Abstract:This work was undertaken to evaluate whether it is possible to determine the variety of a Chinese wine on the basis of its volatile compounds, and to investigate if discrimination models could be developed with the experimental wines that could be used for the commercial ones. A headspace solid-phase microextraction gas chromatographic (HS-SPME-GC) procedure was used to determine the volatile compounds and a blind analysis based on Ac/Ais (peak area of volatile compound/peak area of internal standard) was carried out for statistical purposes. One way analysis of variance (ANOVA), principal component analysis (PCA) and stepwise linear discriminant analysis (SLDA) were used to process data and to develop discriminant models. Only 11 peaks enabled to differentiate and classify the experimental wines. SLDA allowed 100% recognition ability for three grape varieties, 100% prediction ability for Cabernet Sauvignon and Cabernet Gernischt wines, but only 92.31% for Merlot wines. A more valid and robust way was to use the PCA scores to do the discriminant analysis. When we performed SLDA this way, 100% recognition ability and 100% prediction ability were obtained. At last, 11 peaks which selected by SLDA from raw analysis set had been identified. When we demonstrated the models using commercial wines, the models showed 100% recognition ability for the wines collected directly from winery and without ageing, but only 65% for the others. Therefore, the varietal factor was currently discredited as a differentiating parameter for commercial wines in China. Nevertheless, this method could be applied as a screening tool and as a complement to other methods for grape base liquors which do not need ageing and blending procedures.

Abstract:In this paper, we construct a rating credibility model of red wine by the Analytic Hierarchy Process, achieve the classification of red grapes through the evaluation results of red wine and cluster analysis method and analyze the correlation of the physical and chemical indicators between red grapes and red wine. Thus, the paper demonstrates that aromatic substances play an important role in the quality of red wine, so we cannot evaluate the quality of wine only by the physical and chemical indicators of wine grapes and wine.

Abstract:Plant cuticular wax is the first barrier to resist biotic and abiotic stress. However, little is known about the compositional differences between the epicuticular and intracuticular wax in grape berry. The compositional, morphological and functional features of cuticular wax in grape berries of Vitis vinifera cv. 'Kyoho', 'Muscat Hamburg', 'Redglobe', and 'Zuijinxiang' were investigated. The total and epicuticular wax of four berries were mainly composed of terpenoids, hydrocarbons, alcohols, fatty acids and esters. Oleanolic acid was the most abundant terpenoid among the four cultivars. Scanning electron microscopy revealed the crystalline flakes structure of the cuticular wax. Additionally, the removal of epicuticular wax accelerated the weight loss, browning, and softening of grape berries, indicating the plastic-wrap-like effect of the cuticular wax on postharvest quality. This study provided the theoretical basis for further application of the fruit wax or waxy analogue.

Abstract:Chemical and sensory attributes play a vital role in evaluating the quality of grapes and wines. This study compared basic physicochemical parameters, organic acids, phenolic compounds, and aroma profiles of grapes and wines of six cultivars using chemometrics. The results showed that the reducing sugar contents of Beibinghong, Gongniang, and Granoir grapes were significantly higher than those of others cultivars, whereas their juice yields were significantly lower. The phenolic compound contents in Moldova, Beibinghong, and Gongniang grape skins and wines were higher than those in others cultivars. The organic acid contents in Beibinghong grape and Dunkelfelder wine were highest. Beibinghong and Gongniang grapes and wines showed richer aldehyde and ester concentrations. Beibinghong wine obtained the highest sensory scores. Ethyl decanoate, coumaric acid, and methyl dodecanoate were characteristic variables distinguishing wine cultivars, exhibiting important contributions to their sensory characteristics. These findings were useful for viticulturists and winemakers to select grape varieties.
Classification of the Red Wine Grapes Based on the Content of Aroma Components

