Abstract:A novel antimicrobial composite material was prepared by encapsulating orange essential oil (OEO) in zein prolamine (ZP) via the coaxial electrospinning (ES) technique. By manipulating process parameters, the morphological features of ZP/OEO fibers were modulated. Fine fibers with diameters ranging from 0.7 to 2.3 μm were obtained by regulating ZP solution concentration and process parameters during the ES process. Optimal loading capacity (LC) and encapsulation efficiency (EE) of OEO in fibrous ZP mats were determined to be 22.28% and 53.68%, respectively, and were achieved using a 35 w/v% ZP ES solution. The encapsulation of OEO was found to be reliant on ZP solution concentration (the enveloping medium). SEM analysis indicates the surface morphology of ZP/OEO electrospun fibers is dependent on ZP solution loading volume, with lower ZP concentrations yielding defective fibrous structures (for example, beaded and spindled-string like morphologies). Furthermore, this loading volume also influences OEO LC, EE, mat water contact angle and oil retention. CCK-8 assay and cell morphology assessment (HEK293T cells) indicate no significant change with electrospun ZP and ZP/OEO fibrous membranes over an 8 h period. Antimicrobial activity assessment using Escherichia coli, suggests composite nonwovens possess sterilization properties; elucidating potential application in active food packaging, food preservation and therefore sustainability.

Abstract:In this work, the soy protein/chitosan-based microsphere (SCM), as a stable biocompatible vehicle of oleanolic acid (OA), was constructed for the first time under acidic conditions, and OA was firstly used for quality maintenance of minimally processed products. The effect of soybean protein isolate/chitosan ratio, particle concentration and oil fraction on emulsion stability was studied. Additionally, the interfacial characteristics of SCM with and without loading OA were determined by cryo-SEM. Results demonstrated that the encapsulation efficiency of SCM embedded with 0.15% OA (SCM-OA0.15%) rated up to 87.53% +/- 2.23%, and SCM-OA showed smaller particle size, greater stability, and better liquid-state behavior, as well as the enhanced antibacterial and antioxidant properties in comparison to the control and SCM group. The minimally processed apples were used to evaluate the potential application of SCM-OA delivery system and it was evident that SCM-OA contributed to reducing weight loss, maintaining total phenol content and inhibiting color browning of minimally process apples. These findings shed new light on the emerging biocompatible vehicles of plant-derived bioactive substance.
Improving the oxidative stability of butter oil with nanoencapsulated Ferulago angulata essential oil during accelerated shelf-life storage

Abstract:This experiment aimed to encapsulate Ferulago angulata essential oil (FEO) into the zein nanofibers through an electrospinning approach and evaluate their application in retarding the lipid oxidation of butter oil during accelerated shelf-life storage. The main constituents of FEO were α-pinene (35.08%), followed by limonene (21.85%) and ɣ-terpinene (8.03%), respectively. Based on the results of scanning electron microscopy, the obtained electrospun nanofibers were cylindrical, uniformly disordered network structures with smooth surfaces and good continuity. The study findings showed that zein + FEO 1% and zein + FEO 1.5% nanofiber mats had better inhibitory effects to improve the oxidative stability of butter oil during accelerated storage for 24 days compared to the samples enriched with butylated hydroxytoluene 100 mg/Kg (P < 0.05). At the end of the study period, the peroxide value, thiobarbituric acid-reactive substances, p-anisidine value, and acid value of treated butter oils with zein + FEO 1% and zein + FEO 1.5% nanofiber mats were in the range of 0.79-1.03 meq oxygen/Kg, 0.35-0.45 MDA/Kg, 1.36-1.66, and 0.53-0.65 mg KOH/g, respectively. Abstract:Perilla oil (PO) has a high unsaturated fatty acids content that is easily oxidized, causing nutritional and functional losses. This study investigated the fabrication of PO in emulsion and microcapsules using whey protein isolate (WPI), gum acacia (GA), maltodextrin (MD), and OSA-starch as wall materials, aiming to improve the oxidative stability and functionality of the PO. The results showed that both OSA-starch stabilized emulsion and microcapsules exhibited slower increases in peroxide and p-anisidine values and a slower decrease in antioxidant capacity than those produced with WPI/GA, WPI/MD, and WPI/GA via complex coacervation. The microcapsules fabricated with OSA-starch gave a better polydispersity index, encapsulation efficiency, and oxidative stability than the other samples, suggesting effective protection against primary and secondary oxidation during storage. Moreover, the oxidation stability of the emulsions and microcapsules could be improved via complex coacervation, although this technique could result in a larger droplet size. Overall, this study contributed to the knowledge of PO emulsions and microcapsules fabrication using protein and polysaccharides and provided insights for improving PO's oxidative stability and functionality. Abstract:The forms of presentation of NPC, as related to the signs and symptoms of the disease, were studied in 215 patients over a 2-year period. A neck mass was the most common presenting symptom. Seventy percent of the patients were in Ho's stages III to V. This evidence emphasizes the need for earlier diagnosis to improve the prognosis of the disease. This earlier diagnosis could be achieved by increasing the awareness of both the patient and the clinician, particularly in countries where the incidence of NPC is high.

