Abstract:Rapid and accurate analysis of food draws considerable attention in the modern pace of the world due to the close relationship between human health and food safety. Traditional detection technologies for food evaluation are often restricted by high cost, lengthy time, bulky instruments and trained personnel. The marriage of biosensors with smartphones enables the development of powerful analysis platforms for food evaluation including detection of food contaminants, toxins, pathogens, allergens and nutrition. Here, we provide an overview of recent developments on smartphone-based biosensors for portable food evaluation. Owing to operability, connectivity, portability and built-in sensors, smartphones have become ideal control, interaction and analysis tools in the on-site sensing systems. Fusion of smartphones with different kinds of sensitive and selective biosensors enables to develop portable and user-friendly analytical devices. In addition to introducing technical principles, detection methods and selected applications in food science, challenges and future perspectives for smartphone-based biosensors are also discussed.

Abstract:Pathogens are one of the supreme threats for the public health around the world in food supply chain. The on-site monitoring is an emerging trend for screening pathogens during the food processing and preserving. Traditional analytical tools have been unable to satisfy the current demands. Smartphones have enormous potentials for achieving on-site detection of foodborne pathogens, with intrinsic advantages such as small size, high accessibility, fast processing speed, and powerful imaging capacity. This review aims to synthesize the current advances in smartphone-assisted biosensors (SABs) for sensing foodborne pathogens, and briefly put forward the problem that consist in the research. We present the role of nanotechnology and recognition modes targeting foodborne pathogens in SABs, and discuss the signal conversion platforms coupling with smartphone. The challenges and perspectives in SABs are also proposed. The smartphone analytics area is moving forward, and it much be subject to careful quality standards and validation.

Abstract:The cell phone has been merely used for image acquisition and transmission in the last decades. Owing to the recent technological progress, its new generation, i.e., the smartphone, draws remarkable attention to food quality assessment with versatile applications. Smartphones possess high-resolution cameras, enabling them to be used instead of digital cameras in the computer vision system. Furthermore, their programmability and portability have recently encouraged researchers to introduce smartphone-based image processing in food analytical studies. This promising approach has advantages such as high sensing capability, being user friendly, and cost-effective over the conventional method, and therefore might be considered an emerging nondestructive technique for quality control purposes. However, there is a great effort to tackle implementation, calibration, as well as industrialization issues. In this context, this review aims to highlight the most recent studies of smartphone-based imaging systems in various food systems such as dairy, meat, fruit, and vegetables. Besides, the existing challenges and future trends for applying smartphones in food quality control are discussed. Although moving the computer vision systems toward a portable tool like a smartphone improves its versatility, more research works are needed to resolve its set-up weakness and limitations.

Abstract:Background: Recent advances in signal processing technology and computational power have increased the attention towards computer vision-based techniques in diverse applications such as agriculture, food processing, biomedical, and military. Especially in agricultural and food processing, computer vision can replace most of the manual methods for screening of seed, grain and food quality. Scope and approach: The objective of present study is to review the recent advancements in computer vision techniques for predicting quality of various raw materials and food products. This review paper is focused on the quality determination of grains, vegetables, fruits, beverages, meat, sea food and edible oils using Digital Image Processing (DIP). Several studies have reported the successful applications of DIP techniques for feature extraction, classification and quality prediction of foods. DIP algorithms are used to extract the significant features from images which are further used as input for machine learning (ML) algorithms to classify them based on different criteria. These feature extraction methods have been improved by Deep Learning (DL) algorithms. Features can be automatically extracted by DL algorithms resulting in higher accuracy. DL algorithms require huge data management and computational resources which can be a major limitation. Key findings and conclusion: A significant literature is available for quality estimation of food products by using computer vision algorithms, but they lack commercial exploitation. Android based applications have not yet been developed for this specific purpose. User friendly, low cost and portable devices equipped for quality estimation would be helpful for rapid quality measurement of food products in real time.

