Abstract:Postharvest strawberries (Fragaria x ananassa Duch.) were coated either by the layer-by-layer (LBL) electrostatic deposition, based on chitosan and carboxymethyl cellulose (CMC), or coated by 1% chitosan. Results suggested that LBL edible coating was significantly effective at inhibiting the loss of fruit firmness and aroma volatiles of strawberry, with little effect on the total soluble solids and total acidity contents. Through an untargeted metabolomic analysis, we found that the LBL application significantly reduced the primary metabolite contents involved in carbohydrate, fatty acids and amino acids metabolism, as well as the secondary metabolite contents involved in terpenoid, carotenoid, phenylpropanoid and flavonoid metabolism after storage. Our results indicated that the LBL edible coating could be potential to maintain strawberry quality with lower metabolites contents after eight days of storage.
Antimicrobial Edible Coatings and Films from Micro-Emulsions and Their Food Applications.

Abstract:This study focused on the use of antimicrobial edible coatings and films from micro-emulsions to reduce populations of foodborne pathogens in foods. Corn-Bio-fiber gum (C-BFG) was used as an emulsifier with chitosan. Allyl isothiocyanate (AIT) and lauric arginate ester (LAE) served as antimicrobials. Micro-emulsions were obtained from a solution consisting of 1% chitosan, 0.5% C-BFG, and 1-4% AIT or LAE which was subject to high pressure homogenization (HPH) processing at 138 MPa for 3 cycles. Coatings and films produced from the micro-emulsions had micro-pores with sizes ranging from 100 to 300 nm and micro-channels that hold antimicrobials effectively and facilitate the release of antimicrobials from the center to the surface of the films or coatings, thus enhancing their antimicrobial efficacy. The coatings and films with 1% AIT reduced populations of Listeria innocua by over 5, 2, and 3 log CFU in culture medium (Tryptic soy broth, TSB), ready-to-eat meat, and strawberries, respectively. The coatings and films with 1% LAE reduced populations of Escherichia coli O157:H7 and Salmonella spp. by over 5 and 2 log CFU in TSB and strawberries, respectively. This study provides an innovative approach for the development of effective antimicrobial materials to reduce food borne pathogenic contaminants on ready-to-eat meat, strawberries, or other food.
Effects of Zein-Lecithin-EGCG Nanoparticle Coatings on Postharvest Quality and Shelf Life of Loquat (eriobotrya Japonica)

Abstract:The loquat (Eriobotrya japonica) has high nutritional and economic values. However, loquat easily rots at room temperature, resulting in the loss of commodity value. In this study, zein, lecithin, and (-)-epigallocatechin gallate (EGCG) were used to prepare Zein-Lecithin-EGCG (Z-L/E) nanoparticles, and the effects of these nanoparticles on loquat quality were studied. EGCG addition affected the zeta potential values of the nanoparticles, which increased from -11.80 mV to -23.34 mV. The Fourier transform infrared (FTIR) results showed that electrostatic interactions and hydrogen bonding formed among lecithin, zein, and EGCG. The Z-L/E nanoparticles showed great antioxidant activity with the DPPH radical scavenging rate of 84.76% and the ABTS radical scavenging rate of 80.95% for Z-L/E4:1 sample, and had good antibacterial ability by decreasing the growth rate of E. coli. The coating treatment with Z-L/E nanoparticles for loquats reduced the weight loss and the decay rate by 13.3% and 1.4%, respectively, during the storage at 25 degrees C for 22 days, and the decrease of titratable acidity (TA) and vitamin C (VC) content in loquats were also effectively delayed. The coating treatment with Z-L/E nanoparticles for loquats could significantly prolong the storage life of fruits and maintain the quality of fruits.

