Abstract:Research on new food sources is a worldwide challenge due to the constant increase in the global population. In this scenario, insects and bug based products have been investigated as feasible food alternatives. They are nutritionally healthy and environmentally sustainable. Eating insects (entomophagy) or utilizing their macronutrients in food formulations can efficiently solve the demand for nutritious food. The benefits of insect-based foods are reported in the literature, mainly because they are viable sources of fat (∼38%) and proteins (∼68%). Fats and oils are recognized as essential nutrients in human nutrition, as they provide a concentrated source of energy and act as structural components of cell membranes and signaling pathways. The high levels of fats/oils of edible insects open the perspective in the food industry to be used as ingredients in the enrichment of several products, such as cookies, biscuits, butter, and margarine, among others, thus contributing to consumer acceptance. Insect fat/oil can be obtained using extraction techniques, such as solvent and supercritical CO 2 methods. The method depends on the insect species, fat/oil yield, and process costs. Thus, this review aims to provide current information on the consumption, application, and extraction of edible insect oils.

Positron Emission Tomographic Evaluation of Patients with Head and Neck Cancer Undergoing Occlusion and Removal of the Carotid Artery

Abstract:We used positron emission tomography (PET) to evaluate cerebral metabolic changes in five patients who underwent resection of the internal carotid artery (ICA) for malignant tumors of the head and neck. These patients received a thorough clinical neurologic examination as well as neuroradiologic evaluation, including computed tomography (CT), magnetic resonance imaging (MRI), and PET of the head, before and after balloon occlusion of the ICA. All five were free of cerebral or peripheral vascular disease. In addition, each patient was evaluated with an electroencephalogram (EEG) before and during the balloon occlusion for signs of ischemic changes. No abnormalities were noted on clinical neurologic examination, CT, MRI, or EEG, either before or after occlusion, and excision of the ICA. The PET examination showed a mean preoperative metabolic rate of 7.52 mg of glucose/min/100 gm of brain tissue and a mean postoperative rate of 6.32 mg/min/100 gm of brain tissue; these values were within the normal range of 5.00 to 9.00 mg of glucose/min/100 gm of tissue observed at this center. Only one subject showed asymmetry of glucose metabolism; this subject had received radiation treatment to one side of the brain after the initial PET evaluation. The results of this study support our clinical experience with occlusion and resection of the ICA in patients with head and neck tumors that in the past have been considered inoperable.

Abstract:Due to the recent increase in the human population and the associated shortage of protein resources, it is necessary to find new, sustainable, and natural protein resources from invertebrates (such as insects) and underutilized plants. In most cases, compared to plants (e.g., grains and legumes) and animals (e.g., fish, beef, chicken, lamb, and pork), insect proteins are high in quality in terms of their nutritional value, total protein content, and essential amino acid composition. This review evaluates the recent state of insects as an alternative protein source from production to application; more specifically, it introduces in detail the latest advances in the protein extraction process. As an alternative source of protein in food formulations, the functional characteristics of edible insect protein are comprehensively presented, and the risk of allergy associated with insect protein is also discussed. The biological activity of protein hydrolyzates from different species of insects (Bombyx mori, Hermetia illucens, Acheta domesticus, Tenebrio molitor) are also reviewed, and the hydrolysates (bioactive peptides) are found to have either antihypertensive, antioxidant, antidiabetic, and antimicrobial activity. Finally, the use of edible insect protein in various food applications is presented.

Abstract:Edible insects represent an interesting alternative source of protein for human consumption but the main hurdle facing the edible insect sector is low consumer acceptance. However, increased acceptance is anticipated when insects are incorporated as a processed ingredient, such as protein-rich powder, rather than presented whole. To produce edible insect fractions with high protein content, a defatting step is necessary. This study investigated the effects of six defatting methods (conventional solvents, three-phase partitioning, and supercritical CO2) on lipid extraction yield, fatty profiles, and protein extraction and purification of house cricket (Acheta domesticus) and mealworm (Tenebrio molitor) meals. Ethanol increased the lipid extraction yield (22.7%–28.8%), irrespective of the insect meal used or the extraction method applied. Supercritical CO2 gave similar lipid extraction yields as conventional methods for Tenebrio molitor (T. molitor) (22.1%) but was less efficient for Acheta domesticus (A. domesticus) (11.9%). The protein extraction yield ranged from 12.4% to 38.9% for A. domesticus, and from 11.9% to 39.3% for T. molitor, whereas purification rates ranged from 58.3% to 78.5% for A. domesticus and from 48.7% to 75.4% for T. molitor.

