Comprehensive Reviews in Food Science and Food Safety

Abstract:Each year, 1.3 billion tons of food is lost due to spoilage or loss in the supply chain, accounting for approximately one third of global food production. This requires a manufacturer to provide accurate information on the shelf life of the food in each stage. Various models for monitoring food quality have been developed and applied to predict food shelf life. This review classified shelf life models and detailed the application background and characteristics of commonly used models to better understand the different uses and aspects of the commonly used models. In particular, the structural framework, application mechanisms, and numerical relationships of commonly used models were elaborated. In addition, the study focused on the application of commonly used models in the food field. Besides predicting the freshness index and remaining shelf life of food, the study addressed aspects such as food classification (maturity and damage) and content prediction. Finally, further promotion of shelf life models in the food field, use of multivariate analysis methods, and development of new models were foreseen. More reliable transportation, processing, and packaging methods could be screened out based on real-time food quality monitoring.

Abstract:Although most food companies have a distinct interest in the shelf-life of their food products, little has been done to determine true shelf-life as a function of variable environmental conditions. Research efforts are generally aimed at improving quality with respect to a longer shelf-life. For true shelf-life prediction, especially for refrigerated foods, knowledge of predictive microbiology is needed. Models that describe influences of temperature and water activity on microbial deterioration are compared and the square-root model is found to be the best based on the criteria of r2 and mean square error. Appropriate approaches are presented for prediction of remaining quality or shelf-life of foods undergoing fluctuating temperature conditions. Finally, the Weibull hazard analysis technique for determination of shelf-life is introduced.

Abstract:The length of shelf life can be determined using storage tests that evaluate the physical, chemical, enzymatic, and microbiological stability of the food. The design of the tests as well as the interpretation of the results require microbiological and technical knowledge and skills. Fresh foods can become microbiologically risky before they noticeably spoil. These products will require additional studies such as predictive microbiological models or challenge tests in addition to direct ones. Deterioration of shelf-stable or frozen foods at the end of their shelf life affects quality and consumer acceptance without impacting health and safety. In such a case, accelerated shelf-life testing is recommended, and the Arrhenius model is commonly used to determine the relationship between chemical reaction rate and temperature change.

Abstract:Fruits and vegetables are valued for their flavor and high nutritional content, but their perishability and seasonality present challenges for storage and marketing. To address these, it is essential to accurately monitor their quality and predict shelf life. Unlike traditional methods, machine learning efficiently handles large datasets, identifies complex patterns, and builds predictive models to estimate food shelf life. These models can be continuously refined with new data, improving accuracy and robustness over time. This article discusses key machine learning methods for predicting shelf life and quality control of fruits and vegetables, with a focus on storage conditions, physicochemical properties, and non-destructive testing. It emphasizes advances such as dataset expansion, model optimization, multi-model fusion, and integration of deep learning and non-destructive testing. These developments aim to reduce resource waste, provide theoretical basis and technical guidance for the formation of modern intelligent agricultural supply chains, promote sustainable green development of the food industry, and foster interdisciplinary integration in the field of artificial intelligence.

Abstract:The prediction of food shelf life has become a vital tool for distributors and consumers, enabling them to determine storage and optimal edible time, thus avoiding unexpected food waste. Artificial neural network (ANN) have emerged as an effective, fast and accurate method for modeling, simulating and predicting shelf life in food. ANNs are capable of tackling nonlinear, complex and ill-defined problems between the variables without prior knowledge. ANN model exhibited excellent fit performance evidenced by low root mean squared error and high correlation coefficient. The low relative error between actual values and predicted values from the ANN model demonstrates its high accuracy. This paper describes the modeling of ANN in food quality prediction, encompassing commonly used ANN architectures, ANN simulation techniques, and criteria for evaluating ANN model performance. The review focuses on the application of ANN for modeling nonlinear food quality during storage, including dairy, meat, aquatic, fruits, and vegetables products. The future prospects of ANN development mainly focus on optimal models and learning algorithm selection, multiple model fusion, self-learning and self-correcting shelf-life prediction model development, and the potential utilization of deep learning techniques.

