Abstract:The purpose of this investigation was to explore aqueous glycerol as food grade solvent for rice bran poly-phenolic antioxidants extraction and investigate the antidiabetic and antiglycation potential of the extract and its major polyphenols. Response surface methodology (Box-Behnken design) was implemented to optimize experimental conditions for rice bran polyphenols and antioxidants extraction. The optimum conditions provided a very satisfactory outcome in total polyphenols (549.6 +/- 8.05 mg gallic acid equivalent per 100 g dry weight) and DPPH scavenging activity (57.83 +/- 1.8%). The chromatographic separation of the extract showed higher concentrations of ferulic acid, rho-coumaric acid and chiorogenic acid followed by caffeic acid, syringic acid and rutin. Moreover, the extract inhibited alpha-amylase, alpha-glucosidase, and lipase activity as 34.2 +/- 3.2%, 29.9 +/- 1.0%, and 12.4 +/- 2.3%, respectively. Furthermore, fructose readily forms Advanced Glycation End Products (AGEs) fluorescence with basic amino acids in low concentration in simulated intestinal digestion conditions. The extract inhibited AGEs formation by 52.6% at 20 mu L/mL. Our study indicated that the anti-diabetic and antiglycation potential of rice bran extract was mainly driven by the extract polyphenols. Rice bran glycerol extract could be employed as a natural antidiabetic and antiglycation remedy, and as economically and eco-friendly source of potent bioactive compounds with satisfactory outcome.

Abstract:Value-added processing with respect to rice milling has traditionally treated the rice bran layer as a homogenous material that contains significant concentrations of high-value components of interest for pharmaceutical and nutraceutical applications. Investigators have shown that high-value components in the rice bran layer vary from differences in kernel-thickness, bran fraction, rice variety, and environmental conditions during the growing season. The objectives of this study were to quantify the amount of rice bran removed at pre-selected milling times and to correlate the amount of rice bran removed at each milling time with the concentration of vitamin E, gamma-oryzanol, rice bran saccharide, and protein obtained. The ultimate goal of this research is to show that rice bran fractionation is a useful method to obtain targeted, nutrient-rich bran samples for value-added processing. Two long grain rice cultivars, Cheniere and Cypress, were milled at discrete times between 3 and 40 seconds using a McGill mill to obtain bran samples for analysis. Results showed that the highest oryzanol and protein concentrations were found in the outer portion of the rice bran layer, while the highest rice bran saccharide concentration was found in the inner portion of the bran layer. Vitamin E concentration showed no significant difference across the bran layer within a variety, though the highest magnitude of concentration occurs within the first 10 seconds of milling for both varieties. To extract the higher concentration of oryzanol and protein only the outer portion of the bran layer requires processing, while to extract the higher concentration of rice bran saccharide, only the inner portion of the bran layer requires processing. Rice bran fractionation allows for the selective use of portions of the bran layer and is advantageous for two reasons: (1) bran fractions contain higher concentrations of components of interest with respect to the overall bran layer average, and (2) less bran needs to be processed to obtain components of interest.

Abstract:Nanofibrillated celluloses (NFCs) have recently drawn much attention because of their exceptional physicochemical properties. However, the existing preparation procedures either produce low yields or severely degrade the cellulose and, moreover, are not energy efficient. The purpose of this study was to develop a novel process using ultrasonic homogenization to isolate fibrils from bamboo fiber (BF) with the assistance of negatively charged entities. The obtained samples were characterized by the degree of substitution (DS) of carboxymethyl, Fourier-transform infrared (FT-IR) spectroscopy, X-ray diffraction (XRD), thermogravimetric analysis, and transmission electron microscopy (TEM). The results showed that an NFC yield could be obtained above 70% through this route. The enzyme hydrolysis could enhance the surface charge of the fiber, and mechanical activation facilitates an increase in the DS. The disintegrating efficiency of the cellulose fibrils significantly depended on the input power of ultrasonication and the DS. FT-IR spectra confirmed the occurrence of the carboxymethylation reaction based on the appearance of the characteristic signal for the carboxyl group. From XRD analysis, it was observed that the presence of the carboxyl groups makes the isolation more efficient attributed to the ionic repulsion between the carboxylate groups of the cellulose chains.