Abstract:In this study, we successfully prepared active films and coatings based on carboxymethyl cellulose (CMC) either alone or added oregano (OEO) and rosemary essential oils (REO) (0.5 and 1%) to improve the post-harvest quality of fresh strawberries over 15 days of storage at 4 °C. The mechanical, water barrier and optical properties of films were tested. Also, the physicochemical, sensorial and microbial properties of strawberries coated with different film forming solutions (FFS) were studied during storage time. The films were less rigid and more stretchable after the addition of both EOs into the film matrix. The water vapor permeability (WVP), solubility, and brightness of films were decreased after the incorporation of both EOs. Coated strawberries with CMC-based coatings embedded OEO and REO indicated lower weight loss, better preservation of firmness, sugar content, total soluble solids (TSS), and total phenolic compounds. Moreover, a complete inhibition of microbial growth was observed in coated strawberries containing OEO, and REO. The sensory evaluation showed a high acceptance of coated strawberries compared to the control. As a result, these coatings can effectively improve the quality of strawberries during storage and are a good choice for coating fruits due to their transparent and shiny appearance with superior antimicrobial properties.

Abstract:This study investigated the effects of bio-nanocomposite coatings developed using arrowroot starch (AA), cellulose nanocrystals (CNC), carnauba wax nanoemulsion (CWN), and Cymbopogon martinii and Mentha spicata essential oils (CEO and MEO, respectively) on the physicochemical, microbiological, bioactive, antioxidant, and aromatic characteristics of strawberries cv. 'Oso Grande' in refrigerated storage for 12 days. The coatings improved the shelf life and stability of strawberries, minimizing their weight loss (2.6-3.9 %), as well as changes in color and texture (except for those coated with CEO), titratable acidity, pH, soluble solids, anthocyanins, phenolic compounds, ascorbic acid content, and antioxidant activity compared with uncoated control strawberries. The bio-nanocomposite coatings containing MEO and CEO also exhibited antimicrobial activity, reduced visible fungal deterioration (40-60 %), and reduced microbial load (3.59-4.03 log CFU g-1 for mesophilic aerobic bacteria and 4.45-5.22 log CFU g-1 for fungi and yeast) during storage. They also significantly reduced the severity of decay caused by inoculation with Botrytis cinerea or Rhizopus stolonifer. The coatings altered the volatile profile of the fruits during storage, decreasing aldehyde and alcohol concentrations and increasing ester concentrations. Thus, these bio-nanocomposite coatings, especially those containing MEO, can be used as antimicrobial coating materials to preserve the post-harvest quality of fresh strawberries.

Abstract:The effect of gelatin-based edible coating incorporated with Mentha pulegium essential oil (MEO) on physicochemical (pH, titratable acidity (TA), weight loss, total soluble solids (TSS), and total phenolic content (TPC)), microbiological (total aerobic mesophilic flora (TAMF) and yeasts and moulds (YM)), and sensorial (color and firmness) characteristics of strawberries stored under refrigeration was studied. Strawberries were coated with gelatin alone (4%) and/or gelatin combined with two concentrations (0.5 and 1%) of MEO and stored at 4°C for 13 days. Gelatin coating and MEO combination significantly inhibited total flora and moulds and yeasts with comparison to control (uncoated strawberries) and had better hygienic quality at the end of storage. The effect was MEO concentration dependent. Our results also showed that the bioactive coating used in this investigation slowed down changes in pH, TA, weight loss, TSS, firmness, TPC, and color of strawberries. Gelatin coating incorporated with MEO at 1% protected at least 60% of strawberries from deterioration after 13 days of storage and could be used as bioactive packaging to prolong the shelf life and an alternative of pesticides use.

Abstract:Films and coatings manufactured with bio-based renewable materials, such as biopolymers and essential oils, could be a sustainable and eco-friendly alternative for protecting and preserving agricultural products. In this work, we developed films and coatings from pectin and chitosan to protect strawberries (Fragaria x ananassa Duch.) from spoilage and microbial contamination. We developed three coatings containing equal amounts of glycerol and Sicilian lemon essential oil (LEO) nanoemulsion. We identified seventeen chemicals from LEO by GC-MS chromatogram, including d-limonene, α-Pinene, β-Pinene, and γ-Terpinene. The pectin and chitosan coatings were further characterized using different physicochemical, mechanical, and biological methods. The films demonstrated satisfactory results in strength and elongation at the perforation as fruit packaging. In addition, the coatings did not influence the weight and firmness of the strawberry pulps. We observed that 100 % essential oil was released in 1440 min resulting from the erosion process. Also, the oil preserved the chemical stability of the films. Antioxidant activity (AA), measured by Electron Paramagnetic Resonance (EPR), showed that the coatings loaded with 2 % LEO nanoemulsion (PC + oil) showed that almost 50 % of AA from LEO nanoemulsion was preserved. The chitosan and the pectin-chitosan coatings (PC + oil) inhibited filamentous fungi and yeast contaminations in strawberries for at least 14 days, showing a relationship between the AA and antimicrobial results.
Preparation and characterization of a novel green cinnamon essential oil nanoemulsion for the enhancement of safety and shelf-life of strawberries

