Abstract:Roasted green tea exhibits undesirable dark green that can seriously affect sensory quality, market price, and consumer acceptance. The aim of this work was to propose a method of improving the appearance of the roasted green tea. In this study, rehydration with freeze-drying (RFD) was used to recolour the tea leaves by redistributing the endogenous pigments. The results indicated that the colour of the roasted green tea changed from dark green to bright green after the RFD treatment, the values of L* and b* were significantly increased (P<0.05), and the value of a* was significantly decreased (P<0.05). In addition, the RFD treatment making the yellow-green pigments transfer onto the surface of the tea leaves also induced a change in pigment contents, including chlorophylls, carotenoids, and flavonoid glycosides. The well-defined optimum parameters for the rehydration process were moisture content of tea leaves at 35 per cent, water temperature 25 degrees C, and a standing time of 1.5 h.

Abstract:The yellowing process is the crucial step to form the characteristic sensory and chemical properties of yellow tea. To investigate the chemical changes and the associations with sensory traits during yellowing, yellow teas with different yellowing times (0-13 h) were prepared for sensory evaluation and chemical analysis. The intensities of umami and green-tea aroma were reduced whereas sweet taste, mellow taste and sweet aroma were increased under long-term yellowing treatment. A total of 230 chemical constituents were determined, among which 25 non-volatiles and 42 volatiles were the key chemical contributors to sensory traits based on orthogonal partial least squares discrimination analysis (OPLS-DA), multiple factor analysis (MFA) and multidimensional alignment (MDA) analysis. The decrease in catechins, flavonol glycosides and caffeine and the increase in certain amino acids contributed to the elevated sweet taste and mellow taste. The sweet, woody and herbal odorants and the fermented and fatty odorants were the key contributors to the characteristic sensory feature of yellow tea with sweet aroma and over-oxidation aroma, including 7 ketones, 5 alcohols, 1 aldehyde, 5 acids, 4 esters, 5 hydrocarbons, 1 phenolic compound and 1 sulfocompound. This study reveals the sensory trait-related chemical changes in the yellowing process of tea, which provides a theoretical basis for the optimization of the yellowing process and quality control of yellow tea.
The Effect of Technological Factors on Yellow Tea Quality and Taste-chemical Constituents in the Yellowing Process

Abstract:The yellowing process is the unique step during yellow tea process, which causes the tea to change bright yellow in tea-infusion and tea-leaf colors. This study focused on the effects of leaf-temperature, moisture content, relative humidity and ventilation frequency on the formation of yellow-tea using the uniform raw fresh-leaves. In addition, the correlations of yellowing-process technological-factors and chemical constituents were analyzed. The results show that the ventilation frequency and relative humidity were the key factors for yellowing-process and quality improvement using the uniform raw fresh-leaves and under the traditional temperature and moisture content. The yellow tea quality would be improved by increasing ventilation frequency and relative humidity under traditional yellowing temperature and moisture content. The principal component analysis indicates that ventilation frequency and relative humidity had high correlation with many taste-constituents, including catechins CG, ECG, GCG, flavones Myr-rha, Que-gal, and amino acids theanine, Ser, Gln, Arg, His, GABA. The results indicates that yellowing-process factors influenced the mellow-, thick- and sweet-tastes of yellow tea by affecting the taste-chemical constituents. As a result, the following yellowing process parameters were suitable for preparation of premium yellow tea with the taste of mellow, thick and sweet: leaf temperature of (45±2)℃, leaf moisture content of (37±3)%, relative humidity of (80±5)%, and ventilation frequency of once per 10 min.
Chemometrics-based investigation of non-volatiles/volatiles flavor of tencha (Camellia sinensis cv. Yabukita, Longjing 43 and Baiye 1)