Abstract:This study was designed to establish an efficient purification method for phenolic compounds from rice bran and to acquire insightful knowledge of purification impact on its chemical constituents, antioxidant and antidiabetic activity. Among the eight macroporous resins investigated, HPD-300 resin was verified to bosses superior adsorption and desorption qualities for the extract. Purification parameters were optimised. Eighteen phenolic compounds were identified using HPLC-PDA, the contents of ferulic acid and syringaldehyde were significantly (P < 0.05) higher than the other constituents. However, phenolic compounds concentrations varied significantly (P < 0.05) after HPD-300 resin purification. In addition, the extract exhibited a significant (P < 0.05) increase in total flavonoid contents, in vitro antioxidant (DPPH and FRAP) and antidiabetic (alpha-glucosidase and BSA-glycation inhibition) activity after HPD-300 resin treatment. These findings indicate that selection of resin and applying optimal purification condition is an appropriate economical approach for obtaining bioactive phenolic compounds from rice bran.

Abstract:Rice bran dietary fiber (ERBDF) subjected to pre-water-washing and complex enzyme treatment using heat-stable α-amylase, alcalase, and glucoamylase had significantly higher (p < 0.05) proportions of cellulose, hemicellulose, lignin, and lower proportions of lipid, protein, and starch than rice bran dietary fiber subjected to complex enzyme treatment without pre-water-washing. Cellulase modification of ERBDF significantly decreased (p < 0.05) cellulose, hemicellulose, starch, and protein contents while the relative lignin content increased. Cellulase modification significantly improved (p < 0.05) water-holding capacity, oil-holding capacity, swelling capacity, cholesterol absorption capacity, and glucose adsorption capacity, while decreasing the emulsifying capacity and glucose dialysis retardation index. The changes of physicochemical and functional properties of fiber samples after cellulase modification were attributed to the increased porosity of the fiber surface, greater exposure of binding sites caused by reduced crystallinity, and changes to the chemical composition.

Abstract:For the development of rice straw high value?added applications, a novel controllable fabrication of cellulose nanowhiskers from rice straw using a 2 , 2 , 6 , 6?tetramethylpiperidinooxy ( TEMPO)/NaBr/NaClO system by selective oxidization combined with mechanical homogenization was reported. Fourier transform infrared spectroscopy, scanning electron microscopy and X?ray diffraction were used to characterize the samples. The results show that rice straw mainly contains cellulose, hemicellulose and lignin, and the cellulose content increases significantly after chemical treatment, while hemicellulose and lignin content are decreased. Rice straw cross?section has many pores, and the internal surface are randomly distributed with different sizes of spherical particles. After chemical treatment, non?cellulose material is partially removed and the fiber surface becomes relatively smooth. Cellulose nanowhiskers after freeze drying are woven into multilayer mesh and have a diameter of 10-25 nm and a length of 200-400 nm. The crystallinities of rice straw and rice straw fiber are 29?76% and 30?28%, respectively and the crystallization degree of rice straw cellulose nanowhiskers is 40?71%. All of them show the crystal structure of cellulose I.

Abstract:This study reports the preparation (80 min) of rice husk (RH)-derived cellulose nanowhiskers (CNWs) via microwave-irradiation. The unique features of RH-CNWs and the intermediate products were validated with respect to the alteration of morphological structure, particle dimension, crystalline pattern, chemical compositions, functionalities, thermal stability and surface charge. With the integration of microwave heating (MW), the isolation of nano-sized fragments from the matrix of amorphous and non-cellulosic materials has been successfully accomplished, recorded a high conversion yield at 61.5%. The average length and diameter of RH-CNWs were 264.35 nm and 25.26 nm, respectively, recording an average aspect ratio at 10.47. X-ray diffraction analysis revealed a crystallinity index of 65.9%, and the diffraction pattern was identical to type-Iβ crystalline cellulose. Further clarifications with respect to the surface functionality, thermal stability and composition analyses have verified the successive esterification of sulfate functional groups over the surface of RH-CNWs, leading to a higher thermal stability and zeta-potential (ζ = − 44.50 mV). Given the explicit characteristics of MW, the synergistic interactions of microwave-chemical actions have offered the additional impact force and dipolar rotation, accelerating the cleavage of hydrogen bonds and complete removal of amorphous domains from the RH surface.