Abstract:The aroma components in 26 different kinds of wine grape and the content of the important component part were identified by the headspace-solid phase microextraction-gas chromatography-mass spectrometry.This paper discussed the classification of wine grape according to the contents of aroma compounds with the cluster analysis and principal component analysis.The results showed that:(1)49 kinds of aroma compositions were detected in 26 different kinds of wine grapes and were divided into 6 types,C6-alcohols and aldehydes,alcohols(except C6-alcohols),esters,aldehydes(except the C6-aldehydes) and ketones,terpenes,organic acids.(2)The results of clustering analysis showed that 26 different kinds of wine grape were classified into three categories.Among them,the first kind of wine grapes included 11 varieties,such as cabernet sauvignon.C6-alcohols and aldehydes compounds were major properties in the first category,and its total content up to 66.4%.The second kind of wine grape includes 6 varieties,such as ruby cabernet.The contents of C6-alcohols and aldehydes and alcohols(except C6-alcohols) reached to 40.73% and 30.21%,respectively.The third kind of wine grape included 9 varieties,such as merlot.The content of esters was the supreme aroma components in the third class and it account for 71.06% of the total aroma components.And the organic acids was the lowest part in the three categories(0.18%,0.08% and 0.005% respectively).(3)The results of principal component analysis showed that the first six main components could represent its original information of variables in the first class of wine grape and the first four main components could represent their original information of variables in both the second and third classes of grape.(4)Based on the known aroma compounds,a discrimination model was established for assessing and ranking wine grape by discriminante analysis,and the accuracy of the model was 85.7%.This research showed that the discrimination model could be set up to classify wine grape and provided the theory basis for wine grapes variety improvement and wine quality control.

Abstract:The review analyzes the main publications over the past 20 years and regulatory documents on assessing the quality and authenticity of wines. The component composition of grapes and wine products made from them and the groups of compounds that determine quality characteristics and play an important role in shaping the consumer properties of wines are discussed. Examples of various approaches to the identification of markers for wine quality assessment and ways to discriminate wines by varietal and regional affiliation are given. The nature of relationships between the component composition (trace and macro elements, amino acids, and volatile compounds) and organoleptic characteristics is analyzed and the possibility of identifying patterns of influence of the chemical composition of wine on the organoleptic properties is considered. The main approaches to establishing the regional and varietal identity of wines combining the capabilities of analytical methods and statistical modeling (multiple regression analysis, general linear models, neural networks, multidimensional scaling and correspondence analysis, covariance and canonical analysis, classification methods, and machine learning) are analyzed and examples of their use in actual practice are demonstrated.

Abstract:The potential of visible-near infrared (vis/NIR) spectroscopy (400 nm to 1100 nm) for classification of grape berries on the basis of multi inner quality parameters was investigated. Stored Vitis vinifera L. cv. Manicure Finger and Vitis vinifera L. cv. Ugni Blanc grape berries were separated into three classes based on the distribution of total soluble solid content (SSC) and total phenolic compounds (TP). Partial least squares regression (PLS) was applied to predict the quality parameters, including color space CIELAB, SSC, and TP. The prediction results showed that the vis/NIR spectrum correlated with the SSC and TP present in the intact grape berries with determination coefficient of prediction (RP2) in the range of 0.735 to 0.823. Next, the vis/NIR spectrum was used to distinguish between berries with different SSC and TP concentrations using partial least squares discrimination analysis (PLS-DA) with >77% accuracy. This study provides a method to identify stored grape quality classes based on the spectroscopy and distributions of multiple inner quality parameters.

Abstract:An electronic tongue has been used to characterize and classify six types of Chinese red wines having different denominations of origin(Yantai,Changli,Shacheng) and different grape breeds(Cabernet Sauvignon,Cabernet Franc,Cabernet Gernischet).All data were treated by multivariate data processing based on principal component analysis(PCA) and discriminant factor analysis(DFA).The analyses of data demonstrate that the electronic tongue has high identification in classification Chinese red wines and the best results was obtained from DFA,the contribution of whose two main principal components add up to 99.9%.

Abstract:A taste-sensing system was used to study dried Lycium fruits of different producing year and grades. Physical indexes were measured to classify the grade of Lycium fruits and to find correlation between grade indexes and taste characterization. The least significant difference, principal component analysis and linear regression were applied in the data processing. Significant differences were found for sourness, bitterness, astringency and aftertaste-B. Classifications according to producing years and grades were found by principle component analysis. Strong correlations between producing year, grades and taste characterization were found.Practical ApplicationsLycium barbarumL. has been used as traditional medicine in Asian and many countries. This study evaluates the taste characterization and its application in determination of producing years and grades of Lycium fruits. With multivariate analysis, it is possible to detect producing years and grades of dried Lycium fruits with taste characterization, providing evidence for fast adulteration detection of Lycium fruits.

