Abstract:Food safety is related to public health and environmental safety. Therefore, it is necessary to develop accurate and effective detection methods to assess food quality and safety. In this study, a pH-responsive functional film (BC/GA/FITC/PCA) was generated for the real-time and visual monitoring of shrimp freshness. Bacterial cellulose /Gelatin (BC/GA) was used as a film-forming matrix, and fluorescein isothiocyanate (FITC) and red cabbage (PCA) were used as the response signals. The addition of FITC and PCA increased the shading capacity (< 30 %) and antioxidant properties (22.8 %) of the films. WCA (82.73 ± 0.95°), WVP (1.48 × 10 −11 g·cm/cm 2 ·s·Pa) and OTR (2.42 × 10 −15 cm 3 ·cm/cm 2 ·s·Pa) indicated that the film possessed water resistance and oxygen barrier properties. When exposed to daylight, the film underwent a color transition from purple to green as the ammonia concentration increased. In addition, the blue-green fluorescence of the films gradually increased and the detection limit was low (170 ppb). In particular, the change in film color caused by shrimp spoilage corresponded to the TVBN value. This study work provides a new strategy for controlling and monitoring food safety and has a wide range of applications in the fields of food-active packaging and smart packaging.

Abstract:Herein, the nanolignin-containing cellulose nanofibrils (LCNF)-enabled ratiometric fluorescent bio-nanocomposite film is developed. Interestingly, the inclusion of LCNF in the cellulose-based film enhances the detecting performance of food freshness, such as high sensitivity to biogenic amines (BAs) (limit of detection (LOD) of up to 1.83 ppm) and ultrahigh discernible fluorescence color difference (ΔE = 113.11). The underlying mechanisms are the fluorescence resonance energy transfer (FRET), π - π interaction, and cation - π interaction between LCNF and fluorescein isothiocyanate (FITC), as well as the increased hydrophobicity due to lignin, which increases the interactions of amines with FITC. Its color stability (up to 28 days) and mechanical property (49.4 Mpa) are simultaneously improved. Furthermore, a smartphone based detecting platform is developed to achieve access to food safety. This work presents a novel technology, which can have a great potential in the field of food packaging and safety.
Exopolysaccharide riclin and anthocyanin-based composite colorimetric indicator film for food freshness monitoring

Abstract:Food freshness monitoring is vital to ensure food safety. Recently, packaging materials incorporating pH-sensitive films have been employed to monitor the freshness of food products in real time. The film-forming matrix of the pH-sensitive film is essential to maintain the desired physicochemical functions of the packaging. Conventional film-forming matrices, such as polyvinyl alcohol (PVA), have drawbacks of low water resistance, poor mechanical properties, and weak antioxidant ability. In this study, we successfully synthesise PVA/riclin (P/R) biodegradable polymer films to overcome these limitations. The films feature riclin, an agrobacterium -derived exopolysaccharide. The uniformly dispersed riclin conferred outstanding antioxidant activity to the PVA film and significantly improved its tensile strength and barrier properties by forming hydrogen bonds. Purple sweet potato anthocyanin (PSPA) was used as a pH indicator. The intelligent film with added PSPA provided robust surveillance of volatile ammonia and changed its color within 30 s in the pH range of 2–12. This multifunctional colorimetric film also engendered discernible color changes when the quality of shrimp deteriorated, demonstrating its great potential as an intelligent packaging material to monitor food freshness.

Abstract:Due to increasing food-safety issues, exploiting efficient approaches for food quality assessment and instrumentation has attracted concerns worldwide. Herein, a smart evaluation system based on a fluorescent metal-organic framework (MOF) is developed for real-time visual monitoring of food freshness. Via post-synthetic modification, a ratiometric fluorescent MOF probe is constructed by covalently coupling fluorescein 5-isothiocyanate (5-FITC) with NH<sub>2</sub> -rich lanthanide MOF. The probes exhibit a dual-emissive-responsive to biogenic amine, resulting in an increase in FITC emission along with a decrease in Eu<sup>3+</sup> emission accompanied by a clear distinguishable color transition from orange red to green. After doping the probes on a flexible substrate, the obtained MOF composite film can be integrated with a smartphone-based portable platform easily. It is proved that this smart evaluation system can be used for on-site inspection of the freshness of raw fish samples. This work develops a fluorescent MOF-based smart evaluation system as a novel platform for application in food monitoring, which not only has enormous economic value but also holds great public health significance.

