Abstract:Changes in qualities of Red Fuji' and Golden Delicious' apples in response to different heat treatments (45 and 60 degrees C) following cold storage were investigated. Quality indices including firmness, titratable acidity, total phenolic content, antioxidant capacity, colour parameters and microstructure were measured. Results indicated heat treatment at both temperatures for 3-h hastened loss of titratable acidity in Red Fuji' and Golden Delicious' apples, but maintained firmness in both cultivars. However, heat treatment at lower temperature (45 degrees C) best maintained total phenolic compounds and antioxidant capacity in Red Fuji' apples throughout storage, whereas there was no difference between heat treatments in Golden Delicious' apples. Examination by scanning electron microscope (SEM) revealed that the effect of heat treatment at different temperatures on Red Fuji' and Golden Delicious' apples was structurally different. Apple tissue that had been heat treated at elevated temperature (60 degrees C) for 3h was associated with fractured cell walls and collapse of cells.

Abstract:Visible/near-infrared (Vis/NIR) spectroscopy was applied to determine the ripeness of melons ( Cucumis melo L.). The total soluble solids (TSS) and flesh color distribution around the equator fracture surface was studied, and a high correlation between TSS and flesh color in the outer mesocarp region was observed. A new ripeness index, defined as the edible ratio (ER), was proposed. One hundred and twenty melons with similar sizes were selected as samples and divided into a calibration set and a prediction set. Spectra of melons were acquired separately under transmittance and interactance modes. A machine vision system was established to acquire images of the melon fracture surfaces to further calculate the ER values of the melons. Partial least squares (PLS) calibration models were developed to predict the melon ripeness indices, including TSS, surface color (SC), and ER value. The results were promising for TSS, Hunter a , and ER value. For Hunter b , the results were insufficient. In addition, by comparing the performances of the calibration models developed under different detection modes, it was concluded that the best calibration results for TSS and ER were achieved under the transmittance mode, while for Hunter a , the best result was obtained using interactance spectra.

Abstract:Spatial-frequency domain imaging (SFDI), as a noncontact, low-cost and wide-field optical imaging technique, offers great potential for agro-product safety and quality assessment through optical absorption (μa) and scattering (μ) property measurements. In this study, a laboratory-based SFDI system was constructed and developed for optical property measurement of fruits and vegetables. The system utilized a digital light projector to generate structured, periodic light patterns and illuminate test samples. The diffuse reflected light was captured by a charge coupled device (CCD) camera with the resolution of 1280 × 960 pixels. Three wavelengths (460, 527, and 630 nm) were selected for image acquisition using bandpass filters in the system. The μa and μ were calculated in a region of interest (ROI, 200 × 300 pixels) via nonlinear least-square fitting. Performance of the system was demonstrated through optical property measurement of ‘Redstar’ apples. Results showed that the system was able to acquire spatial-frequency domain images for demodulation and calculation of the μa and μ. The calculated μa of apple tissue experiencing internal browning (IB) were much higher than healthy apple tissue, indicating that the SFDI technique had potential for IB tissue characterization.

Abstract:The feasibility of a multi-cultivar model's development for the on-site determination of the internal qualities of European pear (Pyrus communis L.) cv. 'Abate', 'Cascade', 'Conference', 'Red Cornice' and Wujiuxiang' was investigated. In total, 240 pear samples, 48 for each cultivar, were collected during fruit post-ripening period under retail stage conditions to explore the performance of a technique for developing soluble solid content and firmness models with partial least squares (PLS) and multiple linear regression (MLR) methods A commercially available portable visible and near-infrared spectrometer was used to collect the absorbance spectra (500-1010 nm) of pears. A hybrid method, orthogonal signal correction (OSC) combined with other spectral pre-process methods, such as standardization, second-order derivation and Savitzkye-Golay smoothing, was employed to filter out the variations in signals caused by different pear cultivars. Compared with the routine PLS and MLR models, the performances of the OSC PLS and OSC MLR models resulted in higher ratios of prediction to deviation. A new external sample set obtained at the retail stage was used to assess the performances of the best multi-cultivar models of soluble solid content and firmness, which resulted in greater coefficients of determination for prediction of 0.87 and 0.66, respectively, and lower root mean square errors of prediction of 0.45% and 8.11 N, respectively. The results highlighted the potential of portable Vis-NIR instruments for the on site testing of internal quality indices of European pears. The development of a multi-cultivar model for fruit is necessary and significant, in particular for improving the performance of the firmness model.