Abstract:Polysaccharides present in grapes interact with wine sensory-active compounds (polyphenols and volatile compounds) via different mechanisms and can affect wine organoleptic qualities such as astringency, color and aroma. Studies on the role that grape polysaccharides play in wines are reviewed in this paper. First, the composition of grape polysaccharides and their changes during grape ripening, winemaking and aging are introduced. Second, different interaction mechanisms of grape polysaccharides and wine sensory-active compounds (flavanols, anthocyanins and volatiles) are introduced, and the possible effects on wine astringency, color and aroma caused by these interactions are illustrated. Finally, the control of the grape polysaccharide content in practice is discussed, including classical winemaking methods (applying different maceration enzymes, temperature control, co-fermentation, blending), modern vinification technologies (pulsed electric field, ultrasound treatment), and the development of new grape polysaccharide products.

Abstract:To evaluate the important Vitis amurensis germplasm, the quality characteristics and anthocyanin profiles of the ripe berries of 20 V. amurensis grapes and 11 interspecific hybrids in two consecutive years were analysed. Compared with the V. vinifera grapes, V. amurensis grapes had small berries with low total soluble solids and high titratable acids, and were richer in phenolic compounds except for flanan-3-ols in their skins but had lower phenolic contents in their seeds and showed lower antioxidant activities. An outstanding feature of the V. amurensis grapes was their abundant anthocyanin contents, which was 8.18-fold higher than the three wine grapes of V. vinifera. The anthocyanin composition of V. amurensis was characterized by an extremely high proportion of diglucoside anthocyanins (91.71%) and low acylated anthocyanins (0.04%). Interestingly, a new type of speculated 3,5,7-O-triglucoside anthocyanins was first identified and only detected in V. amurensis grapes and hybrids. Based on the total phenolic and anthocyanin characteristics, V. amurensis grapes were set apart from V. vinifera cultivars and the interspecific hybrids, for the same qualities, fell between them, as assessed by principal component analysis.

Study on climate suitability for producing high quality second berry of grape in Zhejiang

Abstract:Based on previous studies and characteristics of grape growth and development, the four climatic regionalization indexes: first frost date, active accumulated temperature in the growth period, hydrothermal coefficient of two months preharvest and precipitation in mature month, were calculated to analyze the agroclimate suitability for producing high quality second berry of grape in Zhejiang. The results showed the second berry should be sprout before August 10th, and mature before November 20th. The three suitable periods: Aug. 20th to Spt. 20th, Spt. 20th to Oct. 20th and Oct. 20th to Nov. 20th, which for second berry mature were different in different regions. According to the number of suitable periods, Zhejiang region would be divided to four zonings, which have different climate suitability for producing high quality second berry. The first zoning, which includes Hangzhou, Jinhua, and Quzhou, has three suitable periods for producing high quality second berry. The second zoning, which includes Lishui, Huzhou, and Jiaxing, has two suitable periods. The third zoning, which includes Shaoxing and Zhoushan, has one suitable periods. The fourth zoning, which include Ningbo, Taizhou and Wenzhou, unsuitable for producing high quality second berry of grape.
Chemical and Sensory Characteristics of Different Red Grapes Grown in Xinjiang, China: Insights into Wines Composition

Abstract:Globally, the red wine market experienced a rapid growth in the last decade, due to the superior colour, taste, and nutritional quality. The red grapes used for vinification have individual characteristics varying within the regional environment. In this study, the quality of seven grape cultivars, including Marselan, Yan 73, Muscat Hamburg, Kadarka, Merlot, Cabernet Sauvignon, and Crimpose, and their corresponding wines, were investigated based on high-performance liquid chromatography and headspace solid-phase microextraction coupled to gas chromatography–mass spectrometry. These techniques were performed to analyze the chemical compositions and volatile compounds of the tested samples, respectively. The results showed that tartaric acid (29.96% to 73.45%) and rutin (12.53% to 56.54%) were the dominant organic acid and phenolic compounds in grapes, respectively. Higher concentrations of organic acids and phenolic compounds, and the types of volatile compounds, were observed to be highest in the Cabernet Sauvignon grape. The antioxidant activity of wines ranged from 6.74 to 102.68 mmol TE/L, and Yan 73 wine had the highest antioxidant activity. A total of 69 volatile compounds consisting of 17 alcohols, 26 esters, 5 aldehydes, 9 acids, 7 ketones, and 5 other volatile compounds were identified in all tested wines, and 11 important aroma active substances (odor activity value > 1) were selected, consisting of β-ionone, phenethyl acetate, geranyl acetate, ethyl 9-decenoate, ethyl caprate, ethyl pelargonate, decanal, ethyl caprylate, 6-methyl-5-hepten-2-one, methyl 2-hexenoate, and ethyl hexanoate, which endow wines with a unique aroma. This work clearly describes the chemical and sensory characteristics of seven red grape cultivars in Xinjiang of China and provides diversity options for cultivars for winemaking.