Abstract:Smartphone has been widely integrated with sensors, such as test strips, sensor chips, and hand-held detectors, for biochemical detections due to its portability and ubiquitous availability. Utilizing built-in function modules, smartphone is often employed as controller, analyzer, and displayer for rapid, real-time, and point-of-care monitoring, which can significantly simplify design and reduce cost of the detecting systems. This paper presents a review of biosensors and bioelectronics on smartphone for portable biochemical detections. The biosensors and bioelectronics based on smartphone can mainly be classified into biosensors using optics, surface plasmon resonance, electrochemistry, and near-field communication. The developments of these biosensors and bioelectronics on smartphone are reviewed along with typical biochemical detecting cases. Sensor strategies, detector attachments, and coupling methods are highlighted to show designs of the compact, lightweight, and low-cost sensor systems. The performances and advantages of these designs are introduced with their applications in healthcare diagnosis, environment monitoring, and food evaluation. With advances in micro-manufacture, sensor technology, and miniaturized electronics, biosensor and bioelectronic devices on smartphone can be used to perform biochemical detections as common and convenient as electronic tag readout in foreseeable future.

Abstract:Heparin may be administered either prophylactically (to prevent postoperative thromboembolic complications) or therapeutically (when thrombosis has occurred) and the dosages are very different. In addition, low molecular weight heparins are now available, and usually reserved only for prevention of thrombosis. The biological monitoring of these different therapies has evolved, and in addition to the classical tests like the recalcified plasma clotting time or the APTT, it is now possible to use more specific tests like the amidolytic activity of anti-IIa or anti-Xa. None of the simple tests alone is satisfactory for the verification of the efficacy of the treatment on a formed thrombosis or for detecting patients at high risk of haemorrhage. At this present state of our knowledge, the association of two of the preceding tests is recommended as any discrepancy could lead to the detection of an associated, unrecognised abnormality such as a circulating anticoagulant factor or thrombocytopaenia. The monitoring of classical prophylactic treatment generally only requires a very limited monitoring.

Abstract:The deficiency in rapid and in-field detection methods and portable devices that are reliable, easy-to-use, and low cost, results in the difficulties to uphold the high safety standards in China. In this study, we introduce a rapid and cost-effective smartphone-based method for point-of-need food safety inspection, which employs aptamer-conjugated AuNPs as the colorimetric indicator, and a battery-powered optosensing accessory attached to the camera of a smartphone for transmission images capture. A user-friendly and easy-to-use Android application is developed for automatic digital image processing and result reporting. Streptomycin (STR) is selected as the proof-of-concept target, and its specific quantitation can be realized with a LOD of 12.3 nM (8.97 μg kg-1) using the reported smartphone-based method. The quantitation of STR in honey, milk and tap water confirm the reliability and applicability of the reported method. The extremely high acceptance of smartphone in remote and metropolitan areas of China and ease-of-use of the reported method facilitate active food contaminant and toxicant screening, thus making the implementation of the whole food supply chain monitoring and surveillance possible and hence significantly improving the current Chinese food safety control system.

Abstract:Development of efficient and portable biosensor to achieve the accurate onsite detection of food contaminants is of very great significance for safeguarding food safety and human health. With the popularity of smartphone, the digital imaging feature makes it to be an outstanding analytical platform to develop the point-of-care testing sensors. Compared with single-emission fluorescent assay, the ratiometric fluorescent assay possesses the built-in self-calibration function to avoid the interferences caused by various target-independent factors, circumventing/reducing false positive result output, thus improving the detection accuracy and expanding the dynamic detection range in complicated food matrixes. Based on these, vast efforts focus on integrating smartphone with ratiometric fluorescent strategies to develop portable sensors for realizing the onsite visual detection of food contaminants in a rapid, low cost, reliable, and even easy to implement in resource-limited areas way. In this review, we summarize the recent development of ratiometric fluorescent signals-driven smartphone-based sensors for onsite visual detection of food contaminants (e.g., antibiotics, pesticides, & harmful ions), discuss the confronting challenges, and propose an outlook on the future of this advanced analytical technology to help better achieve the precisely onsite detection of food contaminants, ensuring food safety and human health.