Abstract:Chitosan (CH)/polyvinyl alcohol (PVA) hybrid nanofibers incorporating lemon, lime, and grapefruit essential oils were developed via electrospinning.The encapsulation improved the thermal stability of the essential oils and the nanofibers proved to exhibited antioxidant, antibacterial, and tyrosinase inhibitory activities, demonstrating their potential for use in biomaterials, food packaging, and cosmetic applications. In this study, chitosan (CH)/polyvinyl alcohol (PVA) hybrid nanofibers incorporating three distinct essential oils lemon, lime, and grapefruit were successfully obtained via the innovative electrospinning technique. Characteristics of the electrospinning polymeric mixture loaded with essential oils using variable ratios of CH/PVA were evaluated. The nanoencapsulation process of citrus essential oils was achieved with 47.67%–88.16% encapsulation efficiency. Notably, the thermal stability of the encapsulated essential oils experienced a significant enhancement after encapsulation. Scanning electron microscopy analysis revealed valuable insights, revealing that an increased amount of incorporated essential oil within the polymeric mixture solutions led to a reduction in the average fiber diameters. The resulting nanofibers demonstrated notable attributes such as antioxidant, tyrosinase inhibitory, and antibacterial activities. The present research demonstrates the ability of CH/PVA hybrid nanofibers obtained through an electrospinning process to preserve citrus essential oils properties quality and reveals a high potential application of nonencapsulated citrus essential oils in biomaterials, food packaging, and advanced cosmetic application.

Abstract:Sunflower stem pith (SSP), an agricultural residue, was used to isolate the main source of the SSP cellulose. Cellulose nanofibril (CNF) with a length of about 2.0 μm and a width of approximately 26.3 nm was separated by using TEMPO oxidation from the SSP cellulose. Characterization of sunflower oil-in-water emulsions was assessed by visual inspection, emulsion index (EI), particle size, surface coverage, and rheology. The surface coverage ratio (SC) of emulsified droplets decreased from 8.8 to 0.5 with the variation of oil phase volume and SSP CNF phase content. Pickering emulsions (oil/water volume ratio was 1/9) prepared with CNF (0.5 wt%), which possessed the highest stability, and the smallest particle size. However, the high oil volume system resulted in polydispersity and larger droplet sizes. The storage modulus (G') and loss modulus (G") offered evidence for the rheological behavior of the emulsions. The findings indicated that it is feasible to stabilize oil-in-water emulsions using SSP cellulose. The integrated process is suggestive of viable methods for the industrial utilization of sunflower.

Abstract:This study aimed to develop core-shell nanofibers by emulsion electrospinning using zein-stabilized emulsions to encapsulate camellia oil effectively. The increasing oil volume fraction ( f from 10% to 60%) increased the apparent viscosity and average droplet size of emulsions, resulting in the average diameter of electrospun fibers increasing from 124.5 nm to 286.2 nm. The oil droplets as the core were randomly distributed in fibers in the form of beads, and the core-shell structure of fibers was observed in TEM images. FTIR indicated that hydrogen bond interactions occurred between zein and camellia oil molecules. The increasing oil volume fraction enhanced the thermal stability, hydrophobicity, and water stability of electrospun nanofiber films. The core-shell nanofibers with 10%, 20%, 40%, and 60% camellia oil showed encapsulation efficiency of 78.53%, 80.25%, 84.52%, and 84.39%, respectively, and had good storage stability. These findings contribute to developing zein-based core-shell electrospun fibers to encapsulate bioactive substances.
Electrospinning of double-layer chitosan-flaxseed mucilage nanofibers for sustained release of Ziziphora clinopodioides essential oil and sesame oil