Quality Change and Shelf Life Prediction of Chicken Feet with Pickled Peppers Stored at Different Temperatures

Abstract:Vacuum-packed chicken feet with pickled peppers were investigated for changes and correlation of quality parameters such as sensory quality,pH,TVB-N,TBARs and total bacterial count when stored at 10,25,30 ℃ or 37 ℃.Shelf life prediction of the vacuum-packed product at the different storage temperatures was studied by establishing multiple regression equations.The results revealed that storage temperature and time had a significant effect(P 0.05) on the quality and shelf life of vacuum-packed chicken feet with pickled peppers.With increasing storage temperature and time,the products became soft,sticky,dull and dark in color,with a large amount of exudates and undesirable odor;meanwhile,the pH presented an initial decrease and final increase due to the extension of storage time.Higher storage temperatures could result in a significant increase in pH,TVB-N value and total bacterial count.The TBARs value increased during the early period of storage and showed a downward trend during the later period of storage.In addition,storage temperature had a significant correlation with all other indexes(P 0.01);the total number of bacteria also had a significant correlation with sensory quality,pH,TVB-N and TBARs(P 0.01).These results showed that storage temperature and microorganisms were the major factors causing the deterioration of vacuum-packed chicken feet with pickled peppers.Based on multiple regression model analysis,the equations of shelf life prediction for vacuum-packed chicken feet with pickled peppers at the above-mentioned storage temperatures exhibited high reliability in validation experiments.The predicted shelf life of vacuum-packed chicken feet with pickled peppers stored at 10,25,30 ℃ and 37 ℃ were 206,141,35 days and 18 days,respectively,which were close to the results of validation experiments.Therefore,this study will hopefully provide a reference for the storage and sale of vacuum-packed chicken feet with pickled peppers.

Abstract:Retailers of perishable goods are often faced with the choice between more expensive packaging that can extend shelf life of their products and less expensive packaging that cannot. Different choices will lead to different sales, costs, and waste, and different choices require different inventory control policies. In this paper, we study the coordination of inventory and packaging decisions in a retailing environment. Items in an active package have a longer lifetime than those in a regular package and cost more. Customers always pick items with a longer lifetime first. When items with a longer lifetime are out of stock, a portion of customers are willing to buy less fresh items as substitutes. Our study shows the optimality of a “separation” policy when the substitution rate is high. In the separation policy, as the initial inventory level increases, the optimal policy changes from using active packaging only, then to using regular packaging only, and finally to ordering nothing. These results are very specific to the way perishable inventories are depleted in retailing. Our numerical study shows that although it may not be optimal in terms of cost, the adoption of active packaging can consistently achieve substantial waste reduction.

Abstract:The quality changes in whole egg powders (WEP) during accelerated storage (40 degrees C, 50 degrees C, and 60 degrees C for 35 days) were characterized by monitoring its moisture, pH, color, volatile flavor component, sensory attribute, particle size, and lipid oxidation. The general stability index (GSI) and multivariate accelerated shelf-life test (MASLT) were used to estimate the shelf-life of WEP. GSI evaluated the sensory scores, hydroperoxide (ROOH) content, malondialdehyde content, and acid value (AV), representing the shelf-life quality loss of WEP. For the MASLT, the data set was spatially compressed by principal components analysis (PCA) to obtain scores for the time-dependent components for further shelf-life evaluation. The predicted shelf-life at 25 degrees C storage using the GSI and MASLT model were 500 and 452 days, respectively. Overall, the MASLT model was more comprehensive and considered a more stringent predictor of shelf-life.

