Abstract:Abstract The current global food system has detrimental outcomes for global health, environmental conditions and social inclusion. A coherent vision of a desirable food system can guide a sustainable food system transformation and help to structure political processes and private decisions by quantifying potential benefits, facilitating debates about co-benefits and trade-offs, and identifying key measures for desirable change. Such a transformation requires integrating measures targeting human diets, livelihoods, biosphere integrity, and agricultural management. Here, we apply a global food and land system modeling framework to quantify the impacts of 23 food system measures by 2050. Our multi-criteria assessment shows that a food system transformation can improve outcomes for health, the environment, social inclusion, and the economy. All individual measures come with trade-offs, particularly those targeting agricultural management, while few trade-offs and multiple co-benefits are linked to dietary change measures. By combining measures in packages, trade-offs can be reduced and co-benefits enhanced. We show that a sustainable food system also requires a transformation of the overall economy to stop global warming, reduce absolute poverty, and create alternative employment options. Within the context of a cross-sectoral sustainable development pathway, the food system transformation improves 14 of our 15 outcome indicators.

Abstract:In order to minimise food waste, side streams from feed and food production are increasingly being (re-) used in food supply chains. Such reuse contributes to the desire to implement circularity in food and agricultural systems. However, the reuse of side products in circular food systems may impact food safety, for instance, contaminant residues present at low levels in biomass may accumulate when reusing streams. In order to assess potential food safety issues related to circular food systems, a framework has been developed in this study. Based on this framework, appropriate actions can be taken to prevent from human health risks. The framework consists of three steps: 1. Describing the changes in the food supply chain as a result of the circularity transition; 2. Identifying potential food safety hazards related to the change; and 3. Prioritising food safety hazards related to the circularity transition. For the prioritisation, both the presence of the hazards in final foods and the effects of the hazards on human health need to be assessed. Persistence of the hazard in the environment and potential transfer from the environment to the final food product are relevant elements to include. The framework was tested in three case studies, showing that it allows for a prioritisation between hazards. Based on the case study results, circularity not so much influences the health effects of the hazards, but rather their presence depending on the persistence and transfer of food safety hazards in a circular system.
The application of systematic accident analysis tools to investigate food safety incidents

Abstract:Effective food safety (FS) management relies on the understanding of the factors that contribute to FS incidents (FSIs) and the means for their mitigation and control. This review aims to explore the application of systematic accident analysis tools to both design FS management systems (FSMSs) as well as to investigate FSI to identify contributive and causative factors associated with FSI and the means for their elimination or control. The study has compared and contrasted the diverse characteristics of linear, epidemiological, and systematic accident analysis tools and hazard analysis critical control point (HACCP) and the types and depth of qualitative and quantitative analysis they promote. Systematic accident analysis tools, such as the Accident Map Model, the Functional Resonance Accident Model, or the Systems Theoretical Accident Model and Processes, are flexible systematic approaches to analyzing FSI within a socio-technical food system which is complex and continually evolving. They can be applied at organizational, supply chain, or wider food system levels. As with the application of HACCP principles, the process is time-consuming and requires skilled users to achieve the level of systematic analysis required to ensure effective validation and verification of FSMS and revalidation and reverification following an FSI. Effective revalidation and reverification are essential to prevent recurrent FSI and to inform new practices and processes for emergent FS concerns and the means for their control.

Abstract:BackgroundFood value chains are linked to environmental issues such as greenhouse gas emissions, which are responsible for climate change. The presence of chemical and microbial hazards along food value chains is expected to be influenced by the future effects of climate change. This challenge creates a need to examine environmentally sustainable strategies to address food safety risks. The use of methodologies and/or tools that contribute both to reducing food safety risk under climate change conditions and to reducing the contribution to climate change of food value chains is necessary.Scope and approachTo face this upcoming and complex challenge, this study presents the tools to mitigate food safety risk on one hand and to evaluate the environmental performance of food value chains on the other. Successful case studies in different fields in which both methodologies were integrated are analyzed in detail finally to suggest strategies to mitigate food safety risks while minimizing environmental impacts in the food value chain.Key findings and conclusionsFood value chains can use both risk assessment and life cycle assessment to limit environmental impact and food safety risks. The use of these two tools can be through the integration of the methods or by a combination of results. However, this should be carried out with caution due to differences within their frameworks.