A sequential approach of alkali enzymatic extraction of dietary fiber from rice bran: Effects on structural, thermal, crystalline properties, and food application

Abstract:Rice bran is abundant in dietary fiber and is often referred to as the seventh nutrient, recognized for its numerous health benefits. The objective of the current study is to investigate the extraction of both soluble and insoluble dietary fiber from defatted rice bran (DRB) using an alkali-enzymatic treatment through response surface methodology. The independent variables like substrate percentage (5-30 %), enzyme concentration (1-50 µL/g), and treatment time (2-12 h) and dependent variables were the yield of soluble and insoluble DF. The highest extraction yield was observed with alkali enzyme concentration (50 µL/g) treatment, resulting in 2 % SDF and 59.5 % IDF at 24 h of extraction. The results indicate that cellulase-AC enzyme aids in the hydrolysis of higher polysaccharides, leading to structural alterations in DRB and an increase in DF yield. Furthermore, the disruption of intra-molecular hydrogen bonding between oligosaccharides and the starch matrix helps to increase in DF yield, was also confirmed through FTIR and SEM. The extracted DF soluble and insoluble was then used to develop rice porridge. Sensory evaluation using fuzzy logic analysis reported the highest scores for samples containing 0.5 % insoluble DF and 1.25 % soluble DF.
Extraction and Characterization of Rice Bran Polysaccharides and Their Derivative Preparation and Antioxidant Activity

Abstract:Abstract The crude polysaccharide of rice bran polysaccharide was extracted with water from defatted rice bran, and the optimal reaction conditions of the experiment were determined. The reaction temperature is 100°C, the reaction time is 5h, the solid-liquid ratio is 1:10; the concentration ratio of polysaccharide to Sevag reagent is 2:1, and rice polysaccharide is precipitated by ethanol insoluble property and ethanol. The ethanol concentration ratio is 3:1. Using the methods and conditions of this experiment, the maximum polysaccharide yield is 2.18%. Then the chemical structure of rice bran polysaccharide was analyzed by IR, UV and 13CNMR methods. Three rice bran polysaccharide derivatives were prepared and characterized: carboxymethylated rice bran polysaccharide, phosphorylated rice bran polysaccharide and acetylated rice bran polysaccharide. Also studied the antioxidant activity of rice bran polysaccharide and its derivatives (hydroxy radical ion scavenging ability, superoxide anion scavenging ability, anti-lipid peroxidation ability, reducing ability), and found that phosphorylated rice bran polysaccharide has good activity. The acetylated rice bran polysaccharide may weaken the original activity.

Abstract:Inspired by nature, cellulose extracted from plant wastes has been explored, due to its great potential as an alternative for synthetic fiber and filler that contributes to structural performance. The drive of this study was to extract, treat, and evaluate the characteristics of rice straw (RS) (Oryza sativa L.) cellulose as a biodegradable reinforcement to be utilized in polymer base materials. Two routes of extraction and treatment were performed via the pulping (Route 1) and chemo-mechanical methods (Route 2), in order to discover comparative characteristics of the synthesized cellulose fiber. Comprehensive characterization of RS cellulose was carried out to determine crystallinity, surface morphology, and chemical bonding properties, using X-ray diffraction (XRD), field emission scanning electron microscopy (FESEM), and Fourier transform infra-red (FTIR), respectively. The XRD test results showed that the crystallinity index (CI) of cellulose powder (CP) decreased after the surface modification treatment, Route 2, from 64.50 to 50.10% CI for modified cellulose powder (MCP), due to the surface alteration of cellulose structure. From Route 1, the crystallinity of the fibers decreased up to 33.5% (dissolve cellulose, DC) after the pulp went through the surface modification and dissolution processes, resulting from the transformation of cellulose phase into para-crystalline structure. FESEM micrographs displayed a significant reduction of raw RS diameter from 7.78 μm to 3.34 μm (treated by Route 1) and 1.06 μm (treated by Route 2). The extracted and treated cellulose via both routes, which was considerably dominated by cellulose II because of the high percentage of alkaline used, include the dissolve cellulose (DC). The dissolution process, using NMMO solvent, was performed on the pulp fiber produced by Route 1. The fiber change from cellulose I to cellulose II after undergoes the process. Thus, the dissolution process maintains cellulose II but turned the pulp to the cellulose solution. The acquired characteristics of cellulose from RS waste, extracted by the employed methods, have a considerably greater potential for further application in numerous industries. It was concluded that the great achievement of extracted RS is obtained the nanosized fibers after surface modification treatment, which is very useful for filler in structural composite applications.