Abstract:The aims of the current study were to evaluate the physical, mechanical, structural, morphological, antioxidant, and antimicrobial properties of chitosan-flaxseed mucilage (CH-FM) nanofibers enriched with Ziziphora clinopodioides essential oil (ZEO; 0, 0.25, and 0.75 ml/100 ml) and sesame oil (SO; 0 and 0.75 ml/100 ml). Based on scanning electron microscopy images, the incorporation of ZEO 0.5 ml/100 ml, SO 0.75 ml/100 ml, and SO 0.75 ml/100 ml + ZEO 0.5 ml/100 ml caused an increase in the average diameters of the corresponding nanofibers. The atomic force microscopy images also showed smoother structures for nanofibers supplemented with ZEO and SO compared to the control group. The highest antimicrobial and antioxidant activities were found in CH-FM + ZEO 0.5 ml/100 ml + SO 0.75 ml/100 ml. The fabricated nanofibers had tensile strength, puncture force, puncture deformation, water vapor transmission rate, water vapor permeability, and swelling index ranging 3.52-5.55 MPa, 4.24-8.01 N, 1.15-3.45 mm, 25.01-47.49 g/m2 h, 7.98-14.08 × 10‾4 g mm/m2 h Pa, and 19.41-41.35%, respectively. Encapsulated ZEO and SO could also diffuse out slowly but durably from the nanofibers within 96 h. Our findings can give insights regarding prepared novel nanofibers containing antimicrobial/antioxidant compounds for food packaging applications.
Intraoperative Injection of Subareolar or Dermal Radioisotope Results in Predictable Identification of Sentinel Lymph Nodes in Breast Cancer

Abstract:Objective:Our objective is to prove that injection of technetium-99m (Tc99) sulfur colloid in a subareolar manner, after induction of anesthesia, is a safe and effective technique for sentinel lymph node identification in breast cancer patients. Introduction:Preoperative injection of Tc99 and lymphoscintigraphy is standardly performed before sentinel lymph node biopsy (SLNB) for breast cancer. Blue dye is often used to help guide and confirm the localization but tattoos the breast. This method is limited because of painful injections, variable identification rates, added costs and unnecessary scheduling delays. We hypothesized that intraoperative injection alone by the surgeon of dermal or subareolar Tc99 is practical for the identification of sentinel lymph node in breast cancer. Methods:This is a prospective single institution study that was approved by our institutional review board. All patients with operable breast cancer that were eligible for a SLNB from October 2002 to October 2010 were included in our study population. After induction and before sterile preparation of the operative field 1 mCi of Tc-99 unfiltered was administered by a subareolar injection. In patients where the scar was in the periareolar region or in the upper outer quadrant a dermal injection using 0.25mCi was used. Confirmatory Lymphazurin was also injected early on in this series but became unnecessary later in the study. Site and type of injection, injection time, incision time, and extraction time along with other factors for the purposes of the study were recorded. Data comparing injection preoperative and intraoperative were collected. Results:Six hundred ninty-nine patients were accrued for a SLNB with an average age 57.1 ± 12.8 (range 24–92). Seventy-six patients underwent 2 SLNB procedures for a total of 775 intraoperative Tc-99 injections. Six patients underwent intraoperative dermal injection with Tc-99. The average dose of Tc-99 administered was 1.157 ± 0.230 mCi. The sentinel node was localized in 98.6% of the cases (419/425) of subareolar radiotracer alone, 94.8% (326/344) in dual injection and 100% (6/6) in dermal injection. Average time from injection to incision was 41.20 ± 29.56 minutes for radiotracer injection in subareolar region only. For dermal injections it was 40.83 ± 39.64 minutes. For patients with dual injection of Lymphazurin and radiotracer it was 31.74 ± 24.86 minutes. The average ex vivo count was 6474 ± 8395 for dermal injection, 28,250 ± 69,932 for Tc-99 subareolar injection, and 35,501 ± 97,753 for dual subareolar injection. Intraoperative radiotracer alone incurred a charge of $189.00; Lymphazurin blue dye added $591.40, whereas preoperative injection had a charge of $1257.06 associated with imaging, injection, and interpretation of images. Conclusion:Intraoperative injection of Tc99 alone with a subareolar or dermal injection technique rapidly localizes the sentinel node in breast cancer, is an oncologically sound procedure, is cost effective and facilitates operative room time management.