Smartphone video imaging: A versatile, low-cost technology for food authentication

Abstract:This study presents a low-cost smartphone-based imaging technique called smartphone video imaging (SVI) to capture short videos of samples that are illuminated by a colour-changing screen. Assisted by artificial intelligence, the study develops new capabilities to make SVI a versatile imaging technique such as the hyperspectral imaging (HSI). SVI enables classification of samples with heterogeneous contents, spatial representation of analyte contents and reconstruction of hyperspectral images from videos. When integrated with a residual neural network, SVI outperforms traditional computer vision methods for ginseng classification. Moreover, the technique effectively maps the spatial distribution of saffron purity in powder mixtures with predictive performance that is comparable to that of HSI. In addition, SVI combined with the U-Net deep learning module can produce high-quality images that closely resemble the target images acquired by HSI. These results suggest that SVI can serve as a consumer-oriented solution for food authentication.

Abstract:A smartphone-based analysis system is favored for point-of-care testing applications. The present work proposes a novel micro-spectroscopy/imaging system comprising a portable spectrometer as an optical sensor and a compact homemade microscope to acquire the image and spectra of micron-scale regions. Protein concentration quantification based on the bicinchoninic acid method was demonstrated with the proposed micro-spectroscopy/imaging system to analyse the spectrometer signals. Morphologies of onion endothelial and human breast cancer cells, used as biological sample models, were characterized to demonstrate the microscopic imaging capacity of the device. The ability to simultaneously obtain morphological and spectral information using the proposed portable device was demonstrated by examining the 10 mu m sub-pixels of a smartphone screen. These results highlight the potential for adopting a smartphone-based micro-spectroscopy/imaging system for point-of-care testing.

Abstract:The development of food hazard factor (FHF) detection has been tending towards on-site inspection and mobile law enforcement, and simple, fast and affordable analysis technology is especially needed to ensure food safety and quality. This review comprehensively summarizes the progress in research on smartphone-assisted MIP optosensors, including their construction, molecular recognition and signal response mechanisms, and promising applications for on-site FHF detection. The types of fluorescent response elements and the methods for achieving integration between fluorescent response elements, and MIPs are further discussed. Importantly, state-of-the-art applications of smartphone-assisted MIP sensors in the field of food safety for on-site FHF detection based on single-, dual-, and multi-emission fluorescence responses are comprehensively summarized. This review focuses on the key issues of the accuracy and sensitivity of smartphone-assisted sensors and notes that the integration of highly selective MIPs and highly sensitive fluorescent response elements can significantly improve the feasibility of smartphone-assisted on-site detection.

Abstract:This paper discusses modularization as a mechanism for improving the flexibility and comprehensibility of a system while allowing the shortening of its development time. The effectiveness of a “modularization” is dependent upon the criteria used in dividing the system into modules. A system design problem is presented and both a conventional and unconventional decomposition are described. It is shown that the unconventional decompositions have distinct advantages for the goals outlined. The criteria used in arriving at the decompositions are discussed. The unconventional decomposition, if implemented with the conventional assumption that a module consists of one or more subroutines, will be less efficient in most cases. An alternative approach to implementation which does not have this effect is sketched.

Abstract:Presently, the traditional methods employed for detecting livestock and poultry meat predominantly involve sensory evaluation conducted by humans, chemical index detection, and microbial detection. While these methods demonstrate commendable accuracy in detection, their application becomes more challenging when applied to large-scale production by enterprises. Compared with traditional detection methods, machine vision and hyperspectral technology can realize real-time online detection of large throughput because of their advantages of high efficiency, accuracy, and non-contact measurement, so they have been widely concerned by researchers. Based on this, in order to further enhance the accuracy of online quality detection for livestock and poultry meat, this article presents a comprehensive overview of methods based on machine vision, hyperspectral, and multi-sensor information fusion technologies. This review encompasses an examination of the current research status and the latest advancements in these methodologies while also deliberating on potential future development trends. The ultimate objective is to provide pertinent information and serve as a valuable research resource for the non-destructive online quality detection of livestock and poultry meat.