Abstract:Main conclusionDuring on-tree ripening, the pectin distribution changed from polydispersed in cell wall to cumulated in cell wall corners. During apple storage, the pectin distribution returned to evenly dispersed along the cell wall.The plant cell wall influences the texture properties of fruit tissue for example apples become softer during ripening and postharvest storage. This softening process is believed to be mainly connected with changes in the cell wall composition due to polysaccharides undergoing an enzymatic degradation. These changes in polysaccharides are currently mainly investigated via chemical analysis or monoclonal labeling. Here, we propose the application of Raman microscopy for evaluating the changes in the polysaccharide distribution in the cell wall of apples during both ripening and postharvest storage. The apples were harvested 1 month and 2 weeks before optimal harvest date as well as at the optimal harvest date. The apples harvested at optimal harvest date were stored for 3 months. The Raman maps, as well as the chemical analysis were obtained for each harvest date and after 1, 2 and 3 months of storage, respectively. The analysis of the Raman maps showed that the pectins in the middle lamella and primary cell wall undergo a degradation. The changes in cellulose and hemicellulose were less pronounced. These findings were confirmed by the chemical analysis results. During development changes of pectins from a polydispersed form in the cell walls to a cumulated form in cell wall corners could be observed. In contrast after 3 months of apple storage we could observe an substantial pectin decrease. The obtained results demonstrate that Raman chemical imaging might be a very useful tool for a first identification of compositional changes in plant tissue during their development. The great advantage Raman microspectroscopy offers is the simultaneous localization and identification of polysaccharides within the cell wall and plant tissue.

Abstract:Quality attributes such as moisture content, colour parameters and shrinkage of apples change undesirably during the drying process. Drying is a highly dynamic process, thus, an effective optimisation in terms of product quality and process performance requires continuous non-invasive measurement of the parameters in question. In this study, visual to near infra-red hyperspectral imaging was used in combination with the respective gold standard methods to estimate moisture ratio, CIELab chromaticity, browning index, shrinkage, and rehydration ratio of apple slices during the hot air-drying process. Two varieties (cv. Elstar and Golden delicious) of apples at three slice thicknesses (2, 3, and 4 mm) were dried at 60 °C and 70 °C. Prediction models for the space-averaged spectral reflectance curves were built using the partial least square regression method and including both varieties. The performance of moisture ratio prediction was excellent (adj R2 = 0.94, RMSEP = 0.076) and the Variable Importance in the Projection value cut off above 0.8 at 970 nm and L* at 685 nm. Similarly, partial least square regression modelling showed a good prediction for a*, b* value, BI, shrinkage and acceptable prediction for L* and RR. The model performance was robust to the system settings irrespective of slice thickness, drying temperature and apple variety. Additionally, method comparisons using Bland-Altman, Bablok, and Deming regression were performed. The results confirm that the compared destructive (laboratory gold standard) and non-destructive hyperspectral methods can be interchangeably used within the limit of agreement (± 1.96 standard deviations) and precision for determination of the MR, CIELAB chromaticity and BI, shrinkage, and rehydration ratio. Therefore, these results confirm that hyperspectral imaging system can be used in online monitoring of the apples during the drying process, and thus, in the optimisation of product and process performance quality attributes.

Abstract:Apple is classified as a climacteric fruit, characterized by a rapid surge in ethylene levels at the onset of ripening. However, there is significant variation in the degree and timing of ripening and softening among different apple cultivars. Understanding the molecular mechanisms underlying fruit softening and the associated changes in cell wall integrity is crucial for improving fruit quality and extending shelf life. In this study, we conducted a comparative analysis of fruit firmness and ethylene production among seven apple cultivars with different softening patterns during storage. We also examined the expression patterns of genes and enzyme activities involved in cell wall metabolism. Our results showed that fruit firmness was negatively correlated with ethylene production rate, respiration rate, soluble pectin content, cellulase activity, polygalacturonase activity, and β-glucosidase activity, while it was positively correlated with protopectin content and cellulose content. Furthermore, we identified a BBX transcription factor gene, MdBBX25, that was negatively correlated with fruit softening during storage. Overexpression of MdBBX25 resulted in delayed fruit softening by suppressing ethylene biosynthesis and cell wall-related genes, whereas silencing of MdBBX25 accelerated fruit softening by promoting ethylene biosynthesis and cell wall-related genes in apple. Our findings provide insights into the role of MdBBX25 as a negative regulator of fruit softening through the modulation of ethylene biosynthesis and cell wall degradation during storage.
Use of optical absorption and scattering properties to monitor the change of chemical characteristics, particle structure and viscoelasticity during apple puree processing

