Abstract:3-monochloropropane-1,2-diol esters (3-MCPDE) and glycidyl esters (GE) are processed-developed contaminants presence in vegetable oils after undergo refining process under excessive heat. Refined oils are extensively used in various frying applications, nevertheless, the reservation against their quality and safety aspects are of major concern to consumers and food industry. Realizing the importance to address these issues, this article deliberates an overview of published studies on the manifestation of 3-MCPDE and GE when vegetable oils undergo for frying process. With the modest number of published frying research associated to 3-MCPDE and GE, we confined our review from the perspectives of frying conditions, product properties, antioxidants and additives, pre-frying treatments and frying oil management. Simplicity of the frying process is often denied by the complexity of reactions occurred between oil and food which led to the development of unwanted contaminants. The behavior of 3-MCPDE and GE is closely related to physico-chemical characteristics of oils during frying. As such, relationships between 3-MCPDE and/or GE with frying quality indices – i.e. acidity in term of free fatty acid or acid value); secondary oxidation in term of p-anisidine value, total polar compounds and its fractions, and refractive index – were also discussed when oils were subjected under intermittent and continuous frying conditions.

Abstract:3-Monochloropropanediol esters (3-MCPDE) and glycidyl esters (GE) have high toxicity and have drawn global attention because of their widespread occurrence in refined oils and oil-based foods. In this study, the effects of food type (potato chips and chicken breasts), frying frequency, and frying temperature on the formation of 3-MCPDE and GE in palm oil (PO) were investigated. The results showed that 3-MCPDE was formed easier in chicken breasts than potato chips. The GE content decreased in PO after it was used for frying potato chips and chicken breasts with or without NaCl. Frying frequency was an influencing factor in the formation of 3-MCPDE and the decrease in GE in PO. Frying temperature was positively correlated with GE degradation, while it had a bidirectional effect on the formation of 3-MCPDE. The formation kinetic equations indicated that 3-MCPDE and GE followed zero-order reactions in PO. The estimated activation energy (Ea) of 1,2-bis-palmitoyl-3-chloropropanediol (Pa-Pa, 41.05 kJ/mol) was lower than those of the other three types of 3-MCPDE; this is the first theoretical explanation for why PO contains more 3-MCPD than other edible oils. Among GEs, glycidyl oleate (Li-GE) was degraded more readily than other GEs.

Abstract:Prosthetic valve obstruction is one of the most serious complications of mechanical cardiac valves. Clinicians must be aware of this diagnosis in patients with a worsening of functional NYHA class. Over the past years, echocardiography has imposed itself as the method of choice to diagnose and evaluate patients with suspected prosthetic valve obstruction. We present three clinical reports of prosthetic valve malfunction that have unusual echocardiographic features.

Abstract:Background: Oil palm, Elaeis guineensis Jacq is a perennial crop mainly cultivated for its vegetable oil. The fatty acid composition of crude palm oil (CPO) is mostly composed of palmitic, stearic oleic, and linoleic acids. Objectives: This study evaluated the quality of locally produced CPO from six states of South-South zone, Nigeria. Methods: The parameters of CPOs were characterized by specific gravity (SG), acid value (AV), percentage of free fatty acid (%FFA), and saponification value (SV) and peroxide value (PV). Polycyclic aromatic hydrocarbons (PAHs) in CPO were quantified using standard procedures, the related risk due to daily consumption of 25 g was characterized by lifetime cancer risk (LCR) and margin of exposure (MOE). Results: The study observed that the mean values of the parameters were 0.931 SG; 5.01 mgKOH g-1 AV; 2.28% FFA; 177.27 mgKOH g-1 SV and 29.65 meqO2 kg-1 PV. Apart from %FFA, the others did not meet the requirements recommended by the Codex Alimentarius Commission of the joint WHO/FAO. Diagnostic ratios of PAHs suggested a mixture of petrogenic and pyrogenic origins. The MOEs showed low health concern while 16PAH-LCR values which ranged from 2.48E-04 - 4.48E-04 were unacceptable. The screening value 0.003 was significantly (p> 0.05) lower than the computed total BaP equivalent (BaPeq) values indicating potential human health concerns. It is recommended that CPO processing and storage methods should be properly monitored to prevent quality reduction and contamination, which might have adverse effect on consumers.

Abstract:The widespread presence of 3-monochloropropane-1,2-diol (3-MCPD) and glycidol in refined edible oils have raised food industrial and public health concerns, but their specific biomarkers of exposure and urinary metabolic pathways indicating nephrotoxicity remain largely unknown. Here, we unraveled the in vivo biotransformation of these two contaminants and revealed how they affect metabolic pathways in rats. Urine metabolomes in rats administered with glycidol or 3-MCPD were investigated using ultra-high performance liquid chromatography combined with a quadrupole-orbitrap high-resolution mass spectrometry. Compared to the currently acknowledged metabolite which is only 2,3-dihydroxypropyl mercapturic acid, we identified 8 and 4 new specific exposure biomarkers of glycidol and 3-MCPD, respectively, via mapping the glyceryl polymerization and glutathione and sulfur conjugation. The changes of metabolites in the surrounding metabolic network were investigated to further gain insight into their metabolic fates. Exposure to glycidol up-regulated citrate, isocitrate, ketoglutarate, malate, and pyruvate in the tricarboxylic acid cycle and glycolysis pathways, while 3-MCPD intake down-regulated these signal molecules in both pathways. Nonetheless, L-cysteine, proline, and arginine were significantly decreased by the effect of either glycidol or 3-MCPD. Our findings first map the urinary metabolomics of both contaminants from edible oils and advance the omics-level recognition for their observational health hazards.
Effects of deodorization temperature and time on the formation of 3-MCPD, 2-MCPD, and glycidyl esters and physicochemical changes of palm oil

