Abstract:As a convenient and efficient analytical tool, the optical biosensor plays an essential part in the on-site and rapid detection for food safety. To expand its practical application, enzyme-mimicking nanomaterials (nanozymes), in particular metal-organic framework (MOF)-based nanozymes have been fabricated and applied in optical biosensors due to their abundant catalytic sites and stable catalytic activities. In this review, we summarize the recent progress of MOF-based nanozyme-enabled optical biosensors in food safety detection. The types of MOFbased nanozymes are categorized and optical biosensing strategies, such as colorimetric and fluorescent biosensors, are introduced from the perspective of the specific pathways. Practical applications of MOF-based nanozyme-enabled optical biosensors for the detection of food hazards, including biological and chemical hazards, are also emphasized. Finally, prospects and challenges are discussed to bring a bright future for the design of MOF-based nanozymes and their enabled optical biosensors in the field of food safety analysis.
Highly parallel fabrication of nanopatterned surfaces with nanoscale orthogonal biofunctionalization imprint lithography

Abstract:Large areas of nanopatterns of specific chemical functionality are needed for biological experiments and biotechnological applications. We present nanoscale orthogonal biofunctionalization imprint lithography (NOBIL), a parallel top-down imprinting and lift-off technique based on step-and-flash imprint lithography (SFIL) that is able to create centimetre-scale areas of nanopatterns of two biochemical functionalities. A photoresist precursor is polymerized with a template in place, and the thin resist layer is etched to create an undercut for lift-off. Gold nano-areas on a silicon dioxide background are then independently functionalized using self-assembly that translates the nanopattern into a cell-adhesive/cell-rejective functionality pattern. We demonstrate the technique by creating fibronectin areas down to a pattern size of 60 nm against a polyethylene glycol (PEG) background, and show initial results of cells stably seeded over an array of 1 mm2 areas of controlled size and pitch.

Abstract:Food contains a variety of poisonous and harmful substances that have an impact on human health. Therefore, food safety is a worldwide public concern. Food detection approaches must ensure the safety of food at every step of the food supply chain by monitoring and evaluating all hazards from every single step of food production. Therefore, early detection and determination of trace-level contaminants in food are one of the most crucial measures for ensuring food safety and safeguarding consumers’ health. In recent years, various methods have been introduced for food safety analysis, including classical methods and biomolecules-based sensing methods. However, most of these methods are laboratory-dependent, time-consuming, costly, and require well-trained technicians. To overcome such problems, developing rapid, simple, accurate, low-cost, and portable food sensing techniques is essential. Metal-organic frameworks (MOFs), a type of porous materials that present high porosity, abundant functional groups, and tunable physical and chemical properties, demonstrates promise in large-number applications. In this regard, MOF-based sensing techniques provide a novel approach in rapid and efficient sensing of pathogenic bacteria, heavy metals, food illegal additives, toxins, persistent organic pollutants (POPs), veterinary drugs, and pesticide residues. This review focused on the rapid screening of MOF-based sensors for food safety analysis. Challenges and future perspectives of MOF-based sensors were discussed. MOF-based sensing techniques would be useful tools for food safety evaluation owing to their portability, affordability, reliability, sensibility, and stability. The present review focused on research published up to 7 years ago. We believe that this work will help readers understand the effects of food hazard exposure, the effects on humans, and the use of MOFs in the detection and sensing of food hazards.

Comprehensive Reviews in Food Science and Food Safety

Abstract:Foodborne pathogen contamination has become a severe threat to human health. Traditional methods for foodborne pathogen detection have several disadvantages, including long detection time, low sensitivity, and low selectivity. The emergence of multiple excellent nanomaterials enables the construction of novel biosensors for foodborne pathogen detection. Based on the outstanding properties of nanomaterials, the novel biosensors possess the advantages of sensitivity, specificity, rapidity, accuracy, and simplicity. The present review comprehensively summarizes the advanced biosensors, including electrochemical, colorimetric, fluorescent, and surface enhanced Raman scattering biosensors for sensing key foodborne pathogens in recent decades. Furthermore, several issues are identified for further exploration, and possible directions for the development of biosensors are discussed.