While the formal processes of international and national governance are short-changing the need for action, an increasing number of professional science-based organisations are rallying to reduce the presence and risks of food insecurity. Examples are the Food in Health Security Network (FIHS) for the Asia Pacific region and the 'Healthy Agriculture, Healthy Nutrition, Healthy People’ initiative of the World Council on Genetics, Nutrition and Fitness for Health. The common denominator is the threat to ecosytems which are intrinsic to food and health systems. To increase their prospects for sustainability and health promotion, coordinated partnerships between agriculture and health as well as other sectors are imperative.

Abstract:The deleterious effects of ethanol on cognitive processes result from an interaction between ethanol and the neural structures that are critical for executing those cognitive functions. Results from studies that employ contemporary behavioral neuroscience techniques are beginning to elucidate the neural circuits that underlie specific cognitive processes, and the stage is set for rigorous investigations into the neural basis for ethanol-induced cognitive impairments. In this article, the application of single neuron recording techniques to the study of the memory and attentional deficits produced by acute exposure to low levels of ethanol are described, with an emphasis on the advantages of combining physiological techniques with operant behavioral procedures in rats. After reviewing background information on the basic neurophysiological and behavioral techniques, empirical results from this laboratory will be used to illustrate how single-unit analysis can be applied to the study of ethanol-induced cognitive impairments.

Abstract:Participatory action research across food value chains (FVC) can help stabilise the food security of subsistence farmers by implementing upgrading strategies (UPS). These strategies can be assessed ex-ante and ex-post for their potential social, ecological and economic sustainability impacts.UPS implementation, however, often entails gender-specific changes and challenges in a farmer's social life, economy and environment that either were not perceived and anticipated beforehand or are not followed up during UPS implementation. Before and during their implementation, therefore, UPS need to be entirely understood and assessed by both genders in terms of their potential social, ecological and economic sustainability impacts.This article conceptualises a systematic framework for integrating gender in sustainability impact assessments and presents gender-based assessment differences in three low-input UPS in Tanzanian FVC. We conducted ex-ante and ex-post impact assessments using nine food security criteria developed earlier by the authors following the Framework of Participatory Impact Assessment (FoPIA). Sustainability impact assessments—to a greater extent than expected—differed to various extents between the genders for a) different food security criteria, b) different sustainability dimensions (economic, social, and environmental), c) different points in time (T0, T1) of assessments, d) different implemented UPS, and e) different members within the groups of female and/or male stakeholders.The results demonstrate the substantial importance of integrating female-male segregated assessments and perceptions before and while implementing food-securing UPS. We anticipate that integrating these assessments and perceptions as regular components will lead to better gendered social learning for both scientists and stakeholders and a holistic understanding of complex local food systems.

Abstract:International consensus has been reached on the principles regarding evaluation of the food safety of genetically modified plants. The concept of substantial equivalence has been developed as part of a safety evaluation framework, based on the idea that existing foods can serve as a basis for comparing the properties of genetically modified foods with the appropriate counterpart. Application of the concept is not a safety assessment per se, but helps to identify similarities and differences between the existing food and the new product, which are then subject to further toxicological investigation. Substantial equivalence is a starting point in the safety evaluation, rather than an endpoint of the assessment. Consensus on practical application of the principle should be further elaborated. Experiences with the safety testing of newly inserted proteins and of whole genetically modified foods are reviewed, and limitations of current test methodologies are discussed. The development and validation of new profiling methods such as DNA microarray technology, proteomics, and metabolomics for the identification and characterization of unintended effects, which may occur as a result of the genetic modification, is recommended. The assessment of the allergenicity of newly inserted proteins and of marker genes is discussed. An issue that will gain importance in the near future is that of post-marketing surveillance of the foods derived from genetically modified crops. It is concluded, among others that, that application of the principle of substantial equivalence has proven adequate, and that no alternative adequate safety assessment strategies are available.

Abstract:Human and planetary health are interconnected through food and agriculture. Food production and consumption patterns continue to drive the global burden of malnutrition, diet-related disease, climate change, and environmental degradation. There is an urgent need to identify pathways for transforming agrifood systems to be increasingly healthy, sustainable, and just, but conceptual frameworks necessary for visualizing these complex relationships are limited. This systematic scoping review identified existing frameworks for analyzing human and environmental outcomes of agrifood systems and evaluated their inclusion of policy and governance. Frameworks have evolved to increasingly consider the food supply chain activities and actors, the drivers that shape them, and the outcomes of these interactions. The findings of the review were used to develop a conceptual framework specific to modern industrialized agrifood systems where policy landscape is an explicit component. The framework is tailored to researchers and policymakers with the intention of providing a foundation for analyzing and communicating agrifood system issues, including identifying facilitators and barriers to effective policy, places to intervene in the system, and windows of opportunity for successful transformation.

