Abstract:Resistant starch(RS) is defined as the sum of starch and its degradation products not absorbed in the small intestine of healthy individuals.RS3 is the major resistant starch in diet,and its formation affected by other characters such as starch,protein,fat,processing manners and other factors.The factors influencing the formation of RS was reviewed briefly in current paper,that might provide references for enhancing RS content by breeding approaches and processing methods.

Abstract:Starches are important sources of dietary energy for human which is closely related to human health. Resistant starch is the fraction of starch which is not hydrolyzed to D-glucose in the small intestine within 120 min of being consumed. It is then fermented in the colon,thus plays a beneficial physiological effect. Therefore,resistant starch can be regarded as a component of diary fibres. Resistant starch has been classified into four general subtypes called RS1 to RS4,lately RS type five was considered. When starch interacts with lipids,amylose and long branch chains of amylopectin form single-helical complexes with fatty acids and fatty alcohols. This amylose-lipid complexed starch is called RS5. Resistant starch has been widely applied in foods such as noodles,breads and fried food. Resistant starch can prevent the colon cancer,reduce the blood cholesterol level,the obesity and the stone incidence and control the diabetes. The objective of this review is to summarize current understanding in five types of resistant starch,their applications in foods processing and health benefits to consumers.

Abstract:The extracting technology of potato starch in the laboratory and several factors which affected the extracting technology have been studied based on the now research.The technology conditions of extracting potato starch were determined by the orthogonal experiment.Taking no peeling,the ratio of potato and water is one to three,the period of settlement 6～8 hours,the lavation number of times is 3 as the laboratory potato starch extracting extraction conditions,the quality of potato starch product is up to the top standard in industry and some items are better than the top standard in industry.

Abstract:Milled rice(Oryza sativa L.) is composed of approximately ninty percent of starch.The properties of starch have considerable effects on palatability and consumer acceptability of cooked rice and processed foods. This review firstly introduced the parameters and their relation to rice quality.Then,the current progress in the studies on the genetic basis of apparent amylose content,gelatinization temperature,gel consistency,rapid vis- co-analyser(RVA) viscosity profiles,amylopectin structure,swelling properties,gel texture and retrogradation properties were reviewed.The interrelation between starch qualities and other quality traits and agronomic traits, and effects of environment and genotype by environment interaction on starch quality were summarized.Rice im- provement using molecular marker-assisted selection and genetic engineering were also summarized.Finally,fu- ture works were put forward on the genetic network for starch quality related traits,gene markers mining for starch quality,rice improvement by pyramiding of multiple genes and construction of database for molecular design. Through the application-directed studies and breeding practices,market-oriented new varieties with good starch quality will be bred in the near future.

Abstract:Eight rice varieties with wide diversity in apparent amylose content (AC) were selected and planted in the early season and late season of Hangzhou and in the winter season of Hainan for two consecutive years to study the genotype x environment effects on the starch properties of the grain. Analyses of variance showed that AC, cool paste viscosity, breakdown viscosity, setback viscosity, peak time, gel hardness, adhesiveness, and cohesiveness were mainly affected by genotypic variation, whereas peak viscosity and hot paste viscosity were mainly affected by environmental variation. The year x season, year x variety, season x variety, and year x season x variety effects were significant for most traits, indicating significant genotype x environment interactions. AC was significantly correlated with all other parameters except PV. Because the Wx gene controls the synthesis of amylose in rice, the mechanism of how the environment affects starch properties is discussed in relation to Wx expression and regulation. The implications of the results for rice breeders and starch-based food manufacturers are discussed.

Abstract:Resistant starch (RS) is a non-digestible carbohydrate that has numerous biological benefits. However, the amounts of RS are limited in most native cereal starches, thus developing RS-fortified starch sources and food products is necessary. This review summarizes the effectiveness of RS improvement by chemical, enzymatic, and physical modification approaches in starches from various origins. The functions of RS in regulating the metabolisms and the influences of RS on the nutritional and textural properties of various foods are also elucidated. After modification, the molecular structures are altered and the starch granules became more resistant to enzymatic digestion. However, the comparison of the RS contents between raw and cooked starch is absent in many studies. In addition, RS plays an essential role in attenuating postprandial glycemia, inhibiting glucose and lipid synthesis and promoting glucose tolerance, insulin sensitivity, and lipid degradation, which are controlled by the enriched diversity and abundance of the beneficial microbiota in the colon, together with more short-chain fatty acids. The incorporation of RS in food products significantly increases nutritional value without unacceptable quality loss, which provides a new direction for manufacturing functional foods.