Abstract:Edible insects have been recognized as a promising alternative food source because of their high nutritional value and sustainable production in line with the goals required by agri-food chains, lower emissions of greenhouse gases, and use of organic waste. This critical review provides the most recent updates on the use of edible insects as functional ingredients in food formulations, with an emphasis on meat and bakery products. The main motivations for reformulating these products, processing techniques, nutritional, sensory, and technological characteristics, and the main insect species used have been described. In addition, the relevant food-safety aspects of the reformulated products are discussed. Finally, the main challenges and perspectives for the safe, sustainable, and functional use of this ingredient are addressed.

Abstract:Edible insects are a highly nutritious source of protein and are enjoyed by people all over the world. Insects contain various other nutrients and beneficial compounds, such as lipids, vitamins and minerals, chitin, phenolic compounds, and antimicrobial peptides, which contribute to good health. The practice of insect farming is far more resource-efficient compared to traditional agriculture and animal husbandry, requiring less land, energy, and water, and resulting in a significantly lower carbon footprint. In fact, insects are 12 to 25 times more efficient than animals in converting low-protein feed into protein. When it comes to protein production per unit area, insect farming only requires about one-eighth of the land needed for beef production. Moreover, insect farming generates minimal waste, as insects can consume food and biomass that would otherwise go to waste, contributing to a circular economy that promotes resource recycling and reuse. Insects can be fed with agricultural waste, such as unused plant stems and food scraps. Additionally, the excrement produced by insects can be used as fertilizer for crops, completing the circular chain. Despite the undeniable sustainability and nutritional benefits of consuming insects, widespread acceptance of incorporating insects into our daily diets still has a long way to go. This paper provides a comprehensive overview of the nutritional value of edible insects, the development of farming and processing technologies, and the problems faced in the marketing of edible insect products and insect foods to improve the reference for how people choose edible insects.

Abstract:In 2018, the industrial compound feed production throughout the world was 1.103 metric billion tons, which was an increase of 3% compared to 2017. In order to meet the needs of the increasing population, a further increment in compound feed production is necessary. Conventional protein sources are no longer suitable to completely satisfy the increment of feed production in a sustainable way. Insects are one of the most promising options, due to their valuable nutritional features. This paper reviews the state-of-the-art of research on the use of insect meals and oils in aquatic, avian and other animal species diets, focusing mainly on the effects on digestibility, performance and product quality. In general, insect-derived product digestibility is affected by the insect species, the inclusion levels and by the process. Sometimes, the presence of chitin can lead to a decrease in nutrient digestibility. The same considerations are true for animal performance. As far as product quality is concerned, a dramatic effect of insect products has been recorded for the fatty acid profile, with a decrease in valuable n3 fatty acids. Sensory analyses have reported no or slight differences. Insect-derived products seem to be a good alternative to conventional feed sources and can make an important contribution to the sustainable development of the livestock industry.

Abstract:Edible insects are a natural resource with profound interest in the food industry. Not only because of their nutritional content and technical production advantage, but also for the presence of bioactive compounds known as entomochemicals. These include phenolic, alkaloid, and terpenoid compounds, as well as aminoacids derivatives, among others. The phenolic compounds have been the best characterized due to their role in food development and bioactive properties. The major taxonomic orders studied in this regard include Orthoptera, Coleoptera, and Lepidoptera, whose edible specimens have antioxidant effects provided by the phenolic compounds contained therein. The use of these insects in the development of nutritious foods will enhance the number of options available for the human population. However, depth research is still needed to guarantee the aforementioned bioactivity in processed foods and ensure its innocuity, thus minimizing the risk of allergic reactions and allowing the full utilization of edible insect species in the food industry.

Abstract:With entomophagy gaining popularity in the Western hemisphere as a solution for future food insecurity, research on alternative protein sources, such as edible insects, has become relevant. Most of the research performed on insects has been on their nutritional qualities; however, little is known regarding bioactive compounds, such as polyphenols, that, if present in the insect, could provide additional benefits when the insect is consumed. In this study, methanolic extracts of Acheta domesticus from two farms and their corresponding feeds were obtained using a microwave-assisted extraction. Targeted phenolic characterization was accomplished through LC-MS/MS leading to the identification of 4-hydroxybenzoic acid, p-coumaric acid, ferulic acid, and syringic acid as major phenolic compounds in both A. domesticus extracts. Furthermore, the in vitro antioxidant activity was evaluated using 2,2-diphenyl-1-picrylhydrazyl radical cation (DPPH) and 2,2′-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical assays demonstrating the superior quenching activity of the A. domesticus extracts compared to the feeds. The discovery of phenolic compounds in A. domesticus implies the ability of this insect species to sequester and absorb dietary phenolics leading to possible added health benefits when consumed.