Abstract:Background: As a renewable carbon source, biomass energy not only helps in resolving the management problems of lignocellulosic wastes, but also helps to alleviate the global climate change by controlling environmental pollution raised by their generation on a large scale. However, the bottleneck problem of extensive production of biofuels lies in the filamentous crystal structure of cellulose and the embedded connection with lignin in biomass that leads to poor accessibility, weak degradation and digestion by microorganisms. Some pretreatment methods have shown significant improvement of methane yield and production rate, but the promotion mechanism has not been thoroughly studied. Revealing the temporal and spatial effects of pretreatment on lignocellulose will greatly help deepen our understanding of the optimization mechanism of pretreatment, and promote efficient utilization of lignocellulosic biomass. Here, we propose an approach for qualitative, quantitative, and location analysis of subcellular lignocellulosic changes induced by alkali treatment based on label-free Raman microspectroscopy combined with chemometrics. Results: Firstly, the variations of rice straw induced by alkali treatment were characterized by the Raman spectra, and the Raman fingerprint characteristics for classification of rice straw were captured. Then, a label-free Raman chemical imaging strategy was executed to obtain subcellular distribution of the lignocellulose, in the strategy a serious interference of plant tissues' fluorescence background was effectively removed. Finally, the effects of alkali pretreatment on the subcellular spatial distribution of lignocellulose in different types of cells were discovered. Conclusions: The results demonstrated the mechanism of alkali treatment that promotes methane production in rice straw through anaerobic digestion by means of a systemic study of the evidence from the macroscopic measurement and Raman microscopic quantitative and localization two-angle views. Raman chemical imaging combined with chemometrics could nondestructively realize qualitative, quantitative, and location analysis of the lignocellulose of rice straw at a subcellular level in a label-free way, which was beneficial to optimize pretreatment for the improvement of biomass conversion efficiency and promote extensive utilization of biofuel.

Abstract:In order to develop high value-added rice straw residue biocomposites, nanocrystalline cellulose (NCC) from rice straw and chitosan (CS) were used as two main raw materials, the CS/NCC biocomposites were prepared by an acid hydrolysis-ultrasonic treatment and blending casting. The physicochemical properties and evaluation of interfacial compatibility on CS/NCC biocomposites were characterized by TEM, ZP analyzer, UV-vis, FTIR, SEM, XRD, TG, DSC, electron mechanical instrument and water absorption testing. The results reveal that a uniform rod-like or filamentary structure of NCC from rice straw, with the width distribution concentrated on the range of 10-15 nm and several hundred nanometers in length, can be effectively obtained by a relatively high ultrasonic power treatment with the same acid hydrolysis conditions. The superior interfacial compatibility of CS/NCC biocomposites with excellent tensile strength can be achieved at 5% NCC addition level due to optimal dispersion of NCC, strong hydrogen bonding and potential electrostatic interactions between CS and NCC. Additionally the thermal stability and water absorption of biocomposites increase, while the transparency rate, elongation at break decrease as the increase of NCC addition amount from 0% to 20%. Abstract:The paper presents the process of cellulose extraction from rice straw using water–alkaline solution treatment and the subsequent process of carboxymethylation of the obtained product when activated by microwave radiation. After mercerization of rice straw, the obtained product contained 89.2% cellulose and 6.7% lignin. The X-ray diffraction pattern of the obtained lignocellulose shows three diffraction peaks in the region typical for the polymorphic modification of cellulose Iβ (2θ = 15.50(78), 21.70(145), 34.70(52)). The degree of crystallinity was 65%. The product was heat-stable up to 247 °C. The synthesis of carboxymethylcellulose (CMC) based on the obtained product included successive processes of thermostating in alcohol–alkali solution and cellulose esterification reaction using monochloroacetic acid. To activate the carboxymethylation process, microwave radiation was used (350 W for 90 s), which made it possible to reduce the reaction time by more than 100 times. Functional group analysis of the carboxylated lignocellulose from rice straw was carried out using an FTIR spectrometer. In the IR spectra, a band with a maximum of 1742 cm−1 was recorded, corresponding to stretching vibrations of >C(O)OH groups. The degree of polymerization was recorded by mass spectrometry.