Abstract:This paper presents a triple-feed RFID tag antenna whose radiation pattern is near omni-directional in three dimensions, and which has less than 3.0 dB gain deviation in all directions. The presented tag with a near omni-directional radiation pattern can be employed to overcome the null-reading problem of dipole-type RFID tag applications. A unique feature of the triple-feed design is that the tag can function effectively with three different RFID chips, whose impedances vary widely. An important advantage of this feature is that the tag does not have to be redesigned to work with different RFID chips. The antenna is comprised of an open loop radiatin element, which is excited by using inductively coupled mechanism with a small multi-feed loop that is designed to work with three different chips, namely Impinj, Alien and TI. In addition, the inductively-coupled feed makes it convenient to implement a conjugate impedance match even when the quality factor Q of the antenna is high.

Abstract:As food spoilage increased, the excitation wavelength‐dependent luminescent polymer P3‐prepared labels shows a purplish‐red‐to‐green fluorescence change as well as an turn‐on of green fluorescence under 254 and 365 nm UV lamps, respectively. By using a smartphone to read the R/G/B values of fluorescent labels at different excitation wavelengths to output TVBN values, self‐calibration of the evaluation results can be achieved. Accurate assessment of food freshness is critical to maintaining human health. However, the complex environment of food usually leads to false‐positive measurements result. Therefore, the development of sensing platforms with self‐calibration for accurate detection of food freshness in complex environments is essential. Here, using the green fluorescence‐emitting FITC‐ene and the red fluorescence‐emitting DBA‐ene‐Eu3+ as fluorescent units, fluorescent polymeric materials P1‐P4 with excitation wavelength‐dependent (254 and 365 nm, matched with standard UV lamp) emission are prepared. P1‐P4 responded rapidly to biogenic amines (BAs). Among them, P3 exhibits the widest linear range, and the most noticeable fluorescence color change (from orange‐red to yellow‐green) under 254 nm excitation and enhanced green fluorescence under 365 nm excitation. The changes of P3‐prepared labels at different excitation wavelengths can be utilized to rapidly evaluate the food's freshness. Furthermore, by using a smartphone to read the Red/Green/Blue values of the labels, the total volatile basic nitrogen (TVBN) values can be output to quantitatively evaluate the food freshness, and the output TVBN values at different excitation wavelengths are utilized for mutual calibration to improve the accuracy of the estimation results. This self‐calibrating sensing platform is fast and nondestructive, which provides an effective method for the accurate evaluation of food freshness.

Abstract:In the context of food waste and human diseases caused by food pollution, color renderement intelligent packaging came into being. Improving its indicator stability and sensitivity is essential for application. On the basis of our previous work, corn starch/polyvinyl alcohol was used as the matrix, the synthesized zirconium-based UiO-66 and anthocyanin-loaded ovalbumin-carboxymethylcellulose nanocomposites were embedded in to stabilize anthocyanins and improve gas adsorption performance of film. The study found that incorporating appropriate amount of UiO-66 (3%) in films resulted in uniform distribution and formation of holes. Mechanical properties, water stability and barrier properties were significantly improved, and gas adsorption capacity increased by approximately 10 times. More crucially, films that incorporate UiO-66 can react more quickly and visibly to lower concentrations of ammonia gas. The color change of SP/OVA-CMC-ACNs/3% UiO-66 film was noticeable (from purple to gray and then to green) when applied to monitor freshness of shrimp and pork.