Abstract:The increasing demand for tea consumption calls for the development of more products with distinct characteristics. The sensory quality of tencha is significantly determined by innate differences among tea cultivars. However, the correlations between the chemical composition and sensory traits of tencha are still unclear. To enhance the understanding of the flavor formation mechanism in tencha and further to develop new cultivars resources, we investigated non-volatiles and volatile metabolites as well as sensory traits in tencha from different tea cultivars (Camellia sinensis cv. Yabukita, Longjing 43 and Baiye 1); the relationships between the flavor traits and non-volatiles/volatiles were further evaluated by partial least squares - discriminate analysis (PLS-DA), multiple factor analysis (MFA) and multidimensional alignment (MDA) analysis. A total of 64 non-volatiles and 116 volatiles were detected in all samples, among which 71 metabolites were identified as key flavor-chemical contributors involving amino acids, flavonol glycosides, flavones, catechins, ketones, alcohols, hydrocarbons, aldehydes, esters and acids. The levels of taste-related amino acids, flavonol glycosides and gallic acid varied significantly among the tencha samples made from different tea cultivars. All the samples exhibited typical quality characteristics of tencha. The tencha from Camellia sinensis cv. Longjing 43 and Camellia sinensis cv. Baiye 1 (cultivated in the open) exhibited higher levels of amino acids and gallic acid, which were associated with the umami taste and mellow taste of tea infusion. Abundant flavonol glycosides were related to the astringency, while partial tri-glycosides specifically quercetin-3-O-galactoside-rhamnoside-glucoside and total of flavonol galactoside-rhamnoside-glucoside were associated with mellow taste. The floral alcohols were identified as significant contributors to the refreshing aroma traits of tencha. The green, almond-like, acidic and fruity odorants were associated with a green and fresh aroma, while the green, cheesy and waxy odorants such as ketones, esters, acids and hydrocarbons were associated with seaweed-like aroma. This study provides insight into sensory-related chemical profiles of tencha from different tea cultivars, supplying valuable information on flavor and quality identification for tencha.
Oxygen-enriched Fermentation Improves the Taste of Black Tea by Reducing the Bitter and Astringent Metabolites

Abstract:Oxygen involved fermentation is generally recognized as the critical process for the formation of quality of black tea. However, the specific role of oxygen plays in taste-related metabolites' alteration has not been illustrated clearly. In the present work, a series of fermentation systems with different oxygen concentrations were used to investigate the mechanism of the effects of oxygen on the quality and nonvolatile metabolites in black tea. The results showed that oxygen-enriched fermentation significantly improved the taste of black tea. And sixty-six metabolites, including catechins, theaflavins (TFs), proanthocyanidins, amino acids, flavonoid glycosides, and phenolic acids, were significantly different in the black teas fermented by three oxygen concentrations. Meanwhile, a 10-30% decrease in catechins, flavonoid glycosides and phenolic acids and a 5% increase in TFs, glutamate and glutamine in oxygen-enriched group, when compared to the control group, reduced astringency and bitterness and enhanced umami intensity. Furthermore, increased oxygen concentrations promoted the oxidation of catechins, flavonoid glycosides and some phenolic acids. And catechins oxidation in turn could accelerate the degradation of amino acids to form volatile aldehydes and also promote phenolic acids oxidation. Our results reveal the potential role of oxygen plays in the metabolites' alteration in black tea during fermentation, which gives a new insight into understanding the quality formation of black tea.

Abstract:Roasting process impacts the chemical profile and aroma of roasted tea. To compare the impacts of far-infrared irradiation and drum roasting treatments (light, medium and heavy degrees), the corresponding roasted teas were prepared from steamed green tea for chemical analyses and quantitative descriptive analysis on aroma, and correlations between volatiles and aroma attributes were studied. There were 8 catechins, 13 flavonol glycosides and 105 volatiles quantified. Under heavy roasting treatments, most catechins and flavonol glycosides decreased, and aldehydes, ketones, furans, pyrroles/pyrazines, and miscellaneous greatly increased, while far-infrared irradiated teas had distinct nutty aroma compared with the roasty and burnt odor of drum roasted teas. The weighted correlation network analysis result showed that 56 volatiles were closely correlated with the aroma attributes of roasted teas. This study reveals the differential chemical and sensory changes of roasted teas caused by different roasting processes, and provides a novel way for flavor chemistry study.
Infusion color and taste characteristic of Dafo Longjing tea processed from different cultivars