Abstract:Rapid and accurate detection of genetically modified crops (GMC) is significant for crop supervision and genetically modified product labeling. For field detection of GMC, the rapidity and simplicity of the sample pretreatment and detection process are very important. Simplifying the extraction process of DNA in crops and speeding up the detection process are the technical problems that need to be solved. Therefore, this paper provides a field detection method for GMC. First, the selected universal LAMP primers of the chloroplast gene can be used to detect reference genes in nine crops with the most transgenic detection needs. The universal primers of reference genes can not only improve the accuracy of detection, but also omit the design and synthesis of reference gene primers in different crops. Second, a high concentration of DNA can be obtained using simple and fast DNA extraction methods within 5 min. The specific concentration of GuHCl in lysis buffer can accelerate the subsequent nucleic acid amplification reaction. Third, a new probe-LAMP method was established, with high reaction speed and specificity. Using the dual probe-LAMP for transgenic and reference genes in a handheld nucleic acid detector, the detection of GMC can be completed within 25 min. Two different fluorescence signals generated from the LAMP reaction are processed through a special logic gate, and finally three kinds of results of "Positive", "Negative" and "Invalid" are output on a smartphone. This method from sample processing to intelligent result output can achieve accurate, rapid, simple, low-cost, pollution-free field detection of GMC.

Abstract:Agricultural products need to be inspected for quality and safety, and the issue of safety of agricultural products caused by quality is frequently investigated. Safety testing should be carried out before agricultural products are consumed. The existing technologies for inspecting agricultural products are time-consuming and require complex operation, and there is motivation to develop a rapid, safe, and non-destructive inspection technology. In recent years, with the continuous progress of THz technology, THz spectral imaging, with the advantages of its unique characteristics, such as low energies, superior spatial resolution, and high sensitivity to water, has been recognized as an efficient and feasible identification tool, which has been widely used for the qualitative and quantitative analyses of agricultural production. In this paper, the current main performance achievements of the use of THz images are presented. In addition, recent advances in the application of THz spectral imaging technology for inspection of agricultural products are reviewed, including internal component detection, seed classification, pesticide residues detection, and foreign body and packaging inspection. Furthermore, machine learning methods applied in THz spectral imaging are discussed. Finally, the existing problems of THz spectral imaging technology are analyzed, and future research directions for THz spectral imaging technology are proposed. Recent rapid development of THz spectral imaging has demonstrated the advantages of THz radiation and its potential application in agricultural products. The rapid development of THz spectroscopic imaging combined with deep learning can be expected to have great potential for widespread application in the fields of agriculture and food engineering.

It has become the development trend of agricultural products and food inspection work to replace manual operation with visual technology. By extracting the size, shape, color, texture and other characteristics of agricultural products and foods, combined with the prediction model, the digital image processing method can realize the non-contact and non-damage treatment of agricultural products and foods. This paper summarizes the application research and development of computer vision technology in agricultural products and food inspection at home and abroad.

Abstract:As an integral part of daily dietary intake, the market demand for fruits and vegetables is continuously growing. However, traditional methods for assessing the quality of fruits and vegetables are prone to subjective influences, destructive to samples, and fail to comprehensively reflect internal quality, thereby resulting in various shortcomings in ensuring food safety and quality control. Over the past few decades, imaging technologies have rapidly evolved and been widely employed in nondestructive detection of fruit and vegetable quality. This paper offers a thorough overview of recent advancements in nondestructive imaging technologies for assessing the quality of fruits and vegetables, including hyperspectral imaging (HSI), fluorescence imaging (FI), magnetic resonance imaging (MRI), thermal imaging (TI), terahertz imaging, X-ray imaging (XRI), ultrasonic imaging, and microwave imaging (MWI). The principles and applications of these imaging techniques in nondestructive testing are summarized. The challenges and future trends of these technologies are discussed.

Abstract:<p>Digital image colorimetry (DIC) on smartphone is regarded as a powerful, fast and low-cost analysis method to measure target analyte with color changes of digital image obtained by the built-in camera. We summarized the basic procedure of DIC, the color spaces (RGB, CMYK, HSB/HSL, CIE XYZ, L*a*b*, and YUV), the principal architectures (tools for capturing image, lighting conditions, and color quantification APPs and DIC APPs), and current status of DIC on smartphone in analysis of metals/heavy metals, herbicides, pesticides, antibiotics, biological and medical indicators, natural compounds, and bacteria/viruses. The advantages and disadvantages of DIC are also revealed. Nowadays, DIC on smartphone must be further refined with controlled geometry and standard lighting sources to become robust and reliable analytical procedures. And it will be improved in the near future with the continuous development of smartphones owing to the rapid development of smartphone's camera technology and the continuous optimization of related software.</p>