Abstract:Fish oil, rich in unsaturated fatty acids, is susceptible to oxidation. However, employing multiple emulsification technologies with polymers and antioxidants can effectively stabilise it, resulting in a stable fish oil powder. Summary Polyunsaturated fatty acids (PUFAs), which are abundant in fish oil, easily oxidise. Therefore, stabilisation is necessary, preferably through encapsulation and the addition of antioxidants. This research looked on multiple emulsification for PUFA‐rich fish oil by utilising a wall material (whey protein and chitosan) and an antioxidant (betalain) combination. Spray‐dried, microparticles filled with PUFA were successfully created (80% yield) and characterised. It was determined that the emulsion droplet size was 0.917 μm. Good oxidative stability was observed after 4 weeks of storage, as evidenced by a moderate (4%) drop in EPA and DHA content and a low peroxide value (PV) of 4.8 ± 0.23 meq/kg oil in microparticles. Microencapsulation of PUFA‐rich fish oil was successfully accomplished using multiple emulsion technology, as evidenced by encapsulation efficiency values of 87.73 ± 0.21% and loading efficiency values of 67 ± 0.11%. These results suggest that structurally stabilised healthful lipids could be added to foods using these innovative emulsions, which provide greater stability and versatility for a wide variety of uses.

Influence of emulsifier on lipid oxidation in spray-dried microencapsulated O/W emulsions

Abstract:Lipid oxidation limits the shelf-life of dried microencapsulated oils (DMOs), such as infant formula. However, it is poorly understood how lipid oxidation is affected by different types of emulsifiers. To improve our understanding, we prepared DMOs with different emulsifiers (whey protein isolate (WPI), pea protein isolate (PPI), and non-proteinaceous CITREM) and studied lipid oxidation in both the free and encapsulated fat. Only a small difference in oxidation rate was observed between these fat fractions for all formulations. We ascribed this to a non-discrete distribution of the fractions and the subsequent low fractionation selectivity as shown by Raman microscopy. The DMO with PPI showed hardly any oxidation during a 7-week incubation at 40 °C, whereas the DMOs with WPI and CITREM both reached significantly higher contents of oxidation products (lipid hydroperoxides, aldehydes, and epoxides). The enhanced stability of DMO-PPI could not be ascribed to the presence of phytic acid. In conclusion, we demonstrate the potential of using PPI to produce oxidatively stable DMOs.
Core-shell Nanofibers Electrospun from O/W Emulsions Stabilized by the Mixed Monolayer of Gelatin-Gum Arabic Complexes

Abstract:Core-shell nanofibers were prepared by electrospinning of corn oil-in-water emulsions stabilized by electrostatic gelatin-gum arabic complexes as a mixed monolayer. The addition of gum arabic decreased the apparent viscosity and induced a transition from a shear-thinning to a more Newtonian-like flow behavior of the emulsions, which helped form electrospun fibers with straight, bead-in-string, and spindle-like morphologies. These fibers had a high thermal decomposition stability upon heating to 250 degrees C, which was attributed to electrostatic interactions and newly formed hydrogen bonds between gelatin and gum arabic. The encapsulation efficiency of corn oil in fibrous mats at various mixing ratios was over 84%, and showed no significant changes during 7 days of storage. This work thus gives an insight into the development of electrospun nanofibers as encapsulation matrices using monolayer emulsions stabilized by electrostatic protein-polysaccharide complexes for applications in the food, pharmaceutical or personal care industries.

Abstract:W/O/W emulsions can be used to encapsulate both hydrophobic and hydrophilic bioactive as nutritional products. However, studies on protein stabilized gel-like W/O/W emulsions have rarely been reported, compared to the liquid state multiple emulsions. The purpose of this study was to investigate the effect of different oil–water ratios on the stability of W/O/W emulgels fabricated with salt-soluble proteins (SSPs) of Sipunculus nudus. The physical stability, structural characteristics, rheological properties, and encapsulation stability of vitamin C and β-carotene of double emulgels were investigated. The addition of W/O primary emulsion was determined to be 10% after the characterization of the morphology of double emulsion. The results of microstructure and rheological properties showed that the stability of W/O/W emulgels increased with the increasing concentration of SSPs. Additionally, the encapsulation efficiency of vitamin C and β-carotene were more than 87%, and 99%, respectively, and still could maintain around 50% retention of the antioxidant capacity after storage for 28 days at 4 °C. The aforementioned findings demonstrate that stable W/O/W emulgels are a viable option for active ingredients with an improvement in shelf stability and protection of functional activity.

Abstract:To evaluate oxidative stability of microencapsulated oils rich in polyunsaturated fatty acids, the change of peroxide value (POV) during storage was investigated. Microencapsulated oils were prepared by spray drying emulsions containing oils rich in docosahexaenoic acid or arachidonic acid, caseinate, modified starch and maltodextrin. Results showed that oxidative stability and initial POV of oils, packing and storage temperature all affected markedly oxidative stability of microencapsulated oils. It is necessary for obtaining stable microencapsulated oils to choose oils of high oxidative stability and low initial POV, reduce oxygen content in wrapper and lower storage temperature. Basing on our findings, six stages of the oxidation of microencapsulated oils were suggested as compared with three stages of the oxidation of oils. It is very important for the oxidative stability and shelf-life to extend the first and the forth stages, shorten the second and the third stages, and avoid the fifth and the sixth stages during oxidation of microencapsulated oils.

