Abstract:Mud crab, swimming crab, and Chinese mitten crab are the most popular economic crabs cultured in China. However, little knowledge is available about the composition of amino acids, fatty acids, and heavy metals in those cultured crabs, despite the large amounts consumed. Scylla paramamosain, Portunus trituberculatus, and Eriocheir sinensis were, respectively, employed for an investigation of these three crabs. The results on the three representative species revealed that muscle, hepatopancreas, and ovary each had its own compositional pattern. The composition of total amino acids in all the crabs was well balanced. The proportion of flavor amino acid in muscles was higher than that in hepatopancreas and ovary. The composition of total fatty acids showed that two functional unsaturated fatty acids, docosahexaenoic acid (DHA, C22:6n-3) and eicosapentaenoic acid (EPA, C20:5n-3), were both abundant in the three crabs. The ratios of n-3/n-6 polyunsaturated fatty acids (PUFAs) in these crabs also showed that they were rich in n-3 PUFA. Among the seven metals explored, zinc, copper, and chromium were the most abundant. It also deserved attention that these crabs were threatened by high accumulation of cadmium in the edible hepatopancreas, which might arise from the pollution of water used for aquaculture. This data could be used as a reference baseline for monitoring the food properties of the three crabs in levels of amino acids, fatty acids, and metals.
Comparison of Morphometric Parameters, Nutritional Composition, and Textural Properties of Seven Crustaceans Species

Abstract:In order to study the muscle quality of different crustaceans, we aim to provide a comprehensive assessment of their muscle quality characteristics as a theoretical reference. In this work, seven major species of farmed and consumer crustaceans were selected, including crayfish (Procambarus clarkii), freshwater prawns (Macrobrachium rosenbergii), pacific white shrimp (Litopenaeus vannamei), black tiger shrimp (Penaeus monodon), kuruma prawns (Penaeus japonicus), river prawns (Macrobranchium nipponense), and Chinese shrimp (Penaeus chinensis). Their morphometric parameters, nutritional composition, textural properties, and physical and chemical indexes were comparatively analyzed. The results showed that the meat content (MC, about 14.78%) of crayfish was significantly lower than that of the other six species. By contrast, pacific white shrimp had the highest MC, although the MCs of black tiger shrimp, kuruma prawns, and Chinese shrimp are greater than 40%. All seven crustacean species were high in protein and low in fat, while pacific white shrimp had the highest crude protein, crude lipid, and crude ash content compared to the other crustaceans. The content of threonine (Thr) was the highest in crayfish. The content of methionine (Met) and lysine (Lys) was the highest in freshwater prawns. The content of isoleucine (Ile), leucine (Leu), and non–essential amino acid (NEAA) was the highest in pacific white shrimp. C18:2n-6 (linoleic acid, LA) was the highest in freshwater prawns and pacific white shrimp; C18:3n-3 (linolenic acid, LNA), C20:4n-6 (arachidonic acid, AA), unsaturated fatty acids (UFA), and monounsaturated fatty acids (MUFA) were all the highest in crayfish; and polyunsaturated fatty acids (PUFA) was the highest in freshwater prawns, but the content was not significantly different from crayfish, pacific white shrimp, black tiger shrimp, and Chinese shrimp. Pacific white shrimp had the highest values for hardness, cohesiveness, gumminess, and chewiness. The redness values of crayfish, black tiger shrimp, and Chinese shrimp were significantly higher than those of the other three species except kuruma prawns. Compared to other crustaceans, river prawns had the highest drip loss and cooking loss. Black tiger shrimp and Chinese shrimp had the lowest cooking loss rates. The research shows that the tail muscle of the seven species of crustaceans is rich in protein, essential amino acids, unsaturated fatty acids and low in fat, representing a high-quality protein. Among these crustaceans, the main essential amino acids and essential fatty acids in the tail muscle of pacific white shrimp, freshwater prawns, and crayfish are higher in content and better in nutritional value.