Abstract:Dafo Longjing tea, as one of top ten famous teas in Zhejiang Province, is mainly produced in Xinchang County and popular with consumers because of its fresh-tender aroma and soft-mellow taste. It is significantly different from other kinds of Longjing teas including famous Xihu-Longjing tea, and occupies large market share; however, studies on quality features and related components of Dafo Longjing tea are rather few at present. In order to delve deeply into the mechanism of quality formation of Dafo Longjing tea, systematic analyses of correlation between liquor-taste properties and chemical constituents were performed in this study. Dafo Longjing teas were processed by traditional processing procedure with fresh leaf from cultivars"Zhenong 113","Pingyang- tezao tea","Yingshuang","Longjing 43","Jiaming 1","Cuifeng","Baiye 1"and"Jiukeng". The quality of the made teas was assessed by sensory evaluation, which showed that all of the samples made from different cultivars were accorded with the typical characteristic of flat, straight and bright appearance. The overall qualities of samples from"Longjing 43","Yingshuang"and"Jiaming 1"were superior to others, with the score of 94.80, 94.50 and 94.50 respectively. Characteristic constituents in tea samples were determined by high performance liquid chromatography. The result indicated that the"Jiukeng"and"Cuifeng"were with high content of catechins, and"Longjing 43"was with high content of gallic acid, and"Baiye 1"was with high content of amino acids. Flavonol glycosides, as essential functional ingredients with low content, were different in content among all the eight tea cultivars. As color indicators and representative of light-dark, red-green and yellow-blue degree respectively, values of L, a, and b were read to analyze the color difference of tea infusion. The result combined with sensory evaluation suggested that Dafo Longjing tea with high brightness and moderate yellow-green degree had good quality. What's more, the result of tea infusion color difference analysis showed significant correlation with sensory evaluation, indicating that liquid quality of Dafo Longjing teas could be quantitative description by color indicators. Taken chemical determination together with color indicator analysis, we found that flavonol glycosides, especially myricetin glycosides and quercetin glycosides, had a significant impact on liquid color quality. Signal factor evaluation of taste characteristics could make sensory concept concretely and vividly, helping to understand product's features. In this study, taste factors of umami, sweet, bitter, astringent and kokumi were scored by sensory experts. The result showed that bitter and astringent as important factors were speculated to have significant impact on taste quality of Dafo Longjing tea. In combination with quantitative analysis of chemical constituents, we found that flavonol glycosides were significantly correlated with taste factors of bitter, astringent and kokumi. Above all, color- indicator determination and signal factor evaluation can make sensory description of liquid and taste concretely and vividly. Moreover, flavonol glycosides as important chemical constituents have significant impact on liquid and taste quality, though with low content in Dafo Longjing tea. In the future, studies on the interaction between flavonol glycosides and other components will be explored further to illuminate the function mechanism of characteristic flavor.

Abstract:Abstract— The distribution of latex microspheres (1·1 μ diam) has been investigated in‐vivo, as a potential passive targeted system for the treatment of inflammation. Microspheres administered orally were found in the circulation and in inflamed tissues and exudates of inflammatory air pouches in rats. Oral absorption was also found in a rabbit. Particles administered directly into the circulation also penetrated into the air pouch tissues and fluids. The possibility of using microspheres as a passive targeted system for the treatment of inflammation is discussed.