Abstract:Background: The global food safety issues caused by exogenous contaminants have posed increasing threat to public health. Reliable sensing approach with excellent performance for the sensitive detection of these contaminants is in great necessity and urgency in food safety control. Scope and approach: Metal-organic frameworks (MOFs), a new class of porous crystal materials with fascinating merits of tunable compositions and structures, high porosity, and large and easy-to-functionalize surfaces, have been extensively developed to construct diverse sensors for food safety measurement. The relevant publications have increased exponentially, attracting significant research attention. Therefore, this review summarized the main types of emerging MOFs and the current state-of-the-art synthetic strategies. The MOF-based optical sensors developed over the past five years, such as the colorimetric (CM), fluorescent (FL), electrochemiluminescent (ECL), and surface-enhanced Raman spectroscopy (SERS) series, and electrochemical (EC) sensors were comprehensively discussed regarding their construction, sensing mechanisms, and real-world application for exogenous contaminants including mycotoxins, pesticide residues, and heavy metals in food. Besides highlighting the recent advances and advantages of these MOF-based sensors, their current challenges and future prospects were systematically discussed. Key findings and conclusions: This review aimed to provide several beneficial insights regarding the coordination chemistry and performance of MOFs and facilitate the exploration of MOF-based sensing platforms for more hazardous contaminants to guarantee food safety.

Abstract:Background: As a critical topic of international concern, food safety has received great attention in recent years. The hazardous substances (such as antibiotics, heavy metal ions, food additives, and foodborne bacteria) in foodstuffs would cause threat to human health and economic losses in food industry. Despite of high sensitivity, accuracy, and reliability of conventional techniques for analysis of food contaminants, they often require complicated apparatus, well-trained personalized operation, and laborious and time-consuming procedure. In this regard, new sensing strategies for convenient, fast, and sensitive detection of food contaminants should be developed for food safety. Scope and approach: Metal-organic frameworks (MOFs), as a large category of porous crystalline materials, could be used as efficient platforms for constructing diverse chemosensors and biosensors, for their high porosity, adjustable compositions or structures, and good stability. A variety of MOFs, MOFs-based composites, and MOFsbased derivatives show excellent fluorescence (FL), chemical functionality, and strong bioaffinity toward probes (DNA, aptamers, or antibodies), exhibiting great potentials as FL emitters, electrode materials, or platforms of biosensors for selective and sensitive detection of hazard analytes in foodstuffs. By coupling with different determination techniques such as FL, electrochemical (EC), photoelectrochemical (PEC) or surface-enhanced Raman spectroscopy methods, MOFs-based materials have shown promising applications for detecting diverse analytes. Furthermore, the current challenges and future developments of MOFs-based materials for analysis of food contaminants have been discussed. Key findings and conclusions: Although some reviews on the applications of MOFs in food packing and food safety have been documented, this comprehensive review will provide new insights to the construction of chemosensors and biosensors with MOFs-based materials for determination of food contaminants toward food safety monitoring.

Abstract:Timely and accurate detection of pathogens is critical for preventing the spread of infectious diseases. Currently, metal-organic frameworks (MOFs)-based sensing strategies have been reported as desirable pathogens sensing platforms, owing to their distinctive properties such as adjustable porosity, good stability, and high binding affinities. In this review, we aim to highlight recent progress towards MOFs-based biosensors for pathogens detection. We systematically classify the application of MOFs in pathogen detection into two aspects, including biorecognition and signal transduction. For one thing, MOFs feature unique physicochemical properties that facilitate the combination of biological receptors (e.g., aptamers, bacteriophages, molecular imprinting, antibodies, carbohydrates, and peptides), thus ensuring the specific recognition of pathogens. For another, by virtue of their unique optical and electronic properties, MOFs dramatically enhance signal transduction. Accordingly, we summarize MOFs-based biosensors for pathogen detection in terms of the types of signal transduction, including optical, electrochemical, and other transduction. Finally, the remaining challenges and prospects of MOFs-based pathogens detection are elucidated. We believe it may provide considerable inspiration for this flourishing research topic.