Abstract:This work explored the optical absorption (μa) and reduced scattering (μs') properties at 400-1050 nm (Vis-NIR) and 900-1650 nm (SWIR) of apple puree at different heating times to evaluate their changes in composition and structure. The optical absorption and scattering coefficients of μa and μs' decreased with increasing heating time. The specific μs' coefficients at 432 nm, 455 nm, 1183 nm and 1304 nm were related to particle structural changes. The partial least squares regression (PLSR) models based on μs' coefficients in the combined Vis-NIR and SWIR regions provided satisfactory estimations of puree particle area (Rp2 = 0.90) and particle perimeter (Rp2 = 0.85), whereas the μs' coefficients in the Vis-NIR region predicted puree viscosity (Rp2 = 0.83), elasticity modulus (Rp2 = 0.81) and viscous modulus (Rp2 = 0.78). Consequently, optical properties can be a potential tool to determine structural and rheological changes of apple puree.
Assessing Soluble Solid Content and Texture of Pear During Shelf-Life Period by Single Snapshot Spatial Frequency Domain Imaging

Abstract:Spatial frequency domain imaging (SFDI) is a promising technique for its merits of noncontact and wide-field detection. However, considering the cost and detection speed, it has not been put into widespread application in agro-products. In this study, the low-cost, fast SFDI system and matching software were adopted to realize determination of absorption (mu(a)) and reduced scattering coefficients (mu'(s)) of pears. The spatial frequencies (f(x)) were calibrated and system linearity was verified, the results showed that excellent linearity was obtained. Single snapshot demodulation was adopted, the validation results conducted on 390 liquid phantoms indicated that the optimal f(x) for snapshot method is 1/3 mm(-1). Fast calculation models for mu(a) and mu'(s) developed by least squares support vector regression (LSSVR) based on Monte Carlo (MC) simulations were then applied and validated at six wavelengths (460, 503, 527, 630, 658 and 675 nm). The results demonstrated that the LSSVR models could realize precise calculation for mu(a) or mu'(s). Finally, the variation trends of mu(a), mu'(s), soluble solids content (SSC) and texture (MT firmness, flesh firmness, stiffness, brittleness and adhesiveness) of 9 batches of pears were analysed, and prediction models were developed by artificial neural network (ANN) based on mu(a) and mu'(s) respectively. The results showed that for texture estimation, the prediction effect was relative well by using mu'(s), especially for brittleness and adhesiveness, while the accuracy for SSC was limited by only six mu(a) features. Hybrid Label-Free Molecular Microscopies for Simultaneous Visualization of Changes in Cell Wall Polysaccharides of Peach at Single- and Multiple-Cell Levels during Postharvest Storage

Abstract:Softening of fruit during the postharvest storage, which is mainly associated with both compositional and spatial changes of polysaccharides within cell wall, affects the texture and quality of fruit. Current research on the fruit softening mechanism lacks an understanding of the overall softening at the cell level. The objective of this work was to investigate the change in the spatial distribution of cell wall polysaccharides in peach flesh cells at both single- and multiple-cell levels in a label-free way during the postharvest storage. Nonmelting peaches (Prunus persica L. Batsch cv.”Zhonghuashoutao”) at commercial maturity were stored at 0 °C and 20 °C. Firmness measurement and chemical analysis were performed at each storage time. In addition, three molecular imaging techniques, namely confocal Raman microspectroscopy (CRM), Fourier transform infrared microspectroscopy (FTIRM), and stimulated Raman scattering microscopy (SRS) were used to visualize changes in the spatial distribution of cell wall polysaccharides of peach fruit in a label-free way during the postharvest storage. The combination of CRM and FTIRM provided complementary spectral information to visualize the spatial changes of cellulose, hemicellulose, and pectin in the cell wall of peach flesh during softening at the single-cell level, and found that the cell wall polysaccharides tended to be concentrated in the cell corner of parenchymal cells at the late stage. Furthermore, SRS, which is an ultrafast Raman imaging technique (approximately three or four orders of magnitude faster than CRM), was used for high-throughput cell wall phenotypes measurement. Different degradation degrees of parenchymal cells during fruit softening were found based on the gray-scale statistical analysis of SRS data. In general, cell wall polysaccharides decreased during softening and tended to be concentrated in the cell corner for most parenchymal cells at the late stage, but there were also some cells not in line with the whole softening trends. The results show that there were differences in the content and spatial changes of cell wall polysaccharides among parenchymal cells of peach fruit during the softening process, and the hybrid use of CRM, FTIRM, and SRS is a promising method for simultaneous visualization of changes in cell wall polysaccharides of peach.