Abstract:Yellow tea is a lightly fermented tea with unique sensory qualities and health benefits. However, chemical composition and sensory quality of yellow tea products have rarely been studied. 12 representative yellow teas, which were basically covered the main products of yellow tea, were chosen in this study. Combined analysis of non-targeted/targeted metabolomics and electronic sensor technologies (E-eye, E-nose, E-tongue) revealed the chemical and sensor variation. The results showed that yellow big tea differed greatly from yellow bud teas and yellow little teas, but yellow bud teas could not be effectively distinguished from yellow little teas based on chemical constituents and electronic sensory characteristics. Sensor variation of yellow teas might be attributed to some compounds related to bitterness and aftertaste-bitterness (4′-dehydroxylated gallocatechin-3- O -gallate, dehydrotheasinensin C, myricitin 3- O -galactoside, phloroglucinol), aftertaste-astringency (methyl gallate, 1,5-digalloylglucose, 2,6-digalloylglucose), and sweetness (maltotriose). This study provided a comprehensive understanding of yellow tea on chemical composition and sensory quality.

Abstract:“Yinghong 9” is a widely cultivated large-leaf variety in South China, and the black tea made from it has a high aroma and strong sweet flavor. “Huangyu” is a light-sensitive tea variety with yellow leaves. It was cultivated from the bud-mutation of “Yinghong 9” and has a very low level of chlorophyll during young shoot development. Due to chlorophyll being involved in carbon fixation and assimilation, the changes in photosynthesis might potentially affect the accumulation of flavor metabolites, as well as the quality of “Huangyu” tea. Although “Huangyu” has a golden yellow color and high amino acid content, the mechanism underlying the formation of leaf color and drinking value remains unclear. The widely targeted metabolomics and GC-MS analysis were performed to reveal the differences of key metabolites in fresh and fermented leaves between “Yinghong 9” and “Huangyu.” The results showed that tea polyphenols, total chlorophyll, and carotenoids were more abundant in “Yinghong 9.” Targeted metabolomics analysis indicated that kaempferol-3-glycoside was more abundant in “Yinghong 9,” while “Huangyu” had a higher ratio of kaempferol-3-glucoside to kaempferol-3-galactoside. Compared with “Yinghong 9” fresh leaves, the contents of zeaxanthin and zeaxanthin palmitate were significantly higher in “Huangyu.” The contents of α-farnesene, β-cyclocitral, nerolidol, and trans- geranylacetone, which were from carotenoid degradation and involved in flowery-fruity-like flavor in “Huangyu” fermented leaves, were higher than those of “Yinghong 9.” Our results indicated that “Huangyu” was suitable for manufacturing non-fermented tea because of its yellow leaf and flowery-fruity-like compounds from carotenoid degradation.

Abstract:Maillard reaction products (MRPs) produced during thermal processing of tea are intimately related to its flavor. Our recent work revealed that both levels of L-theanine and D-galacturonic acid in tea leaves decreased dramatically during drying, whereas the specific MRPs from L-theanine and D-galacturonic acid remain elusive. Here, the MRPs formed from L-theanine and D-galacturonic acid were investigated and their taste characteristics and the involved mechanisms were explored. Two novel MRPs from L-theanine and D-galacturonic acid were identified as 1-(1-carboxy-4-(ethylamino)-4-oxobutyl)-3-hydroxypyridin-1-ium (MRP 1) and 2-(2-formyl-1Hpyrrole-1-yl) theanine (MRP 2). MRP 1 and MRP 2 accumulated in dark tea and black tea and were associated with sour (threshold, 0.25 mg/mL) and astringent tastes and an umami taste (threshold, 0.18 mg/mL), respectively. Molecular docking revealed that the taste characteristics of MRPs may be due to strong binding to umami taste receptor proteins (CASR, T1R1/T1R3) and the sour taste protein OTOP1 via hydrogen bonds and hydrophobic interactions.

Abstract:Samples of Korean and Chinese roasted green teas were collected from tea markets and their sensory qualities were investigated by sensory quality panelists and chemical and color difference analysis.The results showed that there was not significant difference between sensory qualities of Korean and Chinese roasted green tea.The Korean roasted green tea had less contents of moisture and caffeine,but higher content of amino acids and water-extractable solids.The liquor color of Korean roasted green tea had higher lightness but lighter color than Chinese roasted green tea.