Abstract:Physicochemical modification methods have been widely applied to increase resistant starch (RS) content of waxy starch, but their effects on the functional properties of non-waxy starches are not fully understood. In this study, five non-waxy rice starches with intermediate to very high apparent amylose contents (AAC) were modified by pullulanase (PUL), heat-moisture treatment (HMT) and citric acid (CA). RS contents, AAC, crystalline structures, pasting properties and thermal properties were analyzed. The three modification treatments were effective in increasing the RS contents, especially CA modification. PUL modified starches had relatively higher AAC and relative crystallinity (RC), and their crystalline patterns changed from A-type to mixed B + V type. Both HMT and CA increased gelatinization temperature significantly but had opposite effects on changing paste viscosity of different rice starches. Compared with other non-waxy rice varieties, high-amylose rice starch exhibited the highest RS, AAC, and RC after modification. This study provides practical information for improving the nutritional benefits of rice.

Abstract:With changes in food preferences and life styles, more and more attentions have been focused on healthier food. Nowadays, resistant starch (RS) which can resist digestion in the human intestine has been recognized and accepted. High RS diet shows great benefit for the human health, and breeding high RS rice variety is a great target for realizing dietary intervention. To provide guidance for RS improvement in rice, this review summarized the unique physiochemical properties of RS and the possible approaches, i.e. genetic regulation, for enhancing RS content in rice, and proposed the potential ways to obtain rice variety with high RS content.

Abstract:Amylopectin is the principle component of starch. To elucidate the relationships between amylopectin and resistant starch content, six rice mutants with altered fine structure of amylopectin were selected for comparative studies with the primary wild type and two types of amylose-extender (ae) mutants. Significant differences in resistant starch content were observed among mutants with similarity or differences in amylose levels. Mutants high in resistant starch had significantly increased proportions of short amylopectin chains with DP <= 12, decreased levels of intermediate chains with size of 13 <= DP <= 36, and decreased fractions of long chains with DP >= 37. Additionally, there was a mutant different to ae, which was characterized by an increased level of short chains with 8 <= DP <= 12 and 13 <= DP <= 24, and a decreased proportion of long chains with DP >= 37. The increased contents of short chains with 8 <= DP <= 12 and decreased of intermediate and long chains with 24 <= DP were clearly associated with the increase of resistant starch in rice.

Abstract:Grain filling is a key step in determining the yield potential and grain quality of rice, which is directly related to the seed setting rate and 1000-grain weights. Rice grain filling is influenced by many factors, including the inherent characteristics of rice cultivar, plant hormones and environmental factors. At the molecular level, grain filling is also regulated by the related enzymes and genes during starch synthesis and transportation. Research progress on influence factors and related proteins and genes of rice grain filling were reviewed in the paper.

Abstract:With 94 spring wheat cultivars as experimental materials, the correlations between the content of resistant starch(RS) in uncooked flour and cooked flour, and the apparent amylose content(AAC), protein, lipid were investigated.The results showed that RS contents in both the uncooked flour and cooked flour assumed significantly positive correlation with AAC, and significantly negative correlation with protein content; and they were proved to be not significantly correlated with lipid content.RS content in uncooked flour was significantly correlated with that in cooked flour.These results provided references for the genetic improvement of wheat cultivars.

