Abstract:In this study, halochromic smart films were produced, characterized, and applied to monitor the freshness of hairtail and shrimp in real-time. Red cabbage anthocyanins (RCAs) solution illustrated significant color variations (red-pink-blue-green) in different pH environments. RCAs were successfully immobilized into chitosan (CS)/oxidized-chitin nanocrystals (OCN) composites through hydrogen bonding, and cohesive film structures were formed. When the proper concentration of RCAs was incorporated into the composites, improved water vapor permeability (WVP), oxygen permeability (OP), mechanical, UV-blocking, and antioxidant properties were observed. Moreover, the smart films exhibited distinguishable changes of color to ammonia vapor and acidic/alkaline environment within short time intervals, which were easy to discern by naked eyes. Finally, the smart films were applied to monitor the freshness of hairtail (Trichiurus lepturus) and shrimp (Penaeus vannamei). The film color changed significantly during storage time, and three stages of product freshness (fresh, medium fresh, and spoiled) were successfully differentiated. Strong correlations among three freshness indicators and two colorimetric parameters were also identified and analyzed. Overall, the smart system assembled from non-toxic and biodegradable components could contribute to monitoring the freshness of seafood, like hairtail and shrimp, in real-time.
Deep learning detection of shrimp freshness via smartphone pictures

Abstract:Shrimp is a type of aquatic product that is easy to deteriorate and the freshness has an essential influence on both its taste and nutritional value. Scientists have developed various approaches to measure shrimp freshness; however, the existing methods are usually destructive, complicated and costly. To develop a fast, non-destructive and low-cost alternative, we utilized deep learning models to identify the freshness of shrimp based on photos taken by smartphones. The models were trained on photographs of 306 shrimp along with their total volatile basic nitrogen values as freshness indicators. Our models achieved an area under receiver operating characteristic above 0.90 for freshness classification and root mean square error of prediction no more than 4.67 mg/100 g on fresh samples during the independent tests. Furthermore, the model performance was evaluated on datasets of shrimp photographed for 7 consecutive days and shrimp placed on different backgrounds and light settings. Our study suggested deep learning as an accurate, easy and low-cost method to detect shrimp freshness, which may have broader applications in food safety.

Abstract:Refrigerated waterless transport at 12 °C of live shrimp (Litopenaeus vannamei) causes flesh quality deterioration, and the underlying mechanism remains unknown. Herein, proteomics and bioinformatics analyses were used to elucidate the molecular mechanism of flesh quality changes. The result showed that 33 and 44 of the differentially abundant proteins (DAPs) were, respectively, identified in the acute cold (AC) group and the combined stress of acute cold and waterless duration (AC+WD) group, which were mostly involved in the metabolism processes and cellular structure of animal tissues, and notably enriched in biological pathways such as lysosome, glycolysis/gluconeogenesis, and focal adhesion. Furthermore, the changes in color and texture properties were closely associated with tubulin, gelsolin, laminin, trypsin-1, dipeptidyl peptidase, triosephosphate isomerase, and aldehyde dehydrogenase. Therefore, these DAPs could be used as potential biomarkers to monitor the deterioration of shrimp flesh quality during refrigerated waterless transportation.
Spatially Offset Raman Spectroscopy Combined with Attention-Based LSTM for Freshness Evaluation of Shrimp

Abstract:Optical detection of the freshness of intact in-shell shrimps is a well-known difficult task due to shell occlusion and its signal interference. The spatially offset Raman spectroscopy (SORS) is a workable technical solution for identifying and extracting subsurface shrimp meat information by collecting Raman scattering images at different distances from the offset laser incidence point. However, the SORS technology still suffers from physical information loss, difficulties in determining the optimum offset distance, and human operational errors. Thus, this paper presents a shrimp freshness detection method using spatially offset Raman spectroscopy combined with a targeted attention-based long short-term memory network (attention-based LSTM). The proposed attention-based LSTM model uses the LSTM module to extract physical and chemical composition information of tissue, weight the output of each module by an attention mechanism, and come together as a fully connected (FC) module for feature fusion and storage dates prediction. Modeling predictions by collecting Raman scattering images of 100 shrimps within 7 days. The R2, RMSE, and RPD of the attention-based LSTM model achieved 0.93, 0.48, and 4.06, respectively, which is superior to the conventional machine learning algorithm with manual selection of the optimal spatially offset distance. This method of automatically extracting information from SORS data by Attention-based LSTM eliminates human error and enables fast and non-destructive quality inspection of in-shell shrimp.