Abstract:Background Sustainable nutrition and food security are central topics in the current global agenda. Insect production represents a promising food source that has received growing attention in the food and feed industry due to its high nutritional value and positive effect on animal health. The resilience of insects to infections by different parasites indicates they are an excellent type of biomass for the extraction of various antimicrobial compounds. Scope and approach The antimicrobial potential of insects is illustrated through a description of the different sources of antimicrobial compounds. Distinctions between intrinsic and extrinsic insect antimicrobials are presented in terms of their constituent components and metabolites produced. An updated overview of potential applications in food and feed sectors is presented to identify key reasons to invest in this food source and to stimulate further research in this field. The main aspects supporting the development of this industry in the future are summarized. Key findings and conclusions Processing extracted insect fractions will lead to the development of new application possibilities and an increase in the edible insect sector value. The possibility of producing new generation antimicrobials from a sustainable supply chain involving insect rearing contributes to green economy policies and reduction of antibiotic resistance.

Abstract:Alternative foods have emerged as one of the hot research topics aiming at alleviating food shortage. Insects are one of the alternative foods due to their rich nutrients. Processing is a critical step to develop insect foods, while there is a lack of comprehensive reviews to summarize the main studies. This review aims to demonstrate different processing methods in terms of their impact on insect nutrition and their potential risks. Heat treatments such as boiling and blanching show a negative effect on insect nutrition, but essential to assure food safety. Insects treated by high-pressure hydrostatic technology (HPP) and cold atmospheric pressure plasma (CAPP) can achieve a similar sterilization effect but retain the nutritional and sensory properties. Drying is a practical processing method for industrial insect production, where oven drying serves as a cost-effective method yielding products comparable in quality to freeze-dried ones. In terms of extraction technology, supercritical carbon dioxide and ultrasound-assisted technology can improve the extraction efficiency of proteins and lipids from insects, enhance the production of composite insect-fortified foods, and thus facilitate the development of the insect food industry. To address the widespread negative perceptions and low acceptance towards insect foods among consumers, the primary development direction of the insect food industry may involve creating composite fortified foods and extracting insect-based food components.
The Review of Cooking, Drying, and Green Extraction Methods on General Nutritional Properties of Mealworms and Locusts

Abstract:The processing of edible insects as an alternative source of nutrition may be a key driver in the development of a sustainable food and feed system. This review will study two industrial types of insects–mealworms and locusts–and summarize evidence related to the impact of processing on their micro- and macronutritional characteristics. The focus will be on their potential use as food for human consumption as opposed to animal feed. Literature has indicated that these two insects have the potential to provide protein and fat qualities comparable to or better than traditional mammalian sources. For example, mealworms–the larval form of the yellow mealworm beetlepossess a higher fat content, while adult locusts are rich in fibers, especially chitin. However, due to the different matrix and nutrient compositions, the processing of mealworms or locusts at a commercial scale needs to be tailored to minimize nutritional loss and maximize cost efficiency. The stages of preprocessing, cooking, drying, and extraction are the most critical control points for nutritional preservation. Thermal cooking applications such as microwave technology have demonstrated promising results, but the generation of heat may contribute to a certain nutritional loss. In an industrial context, drying using freeze dry is the preferred choice due to its uniformity, but it can be costly while increasing lipid peroxidation. During the extraction of nutrients, the use of green emerging technologies such as high hydrostatic pressure, pulsed electric field, and ultrasound may provide an alternative method to enhance nutrient preservation.