Abstract:Shellfish cultivation is an expanding economic activity worldwide. However, the rapid development of crab farming and processing result in a large number of crab shells (CS). Utilizing CS could not only benefit the environment and economy but also promote the sustainable development of aquaculture. In this work, it reviews and analyzes recent attempts in CS recycling, including extracting chitin and its derivatives, for use as adsorbent and flocculant and for preparing polymer composites and catalysts, as well as medical applications. The challenges in these utilizations are discussed, and future research directions are proposed as well. Extracting chitin and its derivates, for use as adsorbent and flocculant, are recent major recycling approaches. Preparing polymer composites and carbon materials has gained more and more attentions. Biotechnology is an alternative method for extracting chitin and its derivates from CS, and high-efficiency desalted and deproteinized bacteria need to be screened. Immobilizing the CS-based adsorbents is the key of treating wastewater in continuous systems. Using CS as a biofiller to prepare polymer composites is promising, and surface modification to improve the interfacial compatibility between CS-based fillers and matrix needs to be further studied.

Abstract:Soft-shell crabs have attracted consumers' attention due to their unique taste and nutritional value. To evaluate the feasibility of harvest optimisation of soft-shell mud crabs, the proximate composition, mineral composition, and total carotenoid, amino acid, and fatty acid contents of edible parts of male and female soft-shell mud crabs at different moulting stages were determined and compared from a nutritional value perspective. The results showed that the sex and moulting stages could significantly affect the nutritional values of the edible portions of soft-shell crabs. The female or male soft-shell crabs in the postmoult I stage had a much richer mineral element content than that in other moulting stages. The total carotenoid content in female soft-shell crabs was significantly higher than that in male crabs in all moulting stages, while male soft-shell crabs had better performance in amino acid nutrition than female soft-shell crabs. Moreover, it was found that soft-shell crabs in the postmoult II stage had significantly higher contents of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), while significantly lower contents of saturated fatty acids (SFA) than those in other stages. The present study will provide a reference basis for the diversified cultivation of soft-shell crabs, and further promote the development of the mud crab industry.

Abstract:Molluscan shellfish aquaculture contributes to 42.6% of global aquaculture production. With a continued increase in shellfish production, disposal of shell waste during processing is emerging as an environmental and financial concern. Whilst major commercial species such as Crassostrea spp. has been extensively investigated on usage of its shell, with information that are crucial for valorisation, e.g. safety and crystal polymorphs, evaluated. There is currently little understanding of utilisation opportunities of shell in several uprising Australian commercially harvested species including Akoya Oyster ( Pinctada fucata ), Roe's Abalone ( Haliotis roei ) and Greenlip Abalone ( Haliotis levigata ), making it challenging to identify ideal usages based on evidence-based information. Therefore, in this study, an interdisciplinary approach was employed to characterise the shells, and thereafter suggest some potential utilisation opportunities. This characterisation included crude mineral content, elemental profiling and food safety evaluation. As well, physical, chemical, and thermal stability of the shell products was assessed. TGA result suggests that all shells investigated have high thermal stability, suggesting the possibility of utilisation as a functional filler in engineering applications. Subsequent FTIR, SEM and XRD analyses identified that CaCO 3 was the main compositions with up to 77.6% of it found to be aragonite. The spectacular high aragonite content compared to well-investigated Crassostrea spp. suggested an opportunity for the utilisation of refined abalone shell as a source of biomedical engineering due to its potent biocompatibility. Additionally, safety evaluations on whole shell also outlined that all investigated samples were safe when utilised as a crude calcium supplement for populations > 11 years old, which could be another viable options of utilisation. This article could underpin abalone and akoya industries actions to fully utilise existing waste streams to achieve a more sustainable future.

Abstract:Shrimp processing generates substantial waste, which is rich in valuable components such as polysaccharides, proteins, carotenoids, and fatty acids. This review provides a comprehensive overview of the valorization of shrimp waste, mainly shrimp shells, focusing on extraction methods, bioactivities, and potential applications of these bioactive compounds. Various extraction techniques, including chemical extraction, microbial fermentation, enzyme-assisted extraction, microwave-assisted extraction, ultrasound-assisted extraction, and pressurized techniques are discussed, highlighting their efficacy in isolating polysaccharides, proteins, carotenoids, and fatty acids from shrimp waste. Additionally, the bioactivities associated with these compounds, such as antioxidant, antimicrobial, anti-inflammatory, and antitumor properties, among others, are elucidated, underscoring their potential in pharmaceutical, nutraceutical, and cosmeceutical applications. Furthermore, the review explores current and potential utilization avenues for these bioactive compounds, emphasizing the importance of sustainable resource management and circular economy principles in maximizing the value of shrimp waste. Overall, this review paper aims to provide insights into the multifaceted aspects of shrimp waste valorization, offering valuable information for researchers, industries, and policymakers interested in sustainable resource utilization and waste-management strategies.