Abstract:This study aimed to optimize a novel green CEO nanoemulsions (CEO NEs) and explore its physicochemical properties and the effect on the shelf-life of strawberries during storage at environmental temperature (20-25 °C). We used CEO as oil phase and tea saponin (TS) as a natural surfactant to formulate the novel green CEO NEs, and its potential as an antimicrobial agent was also investigated. The results showed that CEO NEs had a droplet size about 170 nm with uniform distribution and regularly spherical. These CEO NEs exhibited excellent storage stability, thermal stability, pH stability and centrifugal stability. The antimicrobial test indicated that the minimal inhibitory concentration and the minimal bactericidal (fungicidal) concentration of CEO NEs against Escherichia coli, Botrytis cinerea and Aspergillus flavus were 17.81 μg/mL and 35.62 μg/mL, 35.62 μg/mL and 71.25 μg/mL, 2.23 μg/mL and 4.45 μg/mL, respectively, which were significantly lower than those of pure CEO (333.75 μg/mL and 667.5 μg/mL, 667.5 μg/mL and 1335 μg/mL, 41.72 μg/mL and 83.44 μg/mL). More interestingly, after soaking strawberries in CEO NEs for 2 min, the shelf-life of strawberries can be extended to 7 days at environmental temperature, and a lower rate of weight loss and mildew were showed in the group of CEO NEs than other control groups, especially the strawberries in ultrapure water group went bad first, obviously shranked, and contaminated by molds after 3 days. The above results indicate that CEO NEs prepared in this study has great potential as a new green antimicrobial agent in fruit preservation.
Edible chitosan-based Pickering emulsion coatings: Preparation, characteristics, and application in strawberry preservation

Abstract:The long-term application of plant essential oils in food preservation coatings is limited by their poor water solubility and high volatility, despite their recognized synergistic antimicrobial effects in postharvest fruit preservation. To overcome these limitations, a Pickering emulsion loaded with thyme essential oil (TEO) was developed by utilizing hydrogen bonding and electrostatic interactions to induce cross-linking of chitosan particles. This novel emulsion was subsequently applied in the postharvest storage of strawberries. The shear-thinning behavior (flow index <1) and elastic gel-like characteristics of the emulsion made it highly suitable for spray application. Regarding TEO release, the headspace concentration of TEO increased from 0.21 g/L for pure TEO to 1.86 g/L after two instances of gas release due to the stabilizing effect of the chitosan particles at the oil-water interface. Notably, no phase separation was observed during the 10-day storage of the emulsion. Consequently, the emulsion was successfully employed for the postharvest storage of strawberries, effectively preventing undesirable phenomena such as weight loss, a decrease in firmness, an increase in pH, and microbial growth. In conclusion, the developed Pickering emulsion coating exhibits significant potential for fruit preservation applications, particularly for extending the shelf life of strawberries.

Abstract:Strawberries (Fragaria xannanasa) are susceptible to mechanical, physical, and physiological damage, which increases their incidence of rot during storage. Therefore, a method of protection is necessary in order to minimize quality losses. One way to achieve this is by applying polymer coatings. In this study, multisystem coatings were created based on polymer nanocapsules loaded with Lippia graveolens essential oil, and it was found to have excellent optical, mechanical, and water vapor barrier properties compared to the control (coating formed with alginate and with nanoparticles without the essential oil). As for the strawberries coated with the multisystem formed from the polymer nanocapsules loaded with the essential oil of Lippia graveolens, these did not present microbial growth and only had a loss of firmness of 17.02% after 10 days of storage compared to their initial value. This study demonstrated that the multisystem coating formed from the polymer nanocapsules loaded with the essential oil of Lippia graveolens could be a viable alternative to preserve horticultural products for longer storage periods.