Percutaneous biliary drainage in the management of biliary sepsis.

Abstract:Percutaneous biliary drainage was performed in 18 patients with biliary sepsis due to acute obstructive cholangitis and postoperative complications. Internal drainage could be established in 78% of patients, and 22% were managed on external drainage. Nine patients were managed on long-term internal drainage, six underwent uneventful surgery after successful percutaneous decompression, and three died as a result of septic shock. Percutaneous biliary drainage procedures can be lifesaving in biliary sepsis. Once infection and the hyperbilirubinemia are controlled, rational therapy plans can be formulated on the basis of the anatomy and natural history of the underlying disease.

Abstract:Food safety (FS), as a topic important to human health and wellbeing, has attracted a great deal of attention. With the large volume of publications in the area, it is hard to gain a comprehensive picture of the research trends. A scientometric data-driven analysis of the field can help reveal the diverse facets of FS. Food safety is critical in two important stages of the food system: food production and food processing, which are categorized as agriculture food safety (Agric-FS) and industry food safety (Ind-FS), respectively. In this work, these two closely-related but different research fields are comparatively analyzed. Based on scientometric theory and metrics, characteristics of both fields are discussed in terms of annual research output, active journals, important authors, and countries of activities. The overall output of publications is in an upward trend and the dynamics of publications in the two areas are in a similar pattern. Food Control and Journal of Food Protection are both representative journals for Agric-FS and Ind-FS. Jacxsens L, Uyttendaele M, LeJeune J, and Luning P are representative authors for Agric-FS and Jacxsens L, Griffith CJ, Luning P, and Uyttendaele M are representative authors for Ind-FS. The USA is the leading country in both fields by volume of output, followed by the UK and China. The research focus areas over time are extracted by temporal co-word and co-citation analysis. It was found that the Agric-FS domain is more unevenly distributed. Early studies in Agric-FS topics have divergent directions because of divergent fresh produce. Important topics in later times are focused on foodborne disease and supply chains that support the fresh produce. In contrast, the Ind-FS focus has more focal topics, and the research is concentrated on theories, tools, and practical issues in food quality and safety. Control methods such as HACCP are the focuses of early research in Ind-FS. More practical issues concerning barriers for quality controls are studied in later periods, including human-related problems in business activities.

Abstract:The burden of foodborne diseases and their associated illness/death is a global concern. Hazard analysis and critical control points (HACCP) and food safety/quality management are employed to combat this problem. With the existing and emerging food safety/quality management concerns, this study aims to evaluate the traditional and modern/novel approach to improving HACCP, food safety, and quality management in food and agricultural systems. The modern innovations in food safety management were integrated into improving the traditional HACCP system, including its principles, applications, steps, plans, standards, etc., as well as food safety factors and management, for improved safety/quality in food, agricultural, and pharmaceutical industries. The study identified many factors responsible for food contamination, including chemical contaminants, such as allergens, histamine, cyanogenic glycosides, mycotoxins, toxic elements, etc., biological contaminants, such as Campylobacter, Brucella, viruses, Escherichia coli , prions, Staphylococcus aureus, Listeria monocytogenes , protozoa, parasitic pathogens, etc., and physical contaminants, such as bone, glass, metal, personal effects, plastic, stones, wood, etc. The results of this study present descriptive preliminary HACCP steps, HACCP principles, safe food handling procedures, ISO 22000, Water quality management, food labelling, etc., with recent modern developments and innovations to ensure food safety and quality management. The study also identified modern/novel technologies for HACCP and food safety management, including light technologies, artificial intelligence (AI), novel freezing (isochoric freezing), automation, and software for easy detection and control of contaminants. With all these understanding and development, the domestic, food, agricultural, and pharmaceutical industries can be well position to ensure safety and quality of products.
Case Studies of Small-Medium Food Enterprises around the World: Major Constraints and Benefits from the Implementation of Food Safety Management Systems

Abstract:Global food safety and security are key principles to be followed in the context of the implementation of food safety management systems. The objective of this paper is to assess the contemporary developments of Food Safety Management System standards (FSMS) worldwide and to identify the primary constraints and advantages associated with their implementation by small and medium-sized enterprises across different regions. The effectiveness of these systems has also been evaluated. 116 case studies have been employed across developing and developed regions worldwide across 27 primary food sectors. After the implementation of FSMS, there was a significant increase in the percentage of companies that have implemented the international FSMS, both in developed (16.7% to 63.9%) and developing countries (26.6% to 48.1%). Certification has also increased from 34.2% to 59.6% in the total sample, namely from 33.3% to 61.1% in developed countries and from 34.6% to 59.0% in developing countries. There was a significant increase in medium vs. small company size (57.1% to 62.3%, p = 0.046), only in developing countries. Food safety culture and manager leadership implementation were increased to over 80% after FSMS implementation in both developed and developing countries (p < 0.001). Training, resources, and technology adequacy were also increased in all companies (p < 0.001).