Abstract:SummaryTo investigate the possibility of improving the quality of rice rich in resistant starch through operation of nonstarch polysaccharides, the high dietary fibre (7.24%) mutant cw and its wild‐type R7954 were selected to study the physiochemical characteristics of starch before and after removal of nonstarch polysaccharides. Results showed that hydrolysed or partially hydrolysed nonstarch polysaccharides in cw decreased the resistant starch content significantly, from 15.23% to 10.8%. Nonstarch polysaccharides had significant influences on the gelatinisation temperature, RVA parameters of R7954, but no significant influences on that of cw. For cw, removal of cellulose increased swelling power and adhesiveness, decreased the hardness significantly, from 0.3 to 0.23 N, while the resistant starch content was still as high as 13.72% and showed no significant difference from the wild type. This suggests that the influences of nonstarch polysaccharides on starch properties depend both on the type of rice and the nonstarch polysaccharides. Operation on nonstarch polysaccharides for obtaining rice with lower glycemic index is feasible, but operation on nonstarch polysaccharides may also be an alternative way of improving the palatability for rice high in resistant starch.

Characterization and Correlation Analysis of Physico-chemical Properties of Starch from Different Potato Cultivars

Abstract:Potato starch has some special properties,which contribute to its versatile utilization and application potential.Starches from different sources have different physico-chemical and functional properties.In this work,eight potato cultivars were extracted to obtain starch,and the extracted starches were subjected to characterization and correlation analysis of physicochemical properties such as chemical composition,swelling power,solubility and thermal and rheological properties.Potato starch crystallinity was negatively correlation with temperature at storage modulus peak and swelling power,respectively.The contents of amylose and phosphorus were both positively correlated with temperature at storage modulus peak,storage modulus peak,transition temperature(onset,To;peak,Tp;and conclusion,Tc) but negatively correlated with crystallinity.Furthermore,a negative correlation between amylase content and gelatinization enthalpy was also observed.

Abstract:Starch granule-associated proteins (SGAPs) including granule-surface proteins and granule-channel proteins in waxy, low- and high-amylose rice starch were extracted and identified. The in vitro digestibility of starch was investigated before and after the extraction of granule-channel proteins or total SGAPs. The results showed that 10 types of major differentially expressed proteins (DEPs) including 14-3-3-like protein and ribosomal protein were found among starches. In addition, the lack of only granule-channel proteins or total SGAPs led to significant and different changes in the levels of rapidly digestible starch, slowly digestible starch and resistant starch. Possible mechanisms are related to the accessibility of amylase into starch granules and structural properties of SGAPs. This study provides more information about DEPs in rice starch with different amylose content and supports further study on the relationship between SGAPs and in vitro starch digestibility.

Abstract:Yam is a significant staple food and starch source, particularly in tropical and subtropical regions, holding the fourth position among the world's top ten tuber crops. Yam tubers are rich in essential nutrients and a diverse range of beneficial plant compounds, which contribute to their multifaceted beneficial functions. Furthermore, the abundant starch and resistant starch (RS) content in yam can fulfil the market demand for RS. The inherent and modified properties of yam starch and RS make them versatile ingredients for a wide range of food products, with the potential to become one of the most cost-effective raw materials in the food industry. In recent years, research on yam RS has experienced progressive expansion. This article provides a comprehensive summary of the latest research findings on yam starch and its RS, elucidating the feasibility of commercial RS production and the technology's impact on the physical and chemical properties of starch. Yam has emerged as a promising reservoir of tuber starch for sustainable RS production, with thermal, chemical, enzymatic and combination treatments proving to be effective manufacturing procedures for RS. The adaptability of yam RS allows for a wide range of food applications.

Abstract:Resistant starch, also known as anti-digestion enzymatic starch, which cannot be digested or absorbed in the human small intestine. It can be fermented in the large intestine into short-chain fatty acids (SCFAs) and metabolites, which are advantageous to the human body. Starches can classify as rapidly digestible starch (RDS), slowly digestible starch (SDS), and resistant starch (RS), which possess high thermal stability, low water holding capacity, and emulsification characteristics. Resistant starch has excellent physiological functions such as stabilizing postprandial blood glucose levels, preventing type II diabetes, preventing intestinal inflammation, and regulating gut microbiota phenotype. It is extensively utilized in food processing, delivery system construction, and Pickering emulsion due to its processing properties. The resistant starches, with their higher resistance to enzymatic hydrolysis, support their suitability as a potential drug carrier. Therefore, this review focuses on resistant starch with structural features, modification characteristics, immunomodulatory functions, and delivery system applications. The objective was to provide theoretical guidance for applying of resistant starch to food health related industries.