Abstract:This study investigated the improvement in the extraction of antioxidant phenolic compounds from a by-product of the food industry, rice bran, using hydrolytic enzymes. To this purpose, the optimization process of obtaining these compounds was carried out, as well as chemical characterization of the rice bran extracts by high performance liquid chromatography (HPLC) and the determination of their antioxidant activity. First, the parameters that affect the extraction process, such as the type on enzyme, temperature and pH of the solution, the extraction time and the enzyme concentration used for obtaining phenolic compounds were studied. The influence of these factors was later examined by characterizing the compounds obtained by HPLC, and the antioxidant activity of the extracts. The optimum conditions were: temperature 35 °C, pH 3.0 solution, extraction time 4 hours and cellulase content of 1.0%. In these conditions, extraction yield ranged from 3.45 ± 0.9 mg ferulic acid/100 g rice bran (without cellulase) to 14.3 ± 2.2 mg ferulic acid/100 g rice bran (with 1 % cellulase). Finally, the increases in antioxidant activity are lighter than those produced in the concentration of phenolic compounds, so we concluded that the enhancement in bioactivity is more limited when cellulase enzyme-assisted extractions were carried out in rice bran.

Abstract:This study investigated the effects of three oil production methods on the physicochemical properties of dietary fiber from rice bran flour, and the hypolipidemic effects of the dietary fibers were investigated in vitro and in vivo. The particle size results showed that the organic-solvent-impregnated rice bran meal dietary fiber (N-RBDF) had the smallest average particle size and the aqueous enzymatic rice bran meal dietary fiber (E-RBDF) had the narrowest particle size distribution. Scanning electron microscopy (SEM) results demonstrated that all three kinds of rice bran meal dietary fibers (RBDFs) were irregularly flaky. Fourier transform infrared spectroscopy (FT-IR) results revealed that the three RBDFs had similar reactive groups, and X-ray diffraction (XRD) results indicated that all three RBDFs were cellulose type I crystals. The results of thermogravimetric analysis showed that the lignin content of N-RBDF was significantly lower than that of the other two. Among the three kinds of RBDFs, E-RBDF had higher water retention capacity, swelling capacity, oil holding capacity, and adsorption capacity for cholesterol and sodium bile salts. The results of experimental studies in hyperlipidemic rats showed that all three kinds of RBDFs significantly reduced triglycerides (TG), total cholesterol (TC), and low-density lipoprotein cholesterol (LDL-C) and elevated high-density lipoprotein cholesterol (HDL-C) in the serum of hyperlipidemic rats; they also significantly lowered malondialdehyde (MDA) and elevated total superoxide dismutase (T-SOD) and glutathione peroxidase (GSH-Px) activities in the livers of rats. In addition, all three kinds of RBDFs decreased aminotransferase (ALT) and aminotransferase (AST) activity in serum and also improved liver steatosis and reduced atherosclerosis index (AI) in rats with hyperlipidemia. Our study provides a reference for the development and utilization of rice bran meal and the application of rice bran meal dietary fiber in food processing.

Abstract:The effects of extrusion cooking treatment with different parameters (when the screw speed was 250 rpm/min and the material moisture was 17 %, the extrusion cooking temperature were 100 °C, 120 °C, 140 °C, 160 °C, 180 °C, respectively; when the screw speed was 250 rpm/min and the extrusion cooking temperature was 160 °C, the material moisture were 11 %, 14 %, 17 %, 20 %, 23 %, respectively) on the functional, physicochemical and structural properties of soluble dietary fiber (SDF) from rice bran were investigated. The water and oil retention capacity (WRC and ORC), water solubility (WS), in vitro binding capacities (bile salt, cholesterol and glucose binding capacity) and antioxidant capacities of SDF were higher when extrusion cooking temperatures were 100 °C and 120 °C. The in vitro binding capacities and antioxidant capacities of SDF were higher when material moisture contents were 11 % and 14 %. However, the ORC, in vitro binding capacities and antioxidant capacities decreased when extrusion cooking temperature was higher than 140 °C and material moisture was higher than 14 %. The results of FT-IR spectrum indicated that the structure of SDF from rice bran was changed after extrusion cooking treatment. The extrusion cooking treatment at low temperature and low material moisture was more beneficial to the properties of SDF. This study may provide basic information for the utilization of SDF from rice bran with extrusion cooking treatment.