Abstract:Food freshness monitoring is an important component in ensuring food safety for consumers and the food industry. Therefore, there is an urgent need for a portable, low-cost, and efficient detection method to determine the freshness. In this study, polyvinyl alcohol (PVA) was used as polymer carrier to prepare electrospinning film containing curcumin (Cur) and gardenia blue (GB) as intelligent indicator label on food packaging for real-time nondestructive detection of freshness of shrimp. The detection limit of ammonia response is less than or equal to 20 ppm, and the detection time is about 1 min, indicating that it has a sensitive response effect. At the same time, a smartphone application that can identify amines in response to color changes has been developed, and consumers can understand freshness by scanning the label. This study demonstrates the huge potential of smart indicator labels for food freshness monitoring.
Protective Effect of Curcumin Against Paracetamol-induced Liver Damage 1

Abstract:Curcumin, as well-known dietary pigment derived from the rhizome of curcuma longa L., has been shown to be a potent anti-inflammatory, antioxidant and anticarcinogenic agent. The present investigation aimed at questioning and examining the possible potential protective effect of curcumin against paracetamol-induced hepatotoxicity in an attempt to understand its mechanism of action, which may pave the way for possible therapeutic application. Paracetamol (500 mg/kg.b.w.) administration to rats resulted in massive elevation in serum and hepatic lactate dehydrogenase (LDH) activity and TBARS as well as in serum tumor necrosis factor–alph (TNF) levels, with a significant decrease in serum protein thiols (Pr-SHs), blood glutathione (GSH) levels, blood superoxide dismutase (SOD) and glutathione peroxidase (GPx) activities. On the other hand, paracetamol hepatotoxicity resulted in an increased in hepatic TBARS and depletion of hepatic GSH and Pr-SHs levels as well as in hepatic SOD, GPx, GR, glutathione-s-transferase (GST) and Catalase (CAT) activities. Oral administration of curcumin at a concentration of 50 mg/kg b.w. daily for 15 days to rats treated with paracetamol produced a significant protection against-induced increase in serum and hepatic LDH activities as well as TBARS and tumor necrosis factor–alph (TNF) levels. Also, curcumin (50 mg/kg.B.W.) could inhibit reduce in serum Pr-SHs, blood GSH levels and enhance increase in blood SOD and GPx activities. Hepatic TBARS level was suppressed by administration of curcumin to paracetamol-treated rats. In addition, curcumin enhance increase in hepatic GSH and Pr-SHs levels as well as in hepatic SOD, GPx, GR, GST and CAT activities. These data indicate that curcumin is a natural antioxidant hepatoprotective agent against hepatotoxicity induced by paracetamol model. Thus, curcumin may have a therapeutic value in drug-induced hepatotoxicity as well as in paracetamol

Abstract:A curcumin‐functionalized upconversion hydrogel patch is designed here with background‐free and reversible for food freshness monitoring imaging by ultra‐sensitive response to biogenic amines, which demonstrates the practical applicability in real‐time monitoring of freshness, suggests great potential in developing an optical nano‐sensing strategy to ensure food safety. Functionalized upconversion nanomaterials can overcome the drawbacks faced of strong background interference, photodamage, and spectral overlap by conventional optical labeling. Here, curcumin‐functionalized upconversion hydrogel patch is designed with background‐free and reversible for food freshness monitoring by ultra‐sensitive response to biogenic amines. By loading the probes onto hydrogel patch, utilizing the good ductility to solve the problem of non‐smooth surface coverage, thus accurately capturing biogenic amines. The presence of biogenic amines leads to the conversion of the diketone group on the probe to enolate ions, which triggers fluorescence resonance energy transfer (FRET) and ultimately causes the upconverted fluorescence to gradually change from green to red. The probe exhibits good detection capability for biogenic amines with a low limit of detection (LOD) of 2.73 μm. Interestingly, the patch can be restored to its initial state after water rinsing, realizing reversible detection of biogenic amines. Additionally, combining the color recognition system of smartphone can convert the imaging signal into a data signal to achieve quantitative analysis and show a reliable assessment comparable to the results of high performance liquid chromatography (HPLC). This study demonstrates the practical applicability in real‐time monitoring of freshness, suggests great potential in developing optical nano‐sensing strategy to ensure food safety.