Abstract:Defoliation is a commonly used viticultural technique to balance the ratio between grapevine vegetation and fruit. Defoliation is conducted around the fruit zone to reduce the leaf photosynthetic area, and to increase sunlight exposure of grape bunches. Apical leaf removal is not commonly practiced, and therefore its influence on canopy structure and resultant wine aroma is not well-studied. This study quantified the influences of apical and basal defoliation on canopy structure parameters using canopy cover photography and computer vision algorithms. The influence of canopy structure changes on the chemical compositions of grapes and wines was investigated over two vintages (2010-2011 and 2015-2016) in Yarra Valley, Australia. The Shiraz grapevines were subjected to five different treatments: no leaf removal (Ctrl); basal (TB) and apical (TD) leaf removal at veraison and intermediate ripeness, respectively. Basal leaf removal significantly reduced the leaf area index and foliage cover and increased canopy porosity, while apical leaf removal had limited influences on canopy parameters. However, the latter tended to result in lower alcohol level in the finished wine. Statistically significant increases in pH and decreases in TA was observed in shaded grapes, while no significant changes in the color profile and volatile compounds of the resultant wine were found. These results suggest that apical leaf removal is an effective method to reduce wine alcohol concentration with minimal influences on wine composition.

Metabolomics of Vitis davidii Foëx. grapes from southern China: Flavonoids and volatiles reveal the flavor profiles of five spine grape varieties

Abstract:The spine grapes (Vitis davidii Foëx.) are wild grape species that grow in southern China, and can be used for table grapes, juicing and winemaking. To systematically investigate the flavor profiles of spine grapes, flavonoids and volatile compounds were detected in five spine grape varieties (Seputao, Ziqiu, Miputao, Tianputao and Baiputao) using HPLC-QqQ-MS/MS and GC-MS. The content of flavonoids highly depended on the variety, such as the total concentrations of anthocyanins (91.43-328.85 mg/kg FW) and flavonols (33.90 to 83.16 mg/kg FW). The volatile compounds with higher odor active value were selected to describe the aroma of spine grapes. Hexanal, (E)-2-hexenal and (E, Z)-2,6-nonadienal contributed to the higher herbaceous flavor to Baiputao and Ziqiu. β-Damascenone and (E)-2-nonenal gave Baiputao a flavor with more floral, fruity and earthy. Their characteristic flavor compounds were subsequently revealed using multivariate statistical analysis. The results helped producers to further develop and utilize the spine grapes.
Comprehensive Evaluation of Ten Actinidia arguta Wines Based on Color, Organic Acids, Volatile Compounds, and Quantitative Descriptive Analysis