Abstract:Tea's biochemical compounds and flavor quality vary depending on its grade ranking. Dianhong Congou black tea (DCT) is a unique tea category produced using the large-leaf tea varieties from Yunnan, China. To date, the flavor characteristics and critical components of two grades of high-quality DCT, single-bud-grade DCT (BDCT), and special-grade DCT (SDCT) manufactured mainly with single buds and buds with one leaf, respectively, are far from clear. Herein, comparisons of two grades were performed by the integration of human sensory evaluation, an electronic tongue, chromatic differences, the quantification of major components, and metabolomics. The BDCT possessed a brisk, umami taste and a brighter infusion color, while the SDCT presented a comprehensive taste and redder liquor color. Quantification analysis showed that the levels of total polyphenols, catechins, and theaflavins (TFs) were significantly higher in the BDCT. Fifty-six different key compounds were screened by metabolomics, including catechins, flavone/flavonol glycosides, amino acids, phenolic acids, etc. Correlation analysis revealed that the sensory features of the BDCT and SDCT were attributed to their higher contents of catechins, TFs, theogallin, digalloylglucose, and accumulations of thearubigins (TRs), flavone/flavonol glycosides, and soluble sugars, respectively. This report is the first to focus on the comprehensive evaluation of the biochemical compositions and sensory characteristics of two grades of high-quality DCT, advancing the understanding of DCT from a multi-dimensional perspective.

Abstract:Rolling is a crucial step in congou black tea manufacturing. Herein, the influence of rolling time (50, 75, 100, 125 min) on the sensory quality and chemical composition of black tea was investigated by human sensory evaluation, electronic tongue, colorimetric analysis, tea pigments quantification and liquid chromatography-mass spectrometry (LC-MS) based non-targeted metabolomics. With increasing rolling time, tea liquor color attributes a*, b*, C* and pigments theaflavins (TFs), thearubigins (TRs), and theabrownins (TBs) were significantly increased. Fifty-two key differential metabolites were identified among four treatments. Catechins, dimeric/trimeric catechins, amino acids were significantly declined. The changes of flavonol/flavone glycosides depended on the linkage pattern. Flavonol O-glycosides such as myricetin 3-O-glucoside were decreased, whereas flavone C-glycosides such as vitexin were increased. These results suggested that different rolling times influenced the catechins oxidative polymerization, flavonol O-glycosides hydrolysis and amino acids oxidation. Black tea by 100-min rolling rendered optimal sensory quality, with highest umami and low bitter intensities in electronic tongue, and higher quality index (10 TFs + TRs)/TBs. Similar result was obtained in a validation batch in a different year. This study provides novel insights into the effect of rolling on black tea quality, which may serve as guidance for the manufacturing of high-quality congou black tea.
Contribution of tea stems to large-leaf yellow tea aroma

Abstract:Large-leaf yellow tea (LYT) is processed from both leaves and stems, resulting in a distinctive rice crust-like aroma. Tea stems may contribute differently to the aroma of LYT than leaves. This study aimed to clarify the specific contribution of stems to LYT. The volatile compounds in different components of LYT were extracted and analyzed using a combination of headspace solid-phase microextraction and stir bar sorptive extraction coupled with gas chromatography-olfactory-mass spectrometry. The results revealed high concentrations of compounds with roasty attributes in stems such as 2-ethyl-3,5-dimethylpyrazine (OAV 153-208) and 2-ethyl-3,6-dimethylpyrazine (OAV 111-140). Aroma recombination and addition experiments confirmed that the roasty aroma provided by stems plays a pivotal role in the formation of the distinctive flavor of LYT. This study offers novel insights into the contribution of stems to the aroma of LYT, which can be used for processing and quality enhancement of roasted tea.