Abstract:This study compared the nutritional quality and nutrient compositions of female mud crabs cultured in the coastal area around the Bohai Sea (BMC), the East China Sea (EMC), and the South China Sea (SMC). The results showed that BMC had the highest hepatopancreas index and meat yield and EMC had the highest gonadosomatic index and total edible yield. The protein content in the edible tissues of EMC and SMC was significantly higher than that of BMC. The essential amino acid index in the muscle and gonads of three-sourced female crabs was quantitatively higher than 70, meaning that the amino acid compositions in the muscle and gonads of BMC, EMC, and SMC showed good performance. The mineral element data revealed that they were all excellent mineral sources, especially the Zn content in the gonads, which was approximately 15 mg 100 g-1. Meanwhile, the polyunsaturated fatty acid contents of BMC were significantly higher than those of EMC and SMC, and BMC also had abundant eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), particularly in the muscle. Hence, although EMC and SMC contained more protein than BMC, the nutritional quality and nutrient composition of BMC was slightly better than those of EMC and SMC.

Abstract:The nutritional components of different parts (meat, head, shell and tail) of Litopenaeus vannamei (L.v), Macrobrachium rosenbergii (M.r), Penaeus monodon (P.m), Fenneropenaeus chinensis (F.c), and Penaeus japonicus (P.j) were analyzed and their nutritional values were evaluated. For the five species of shrimp, the meat yield was 37.47–55.94%, and the byproduct yield was 44.06–62.53%. The meat yields of L.v and F.c were the highest (55.94 and 55.92%, respectively), and the meat yield of M.r was the lowest (37.47%). The shrimp contain high amounts of crude protein, and the values of the amino acid score (AAS), chemical score (CS), and essential amino index (EAAI) were greater than or close to 1.00, indicating that shrimp protein had higher nutritional value. The shrimp head was rich in polyunsaturated fatty acids and the ratio of n-6 to n-3 PUFAs was from 0.37 to 1.68, indicating that the shrimp head is rich in n-3 PUFAs and is a good source of n-3 PUFAs. The five species of shrimp were rich in macro- and micro-minerals, especially in shrimp byproducts. The shrimp byproducts were also rich in other bioactive ingredients (astaxanthin), which are also very valuable for developing biological resources. Therefore, shrimp have many nutritional benefits, and their byproducts can also be used to develop natural nutraceuticals, which are considered to be one of the healthiest foods.

Abstract:Three decapod crustaceans (Penaeus notalis, Procambarus clarkii and Callinectes pallidus) were selected in this study due to their low cost and wide distribution across tropical and temperate regions of the world. The proximate, fatty acids, amino acids and total cholesterol contents of Penaeus notalis, Procambarus clarkii and Callinectes pallidus from Badagry Creek, Lagos, Nigeria were evaluated for their nutritional importance in diet and to human health especially as the demand for these resources is increasing worldwide due to increase in human population, low cost and nutritional benefits. The proximate composition of the selected crustaceans was determined using standard methods of analysis, the cholesterol content was determined using enzymatic kit method, the fatty acid composition was analysed using Gas Chromatography- Mass Spectrophotometer and the amino acid composition was analysed using Amino Acid Analyzer. The proximate composition (moisture, crude fat, crude fibre, crude protein, ash and carbohydrate contents) analysed showed significant difference (p<0.05) among the three selected crustaceans studied, so also the cholesterol content. All the fatty acids in the results obtained except (Palmitic acid (C16:0), magaric acid (C17:0), myristoleic acid (C14:1), (C18:1n-9t), (C22:1n-9), cetoleic acid (C22:1n11c), C18:2n-6t, rumenic acid (C18:2n-7), γ-Linolenic acid (GLA) (C18:3n-6), eicosatrienoic acid (ETE) (C20:3n-3), docosadienoic acid (C22:2n-6) and docosapentaenoic acid (DPA) (C22:5n-3)) showed significant difference (p<0.05). All the essential amino acids indicated significant difference (p<0.05). Moreover, all the non-essential amino acids except cystine were also significantly difference (p<0.05) among the three selected crustaceans. This study revealed that all the selected decapod crustaceans studied are good source of high quality protein, essential amino acids, low cholesterol levels, omega 3 and 6 polyunsaturated fatty acids thereby making them of high nutritional benefits to consumers.