Abstract:The increasing demand for toxin-free food, driven by the rise in fast food consumption and changing dietary habits, necessitates advanced and efficient detection methods to address the potential risks associated with contaminated food. Nanomaterial-based detection methods have shown significant promise, particularly using metal-organic frameworks (MOFs) combined with biomolecules. This review article provides an overview of recent advancements in using functionalized metal-organic frameworks (FMOFs) with biomolecules to detect various food contaminants, including heavy metals, antibiotics, pesticides, bacteria, mycotoxins and other chemical contaminants. We discuss the fundamental principles of detecting food contaminants, evaluate existing analytical techniques, and explore the development of biomacromolecule-functionalized MOF-based sensors encompassing colorimetric, optical, electrochemical, and portable variants. The review also examines sensing mechanisms, uses FMOFs as signal probes and carriers for capture probes, and assesses sensitivity. Additionally, we explore the opportunities and challenges in producing FMOFs with biomacromolecules for food contaminant assessment. Future directions include improving sensor sensitivity and specificity, developing more cost-effective production methods, and integrating these technologies into real-world food safety monitoring systems. This work aims to pave the way for innovative and reliable solutions to ensure the safety of our food supply.

Abstract:<p>Metal-organic frameworks (MOFs) possess large surface area, high porosity, tunable structures, and flexible tailored properties, enabling their use as adsorbents and sensors for food contamination. Specifically, MOFs have been regarded as promising materials in instrumental analysis of food contamination via separation and extraction of target analytes based on their high surface area with high adsorption capacity. Meanwhile, integrating LMOFs with a variety of loading guests or functional materials has been demonstrated as a viable strategy to extend the application of MOFs-based sensors for food contamination analysis. This review highlights the applications of MOFs in food contamination analysis. In particular, we will describe the mode of action of MOFs as sorbent material and sensors. Meanwhile, the potential application of MOFs for pre-treatment and sensing in food contamination analysis will be discussed. Finally, we offer our perspective on the application of MOFs based materials for food contamination analysis.</p>

Along with the development in sensing technology, the metal–organic frameworks (MOF)-based sensors gained more attention due to their excellent sensing, catalytic, and adsorption properties. Abstract:Investigation on food safety and preservation is essential to provide high quality and safe food for human beings, including accurate determination and efficient removal of inorganic heavy metal ions and organic contaminants, as well as regulation of food postharvest ripening and intelligent sterilization.In the last two decades, metal-organic frameworks (MOFs), as functionalized porous materials, have aroused interests of researchers because of their advantages of high porosity, large specific surface area, flexible structure properties, and abundant binding sites for guest molecules.MOFs have shown great potentials in practical applications in food and related fields.In this overview, we summarized the MOF crystallization mechanisms, synthesis routes and methods, stability, as well as the applications in food contamination including removal of heavy metal ions, dyes, and antibiotics, and food preservation including regulation of fruit and vegetable ripening, removal of moisture and oxygen, and high-efficiency sterilization.Finally, two perspectives focusing on the development of MOFs for innovative food research, i.e., food-grade MOFs and MOF composites are suggested based on our understanding.

Abstract:Foodborne organic contaminants against health, mainly including antibiotics, pesticides, mycotoxins, foodborne bacteria, etc., have been considered one of the global public health problems. The early detection of these organic contaminants before consumption can significantly reduce the risk of acute or chronic food poisoning. Therefore, it's of great significance to develop effective sensing strategies for convenient, rapid, sensitive, and selective food quality monitoring. Metal-organic frameworks (MOFs) and covalent organic frameworks (COFs), as highly promising porous materials with multifunctionality, exhibit broad prospects in the field of chemical or biological sensing. They possess great potential to meet the requirements for detecting numerous analytes. Here, we summarized the recent advances of functional MOFs- and COFs-based efficient sensing platforms developed for the measurement of foodborne contaminants. In addition, a brief discussion of the future challenges in the practical application of these platforms and insights into the future directions in this promising field was also included.

Abstract:Metal-organic framework materials (MOFs) have been widely used in food contamination adsorption and detection due to their large specific surface area, specific pore structure and flexible post-modification. MOFs with specific pore size can be targeted for selective adsorption of some contaminants and can be used as pretreatment and pre-concentration steps to purify samples and enrich target analytes for food contamination detection to improve the detection efficiency. In addition, MOFs, as a new functional material, play an important role in developing new rapid detection methods that are simple, portable, inexpensive and with high sensitivity and accuracy. The aim of this paper is to summarize the latest and insightful research results on MOFs for the adsorption and detection of food contaminants. By summarizing Zn-based, Cu-based and Zr-based MOFs with low cost, easily available raw materials and convenient synthesis conditions, we describe their principles and discuss their applications in chemical and biological contaminant adsorption and sensing detection in terms of stability, adsorption capacity and sensitivity. Finally, we present the limitations and challenges of MOFs in food detection, hoping to provide some ideas for future development.