Abstract:Rice bran is a "treasure house of natural nutrition". Even so, utilization of rice bran is often ignored, and this has resulted in the wastage of nutrients. Polysaccharides are one of the active substances in rice bran that have gained widespread attention for their antioxidant, antitumor, immune-enhancing, antibacterial, and hypoglycemic properties. This review summarizes the extraction methods, structural characterization, bioactivity, and application of rice bran polysaccharides that have been developed and studied in recent years, laying a foundation for its development into foods and medicines. In addition, we also discuss the prospects for future research on rice bran polysaccharides.

Abstract:Rice bran is a by-product produced during rice processing. The present study aims to study the effect of three different modification methods (i.e. enzyme hydrolysis, fermentation, fermentation and enzymatic hydrolysis) on the microstructural and physicochemical characteristics of defatted rice bran dietary fiber. Results showed that all three modification methods influenced rice bran dietary fiber, but fermentation and enzymatic hydrolysis combined modification has the greatest impact. The content of arabinose, xylose, galactose increased significantly (p < 0.05) while the glucose content decreased significantly (p < 0.05). For its microstructural properties, there were more fragments on the surface of dietary fiber, the layered structure was severely damaged, the internal structure exposure was further increased, and the structure exhibited loose and porous morphology. The crystal type of modified rice bran dietary fiber remains unchanged in general while the enzymatic hydrolysis modification has the greatest impact on crystallinity which was decreased by 13.3%. The glucose adsorption capacity of dietary fiber was improved with fermentation and enzymatic hydrolysis modification, significantly (p < 0.05) increased by 66.1% and 57.2% in 100 mmol/L and 200 mmol/L glucose solutions.
Improving the Yield of Feruloyl Oligosaccharides from Rice Bran through Enzymatic Extrusion and Its Mechanism

Abstract:Rice bran, rich in feruloyl arabinoxylan, is a good source of feruloyl oligosaccharides (FOs). To prepare FOs, bran was often hydrolyzed by amylase and protease to remove starch and protein and then hydrolyzed by xylanase, which was time-consuming and had a low yield. To solve the above problems, enzymatic extrusion was used to treat rice bran, and the effects of traditional hydrolysis, a combination of traditional extrusion and hydrolysis (extrusion-hydrolysis) and enzymatic extrusion on the yield of FOs were investigated and compared in this study. It was found that traditional extrusion and enzymatic extrusion significantly increased the yield of FOs. Particularly, the yield of FOs resulting from enzymatic extrusion was increased to 5.78%, while the yield from traditional hydrolysis was 4.23%. Microscopy analysis showed that extrusion damaged the cell wall of bran, which might increase the accessibility of xylanase to arabinoxylan and the yield of FOs. Spectroscopy analysis suggested that FOs obtained by different pretreatments had similar structures. It was obvious that enzymatic extrusion saved the time for removal of starch and protein and increased the yield of FOs. In addition, the highest yield of FOs was found at the moisture content of 30% and the screw speed of 50 rpm. This study provided an efficient method for the preparation of FOs that is suitable for industrial production.

Abstract:The main purpose of this study was to investigate the composition, characterization and antioxidant activity of rice bran fermentation broth, and provide a new way for high-value utilization of rice bran. Firstly, we fermented rice bran with Hypsizigus marmoreus and purified fermentation broth with macroporous resins. We took feruloyl oligosaccharides (FOs) concentration as the measure index, and the results showed that the maximum concentration of FOs was 0.72 mmol/L on the 6th day of rice bran fermentation. We took D101 macroporous resin as adsorption resin for rice bran fermentation broth, and the result showed that FOs concentration reached 2.38 mmol/L with the optimal purification process at pH 4.5, temperature 29 °C, ethanol concentration 55%, sample flow rate 1.5 mL/min, sample concentration 1.7 mL/min and elution flow rate 2.0 mmol/L. Secondly, the characters of rice bran fermentation broth were identified by high-performance liquid chromatography (HPLC) and Fourier-transform infrared spectroscopy (FTIR). These methods showed the presence of ferulic acid (FA), arabinose, xylose and glucose in rice bran fermentation broth. Finally, the in vitro antioxidant activities of rice bran fermentation broth were tested and the result showed that fermentation broth had good antioxidant activities and significantly improved after purification.