In brief, concrete bridge decks, some new, started to spall, then delaminate, then come apart in relatively large chunks. The problem was quickly traced to steel corrosion, specifically to corrosion of the steel in the upper mat of concrete bridge decks; and more specifically to corrosion induced by chloride ions penetrating from the surface of the bridge deck. The chloride is derived from de-icing salt (usually sodium chloride but occasionally calcium chloride) applied to keep the bridge deck clear during winter snows. Researchers established that chloride ions that penetrate to the vicinity of the steel interfere with the protective “passivating” layer of oxygen that ordinarily keeps steel embedded in concrete from rusting. The rate of corrosion of embedded steel depends on several factors, but most pertinently, in this connection, on the pH or alkalinity of the pore solution of the concrete and on the amount of dissolved chloride pre sent. Generally speaking, high levels of alkali (high pH levels) protect the steel; however, if the concentration of chloride ions gets too high, the protective action tends to break down regardless of how high the alkalinity may be. The concrete bridge deck corrosion problem is a bit different from most corrosion problems in that the damage is not due to loss of metal of the corroding steel but due rather to the buildup of the hydrated iron oxide corrosion product within the concrete. The hydrated iron oxide is bulky and as it builds up in the restricted pore spaces within the con crete it exerts expansive force that tends to lift up the concrete cover above the level of the steel. A layer of separation is thus produced; the loosened concrete above the layer then tends to spall and break up under the action of traffic. Abstract:While key aroma and taste compounds of Keemun Congou black teas (KCBT) form during aeration and thermal stages, it is still unknown whether these processing stages also produce non-volatile color-contributing metabolites. Through integrating metabolomics with correlation and ridge regression analyses, 190 metabolites were identified as marker compounds that reclassified 15 KCBT samples collected from five processing stages into four groups. Meanwhile, the results of quantification and heatmap analysis showed that the concentrations of theaflavins and theasinensins significantly increased, as catechin decreased, after rolling, while flavonoid aglycones and polyunsaturated fatty acids increased throughout drying. Regression analysis between marker compound levels and total color difference values (∆E) revealed that the major color contributors were 3,5-dicaffeoylquinic acid, glucosyl-dehydrodigallic acid, theacitrin A, kaempferol-O-robinobioside, and (-)-epigallocatechin, with regression coefficients (absolute value) exceeding 4 × 10-2. Overall, the present study confirmed that rolling and drying were the two vital stages responsible for the color formation of KCBT.
Decoding the Chemical Signatures and Sensory Profiles of Enshi Yulu: Insights from Diverse Tea Cultivars

Abstract:Enshi Yulu, a renowned Chinese steamed green tea, is highly valued for its unique sensory attributes. To enhance our comprehensive understanding of the metabolic variation induced by steaming fixation, we investigated the overall chemical profiles and organoleptic quality of Enshi Yulu from different tea cultivars (Longjing 43, Xiapu Chunbolv, and Zhongcha 108). The relationships between sensory traits and non-volatiles/volatiles were evaluated. A total of 58 volatiles and 18 non-volatiles were identified as characteristic compounds for discriminating among the three tea cultivars, and the majority were correlated with sensory attributes. The "mellow" taste was associated with L-aspartic acid, L-asparagine, L-tyrosine, L-valine, EGC, EC, and ECG, while gallic acid and theobromine contributed to the "astringent" taste. "Kokumi" contributors were identified as L-methionine, L-lysine, and GCG. Enshi Yulu displayed a "pure" and "clean and refreshing" aroma associated with similar volatiles like benzyl alcohol, δ-cadinene, and muurolol. The composition of volatile compounds related to the "chestnut" flavor was complex, including aromatic heterocycles, acids, ketones, terpenes, and terpene derivatives. The key contributors to the "fresh" flavor were identified as linalool oxides. This study provides valuable insights into the sensory-related chemical profiles of Enshi Yulu, offering essential information for flavor and quality identification of Enshi Yulu.