Abstract:The development and utilization of new germplasm resource is an important basis for promoting mitten crab industrial development. A total of 90 wild-caught mitten crabs were collected from Suifenhe (SFH), Liaohe (LH) and Nanliujiang (NLJ) river basins. This study investigated the edible yield, color, proximate composition, fatty acid, and free amino acid composition of wild-caught mitten crab edible tissues from three river basins. Results illustrated that SFH crab had significantly higher meat yield (MY) compared with LH and NLJ crabs (P < 0.05). Higher proportion of fatty acids and free amino acids were also observed in SFH crab, e.g. 22:6n3 (DHA), 20:5n3 (EPA), n-3 unsaturated fatty acid (PUFA), n-3/n-6 PUFA, ∑DHA+EPA, and total free amino acids (∑TFAA) in gonad. LH crab had higher concentration of total essential fatty acids (∑EFA), FAAs and h/H in hepatopancreas, while NLJ crab accumulated high content carotenoids in the carapace and hepatopancreas, AI and TI in edible tissues. In , significant differences of biochemical composition and quality were found among these three wild-caught mitten crabs, which provides basic materials for the development and utilization of mitten crabs.

Abstract:Seafood such as fish, shellfish, and squid are a unique source of nutrients. However, many marine processing byproducts, such as viscera, shells, heads, and bones, are discarded, even though they are rich sources of structurally diverse bioactive nitrogenous components. Based on emerging evidence of their potential health benefits, these components show significant promise as functional food ingredients. Fish waste components contain significant levels of high-quality protein, which represents a source for biofunctional peptide mining. The chitin contained in shrimp shells, crab shells, and squid pens may also be of value. The components produced by bioconversion are reported to have antioxidative, antimicrobial, anticancer, antihypertensive, antidiabetic, and anticoagulant activities. This review provides an overview of the extraordinary potential of processing fish and chitin-containing seafood byproducts via chemical procedures, enzymatic and fermentation technologies, and chemical modifications, as well as their applications.

Abstract:Background: Every year, about eight million tons of different species of crustacean shells are produced, with several million tons of various mollusc shells world-wide. These shell wastes are usually disposed into the water body or mainland, littered everywhere, with significant impact on the environment. Aim: To provide a profitable way of reducing and possibly removing shell wastes, and harness them for a better purpose through an eco-friendly and sustainable technological approach. Main Body of the Abstract: This review underscores a broad list of economically important crustaceans and molluscs, harvestable in Nigeria coastal waters whose shells usually ended up as wastes. Chitin, being the primary component of these wastes can be extracted and deacetylated into chitosan, or synthesized into nanoparticles for better applications in various aspects of aquaculture. Both chemical and biological methods of chitin extraction were discussed, however, bioextraction method was recommended due to its eco-friendliness, biocompatibility, and non-hazardousness. Various ways by which these shell wastes can be processed and utilized for improve aquaculture practices were also discussed. These include fish growth enhancement, pond water treatment, as antioxidant, as immuno-stimulant, as antimicrobial, as drug carrier, and several other purposes. Conclusion: There are much hidden wealth in these fisheries by-products (Crustacean and Mollusc shells) if properly valorized. It has a great potential to transform aquaculture industry, and bring significant, and sustainable economic development in Nigeria.
Comparison of the gut microbiota and untargeted gut tissue metabolome of Chinese mitten crabs (Eriocheir sinensis) with different shell colors