Abstract:High-value resources beyond oil extraction for the olive industry need to be developed due to increased olive production. Soluble dietary fibers (SDFs) and olive proteins (OPIs) are important components of olives. However, the commercial production process partially damages OPIs' emulsifying and foaming properties. Thus, the preparation of SDF-OPI complexes would help protect and even improve the emulsifying and foaming properties. The effects of pH and thermal-ultrasonic treatment on the complexation were explored, which showed that the SDF-OPI complexes prepared at pH 5 exhibited superior solubility (p < 0.05). SDF addition noticeably improved OPI thermal stability, emulsifying properties, and foaming properties. Moreover, the complexes prepared by thermal-ultrasonic treatment exhibited higher emulsion stability and lower emulsification activity than those prepared without thermal-ultrasonic treatment. In the acidic system, the electrostatic interaction was considered the main driving factor, assisted by the hydrophobic interaction. Additionally, after thermal-ultrasonic treatment, the covalent binding was observed by infrared spectroscopy. These results revealed the interaction mechanism between SDF and OPI, and the complexes significantly enhanced the functional properties of OPI. This study provides a reference for the high-value utilization of olives, thus broadening their potential uses in the food sector and beyond.

Abstract:I analyze the impact of a firm's environmental profile on its cost of equity and debt capital. Using implied cost of capital derived from analysts' earnings estimates, I find that investors demand significantly higher expected returns on stocks excluded by environmental screens (such as hazardous chemical, substantial emissions and climate change concerns) compared to firms without such environmental concerns. Lenders also charge a significantly higher interest rate on the bank loans issued to firms with these environmental concerns. I provide evidence that environmental profile of a firm is not simply proxying for an omitted component of its default risk. Further, firms with these environmental concerns have lower institutional ownership and fewer banks participate in their loan syndicate than firms without such environmental concerns. These results suggest that exclusionary socially responsible investing and environmentally sensitive lending and the consequent increase in the cost of equity and debt capital has the potential to prompt firms to internalize their environmental externalities.

Abstract:This study was to improve the physical and oxidative stability of sodium caseinate (NaCas)-stabilized oil-in-water (O/W) emulsions with arabinoxylan hydrolysates (AXHs). AXHs with different molecular sizes were prepared using xylanase treatment for 0 (AXH0), 30 (AXH30), 60 (AXH60), and 120 (AXH120) min, respectively. Compared with the emulsion without AXHs, all AXHs emulsions showed increased coalescence stability, evidenced by no change occurred in the droplet size with the pH variation from 7.0 to 5.0. Moreover, at pH 7.0 and 5.0, AXH60 and AXH120 emulsions showed no flocculation , coalescence, or creaming before and after 21 d storage. All the AXH samples showed excellent antioxidant capacities, demonstrated by the slow accumulation of lipid hydroperoxides and thiobarbituric acid reactive substances during storage. In sum, rice bran arabinoxylans hydrolyzed ≥60 min possess a potential as effective antioxidants to form physically and oxidatively stable O/W emulsions at pH above the emulsifier pI, and substances with high antioxidant activity below the emulsifier pI still need to be explored.

Abstract:Most endogenous antioxidants degrade and lose efficiency during frying. The study aimed to inhibit thermal oxidation of soybean oil by fabricating α-tocopherol loaded particles with ethyl cellulose (EC) of different viscosity grades (M9, M70 and M200) via anti-solvent method. As the viscosity of ethyl cellulose increased, particle size decreased from micrometer to nanometer. Confocal laser scanning microscope confirmed successful encapsulation and uniform distribution of α-tocopherol in the loaded particles. Differential scanning calorimetry and thermogravimetric analysis demonstrated that loaded particles protected α-tocopherol from oxidation and degradation. Meanwhile, Fourier transformed infrared demonstrated that α-tocopherol interacted with EC through hydrogen bond and hydrophobic effects. With excellent dispersibility in soybean oil, loaded particles effectively inhibited thermal oxidation of soybean oil and loaded M200 nanoparticles was the most effective, which performed far better than tert-butylhydroquinone (TBHQ). Therefore, the nanoparticles offered a promising way to enhance oxidative stability of oils during thermal processing.