Abstract:The food industry’s failure in planning and designing of and in implementing a Food Safety Management System and its foundation elements leads, in most instances, to compromised food safety and subsequent foodborne illness outbreaks. This phenomenon was noticed, worldwide, for all food processors, but with a much higher incidence in the medium- and small-sized food processing plants. Our study focuses on the importance of Food Safety Management System (FSMS), Critical Control Points Hazard Analysis (HACCP) and the Prerequisite Programs (PRPs) as the foundation of HACCP, in preventing foodborne outbreaks. For emphasis, we make use of the example of organizational food safety culture failures and the lack of managerial engagement which resulted in a multi-state listeriosis outbreak in USA. Moreover, we correlate this with microbiological criteria. Implementation of food safety management systems (ISO 22000:2018) along with incorporation of management tools such as HAZOP, FMEA, Ishikawa and Pareto have proved to be proactive in the maintenance of a positive food safety culture and prevention of cross-contamination and fraud.

Abstract:Foundational activities at the international level underlie current risk and safety assessment approaches for genetically engineered/modified organisms (GEOs/GMOs). Early risk assessment considerations beginning with the OECD 'Blue Book' established risk/safety assessment as the characterization of the organism and its environmental release; establishment and persistence in the environment; and human and ecological effects, analyzed in principle through existing methods. Important in this context was recognition that GEOs/GMOs as a class did not represent new risks relative to products of traditional plant breeding and that any incremental risk would need to be established on a stepwise case-by-case comparative basis with existing crops and derived-foods as the baseline. Accordingly, concepts of familiarity and substantial equivalence were advanced by OECD and WHO as ways to establish a risk analysis baseline for determining whether and to what extent risk/safety assessment was needed. Regulatory implementations of this paradigm have skewed to increasingly complex portfolios of studies rather than adhering to analysis which is formulated to fit the risk/safety questions relevant to a given case. Plants produced through genome editing technology will benefit from risk analysis that implements sound problem formulation to guide the need for and nature of risk/safety assessments.

Abstract:Managing food safety risks associated with climate change and agriculture necessitates comprehensive policy strategies to safeguard public health, ensure food security, and sustain agricultural productivity. This review delves into the multifaceted challenges posed by climate change on food safety and explores policy approaches aimed at mitigating these risks. Climate change presents a myriad of challenges to food safety, including altered patterns of precipitation, temperature extremes, and increased occurrences of extreme weather events. These changes impact various stages of the food supply chain, from production to consumption, exacerbating existing food safety risks and introducing new ones. Addressing these challenges requires proactive policy strategies that integrate climate adaptation and food safety management. Policy strategies for managing food safety risks associated with climate change encompass a range of measures aimed at enhancing resilience, promoting sustainable agricultural practices, and strengthening food safety systems. One key approach involves the implementation of climate-smart agriculture (CSA) practices, which aim to improve agricultural productivity while minimizing environmental impacts and enhancing resilience to climate change. CSA practices such as crop diversification, soil conservation, and water management can help mitigate the impacts of climate change on food safety by reducing the risk of contamination and enhancing the quality of agricultural products. Furthermore, policies aimed at promoting sustainable food production systems can contribute to mitigating food safety risks associated with climate change. These policies may include incentives for farmers to adopt sustainable farming practices, support for organic farming, and regulations to reduce the use of chemical inputs in agriculture. By promoting environmentally friendly farming practices, such policies can help minimize the occurrence of foodborne pathogens and chemical contaminants in food products, thereby enhancing food safety. In addition to promoting sustainable agricultural practices, policy strategies for managing food safety risks associated with climate change also focus on strengthening food safety systems and enhancing surveillance and monitoring mechanisms. This includes investing in infrastructure and capacity building to improve food safety testing and inspection capabilities, as well as enhancing early warning systems for foodborne disease outbreaks. By strengthening food safety systems, policymakers can better detect and respond to emerging food safety risks exacerbated by climate change, thereby reducing the likelihood of foodborne illness and protecting public health. Furthermore, international collaboration and knowledge sharing are essential components of effective policy strategies for managing food safety risks associated with climate change. Given the global nature of both climate change and the food supply chain, coordinated action at the international level is crucial for addressing shared challenges and exchanging best practices. International organizations such as the World Health Organization (WHO), the Food and Agriculture Organization (FAO), and the World Organization for Animal Health (OIE) play a critical role in facilitating collaboration and providing technical assistance to countries in developing and implementing effective food safety policies in the context of climate change. Managing food safety risks associated with climate change and agriculture requires a multifaceted approach that integrates climate adaptation, sustainable agriculture, and robust food safety systems. By implementing proactive policy strategies that promote sustainable practices, strengthen food safety systems, and foster international collaboration, policymakers can mitigate the impacts of climate change on food safety and ensure the availability of safe and nutritious food for all.