Abstract:<span class="paragraphSection">The current study was performed to develop dynamic quality and shelf-life prediction models using selected index for packaged chicken meat during storage. Generally, the results showed that meat deterioration, with respect to the different quality indices considered in the investigation, proceeds with increasing temperature and storage time. Highly significant (<span>P</span> ≤ 0.01) correlations were obtained between TPC (total plate count) and SI (sensory index) (r = −0.94 to −0.97), coliforms and SI (r = −0.89 to −0.95), and LAB (lactic acid bacteria) and SI (r = −0.93 to −0.98). However, only the microbiological spoilage regarding TPC, whose values ranged from 7.0 to 8.0 log CFU/g under all investigated temperature conditions, were in compliance with the end of sensory shelf-life defined at SI = 5. To develop dynamic quality prediction model, 4 isothermal (0, 4, 10, and 15°C) experiments in 2 batches were performed for TPC evaluation. Growth data were fitted in the Baranyi and Roberts and quadratic polynomial model as the primary and secondary models, respectively. The model was validated under dynamic conditions (0–8°C scenario with periodic 12-h changes). The accuracy and bias factors were estimated to be 1.045 and 0.991 for fluctuating conditions and 1.016 and 1.015 for real-time conditions, respectively, suggesting good applicability of the model. The remaining shelf-life estimation model developed based on mean kinetic temperature showed an even decrease of shelf-life under dynamic conditions in time. The developed model scan can be used for effective monitoring of packaged chicken meat freshness and shelf-life during distribution with temperature fluctuation.</span>

Predictive Modeling of Shelf Life of Peanut and Walnut Kernels during Storage

Abstract:In this study,accelerated storage tests were used to explore the kinetics of lipid oxidation in peanut and walnut kernels and develop mathematical models for predicting their shelf lives.Peanut and walnut kernels were stored at 0-50 ℃ in a vacuum or atmospheric environment to measure the changes of peroxide value(POV) at 20 d intervals during storage at different temperatures(0,20,30,40 ℃ and 50 ℃).A first-order reaction model between logarithmic POV and storage time(t) was fitted and an Arrhenius model of reaction rate constant(k) with respect to storage temperature(T) was established for peanut and walnut kernels,respectively.The oxidative rancidity of both kernels could be inhibited in vacuum or at lower temperature due to the increased EA;walnut kernels were more sensitive to oxidation due to having lower EAthan peanut kernels.The observed high regression coefficients(R2> 0.95)and similarity between the experimental and predicted shelflives ofpeanut and walnutkernels indicated the high reliability of the established first order reaction model and Arrhenius model for the prediction of shelf life during storage at 0-50 ℃.

So this paper identifies the impact aspects of produce decaying during distribution. For the key temperature factor, the process is divided into three phases: sorting, traveling and door-opening. Based on time-temperature function, a model of shelf-life loss of horticultural produce during distribution is developed by evaluating respiration rate of vegetables and fruits considering both the environment fluctuated temperature and vehicle vibration during traveling. Taking eggplant as an example, the numerical experiment result demonstrates that the average cost for ambient distribution is 2.8 times of the insulation way.

Abstract:Postharvest strawberry was stored at 4 degrees C, 15 degrees C, 25 degrees C, and 35 degrees C to study the quality variation during the storage. The results showed that firmness, total sugar content (TSC), titratable acidity (TA), and ascorbic acid (AA) content of postharvest strawberry had high correlations with the aerobic plate counts (APC) changes. A kinetic model of microbial growth was established based on modified Gompertz model in order to predict the shelf-life of postharvest strawberry. Moreover, the model was verified by several indices such as R-2, A(f), and B-f. This mathematical model at different temperatures fitted into the modified Gompertz model with a high correlation coefficient (R-2 > 0.99). Predicted values were compared with observed values, and bias factors and accuracy factors were all in the acceptable range, indicating that this model had practical application.