Abstract:Introduction: The Chinese mitten crab ( Eriocheir sinensis ) is a highly valued freshwater crustacean in China. While the natural shell color of E. sinensis is greenish brown (GH), we found a variety with a brownish-orange shell color (RH). Although RH is more expensive, it exhibits a lower molting frequency and growth rate compared with GH, which significantly reduces its yield and hinders large-scale farming. The growth and development of animals are closely related to their gut microbiota and gut tissue metabolic profiles. Methods: In this study, we compared the gut microbiome communities and metabolic profiles of juvenile RH and GH crabs using 16S rRNA gene sequencing and liquid chromatography–mass spectrometry (LC–MS), respectively. Results: Our findings indicated that the intestinal microbial composition and metabolic characteristics of E. sinensis differed significantly between RH and GH. At the operational taxonomic unit (OTU) level, the α-diversity of the gut microbiota did not differ significantly between RH and GH, while the β-diversity of the RH gut microbiota was higher than that of the GH gut microbiota. At the species level, the richness of unclassified_c_Alphaproteobacteria was significantly higher in the GH group, while the RH group had a significantly higher richness of three low-abundance species, Flavobacteria bacterium BAL38 , Paraburkholderia ferrariae , and uncultured_bacterium_g__Legionella . In the current study, 598 gut tissue metabolites were identified, and 159 metabolites were significantly different between GH and RH. The metabolite profile of RH was characteristic of a low level of most amino acids and lipid metabolites and a high level of several pigments compared with that of GH. These metabolites were enriched in 102 KEGG pathways. Four pathways, including (1) Central carbon metabolism in cancer, (2) protein digestion and absorption, (3) alanine, aspartate and glutamate metabolism, and (4) aminoacyl-tRNA biosynthesis, were significantly enriched. The correlation analysis between metabolites and microbiotas indicated that most key differential metabolites were positively correlated with the abundance of Shewanella _sp_MR-7. Discussion: This research provided a greater understanding of the physiological conditions of E. sinensis varieties with different shell colors by comparing the gut microbiota and gut tissue metabolome.

To address this issue, in this study a clean and efficient enzymatic process was developed to recover most components of shrimp shell waste including protein, chitin, astaxanthin, and minerals. The process used two recombinant aspartic proteases for protein hydrolysis, recombinant chitinase for chitin hydrolysis, and ethyl acetate for astaxanthin extraction. Deproteinization rendered shell chitin accessible to chitinase, and astaxanthin was easily extracted from shell residue after protein and chitin removal. The process was completed within hours and resulted in high recovery rates of protein (91.4%) and chitin (88.9%). Importantly, amino acids in peptides, the <em>N</em>-acetyl group of chitin oligomers, and astaxanthin in the final products were preserved in their natural states, unlike with traditional chemical or physical treatments. The products have potential applications in nutrition and as anti-inflammatory and antioxidant agents. This enzymatic process promotes sustainable development by establishing a circular economy in shrimp processing, thus offering both economic and environmental benefits.</p>

Abstract:In recent years, there has been an increase in the industrial processing of shrimp, aiming to cover the increasing demand for shrimp products for human consumption, and, consequently, an increase in shrimp by-products as shrimp waste. This waste includes the cephalothoraxes, heads, shells, tails, pleopods, and exoskeleton appendages of processed shrimps. The appropriate method for the enzymatic hydrolysis of shrimp waste can recover its bioactive substances, including carotenoids. Thus, these xanthophylls and carotenes are of high financial interest and have high antioxidant, anti-inflammatory, and anti-cancer activities. Therefore, these substances can be incorporated into fish feed as ingredients that improve fish health and simultaneously lead to the production of aquaculture fishes similar in coloration to the wild ones. Thus, the consumption of such novel food acts as a preventive factor for human health. In this regard, β-carotene has antioxidant and fat-soluble activities owing to vitamin A sufficiency and has an anti-cancer effect, too. Canthaxanthin can be used as a product for personal care and as a natural tanning agent for human skin. Zeaxanthin and lutein have positive effects on various eye and heart diseases, neuronal damage, human skin diseases, and certain types of cancer. Astaxanthin also has anti-diabetic and anti-obesity properties. Therefore, the purpose of this review is to highlight the sustainable utilization of shrimp waste via enzymatic hydrolysis, the benefits of a fish diet enriched with astaxanthin, the consumption of fish enriched with carotenoids, and the effects of carotenoids on human health. The problem of shrimp waste disposal affects the environment, does not contribute to sustainable development, and is directly related to the phenomenon of environmental change.