Abstract:Designing and implementing processing procedures for producing safe complementary foods in dynamic and unregulated food systems where common food staples are frequently contaminated with mycotoxins is challenging. This paper presents lessons about minimizing aflatoxins (AF) in groundnut flour and AF and/or fumonisins (FUM) in maize and groundnut pre-blended flour for complementary feeding in the context of a dietary research intervention in rural Tanzania. The flours were processed in collaboration with Halisi Products Limited (Halisi), a medium scale enterprise with experience in milling cereal-based flours in Arusha, Tanzania. Using a hazard analysis critical control point (HACCP) approach for quality assurance, two critical control points (CCPs) for AF in processing the pre-blended flour were identified: 1) screening maize before procurement, and 2) blending during the processing of each constituent flour. Blending of maize flour was also identified as a CCP for FUM. Visual inspection during screening and sorting were identified as important control measures for reducing AF, but these steps did not meet the criteria for a CCP due to lack of objective measurement and verifiable standards for AF. The HACCP approach enabled the production of low AF (<5 μg/kg) and FUM (<2 μg/g) flours with low rejection rates for the final products. The paper presents practical lessons that could be of value to a range of commercial processors in similar low- and middle-income contexts who are keen on improving food quality.
A System of Networked Car-Mounted Sensors for Measuring Road Surfaces

Abstract:In this article, we propose a system of networked car-mounted sensors that measures road surfaces. The system consists of cars each of which carries a GPS, an accelerometer, a torque meter, and a rotating meter of a wheel. The proposed system estimates angles of inclination of road surfaces and their friction coefficients based on measurements obtained by the sensors. Each car obtains the measurements at each location while moving, and uploads those measurements to a server. The server estimates the angles and the friction coefficients based on the uploaded measurements. We model the dynamics of moving cars, and derive constraint conditions that should be satisfied by the measurements. We compute the maximum likelihood estimates of the coefficients with the measurements under the constraint conditions. The ML solution, however, can contain indeterminacies and have two degrees of freedom. Hence, we need two more constraints for removing the indeterminacies. For this purpose, one set of car-mounted sensors that is calibrated in advance is incorporated into the car-mounted sensor network. We call the calibrated sensor a reference sensor. If the reference sensor removes the indeterminacies we can obtain unique set of ML estimates, but the set of estimates is perturbed by the measurement noise. Frontiers in Sustainable Food Systems

Abstract:Our review explores the changing food production, distribution and consumption environment in low and middle-income countries and emerging economies as a basis for framing how to study food systems in order to address public health issues of food safety and nutrition. It presents the state of knowledge on existing food systems science and its use in terms of sustainable actions for food safety and public health. The review identifies a knowledge gap in food system mapping and governance, with value chain mapping of key commodities often missing. Despite a number of initiatives, the application of food systems methods is highly variable in scope and quality. Most analyses concentrate on specific commodities, rarely taking into account the need for a whole diet approach when looking at nutrition or the assessment of a range of infectious agents and their interactions when looking at food safety. Of the studies included in the review there is a growing observation of “informal” food systems, a term used inconsistently and one that requires revision. “Informal” food systems link to the formal sector to provide food security, yet with trade-offs between economic efficiencies and food safety. Efforts to improve food safety are hampered by inadequate food safety capacities and a lack of policy coherence leading to: inadequate investment; fragmented food quality control systems; weak or non-existent traceability mechanisms; weak foodborne disease surveillance; obsolete food regulation; and weak regulatory enforcement. In-depth food systems assessments can complement risk analysis to identify risky behaviors and understand institutional settings in order to improve codes of practice and enforcement. Methods for looking at food safety from a food systems perspective are emerging, yet existing nutrition and food systems science are not advancing sufficiently in response to nutritional public health problems. There is an urgency for improved understanding of the structure and drivers of the food systems, for better planning of changes that leads to nutrients access and healthy levels of eating. It is proposed that countries and international institutions provide an atlas of food system maps for the key commodities based on an agreed common methodology and developed by multidisciplinary teams.
