was used in cross-linking reaction, the degree of substitution (R2=0.985 1 and R2=0.989 4 respectively) and onset of gelatinization temperature (R2=0.968 8 and R2=0.823 6, respectively) of the cross-linking reaction were both increased linearly with the increase in osmotic pressure with good correlation. When sodium chloride as an osmotic pressure enhancer was used in cross-linking reaction, peak viscosity and final viscosity measured in the Bradender Viscoamylograph were decreased linearly with the increase in osmotic pressure (R2=0.945 2 and R2=0.946 9 respectively). The breakdown was decreased to zero (no breakdown) after applying the osmotic pressure of 16.66 MPa and remained zero after the osmotic pressure further increase. When sodium sulfate as an osmotic pressure enhancer was used in cross-linking reaction, peak viscosity and final viscosity were increased firstly, and then followed by a decrease of the viscosities. Breakdown was decreased linearly with the increase of the osmotic pressure with good correlation (R2=0.929 5).