Abstract:Physiological and environmental fluctuations in the oyster cold chain can lead to quality deterioration, highlighting the importance of monitoring and evaluating oyster freshness. In this study, an electronic nose was developed using ten partially selective metal oxide-based gas sensors for rapid freshness assessment. Simultaneous analyses, including GC-MS, TVBN, microorganism, texture, and sensory evaluations, were conducted to assess the quality status of oysters. Real-time electronic nose measurements were taken at various storage temperatures (4 °C, 12 °C, 20 °C, 28 °C) to thoroughly investigate quality changes under different storage conditions. Principal component analysis was utilized to reduce the 10-dimensional vectors to 3-dimensional vectors, enabling the clustering of samples into fresh, sub-fresh, and decayed categories. A GA-BP neural network model based on these three classes achieved a test data accuracy rate exceeding 93%. Expert input was solicited for performance analysis and optimization suggestions enhanced the efficiency and applicability of the established prediction system. The results demonstrate that combining an electronic nose with quality indices is an effective approach for diagnosing oyster spoilage and mitigating quality and safety risks in the oyster industry.

Abstract:This study was aimed to evaluate the freshness and quality of cultured shrimp (litopenaeus vannamei) during 9 days of storage on ice (i.e., at a temperature of 0°C) using image processing technique. A lighting chamber was used to provide uniform conditions for illumination. The shrimp freshness was evaluated using computer vision technique through color changes of head, legs and tail of the harvested shrimps. Thirty-six color parameters of the images such as mean and variance of red (r), green (g), blue (b), lightness hue (h), saturation (s), value (v), luma information (i and y), the luma component (y), chroma component (cr), lightness (L*), redness (a*), yellowness (b*), chroma (c), and hue (h) were analyzed. Some parameters, such as b*, from side pictures and r mean, b variance, v mean, y mean, b* mean and (L*) mean from top pictures changed with a rather similar trend during the storage period. Different computational expert approaches such as linear discriminant analysis, quadratic discriminant analysis, K nearest neighbors, and discriminant partial least squares regression were examined for shrimp freshness classification. For this, all the variables and the subsets of variables were selected by means of stepwise linear discriminant analysis, stepwise orthogonalization, classification and regression trees. The shrimp freshness was characterized with a high classification accuracy of 90%. Freshness evaluation using image processing is proposed as a potential technique to the food industry.

Abstract:Affected by micro-organisms and endogenous enzymes, fish are highly perishable during storage, processing and transportation. Efficient evaluation of fish freshness to ensure consumer safety and reduce raw material losses has received an increasing amount of attention. Several of the conventional freshness assessment techniques have plenty of shortcomings, such as being destructive, time-consuming and laborious. Recently, various sensors and spectroscopic techniques have shown great potential due to rapid analysis, low sample preparation and cost-effectiveness, and some methods are especially non-destructive and suitable for online or large-scale operations. Non-destructive techniques typically respond to characteristic substances produced by fish during spoilage without destroying the sample. In this review, we summarize, in detail, the principles and applications of emerging approaches for assessing fish freshness including visual indicators derived from intelligent packaging, active sensors, nuclear magnetic resonance (NMR) and optical spectroscopic techniques. Recent developments in emerging technologies have demonstrated their advantages in detecting fish freshness, but some challenges remain in popularization, optimizing sensor selectivity and sensitivity, and the development of algorithms and chemometrics in spectroscopic techniques.

Abstract:The safety of aquatic products is of increasing concern. To achieve efficient and accurate freshness identification of red shrimp, a deep learning-based freshness assessment method for chilled red shrimp is proposed. Improve the network structure. The lightweight module is introduced to give higher weight to the target feature to improve the accuracy of target recognition, and the optimization algorithm is changed to accelerate convergence. The Grad-CAM method was used to visualize the freshness grade results to enhance the confidence of model recognition. The amount of ShrimpNet model parameters is 24.03 MB. The memory is only 0.41 MB more than the Resnet50 model, and the model recognition accuracy is significantly improved to 98.29%. The visualization results show that the abdominal features of shrimp are the most effective information for freshness grading. Identify freshness levels around the clock in complex environments.