Abstract:Using scientific technologies to detect toxins in food is significant to prevent food safety problems and protect people’s health. Recently, the rise of sensors has made rapid, efficient, and safe detection of food toxins possible. One of the key factors impacting the sensor’s performance is the nanomaterials employed. Metal-organic frameworks (MOFs), with high specific surface area, tunable composition, porous structure, and flexible properties, have aroused the interest of researchers. The applications of MOFs in detecting food toxins have seen remarkable success in the past few years. In this critical mini-review, the impact of various synthesis methods on MOFs’ properties is first presented. Then, the applications and mechanisms of MOFs-based sensors in detecting various toxins are summarized and analyzed. Finally, future perspectives, potential opportunities, and challenges in this field are discussed.

Abstract:Over the past decades, increasing research in metal-organic frameworks (MOFs) being a large family of highly tunable porous materials with intrinsic physical properties, show propitious results for a wide range of applications in adsorption, separation, electrocatalysis, and electrochemical sensors. MOFs have received substantial attention in electrochemical sensors owing to their large surface area, active metal sites, high chemical and thermal stability, and tunable structure with adjustable pore diameters. Benefiting from the superior properties, MOFs and MOF-derived carbon materials act as promising electrode material for the detection of food contaminants. Although several reviews have been reported based on MOF and its nanocomposites for the detection of food contaminants using various analytical methods such as spectrometric, chromatographic, and capillary electrophoresis. But there no significant review has been devoted to MOF/and its derived carbon-based electrodes using electrochemical detection of food contaminants. Here we review and classify MOF-based electrodes over the period between 2017 and 2022, concerning synthetic procedures, electrode fabrication process, and the possible mechanism for detection of the food contaminants which include: heavy metals, antibiotics, mycotoxins, and pesticide residues. The merits and demerits of MOF as electrode material and the need for the fabrication of MOF and its composites/derivatives for the determination of food contaminants are discussed in detail. At last, the current opportunities, key challenges, and prospects in MOF for the development of smart sensing devices for future research in this field are envisioned.

Abstract:The high speed of contaminants growth needs the burgeoning of new analytical techniques to keep up with the continuous demand for monitoring and legislation on food safety and environmental pollution control. Metal-organic frameworks (MOFs) are a kind of advanced crystal porous materials with controllable apertures, which are self-assembled by organic ligands and inorganic metal nodes. They have the merits of large specific surface areas, high porosity and the diversity of structures and functions. Latterly, the utilization of metal-organic frameworks has attracted much attention in environmental protection and the food industry. MOFs have exhibited great value as sensing materials for many targets. Among many sensing methods, fluorometric sensing is one of the widely studied methods in the detection of harmful substances in food and environmental samples. Fluorometric detection based on MOFs and its functional materials is currently one of the most key research subjects in the food and environmental fields. It has gradually become a hot research direction to construct the highly sensitive rapid sensors to detect harmful substances in the food matrix based on metal-organic frameworks. In this paper, we introduced the synthesis and detection application characteristics (absorption, fluorescence, etc.) of metal-organic frameworks. We summarized their applications in the MOFs-based fluorometric detection of harmful substances in food and water over the past few years. The harmful substances mainly include heavy metals, organic pollutants and other small molecules, etc. On this basis, the future development and possible application of the MOFs have prospected in this review paper.

Abstract:Feeding the world’s increasing inhabitants requires considerable quantities of food, whose quality is essential to personal and economic health. Food quality parameters are mandatory to control throughout the fresh produce supply chain to meet consumer requests. Until now, different analytical techniques have been employed in food safety control. However, most of these are laboratory needed, expensive, and time-consuming. To address these obstacles, many researchers have concentrated on developing electrochemical sensors (ECSs) as a powerful method with great sensitivity and reliability for food evaluation. Metal-organic frameworks (MOFs) with surprisingly porous morphology provide uniform yet tunable features, a high specific surface, and established practical applications in various fields. MOF-based ECSs present novel routes for the fast and effective detection of food contaminants or nutrients. In this current review, we concentrate on the MOF-based ECSs for food evaluation by first overviewing the library of available MOF sensors from pristine to MOF-bio composites and then exploiting recent application fields, with an emphasis on how this novel material unlocks new opportunities to monitor food nutrients or hazards.