Abstract:Understanding the fundamental light-sample interaction process is a crucial step toward the development of vibrational spectroscopy to determine fruit texture (i.e., firmness). This study aimed to investigate the effect of pectin constitution, including total pectin, water-soluble pectin, protopectin contents, and protopectin index (PI), on the optical properties and firmness of 'Baifeng' and 'Xiahui 8' peach flesh at the different softening degrees during postharvest storage of 6 days at 20 °C. The firmness of 'Baifeng' and 'Xiahui 8' peaches significantly (p < 0.05) changed with a decreasing rate from 90.3% to 92.2%. Peach firmness of these two cultivars correlated well with PI contents (r > 0.912) and showed good internal correlations with optical scattering properties. The light absorption coefficient (μa) and reduced scattering coefficient (μ's) at 600-1600 nm were measured using a single integrating sphere system combined with an inversion algorithm. This relationship of μa and μ's with peach firmness and pectin constitution was first analyzed. Notably, the specific μ's at 660 nm, 950 nm, 1203 nm, and 1453 nm showed a satisfactory prediction of peach firmness and PI of 'Xiahui 8' (R2 ≥ 0.926) and 'Baifeng' peaches (R2 ≥ 0.764), respectively. Furthermore, the prediction models were established based on partial least squares regression coupled with optical properties, and considerable prediction performances were obtained for tissue firmness (Rp2 ≥ 0.863) and PI based on μ's (Rp2 ≥ 0.802). Consequently, these results further verified that the spectroscopic prediction model for peach firmness could be related to the high correlations between PI in tissues and their optical scattering properties. Future research interests could include the development of optical absorption and scattering sensors for rapid and efficient determination of peach firmness.
Dynamic Nondestructive Detection Models of Apple Quality in Critical Harvest Period Based on Near-Infrared Spectroscopy and Intelligent Algorithms

Abstract:Apples are usually bagged during the growing process, which can effectively improve the quality. Establishing an in situ nondestructive testing model for in-tree apples is very important for fruit companies in selecting raw apple materials for valuation. Low-maturity apples and high-maturity apples were acquired separately by a handheld tester for the internal quality assessment of apples developed by our group, and the effects of the two maturity levels on the soluble solids content (SSC) detection of apples were compared. Four feature selection algorithms, like ant colony optimization (ACO), were used to reduce the spectral complexity and improve the apple SSC detection accuracy. The comparison showed that the diffuse reflectance spectra of high-maturity apples better reflected the internal SSC information of the apples. The diffuse reflectance spectra of the high-maturity apples combined with the ACO algorithm achieved the best results for SSC prediction, with a prediction correlation coefficient (Rp) of 0.88, a root mean square error of prediction (RMSEP) of 0.5678 °Brix, and a residual prediction deviation (RPD) value of 2.466. Additionally, the fruit maturity was predicted using PLS-LDA based on color data, achieveing accuracies of 99.03% and 99.35% for low- and high-maturity fruits, respectively. These results suggest that in-tree apple in situ detection has great potential to enable improved robustness and accuracy in modeling apple quality.
Hyperspectral Spatial Frequency Domain Imaging Technique for Soluble Solids Content and Firmness Assessment of Pears