Abstract:As a new type of packaging method, the anthocyanin-based pH-sensitive indicator film has gained much attention owing to low cost, small size, and visually informative property. In this study, an intelligent film based on chitosan/gelatin (CG) matrix with Zingiber striolatum Diels (ZSD) anthocyanin for fish freshness monitoring was developed. The film properties, including thickness, moisture content, color, mechanical properties, UV-vis light barrier property, as well as pH and ammonia sensitivity, were evaluated. The CG-ZSD films exhibited a more compact structure when compared with the CG film. The CG-ZSD20 film showed the highest elongation at break (6.33 ± 0.62%) and lowest tensile strength (20.0 ± 0.58 MPa). FTIR spectra revealed the strong hydrogen bond interactions between ZSD and polymer matrix. Film incorporated with 15% anthocyanin extract has increased melting temperature at 118.9 °C, and a lower weight loss (13.8%) at melting temperature. In pH 1-14 buffer, the color of CG-ZSD films underwent a significant change from red to yellow-green. The CG-ZSD15 film was utilized for monitoring fish freshness and showed visible color changes from deep purple to brown. The total volatile basic nitrogen content and pH value changes of fish were closely related to the visual color changes in film. This demonstrated that the film was a highly pH-sensitive film for quantifying fish freshness in real-time.

Abstract:Food prone to spoilage has a huge food safety hazard, threatening people's health, so early detection of food spoilage is a continuous and urgent need. Herein, we developed a dual-mode response sensor, alizarin complexone@UiO-66-NH2, which can accurately detect pH. The sensor demonstrated significant changes in color from pale yellow to deep pink, while the fluorescence shifted from light blue to blue violet. Moreover, both UV absorption and fluorescence intensity showed a linear correlation with pH raging from 4.5 to 7.5. These results indicate that the sensor effectively responds to pH, making it suitable for detecting the freshness of perishable food. To put this into practice, we integrated the sensor with cellulose-based filter paper to determine the freshness of shrimp and beef, which was proved to be effective in assessing freshness. In the future, it can be combined with intelligent colorimetric and fluorescence instruments to achieve visual detection.

Abstract:This study aimed to develop a novel pH-sensing biopolymer film based on red cabbage puree (RCP) incorporated with polyvinyl alcohol (PVA), which was utilized for monitoring fish freshness during storage at 25 °C. A homogenized RCP suspension with a mean particle size of 12.86 ± 0.03 μm and a total anthocyanin concentration of 292.17 ± 2.65 mg/L was directly used as a film-forming substance and anthocyanin source to blend with PVA, showing visual changes in color and ultraviolet-visible spectra within a pH of 2–12. Rheological and microstructural studies certified the strong interactions and good compatibility between the RCP and PVA, resulting in better mechanical properties and water resistance of the composite film than those of a pure RCP film, but without affecting its pH sensitivity. When used for fish freshness monitoring at 25 °C, the developed RCP/PVA film presented visible color differences from purple to yellow, which corresponded to the spoilage threshold of the total volatile basic nitrogen and the total viable count in fish samples. The study highlights that anthocyanin-rich purees of fruits and vegetables, in this case red cabbage puree, can be fully utilized to develop eco-friendly pH-sensing indicator films for intelligent food packaging.