Emulsion-based edible chitosan film containing propolis extract to extend the shelf life of strawberries

Abstract:In this study, propolis was first loaded into a conventional oil-in-water emulsion, which was combined with a chitosan film-forming solution to produce propolis emulsion-loaded film (PEF). Strawberries inoculated with Botrytis cinerea coated with PEF and blank emulsion-loaded films (BEF) were stored for 14 days at 4 °C. Compared to BEF, PEF showed superior mechanical and oxygen barrier properties, as well as antioxidant activities, but higher moisture permeability. PEF showed less oil agglomeration on the film surface after drying, as demonstrated by scanning electron microscopy (SEM) analysis. Compared to uncoated strawberries, coatings did not have a significant effect on weight loss or firmness during storage. In contrast, coated strawberries showed elevated total phenolics, anthocyanins, and ascorbic acid retention; however, PEF-coating yielded higher values. Moreover, the PEF coating resulted in a significantly lower reduction of organic acid and total soluble solids. Mold growth was visible in both uncoated and BEF-coated strawberries after 7 days of storage, while PEF-coated fruits showed no visible mold until the end of storage. Starting from day 4, PEF-coated fruits showed lower mold counts (~2 log CFU/g) than other samples. Therefore, the PEF prepared in this study has application potential for the preservation of fresh fruits.

Abstract:Adding essential oils in an edible coating could be an alternative for the food industry to control foodborne pathogens. In 2014, EFSA published a report highlighting the risk associated with Salmonella spp. and Norovirus in fresh and frozen berries. This study aimed to evaluate the efficacy of an edible coating (RP-7) with carvacrol and citral on reducing the population of Salmonella enterica, Escherichia coli O157:H7, Listeria monocytogenes, and murine Norovirus (MNV-1) in frozen strawberries and blueberries. Before evaluating the efficacy, the best method for applying the coating on fruit was studied. The immersion method was selected, with an optimal drying time of 45 min. After this, the berries were frozen and stored for one, two, three, four, and eight weeks at -18 °C. In strawberries, all bacteria were reduced to below 0.7 log cfu/strawberry in the eighth week, and the MNV-1 infectivity showed a reduction of nearly 2 logarithmic units. In blueberries, S. enterica and E. coli O157:H7 were reduced to 0.8 log cfu/blueberries within a week, and MNV-1 achieved a reduction of 0.8 logarithmic units at the end of the assay. The application of RP-7 affected the studied microorganisms in frozen strawberries and blueberries.

Abstract:Fresh fruits and vegetables are perishable commodities requiring technologies to extend their postharvest shelf life. Edible coatings have been used as a strategy to preserve fresh fruits and vegetables in addition to cold storage and/or controlled atmosphere. In recent years, nanotechnology has emerged as a new strategy for improving coating properties. Coatings based on plant-source nanoemulsions in general have a better water barrier, and better mechanical, optical, and microstructural properties in comparison with coatings based on conventional emulsions. When antimicrobial and antioxidant compounds are incorporated into the coatings, nanocoatings enable the gradual and controlled release of those compounds over the food storage period better than conventional emulsions, hence increasing their bioactivity, extending shelf life, and improving nutritional produce quality. The main goal of this review is to update the available information on the use of nanoemulsions as coatings for preserving fresh fruits and vegetables, pointing to a prospective view and future applications.

Zein Multilayer Electrospun Nanofibers Contain Essential Oil: Release Kinetic, Functional Effectiveness, and Application to Fruit Preservation

Abstract:In this study, sequential electrospinning was employed to produce a multilayer film consisting of zein nanofibers (Z) and Zataria multiflora essential oil (ZMEO) with different layers. The layers include: Z (without ZMEO), Z1 (one layer of Z + ZMEO), Z3 (three layers of Z + ZMEO), and Z5 (five layers of Z + ZMEO). Then, the effect of this antimicrobial packaging was investigated in relation to increasing the shelf life of strawberries at 4 °C for 12 days. The scanning electron microscopy (SEM) images of the fibers demonstrated a uniform and smooth structure without any beads. The use of Fourier transform infrared (FTIR) and Differential scanning calorimetry (DSC) showed that ZMEO was physically encapsulated into multilayer Z, resulting in an enhancement in thermal stability. The multilayer film showed a sustained release pattern of the encapsulated ZMEO for Z3, lasting for 90 h, and Z5, lasting for 180 h. This was in contrast to the rapid release within 50 h observed with Z film. The release kinetics for Z5 showed a good correlation with both the Higuchi and Korsmeyer–Peppas models, while for Z1 and Z3 films, Fickian diffusion was identified as the underlying mechanism. The findings of this study indicated that the multilayer film released ZMEO through a combination of diffusion and polymeric erosion. During a 12-day period of cold storage, strawberries that were treated with Z5 showed significant preservation of their anthocyanin (32.99%), antioxidant activity (25.04%), weight loss (24.46%), titratable acidity (11.47%), firmness (29.67%), and color (10.17%) compared to the control sample. The findings indicated that the sequential electrospinning technique used to create the multilayer nanofibrous film could be used in various fields, such as bioactive encapsulation, controlled release, antimicrobial packaging, and food preservation.