Abstract:High Spectral Spatial Frequency Domain Imaging (HSFDI) combines high spectral imaging and spatial frequency domain imaging techniques, offering advantages such as wide spectral range, non-contact, and differentiated imaging depth, making it well-suited for measuring the optical properties of agricultural products. The diffuse reflectance spectra of the samples at spatial frequencies of 0 mm-1 (Rd0) and 0.2 mm-1 (Rd0) were obtained using the three-phase demodulation algorithm. The pixel-by-pixel inversion was performed to obtain the absorption coefficient (μa) spectra and the reduced scattering coefficient (μs′) spectra of the pears. For predicting the SSC and firmness of the pears, these optical properties and their specific combinations were used as inputs for partial least squares regression (PLSR) modeling by combining them with the wavelength selection algorithm of competitive adaptive reweighting sampling (CARS). The results showed that μa had a stronger correlation with SSC, whereas μs′ exhibited a stronger correlation with firmness. Taking the plane diffuse reflectance Rd0 as the comparison object, the prediction results of SSC based on both μa and the combination of diffuse reflectance at two spatial frequencies (Rd) were superior (the best Rp2 of 0.90 and RMSEP of 0.41%). Similarly, in the prediction of firmness, the results of μs′, μa×μs′, and Rd1 were better than that of Rd0 (the best Rp2 of 0.80 and RMSEP of 3.25%). The findings of this research indicate that the optical properties represented by HSFDI technology and their combinations can accurately predict the internal quality of pears, providing a novel technical approach for the non-destructive internal quality evaluation of agricultural products.

Abstract:The important internal quality parameters of apples are firmness and soluble solids content (SSC); features that affect consumers' preferences and the marketing of apples. Hyperspectral imaging systems are novel and non-destructive methods that have various applications in the food industries. The regression methods offer many advantages due to the learning capability, non-destructive measurements, reduced assumptions, process compliance, and tolerance of missing data in agricultural commodities. In the present study, hyperspectral images of Pink Lady apples at different harvest stages (three periods) were analyzed to predict some internal characteristics (firmness and SSC). The hyperspectral camera was used to acquire reflectance data in 300 spectral bands in the range of 386 and 1028 nm in a total of 100 samples for each harvest period. In addition, prediction performance of artificial neural network (ANN), k-nearest neighbors (KNN), decision tree (DT), partial least squares regression (PLSR) and multiple linear regression (MLR) were evaluated. Determination coefficients (R2) were respectively determined as 0.910 and 0.684 for ANN, 0.881 and 0.679 for DT, 0.781 and 0.684 for KNN, 0.666 and 0.762 for MLR and 0.819 and 0.661 for PLSR in the prediction of firmness and SSC. Besides, better firmness prediction was achieved by using spectral bands of 511, 505, 704, and 689 nm. The present study demonstrated the potential use of hyperspectral imaging with ANN and DT methods was more effective for firmness, while DT and MLR were more effective for SSC and the methods were proved to be quite feasible for industrial applications.

Abstract:The LED-induced fluorescence spectroscopy technique is developed to detect apple freshness and quality. A compact and automatic system is set up for fast measurements of apple fluorescence spectra. The partial least square regression (PLSR) method is used to establish a predictive model between fluorescence signals and corresponding actual apple qualities. Apple freshness is related to physiological aging, and apple quality is expressed by firmness (F) and soluble solids content (SSC). As for freshness detection, an LED at 375 nm is demonstrated to be more effective than at 400 nm with a root mean square error of validation (RMSEV) of 4.73 d. Meanwhile, the prediction results of the firmness and SSC for two kinds of apples also show low RMSEV values of 6.88 N and 0.98%, respectively, indicating that the LED-induced fluorescence spectroscopy technique is an effective, convenient and promising method for scanning apples and perhaps other foods. Abstract:Visible/Near Infrared Spectroscopy (Vis/NIR.) appears as a prominent technique for nondestructive fruit quality assessment. This research work was focused in to evaluate the use of Vis/NIRS in measuring the quality characteristics of intact Fuji apple (from Shanxi of China), and the relationship was established between nondestructive Vis/NIR spectral measurement and the soluble solids content of apple. Intact apple fruit were measured by reflectance Vis/NIR in 325-1075 nm range. The data set as the logarithms of the reflectance reciprocal (absorbance (log1/R)) was analyzed in order to build the best calibration model for this characteristic, using some spectral pretreatments and multivariate calibration techniques such as partial least square regression (PLS). The models for the SSC (r = 0.862), standard error of prediction (SEP) 0.907 with a bias of 0.599; shown the reasonable prediction performance. The Vis/NIR spectroscopy technique had significantly accuracy for determining the SSC. It was concluded that the Vis/NIRS measurement technique seems reliable to assess the soluble solids content of apple non-destructively.