Abstract:This study established long short-term memory (LSTM), convolution neural network long short-term memory (CNN_LSTM), and radial basis function neural network (RBFNN) based on optimized excitation-emission matrix (EEM) from fish eye fluid to predict freshness changes of rainbow trout under nonisothermal storage conditions. The method of residual analysis, core consistency diagnostics, and split-half analysis of parallel factor analysis was used to optimize EEM data, and two characteristic components were extracted. LSTM, CNN_LSTM, and RBFNN models based on characteristic components of EEM used to predict the freshness indices. The results demonstrated the relative errors of RBFNN models with an R2 above 0.96 and relative errors less than 10% for K-value, total viable counts, and volatile base nitrogen, which were better than those of LSTM and CNN_LSTM models. This study presents a novel approach for predicting the freshness of rainbow trout under nonisothermal storage conditions.

Abstract:Prawns are highly popular with consumers but present many technical difficulties for the evaluation of their internal quality when intact (in-shell prawns). This study proposed a nondestructive method to assess the internal quality of intact prawns (Fenneropenaeus chinensis) using spatially offset Raman spectroscopy (SORS) technique combined with data modeling analysis. This technique holds promise due to the capability of SORS to obtain chemical information nondestructively from below the surface of a sample material. Raman scattering image data for 100 fresh prawns (approximately 15 g each) were collected using a line-scan Raman imaging system over the course of seven days with 24 h measurement intervals. Measurement anomalies due to physical prawn irregularities were eliminated using a peak identification method. Twenty feature bands selected by Random Forest (RF) method were input to Partial Least Squares Regression (PLSR), Support Vector Regression (SVR), and Extremely Randomized Tree (ET) models to predict the freshness of prawns during the storage time. The prediction model based on SORS enhanced data and combining RF feature band selection with SVR demonstrated the best performance, with RMSEP, R2, and RPD values of 0.71, 0.88, and 2.63, respectively. This rapid and nondestructive method for quality evaluation may be feasible as a practical means of assessing internal quality of materials that demonstrate surface interference, such as in-shell prawns.

Abstract:Hot air drying is the most common processing method to extend shrimp's shelf life. Real-time monitoring of moisture content, color, and texture during the drying process is important to ensure product quality. In this study, hyperspectral imaging technology was employed to acquire images of 104 shrimp samples at different drying levels. The water distribution and migration were monitored by low field magnetic resonance and the correlation between water distribution and other quality indicators were determined by Pearson correlation analysis. Then, spectra were extracted and competitive adaptive reweighting sampling was used to optimize characteristic variables. The grey-scale co-occurrence matrix and color moments were used to extract the textural and color information from the images. Subsequently, partial least squares regression and least squares support vector machine (LSSVM) models were established based on full-band spectra, characteristic spectra, image information, and fused information. For moisture, the LSSVM model based on full-band spectra performed the best, with residual predictive deviation (RPD) of 2.814. For L*, a*, b*, hardness, and elasticity, the optimal models were established by LSSVM based on fused information, with RPD of 3.292, 2.753, 3.211, 2.807, and 2.842. The study provided an in situ and real-time alternative to monitor quality changes of dried shrimps.

Abstract:Salmon is a highly perishable food due to temperature, pH, odor, and texture changes during cold storage. Intelligent monitoring and spoilage rapid detection are effective approaches to improve freshness. The aim of this work was an evaluation of IoT-enabled monitoring system (IoTMS) and electronic nose spoilage detection for quality parameters changes and freshness under cold storage conditions. The salmon samples were analyzed and divided into three groups in an incubator set at 0 °C, 4 °C, and 6 °C. The quality parameters, i.e., texture, color, sensory, and pH changes, were measured and evaluated at different temperatures after 0, 3, 6, 9, 12, and 14 days of cold storage. The principal component analysis (PCA) algorithm can be used to cluster electronic nose information. Furthermore, a Convolutional Neural Networks and Support Vector Machine (CNN-SVM) based algorithm is used to cluster the freshness level of salmon samples stored in a specific storage condition. In the tested samples, the results show that the training dataset of freshness is about 95.6%, and the accuracy rate of the test dataset is 93.8%. For the training dataset of corruption, the accuracy rate is about 91.4%, and the accuracy rate of the test dataset is 90.5%. The overall accuracy rate is more than 90%. This work could help to reduce quality loss during salmon cold storage.