Abstract:Actinidia arguta wine is a low-alcoholic beverage brewed from A. arguta with a unique flavor and sweet taste. In this study, the basic physicochemical indicators, color, organic acid, and volatile aroma components of wines made from the A. arguta varieties 'Kuilv', 'Fenglv', 'Jialv', 'Wanlv', 'Xinlv', 'Pinglv', 'Lvbao', 'Cuiyu', 'Tianxinbao', and 'Longcheng No.2' were determined, and a sensory evaluation was performed. The findings show that 'Tianxinbao' produced the driest extract (49.59 g/L), 'Kuilv' produced the most Vitamin C (913.46 mg/L) and total phenols (816.10 mg/L), 'Jialv' produced the most total flavonoids (477.12 mg/L), and 'Cuiyu' produced the most tannins (4.63 g/L). We analyzed the color of the A. arguta wines based on CIEL*a*b* parameters and found that the 'Kuilv' and 'Longcheng No.2' wines had the largest L* value (31.65), the 'Pinglv' wines had the greatest a* value (2.88), and the 'Kuilv' wines had the largest b* value (5.08) and C*ab value (5.66) of the ten samples. A total of eight organic acids were tested in ten samples via high-performance liquid chromatography (HPLC), and we found that there were marked differences in the organic acid contents in different samples (p < 0.05). The main organic acids were citric acid, quinic acid, and malic acid. The aroma description of a wine is one of the keys to its quality. A total of 51 volatile compounds were identified and characterized in ten samples with headspace gas chromatography-ion mobility spectrometry, including 24 esters, 12 alcohols, 9 aldehydes, 3 aldehydes, 2 terpenes, and 1 acid, with the highest total volatile compound content in 'Fenglv'. There were no significant differences in the types of volatile compounds, but there were significant differences in the contents (p < 0.05). An orthogonal partial least squares discriminant analysis (OPLS-DA) based on the odor activity value (OAV) showed that ethyl butanoate, ethyl pentanoate, ethyl crotonate, ethyl isobutyrate, butyl butanoate, 2-methylbutanal, ethyl isovalerate, and ethyl hexanoate were the main odorant markers responsible for flavor differences between all the A. arguta wines. Sensory evaluation is the most subjective and effective way for consumers to judge A. arguta wine quality. A quantitative descriptive analysis (QDA) of the aroma profiles of ten grapes revealed that the 'fruity' and 'floral' descriptors are the main and most essential parts of the overall flavor of A. arguta wines. 'Tianxinbao' had the highest total aroma score. The flavor and quality of A. arguta wines greatly depend on the type and quality of the A. arguta raw material. Therefore, high-quality raw materials can improve the quality of A. arguta wines. The results of the study provide a theoretical basis for improving the quality of A. arguta wines and demonstrate the application prospects of HS-GC-IMS in detecting A. arguta wine flavors.

Abstract:The goals of this work were to screen physiological and biochemical indexes to assess a set of V. vinifera germplasm resources, to compare evaluation methods for cold hardiness, and to establish a comprehensive method that can be used for more accurate screening for cold hardiness in V. vinifera. Four single methods were used to evaluate the cold hardiness of 20 germplasms resources and 18 physiological and biochemical indexes related to cold hardiness were determined. The LT 50 values determined by electrical conductivity (EL), 2,3,5-triphenyltetrazolium chloride staining (TTC), differential thermal analysis (DTA), and recovery growth (RG) methods showed extremely significant positive correlation. Bound water content (BW), proline content (Pro), total soluble sugar content (TSS), malondialdehyde content (MDA), catalase content (CAT), and ascorbic acid content (ASA) exhibited significant correlation with LT 50 values measured by different evaluation methods. The comprehensive cold hardiness index calculated by principal component analysis (PCA) combined with subordinate function (SF) was negatively correlated with LT 50 values measured by different evaluation methods. Meili and Ecolly exhibited the highest cold hardiness, indicating their potential for use as parents for cold hardiness breeding. EL, DTA, TTC, and RG methods successfully distinguished cold hardiness among different V. vinifera germplasm lines. Measurements of BW, Pro, TSS, MDA, CAT, and ASA in dormant shoots also can be used as main physiological and biochemical indexes related to cold hardiness of V. vinifera . Comprehensive evaluation by PCA combined with SF can accurately screen cold hardiness in V. vinifera . This study provides a reference and accurate identification method for the selection of cold hardiness parents and the evaluation of cold hardiness of germplasm of V. vinifera .

Evaluation of soil nutrients and berry quality characteristics of Cabernet Gernischet (Vitis vinifera L.) vineyards in the eastern foothills of the Helan Mountains, China