Abstract:<section class="article-section__content"><p>This study sought to establish an optimized procedure for extraction of protein from microwave‐dried larvae of an edible insect, <i>Hermetia illucens</i> (HIL), and to determine and compare the amino acid (AA) component, intrinsic fluorescence (IF), and physicochemical/functional properties (PFPs) of protein isolates. Box–Behnken's design with the Box–Wilson methodology was applied in the optimization process. Following single‐factor investigations, the relational analysis indicated that the polynomial model could be used to illustrate the influence of extraction parameters on protein yield. Response–surface plots showed that extraction variables influenced (<i>p</i> < .05) protein yield of HIL. The optimized extraction (optimized protocol [OP]) conditions with highest yield (64.44%) were time—59.43 min, alkaline solution to sample ratio—24.85:1.00, and temperature—52.23°C. The protein extract obtained using the OP, compared with a modified protocol (MP) (with conditions: 60 min, 15:1 alkaline solution to sample ratio, and 40°C) showed content of 80.42 ± 0.90% and 76.91 ± 0.91%, respectively (<i>p</i> < .05). The AA‐scores were above that recommended by FAO. Variations existed between OP and MP extracts regarding PFPs, consistent with IF/AA‐values. The optimized extraction process was feasible, and the functional properties of HIL protein could be enhanced/modified for different food formulations. </p></section><section class="article-section__content"><h3 class="article-section__sub-title section1"> Practical applications</h3><p><i>Hermetia illucens</i> (HIL), an edible insect rich in protein, is one most promising insect species for food applications with extra benefits to the environment. Consumption, however, is limited by many due to association of insects to vermin/dirt. The need to increase consumption globally is paramount, as there is high demand on the already scarce protein sources available worldwide. Extracting the constituents of edible insects for novel/food applications is a promising approach to upturn global consumption in the next 2–3 decades where humans may rely on insect protein. The success of scale‐up processing in this regard depends on process conditions for better yields. Therefore, determining an optimized technique for extraction of protein from HIL larvae was investigated as well as physicochemical/technofunctional properties, and fluorescence attribute. The extraction approach was feasible and the outcome of the study may benefit industry in extraction and/or modification of edible insect protein in novel applications. </p></section>

Abstract:The burgeoning global population growth has raised concerns regarding the expected increase in the demand for food, which could be partially tackled by identifying novel food sources. To this end, edible insects have recently attracted research interest. Several technologies for utilizing edible insect-derived proteins have been introduced; however, research into their functional utilization is insufficient. Herein, we reviewed the relevant literature on the importance of insects as food sources, extraction of edible insects, the nutritional value of insects, biological activities of components, and their applications in food industries. We summarized the studies primarily focused on the functional utilization of edible insects, suggesting that for successful incorporation and growth of edible insects in food and pharmaceutical industries, strategies to improve the extraction methods are required to explore the biological activity of edible insects. Furthermore, the awareness of edible insects with a focus on their allergens warrants consideration.

Abstract:The increasing demand of essential oils (EOs) as nutraceuticals, food, pharmaceutical, and cosmetic ingredients in the current scenario has opened up new avenues for their large-scale production. India's biodiversity and scientific development promise to make it leading country in aroma business in the coming years. Plant resources contain the natural and aromatic EOs in small quantities which are difficult to extract. These EOs can be produced by different techniques including conventional, nonconventional, and biochemical processing strategies. The combination of conventional and non-conventional techniques has proved to be potential extraction methods. They ensure EO production with shorter extraction time, higher efficiency, and enhanced product quality. There has been a constant urge to develop greener synthesis and extraction procedures for EOs due to the adverse effects caused to the environment by the physical and chemical methods. Researchers are exploring bioengineering techniques to enhance the quality and quantity of EOs using various microorganisms and enzymes. Metabolic engineering and biotransformation can tackle the uncertainty of raw material supply for EOs like the climatic changes, natural disasters, and plant diseases. With high efficiency, specificity, and purity of products, these methods are highly beneficial for future applications. This review presents a detailed description of the current status of EO production, their potential extraction techniques, and life cycle assessment (LCA) of essential oil production. The recent developments in the direction of bioengineering for scalable synthesis of EOs are also highlighted in this review.

Abstract:Edible insects are accepted as food and feed ingredients in many parts of the world. Insects account for more than 80% of animal kingdom providing rich biodiversity of protein and lipid profiles compared to conventional livestock. Insect biomasses contain an average of 35-62% protein, 3-57% lipid, and 3-12% chitin, and their nutritional values are widely recognized due to their presence, including minerals, and vitamins. While whole insects are consumed as eggs, larvae, pupae, or adults, there has been a recent uptick in interest to use fractions, e.g., protein, lipid, and chitin, as food and feed ingredients. To utilize these fractions in various food and feed preparations, a deeper understanding of the physicochemical as well as functional properties of the ingredients is required, which are generally impacted by extraction and preparation processes. Thus, the methods of extraction/purification are important to preserve the quality and functional properties of these ingredients. This paper discusses the extraction methods for insect protein, lipid, and chitin, their functional properties, and potential applications in food and feed applications.