Antibacterial activities of R-(+)-Limonene emulsion stabilized by Ulva fasciata polysaccharide for fruit preservation

Abstract:It was previously found that R-(+)-Limonene emulsion could be stabilized by Ulva fasciata polysaccharide. In the present study, emulsions of R-(+)-Limonene were developed for coating of strawberries to improve the shelf life and microbiological safety. Edible coatings with at least 0.15% w/w of R-(+)-Limonene improved the microbial stability of the strawberries, resulted effective in the decontamination of external pathogens such as Escherichia coli, Bacillus subtilis and Staphylococcus aureus. Changes in weight loss, total soluble solid (TSS), pH, total phenolic, ascorbic acid, textural properties and surface color of strawberries during storage were evaluated. R-(+)-Limonene emulsions were effective for decreasing water loss of all the fruit samples tested. The decrease in TSS values was higher in the control strawberries. Initial decreases followed by increases of pH during storage of strawberries. The amount of total phenols detected in control fruit sharply increased during the first 6 days then remained steady, whereas the total soluble phenols content of treated strawberries gradually increased during storage. Strawberries coated with emulsion had higher L* and a* values as compared to control fruits. The R-(+)-Limonene coatings have demonstrated the potential to inhibit foodborne pathogen contamination of strawberries, and prolong their shelf life.

Abstract:This study explores the transformative impact of the innovative surface nano zinc oxide coatings on grapes, emphasizing their influence on postharvest attributes, phytochemical composition, and fungal population. Distinct coating formulations, including distilled water (Control), chitosan (C), chitosan-nano zinc oxide (C-NZO), and chitosan-nano zinc oxide with the addition of essential oils (C-NZO-EO), were applied to fresh grapes. Results unveiled that the C-NZO-EO treatment positively impacted potassium, calcium, and magnesium levels. Control samples exhibited the highest acidity (3.8), while C-NZO-EO demonstrated superior visual rachis scores (3.41). Anthocyanidin analysis revealed elevated values especially for C-NZO-EO-treated grapes. Fungal populations were significantly reduced in samples treated with C-NZO-EO to reach (3.44 CFU/g). In conclusion, coating with C-NZO-EO emerged as a highly effective strategy for grape preservation, offering enhanced nutritional quality and fungal resistance.

Abstract:This study aimed to enhance the weak antibacterial activity of silk fibroin (SF) by creating a composite edible coating film. The film was composed of chitosan (CS), SF, and a 3% (v/v) cinnamon essential oil microemulsion (CEOM), which showed excellent inhibition rates of over 99% against two bacteria and four fungi. The resulting film had a transparency of 84.6% and a contact angle of 61.85° on hydrophobic surfaces. In addition, it exhibited a low water vapor permeability of 1.09 × 10−12 g·cm−1·s−1·Pa−1. These properties make it ideal for use in food coating applications. To assess the preservation capabilities of the composite films, strawberries were coated with different films: CS, SF, SF-CEOM, and SF-CS-CEOM. The results showed that the SF-CS-CEOM film had a similar effect to the SF-CEOM film in suppressing the deterioration of strawberries, when compared to the untreated group, and the shelf life of the strawberries was extended from 2 days to 8 days. The SF-CS-CEOM film inhibits oxidation and metabolism by reducing gas exchange, thereby protecting the integrity of cell membranes, maintaining firmness, and reducing weight loss, while delaying the onset of spoilage by inhibiting microbial growth.