Abstract:Fresh dates have a limited shelf life and are susceptible to spoilage, which can lead to economic losses for producers and suppliers. The problem of accurate shelf life estimation for fresh dates is essential for various stakeholders involved in the production, supply, and consumption of dates. Modified atmosphere packaging (MAP) is one of the essential methods that improves the quality and increases the shelf life of fresh dates by reducing the rate of ripening. Therefore, this study aims to apply fast and cost-effective non-destructive techniques based on machine learning (ML) to predict and estimate the shelf life of stored fresh date fruits under different conditions. Predicting and estimating the shelf life of stored date fruits is essential for scheduling them for consumption at the right time in the supply chain to benefit from the nutritional advantages of fresh dates. The study observed the physicochemical attributes of fresh date fruits, including moisture content, total soluble solids, sugar content, tannin content, pH, and firmness, during storage in a vacuum and MAP at 5 and 24 ∘C every 7 days to determine the shelf life using a non-destructive approach. TinyML-compatible regression models were employed to predict the stages of fruit development during the storage period. The decrease in the shelf life of the fruits begins when they transition from the Khalal stage to the Rutab stage, and the shelf life ends when they start to spoil or ripen to the Tamr stage. Low-cost Visible-Near-Infrared (VisNIR) spectral sensors (AS7265x-multi-spectral) were used to capture the internal physicochemical attributes of the fresh fruit. Regression models were employed for shelf life estimation. The findings indicated that vacuum and modified atmosphere packaging with 20% CO2 and N balance efficiently increased the shelf life of the stored fresh fruit to 53 days and 44 days, respectively, when maintained at 5 ∘C. However, the shelf life decreased to 44 and 23 days when the vacuum and modified atmosphere packaging with 20% CO2 and N balance were maintained at room temperature (24 ∘C). Edge Impulse supports the training and deployment of models on low-cost microcontrollers, which can be used to predict real-time estimations of the shelf life of fresh dates using TinyML sensors.

Abstract:The safety and quality of fresh fruits deserve the greatest attention, and are a priority for producers and consumers alike. Modern technologies are crucial to accurately estimating and predicting fresh fruits' quality and shelf life, to optimize supply chain management. Modified atmosphere packaging (MAP) is an essential method that maintains quality parameters and increases the shelf life of fresh fruits by reducing their ripening rates. This study aimed to develop a cost-effective, non-destructive technique using tiny machine learning (TinyML) and a multispectral sensor to predict/estimate the quality parameters and shelf life of packaged fresh dates under the natural atmosphere (Control), vacuum-sealed bags (VSBs), and MAP with different gas combinations: 20% CO2 + N balance (MAP1), and 20% CO2 + 10% O2 + N balance (MAP2). The shelf life and quality parameters of the packaged fresh dates (pH, total soluble solids (TSSs), sugar content (SC), moisture content (MC), and tannin content (TC)) were evaluated under different storage temperatures and times. A multispectral sensor (AS7265x) was utilized to correlate the fruit quality parameters with spectrum analysis under the same storage conditions, to prepare the dataset to train the prediction models. The prediction models were trained in the Edge Impulse Platform, and deployed to an Arduino Nano 33 BLE sense microcontroller unit (MCU) for inference. The findings indicated that the vacuum and MAP1 efficiently increased the shelf life and maintained the quality parameters of the packaged fresh fruit to 43 ± 2.39 and 39 ± 3.34 days, respectively, at 5 °C. The optimal neural network consisted of the input layer with 20 nodes (the packaging type, storage temperature, and 18 channels of the spectral sensor data at 410 to 940 nm wavelengths), two hidden layers with 20 and 12 nodes, and an output layer with one node for the target quality parameter or shelf life. These optimal prediction models efficiently predicted the shelf life with R2 = 0.951, pH with R2 = 0.854, TSSs with R2 = 0.893, SC with R2 = 0.881, MC with R2 = 0.941, and TC with R2 = 0.909. The evaluation of the developed prediction models under each packaging condition indicated that these models serve as powerful tools for accurately predicting fruit quality parameters, and estimating the shelf life of fresh dates.