Abstract:Soil is the basis of the existence of fruit tree and soil nutrients plays a crucial role in plant growth and berry quality. To investigate the characteristics and interrelationships between soil nutrients and berry quality in Cabernet Gernischet vineyards, this study focused on seven representative vineyards in the eastern foothills of the Helan Mountains. Fifteen soil physicochemical factors and 10 berry quality factors were measured, followed by variation analysis, correlation analysis, multiple linear regression (MLR), partial-least squares regression (PLSR), principal component analysis (PCA), and systematic cluster analysis. We identified the main soil nutrient indicators influencing berry quality and developed linear regression equations. Utilizing PCA, a comprehensive evaluation model for berry quality was constructed, which enabled the calculation and ranking of integrated berry quality scores. The results indicated that soil nutrients in the vineyards of the eastern foothills of the Helan Mountains are relatively deficient and alkaline. The coefficient of variation for soil nutrient factors ranged from 3.19 to 118.08% and for berry quality factors 2.41-26.37%. Correlation analysis revealed varying degrees of correlation between soil nutrient indicators and fruit quality indicators. PCA extracted four principal components with a cumulative contribution rate of 91.506%. Based on the scores of these components and their corresponding weights, a comprehensive model for evaluating the quality of Cabernet Gernischet berries was established. The vineyards were ranked from the highest to the lowest combined scores as Zhenbeibu (ZBB), Yuquanying (YQY), Dawukou (DWK), Beihaizi (BHZ), Shuxin (SX), Huangyangtan (HYT), and Hongde (HD). These findings provide insights into soil nutrient management and comprehensive quality assessment of vineyards in the eastern foothills of the Helan Mountains. In conclusion, this study offers a theoretical foundation for vineyard managers to enhance grape berries quality through soil nutrient management. This will aid in the diagnosis of vineyard soil nutrition and the efficient use of fertilizers, with critical practical and theoretical implications for the meticulous management of vineyards and the production of high-quality wines.
Hyperspectral Imaging Spectroscopy for Non-Destructive Determination of Grape Berry Total Soluble Solids and Titratable Acidity

Abstract:Wine grape quality heavily influences the price received for a product. Hyperspectral imaging has the potential to provide a non-destructive technique for predicting various enological parameters. This study aims to explore the feasibility of applying hyperspectral imaging to measure the total soluble solids (TSS) and titratable acidity (TA) in wine grape berries. A normalized difference spectral index (NDSI) spectral preprocessing method was built and compared with the conventional preprocessing method: multiplicative scatter correction and Savitzky–Golay smoothing (MSC+SG). Different machine learning models were built to examine the performance of the preprocessing methods. The results show that the NDSI preprocessing method demonstrated better performance than the MSC+SG preprocessing method in different classification models, with the best model correctly classifying 93.8% of the TSS and 84.4% of the TA. In addition, the TSS can be predicted with moderate performance using support vector regression (SVR) and MSC+SG preprocessing with a root mean squared error (RMSE) of 0.523 °Brix and a coefficient of determination (R2) of 0.622, and the TA can be predicted with moderate performance using SVR and NDSI preprocessing (RMSE = 0.19%, R2 = 0.525). This study demonstrates that hyperspectral imaging data and NDSI preprocessing have the potential to be a method for grading wine grapes for producing quality wines.

Characterization of the Key Aroma Volatile Compounds in Nine Different Grape Varieties Wine by Headspace Gas Chromatography–Ion Mobility Spectrometry (HS-GC-IMS), Odor Activity Values (OAV) and Sensory Analysis

Abstract:During this study, the physicochemical properties, color, and volatile aroma compounds of the original wines produced from the grape varieties 'Hassan', 'Zuoshaner', 'Beibinghong', 'Zuoyouhong', 'Beta', 'Shuanghong', 'Zijingganlu', 'Cabernet Sauvignon', and 'Syrah' were determined and sensory evaluation was performed. Results indicated that 'Hassan' contained the most solids, 'Zuoshaner' produced the most total acid, residual sugar, total anthocyanin, and total phenol, and 'Shuanghong' produced the most tannin. Calculation of the chroma and hue of the wines according to the CIEL*a*b* parameters revealed that the 'Cabernet Sauvignon' wines were the brightest of the nine varieties and that the 'Zuoshaner' wines had the greatest red hue and yellow hue and the greatest saturation'. A total of 52 volatile compounds were identified and quantified in nine wine samples by HS-GC-IMS analysis, with the most significant number of species detected being 20 esters, followed by 16 alcohols, 8 aldehydes, four ketones, one terpene, and one furan, with the highest total volatile compound content being 'Beta'. A total of 14 volatile components with OAV (odor activity value) >1 were calculated using the odor activity value (OAV) of the threshold of the aromatic compound, and the OPLS-DA analysis was performed by orthogonal partial least squares discriminant analysis (OPLS-DA) using the OAV values of the compounds with OAV values >1 as the Y variable. The VIP (Variable Importance in Projection) values of six compounds, ethyl isobutyrate, ethyl hexanoate-D, 2-methylpropanal, ethyl octanoate, ethyl butanoate-D, and Isoamyl acetate-D, were calculated to be higher than one between groups, indicating that these six compounds may influence aroma differences. It is essential to recognize that the results of this study have implications for understanding the quality differences between different varieties of wines and for developing wines that have the characteristics of those varieties.