Abstract:The quality of crustaceans' flesh has direct impact on consumers' purchase choices, with water environment and dietary nutrition being effective ways to regulate flesh quality. The aim of present study was to investigate the impacts of water salinity (low, 4 and medium, 23) and dietary lipid source (fish oil and soybean oil) on nutritional values, texture, taste and odor of flesh of mud crab. While water salinity had no significant influence on nutritional values of crab flesh, crabs fed soybean oil displayed significantly lower contents of amino acids and n-3 PUFAs in muscle. However, crabs reared at low salinity showed reduced flesh hardness, chewiness and gumminess likely related to altered myofiber structure, that impacted muscle texture. Furthermore, low salinity and dietary soybean oil weakened umami taste and aroma characteristics of crab flesh associated with decreased contents of free amino acids, flavor nucleotides, inorganic ions and odor active compounds in flesh.

Abstract:The Chinese mitten crab (Eriocheir sinensis) is recognized as an invasive species in Europe but increasing fishing efforts may hold economic benefits and yield positive ecological and nutritional outcomes. The objective of this study was to determine the yield of edible parts and the compositional and nutritional characteristics of this crab, especially as a source of n-3 PUFA. The overall yield of edible parts amounted to 38.09%, with males (27.72%) exhibiting a higher meat content compared to females (25.30%). The gonads displayed the highest protein content (24.12%), while the hepatopancreas (11.67%) showcased the highest fat content. Furthermore, the fatty acid composition varied depending on the distribution within different crab segments and gender and individual size. Notably, the gonad lipids contained the most nutritionally valuable n-3 fatty acids, followed by muscle and hepatopancreas lipids. The determined index of atherogenicity (IA) from 0.2 for gonadal lipids to 0.42 for hepatopancreas lipids, index of thrombogenicity (IT) in the range of 0.10 for gonads to 0.41 for hepatopancreas, and flesh lipid quality (FLQ) from 6.9 for hepatopancreas to 23 for muscle lipids indicate their pro-health properties. The ratio of n-3 to n-6 fatty acids showed Chinese mitten crab as an excellent source of oil that can be used for food fortification and dietary supplement production.

Abstract:The culture of crustaceans, such as shrimp and crabs, in Indonesia has resulted in a significant increase in waste production, particularly in the form of shells and heads. This waste contains valuable components like chitin, chitosan, and carotenoids, which can be extracted and utilized in aquaculture activities. Some research results show that the use of chitosan, derived from chitin, in fish feed, is a functional polysaccharide with various biological activities, including antimicrobial, anti-inflammatory, and immune-stimulating effects. It also acts as a growth promoter in shrimp and improves the performance of farmed fish. Additionally, the inclusion of chitin and chitosan in fish feed formulations enhances digestibility, growth, and nutrient absorption. This paper provides a comprehensive review of the potential, nutritional value, and benefits of processed crustacean waste products, focusing on chitosan, and their impact on the productivity of fish in aquaculture.

Abstract:Consumer demand for convenience has led to large quantities of seafood being value-added processed before marketing, resulting in large amounts of marine by-products being generated by processing industries. Several bioconversion processes have been proposed to transform some of these by-products. In addition to their relatively low value conventional use as animal feed and fertilizers, several investigations have been reported that have demonstrated the potential to add value to viscera, heads, skins, fins, trimmings, and crab and shrimp shells by extraction of lipids, bioactive peptides, enzymes, and other functional proteins and chitin that can be used in food and pharmaceutical applications. This chapter is focused on reviewing the opportunities for utilization of these marine by-products. The chapter discusses the various products and bioactive compounds that can be obtained from seafood waste and describes various methods that can be used to produce these products with the aim of highlighting opportunities to add value to these marine waste streams.