Abstract:Herein, an antioxidant, antibacterial and pH-sensitive multifunctional film is fabricated by incorporating anthocyanins-rich purple sweet potato extract and quercetin-loaded chitosan nanoparticles in agar /sodium alginate polymer matrix for monitoring and maintaining the freshness of shrimp. The film shows distinguishable color changes as pH changes and is highly sensitive to volatile ammonia. Moreover, the digital color information of the film is obtained by smartphone combined with RGB (red/green/blue) analysis. The G/R values are successfully used for the evaluation of shrimp freshness. More importantly, the film exhibits strong UV-blocking, antioxidant, antibacterial properties, and excellent mechanical, water vapor barrier properties, which enables the film to be used as a food packaging film. Notably, shrimp packed with the film can extend shelf life to about 36 h in refrigerated storage. Consequently, the multifunctional film can be applied to intelligent packaging for not only real-time indicating but also high-efficient preserving the freshness of animal-derived foods.

Abstract:The colours of anthocyanins are sensitive to variations in the pH of the environment. The field of food engineering is seeing a rise in the utilisation of anthocyanins obtained from plants to produce new and active packaging film. A pH-sensitive colorimetric film was developed using anthocyanin recovered from the peel of Phaseolus vulgaris (dark red kidney bean) in conjunction with composite pectin derived from citron peel. Additionally, Anthocyanins could be employed as colorimetric markers to identify food degradation, due to their sensitivity towards pH alterations and the production of ammonia gas. Solvent casting process was used to produce the film which changed from pink to brownish with rising pH due to the ammonia vapour that was produced. The antioxidant and antibacterial abilities of the anthocyanin containing smart films were investigated, and both Escherichia coli and Staphylococcus aureus growth was successfully inhibited. The developed film was characterized for its physical properties such as water solubility, moisture content and swelling index. To examine the structure of the films' surface, scanning electron microscopy (SEM) investigation has been carried out. The film indicator active response to pH fluctuation was demonstrated through tests on samples of chicken meat under various settings, allowing for the real-time monitoring of spoiled foods. This makes monitoring perishable goods, easy, affordable, environmentally friendly and biodegradable pH-sensitive indicator with visible colour change.

Abstract:The limited mechanical performance and responsiveness of protein-based smart packaging materials have hindered their development. To address these issues, this study prepared a pH-responsive smart film by introducing dialdehyde carboxylated cellulose nanofibers (DCCNFs) as the cross-linking agent capable of covalently reacting with proteins, and bilberry extract (BE) as a pH-responsive indicator into pea protein isolate (PPI) matrix. The results demonstrated that adding DCCNF and BE enhanced the PPI film's thermal stability, density, and UV barrier properties. Tensile tests revealed significant improvements in both tensile strength and elongation at the break for the resulting film. Furthermore, films containing DCCNF and BE exhibited lower moisture content, swelling ratio, water vapor permeability, and relative oxygen transmission compared to PPI films. Notably, the anthocyanins in BE endowed the film with visual color changes corresponding to different pH values. This feature enabled the film to monitor pork freshness; a transition from acidic to alkaline in pork samples was accompanied by a color change from brown to brownish green in the film as storage time increased. Overall, these findings highlight that this developed film possesses excellent physicochemical properties and sensitive pH response capabilities, making it a promising candidate for future smart packaging applications.

Abstract:A fluorescent hybrid film composed of nitrogen-doped graphene quantum dots (N-GQDs) loaded on halloysite nanotubes (HNTs) (N-GQDs/HNTs nanocomposite) as a sensitive element and polyvinyl alcohol (PVA) as a film-forming matrix was designed for freshness detection. The PVA-N-GQDs/HNTs hybrid film exhibited significantly enhanced fluorescence attributed to the loading of N-GQDs onto the surface of HNTs through electrostatic interactions and hydrogen bonding, effectively reducing their aggregation. The fluorescence of the hybrid film could be quenched by ammonia via photoinduced electron transfer (PET), with good linearity in the range of 20 ppm to 500 ppm ammonia and a limit of detection (LOD) of 0.63 ppm. In addition, the hybrid film was applied to monitor the freshness of seawater fish and freshwater fish stored at refrigeration and room temperature to evaluate the practicality of this approach. The developed hybrid film showed promise for nondestructive and on-site monitoring of fish spoilage.