Abstract:Edible insects provide an alternative source of high-quality proteins, essential lipids, minerals, and vitamins. However, they lack the acceptability and consumption rates of more common staple foods. In contrast, pasta and noodles are globally appreciated foods that are consumed across various cultures. These products contribute greatly to the population's energy intake but generally lack essential nutrients. Recently, edible insects have gained in popularity due to their numerous benefits, both environmental and nutritional. Current research indicates that incorporating edible insect ingredients into pasta and noodle formulations enhances their nutritional quality by increasing protein and fiber content and reducing carbohydrates. However, adding new ingredients to enrich common foods often carries technological and sensory challenges, such as changes in processing parameters, texture, flavor, and appearance. Technology assessment, scientific research, information campaigns, and public policies can help overcome these issues. This review aims to summarize the benefits of entomophagy (the consumption of insects as food) for sustainability, nutrition, and health; highlight the potential of pasta and noodles as carriers of nutritious and bioactive ingredients, including insects; and critically address the advancements in insect-enriched pasta and noodle technology, identifying current challenges, knowledge gaps, and opportunities.

Abstract:Nowadays, edible insects are considered an outstanding source of nutrients, primarily because they contain high-quality protein, amino acids, and vitamins. Insects are considered a promising alternative protein source towards alleviating future global food shortage problems due to their production considered as being more sustainable by using less agricultural land and water, as well as releasing a smaller amount of greenhouse gas emissions. However, other important aspects to consider about the consumption of edible insects include their health benefits and some safety aspects, which has been relatively overlooked. In this sense, edible insects contain bioactive compounds that can provide diverse bioactivities, such as antioxidant, antihypertensive, anti-inflammatory, antimicrobial, and immunomodulatory with a positive impact on human health. On the other hand, edible insects are a nutrient-rich food that can provide a perfect growth medium for diverse microorganisms, as well as possess some anti-nutritive factors. These two main aspects could represent food safety concerns for consumers. In this context, recent scientific evidence indicates that preservation methods, mainly thermal treatments, utilized in the cooking or processing of edible insects decreased the microbial levels and anti-nutritive factors, which suggests that edible insects do not represent a critical biological risk to humans. Besides, edible insects could have a positive effect on gut microbiota, either by their pre-biotic effect or their antimicrobial activity towards pathogens. Thus, this review is focused on studies related to the health benefits of edible insects and their isolated components, as well as discussion about potential issues related to their microbial content and anti-nutritive factors; this review will provide a synopsis on whether edible insects may be considered safe for human consumption.

Abstract:The planet is home to more than 2000 species of edible insects, some of which have been consumed as food for many years. Recently, edible insect products have been gradually increasing in several countries, such as Italy and Egypt, as novel feed resources for humans and animals due to their availability, potential economic benefits, and high nutritive value. The insect industry can provide a new solution for livestock nutrition and offer many additional advantages, but there are obstacles to overcome, such as some nutritional organizations that forbid its usage. Nevertheless, previous research indicates that different insect species could be used safely as nutraceuticals in poultry farming to improve broiler growth performance (>3%) and layer egg production (>5%). Among these species, there are various products and extracts that can be used in poultry nutrition in a sustainable manner. This review provides an outline of insect composition, nutrient values, application in poultry feed, safety, and guidelines, and finally, the future perspectives of insects as an alternative feed source in poultry diets.

Abstract:Abstract The aim of this review is to discuss the usage of insect fats as an energy source in animal nutrition. Insects are a rich carrier of proteins, fat, and minerals. They are successfully introduced in animal diets (poultry, swine, rabbits, fish, and pets) as a source of many nutrients, including energy and essential fatty acids (FAs). The insects’ fat content and quality are highly affected by the type of substrate provided to the insects during the rearing period. The majority of the studies have shown that insect fats may be used as promising substitutes for conventional energy resources in animal nutrition without adverse effects on growth performance and feed utilization. They can positively affect meat quality by increasing the level of long-chain polyunsaturated FAs but may also positively influence animals by regulating the gut microbiota and stimulating the immune system. In conclusion, insect fat supplementation showed promising results in terms of their application in animal nutrition. However, compared to insect protein application, very few studies have been performed on insect fats. Therefore, because of the fat quality and content of insects, there is a need to extend experimentation regarding their implementation in animals’ diets as a replacement for conventional dietary energy resources.