Abstract:Food detection and food packaging play critical roles in the realm of food engineering in maintaining food safety and quality. Because of the specific large surface area (SSA) and customizable topologies, metal-organic frameworks (MOFs) have become recognized as promising materials with distinctive features. Examples of MOFs employed as photochemical and electrochemical sensors for food detection are provided in this research. These MOF-based sensors have great selectivity and sensitivity, making it possible to quickly and accurately identify pollutants or signs of food rotting in samples. Additionally, the use of MOFs in food packaging has advantages including a longer shelf life and antibacterial qualities. Food is protected from outside influences by being enclosed within MOF structures, which delays deterioration and rotting. Additionally, MOFs with antibacterial qualities can successfully stop the growth of microbes, ensuring the safety of food. MOFs have the potential to be used in new application areas, such as the controlled release of dietary supplements and flavor enhancers, in addition to food detection and packaging. To guarantee the stability and effectiveness of MOFs in various applications, additional study is necessary. The relevance of food detection and packaging in food engineering is highlighted in this paper's conclusion, which also explores the potential of MOFs as adaptable tools in both fields. The examples shown show how important MOFs are as sensors and packaging materials, but further study is needed to fully utilize their potential and address any issues that might arise.
Recent Progress of Metal-Organic Framework-Assisted Sensing System for Point-of-Care Antibiotics Detection in Food Industry; a Mini Review

Abstract:Antibiotics (ANBs) are essential for animal health and are used for treatment, prevention, and growth promotion. However, ANB use in animals can lead to antibiotic residue in food products, which can cause various side effects. These include the transfer of ANB-resistant bacteria to humans, immunopathological effects, allergies, and even carcinogenicity. The most significant adverse effect is the transfer of ANB-resistant bacteria to humans due to the mobile properties of resistance. Therefore, timely detection is the best approach to prevent the spread of downsides of these compounds. Various methods exist for measuring ANB concentrations, such as LC-MS, high-performance liquid chromatography, capillary electrophoresis, thin-layer chromatography, and enzyme-linked immunoassay. However, complicated sample preparation processes and expensive equipment are often considered obstacles to their prevalent usage. Emerging technologies like Metal-Organic Frameworks (MOFs) offer a simpler, quicker, and more cost-effective solution for detecting veterinary drugs in animal-derived food samples. This investigation first reviews some conventional methods for ANB recognition, including microbiological, immunological, and laboratory-based procedures. Then, Sensor-based analytical methods and their advantages and disadvantages were discussed. Finally, the recent progress in ANB detection approaches using MOF-based sensors in food products was investigated. MOFs have become a topic of great interest due to their remarkable properties. These include high surface areas that can be easily modified, defined porosity, lightweight, adjustable pore sizes, ordered structures, and impressive mechanical strength. The performance of MOFs is superior to traditional chemosensory materials due to their ability to adjust properties. Various sensing systems based on MOFs have been reported, including photoelectrochemical, electrochemiluminescence, electrochemical, and quartz crystal microbalance. As discussed in this review, sensors based on MOFs have emerged as reliable alternatives for fast and routine detection in clinical and environmental analysis and food safety control. Various MOF-based materials have been used for detecting antibiotics, and their advantages and limitations have been critically evaluated for future applications in diagnosing antibiotics in food products.

Abstract:Metal–organic frameworks (MOFs) take on highly ordered self-assembled structures and have gained much attention due to their intriguing structural features and enormous applications. Typical features of MOFs include large surface areas, nanoporosity, tunable size and shape, and reliable host–guest interactions, making them demanding candidates in sensor applications. Moreover, MOFs offer an opportunity to upgrade selectivity toward certain analytes in response to various chemical and physical stimulations. In this review, we have elaborated on the structural features of MOFs for biological sensing and the MOF-analyte interaction originating from the inherent porosity, vacancy defects, or abundance functional groups. Also, we summarize the state-of-the-art progress on MOF-based sensors applied in healthcare, food safety, environmental monitoring, and pharmaceutics, category by transduction mechanisms involving optical, electrochemical, and plasmons. In addition, we have discussed in detail the possible applications of MOF-based material for identifying high performance and detecting food freshness, industrial gas leakage, and medical diagnostics. Finally, current limitations regarding sensing performance in practical applications are also overviewed. Thus, this literature review will open new doors for chemists or bioengineers to tune the structural features further to modulate the sensing ability of low-cost materials for biosensing applications in future endeavors.