Abstract:Freshness is one of the most significant parameters of fish quality. This study aims to develop a new rapid non-destructive technique to assess fish freshness. Two different technologies including computer vision and near-infrared spectroscopy (NIR spectroscopy) were employed in the detection. Subsequently a new data fusion detection method was developed to improve the accuracy of classification by combining the inspection data of computer vision with that of NIR spectroscopy. Parabramis pekinensis bought from a local market were taken as experimental samples. The total volatile basic nitrogen (TVB-N) content of the samples was measured as an indicator of fish freshness using conventional methods. Computer vision and NIR spectroscopy were used to acquire image information for organoleptic changes and spectrum information for structural changes in the fish samples during storage, respectively. Principal component analysis (PCA) was used for data compression to reduce the dimensionality of the data set while essential information was retained, which made the analysis easier than it would have been for the original huge data set. A back propagation artificial neural network (BP-ANN) was used to build a prediction model by obtaining a non-linear relation between the fish freshness and the body changes during storage. The results showed that computer vision technology outperformed NIR spectroscopy techniques, for the BP-ANN model reached a 94.17% success rate in the training set and 90.00% in the prediction set using the computer vision technology, while the model of NIR spectroscopy reached 86.67% and 80.00% in the training set and prediction set respectively. This showed improved fish freshness classification using computer vision technology rather than the NIR spectroscopic method. Therefore, the data from the two techniques were considered simultaneously, using the classification model BP-ANN, which achieves the optimum performance of 96.67% and 93.33% corresponding to the training set and prediction set respectively using data fusion. Therefore, this demonstrated for the first time the feasibility and superiority of data fusion by integrating computer vision and NIR spectroscopy in the classification of fish freshness.

Enhanced batch sorting and rapid sensory analysis of Mackerel products using YOLOv5s algorithm and CBAM: Validation through TPA, colorimeter, and PLSR analysis

Abstract:This study employed the YOLOv5s algorithm to establish a rapid quality identification model for Pacific chub mackerel (S. japonicus) and Spanish mackerel (S. niphonius). Data augmentation was conducted using the copy-paste augmentation within the YOLOv5s network. Furthermore, a small object detection layer was integrated into the network structure's neck, while the convolutional block attention module (CBAM) was incorporated into the convolutional module to optimize the model. The model's accuracy was assessed through sensory evaluation, texture profile analysis, and colorimeter analysis. The findings indicated that the enhanced model achieved a mAP@0.5 score of 0.966, surpassing the original version's score of 0.953. Moreover, the improved model's params was only 7.848 M, and an average detection time of 115 ms/image (image resolution 2400 × 3200). Furthermore, sensory and physicochemical indicators are reliably distinguished between qualified and unqualified samples. The PLSR model exhibited R2X, R2Y, and Q2 values of 0.977, 0.956, and 0.663, respectively.
An Intelligent Method for Predicting Pacific Oyster (Crassostrea gigas) Freshness Using Deep Learning Fused with Malondialdehyde and Total Sulfhydryl Groups Information

Abstract:To achieve a non-destructive and rapid detection of oyster freshness, an intelligent method using deep learning fused with malondialdehyde (MDA) and total sulfhydryl groups (SH) information was proposed. In this study, an "MDA-SH-storage days" polynomial fitting model and oyster meat image dataset were first built. AleNet-MDA and AlxNet-SH classification models were then constructed to automatically identify and classify four levels of oyster meat images with overall accuracies of 92.72% and 94.06%, respectively. Next, the outputs of the two models were used as the inputs to "MDA-SH-storage days" model, which ultimately succeeded in predicting the corresponding MDA content, SH content and storage day for an oyster image within 0.03 ms. Furthermore, the interpretability of the two models for oyster meat image were also investigated by feature visualization and strongest activations techniques. Thus, this study brings new thoughts on oyster freshness prediction from the perspective of computer vision and artificial intelligence.
Deep Learning Used with a Colorimetric Sensor Array to Detect Indole for Nondestructive Monitoring of Shrimp Freshness