Abstract:Abstract This work studies the evolution in time of several varieties of apples with application in quality storage maintenance. Two different methods were used to evaluate long-stored apples for better sorting and degradation assessment. The first method was laser photoacoustic spectroscopy for the detection of ethylene and ethanol compounds from the internal atmosphere of apples. The second method was multispectral imaging that measures the image and the spectrum combined and also can be used to address features such as ripening and external defects. The experiments showed that, the ethylene value decreases and the value of ethanol increases, which sometimes we may associate with a drift of the images toward darker tones, because the apple is slowly degrading. Non-invasive, real-time inspection can reveal when the degradation process begins, improving the capability of sorting, maintaining their quality and storability.

Abstract:It is important to understand the fundamental optical properties of fruit tissues when applying optical techniques for quality inspection of fruits. An automatic integrating sphere (AIS) system was used to measure the total reflectance and total transmittance of pear tissue in the wavelength range of 400-1150 nm. These two measurements were used to estimate the bulk optical properties (absorption coefficient mu(a) and reduced scattering coefficient mu's) of tissue samples using inverse adding-doubling (IAD) method. The accuracy of AIS system was verified by using both an INO solid phantom and a set of liquid phantoms. Relationships between soluble solids content (SSC), firmness and the optical properties were investigated, with coefficients of determination of 0.40 and 0.48 for validation, respectively. In addition, the mu(a) decreased with the increase of shelf-life time, while the mu's did just the opposite. This study demonstrated the feasibility of detecting multiple qualities of pears by investigating the tissue optical properties. For further research, the measured optical properties of pear tissues can be used for modeling and simulation of light-fruit interaction. (C) 2016 Elsevier B.V. All rights reserved.

Abstract:Watercore and soluble solid content (SSC) are important indicators for assessment of the internal quality of apples. Visible and near infrared spectroscopy (Vis-NIRS) has been successfully applied for on-line analysis of internal quality of apples. In practical application, the position of the detected apples is usually uncertain, which limits the effective application of traditional model developed based on the fixed position or the optimal position. This study established a multi-position general model for evaluation of watercore and SSC in ‘Fuji’ apples using on-line Vis-NIRS. First, the full-transmittance spectra of three positions (P1–P3) of each apple were acquired, and subsequently, LS-SVM and PLS-DA models were constructed based on full wavelength data of single and multiple positions for watercore classification, and LS-SVM and PLS models were also constructed based on the same data for the quantitative prediction of SSC. Then, the detection ability of the constructed single position and the multi-position general models for three independent position samples was compared to determine the optimal full wavelength models; Finally, different wavelength selection algorithms including MC-UVE, BOSS, SPA and their combinations were employed to optimize the full wavelength models. Results showed that the multi-position general MC-UVE-SPA-PLS-DA model was the optimal for classification of watercore apples with average accuracy of 95.96 %, and the multi-position general MC-UV-BOSS-LS-SVM model was the optimal for quantitative detection of SSC with R P of 0.856 and RMSEP of 0.723 %. The overall study revealed that the multi-position general model, combined with full-transmittance Vis-NIRS, was a better choice for on-line detection of watercore and SSC in ‘Fuji’ apples.

Abstract:Firmness is a major quality index for peaches and many other fruits. Because firmness varies among different parts of the pulp, maps of the firmness distribution inside peach pulp can be used as an important indicator for deeply understanding and evaluating the ripening process of fruit and for further optimizing planting patterns and postharvest storage strategies. However, the commonly used Magness-Taylor firmness tester cannot provide the firmness distribution at the pixel level, because it measures only one or a few sampling points where the probe is located. In this study, a laboratory-based hyperspectral imaging system in the wavelength range of 380-1030 nm was developed to detect and visualize the firmness distributions for different cross sections of peach pulp. Two calibration methods based on partial least squares regression (PLSR) and least squares support vector machines were applied to establish firmness calibration models. In addition, the successive projections algorithm, uninformative variable elimination, and competitive adaptive reweighted sampling (CARS) were applied separately to select the optimal wavelengths to improve the models' accuracy and robustness. CARS-PLSR without preprocessing was determined to be the best model for determining the firmness of peach pulp, yielding prediction results with a correlation coefficient of 0.852 and a residual predictive deviation of 1.739. Using this model, the firmness distributions for different cross sections of peach pulp were quantitatively visualized at the pixel level. The firmness histogram revealed the existence of a wide range of firmnesses inside peach pulp. The overall results demonstrated that hyperspectral imaging shows great potential for visualizing the spatial variations in the firmness distribution inside peach pulp at the pixel level, which can provide a more detailed understanding of the ripening process of peach fruits during the preharvest and postharvest periods.