Abstract:Intelligent colorimetric freshness indicator is a low-cost way to intuitively monitor the freshness of fresh food. A colorimetric strip sensor array was prepared by p-dimethylaminocinnamaldehyde (PDL)-doped poly(vinyl alcohol) (PVA) and chitosan (Chit) for the quantitative analysis of indole, which is an indicator of shrimp freshness. As a result of indole simulation, the array strip turned from faint yellow to pink or mulberry color with the increasing indole concentration, like a progress bar. The indicator film exhibited excellent permeability, mechanical and thermal stability, and color responsiveness to indole, which was attributed to the interactions between PDL and Chit/PVA. Furthermore, the colorimetric strip sensor array provided a good relationship between the indole concentration and the color intensity within a range of 50-350 ppb. The pathogens and spoilage bacteria of shrimp possessed the ability to produce indole, which caused the color changes of the strip sensor array. In the shrimp freshness monitoring experiment, the color-changing progress of the strip sensor array was in agreement with the simulation and could distinguish the shrimp freshness levels. The image classification system based on deep learning were developed, the accuracies of four DCNN algorithms are above 90%, with VGG16 achieving the highest accuracy at 97.89%. Consequently, a "progress bar" strip sensor array has the potential to realize nondestructive, more precise, and commercially available food freshness monitoring using simple visual inspection and intelligent equipment identification.

Abstract:The traditional methods cannot be used to meet the requirements of rapid and objective detection of meat freshness. Electronic nose (E-Nose), computer vision (CV), and artificial tactile (AT) sensory technologies can be used to mimic humans’ compressive sensory functions of smell, look, and touch when making judgement of meat quality (freshness). Though individual E-Nose, CV, and AT sensory technologies have been used to detect the meat freshness, the detection results vary and are not reliable. In this paper, a new method has been proposed through the integration of E-Nose, CV, and AT sensory technologies for capturing comprehensive meat freshness parameters and the data fusion method for analysing the complicated data with different dimensions and units of six odour parameters of E-Nose, 9 colour parameters of CV, and 4 rubbery parameters of AT for effective meat freshness detection. The pork and chicken meats have been selected for a validation test. The total volatile base nitrogen (TVB-N) assays are used to define meat freshness as the standard criteria for validating the effectiveness of the proposed method. The principal component analysis (PCA) and support vector machine (SVM) are used as unsupervised and supervised pattern recognition methods to analyse the source data and the fusion data of the three instruments, respectively. The experimental and data analysis results show that compared to a single technology, the fusion of E-Nose, CV, and AT technologies significantly improves the detection performance of various freshness meat products. In addition, partial least squares (PLS) is used to construct TVB-N value prediction models, in which the fusion data is input. The root mean square error predictions (RMSEP) for the sample pork and chicken meats are 1.21 and 0.98, respectively, in which the coefficient of determination ( R 2 ) is 0.91 and 0.94. This means that the proposed method can be used to effectively detect meat freshness and the storage time (days).

Abstract:Identifying food freshness is a very important; it is a part of a long historical actions by humans, because fruit freshness can tell us the information about the quality of foods. With the advancement of machine learning and computer science, which will be broadly employed in factories and markets, instead of manual classification. Recognition of the freshness of food is rapidly being replaced by computers or robots. In this book chapter, the authors conduct the research work on fruit freshness detection, we make use of YOLOv6, YOLOv7, and YOLOv8 in this project to implement fruit classifications based on a variety of digital images, which can improve the efficiency and accuracy of the classification incredibly; after the classification, the output will showcase the result of fruit fresheness classification, namely, fresh, or rotten, etc. They also compare the results of different deep learning models to discover which architecture is the best one in terms of speed and accuracy. At the end of this book chapter, the authors made use of the majority vote method to combine the results of different models to get better accuracy and recall scores. To generate the final result, the authors trained the three models individually, and also propose a majority vote to get a better performance for fresh fruit detection. Compared with the previous work, this method has higher accuracy and a much faster speed. Because this one uses the clustering method to generate the final result, it will be easy for researchers to change the backbone and get a better result in the future.