Abstract:This study verified the formation profile of esters of 3-monochloropropane-1,2-diol (3-MCPDE), 2-monochloropropane-1,2-diol (2-MCPDE), and glycidol (GE), and evaluated the physicochemical changes (free-fatty acid, acylglycerols, and colour) that occurred during the deodorization of palm oil in different conditions of time (30, 60, 90, and 120 min) and temperature (210, 230, 250, and 270 °C). Levels of 3-MCPD and 2-MCPD esters ranged from 1.91 to 2.70 mg/kg and 0.68 to 1.44 mg/kg, respectively, and were formed at the mildest tested condition (210 °C, 30 min). No correlation was observed between these contaminants and physicochemical changes. GE levels varied from 0.12 to 8.51 mg/kg and showed correlation with color and diacylglycerol content. While the temperature had little influence on the formation of esters of 3-MCPD and 2-MCPD, the content of GE considerably raised above 250 °C.

Food Additives and Contaminants - Part A Chemistry, Analysis, Control, Exposure and Risk Assessment

Abstract:Esters of 2- and 3-monochloropropanediol (2-MCPDE, 3-MCPDE) and glycidol (GE) are regarded as process contaminants that are found in refined vegetable oils and oil-based foods. Since glycerol is produced during fat splitting, saponification and biodiesel production, it is important to have methods for determining contaminants that might be formed during these processes. Due to the use of glycerol as a food additive, data on the presence of compounds of toxicological concern, including 3-MCPD, are of interest. This study focuses on modifying the indirect analysis of 2-MCPDE, 3-MCPDE and GE using GC-MS based on the AOCS Official Method Cd 29a-13, validating the modified method, and quantifying 2-MCPDE, 3-MCPDE and GE in glycerol. The AOCS Cd 29a-13 method was modified at the initial stage of sample preparation in which the targeted esters were extracted from glycerol by vortex-assisted extraction before sample analysis. This modification was performed based on the polarity of all compounds involved. The calibration functions for all analytes were fitted to linear regression with R 2 above 0.99. Limits of detection (LOD) 0.02, 0.01 and 0.02 mg kg −1 were obtained for 2-MCPDE, 3-MCPDE and GE, respectively. Spiked glycerol with 3-MCPDE and 2-MCPDE (0.25, 0.51 and 1.01 mg kg −1 ) and GE (0.58, 1.16 and 2.32 mg kg −1 ) were used for recovery and precision measurements. Recoveries of 100-108%, 101-103%, and 93-99% were obtained for 2-MCPDE, 3-MCPDE and GE, respectively. Acceptable precision levels with relative standard deviations ranged from 3.3% to 8.3% were obtained for repeatability and intermediate precision. The validated method was successfully applied for the analysis of the target compounds in refined glycerol from commercial plants, which showed that 2-MCPDE, 3-MCPDE and GE levels in the analysed samples were below the detection limit.

Abstract:Chloropropanols, their fatty acid esters, and glycidol and its fatty acid esters (GEs) are process contaminants in foods that pose potential health risks. These contaminants typically arise during the deodorization process of vegetable oils, particularly in high concentrations within oils like palm oil and products derived from them, such as margarine, baked goods, pastries, and infant formula. Chloropropanol esters and GE can hydrolyze under the influence of lipases, forming chloropropanols. Elevated temperatures during food production can lead to the release of free 3-chloro-1,2-propanediol (3-MCPD) or free 2-chloro-1,3-propanediol (2-MCPD) in products containing both fat and salt. The exposure to these contaminants, especially for infants and young children, raises concerns about potential health hazards. While extensive research has focused on 3-MCPD, 2-MCPD, and GE, knowledge regarding other chloropropanols such as 1,3-dichloro-2-propanol (1,3-DCP), 2,3-dichloro-1-propanol (2,3-DCP), and their fatty acid esters remains limited. This review aims to provide a comprehensive overview encompassing formation mechanisms, analysis methods, toxicological implications, occurrence patterns, exposure levels, mitigation strategies, and legislative considerations concerning these contaminants.
Decomposing Correctness Proofs of Fault-Tolerant Algorithms ?

Abstract:Proving the correctness of fault-tolerant algorithms is a tedious endeavor. Not only are the algorithms themselves complex, but nondeterministic fault transitions due to the environment compound the complexity. We demonstrate how to systematically decompose proofs of correctness. We first define a relation between the execution of an algorithm in a fault-generating environment and a fault-free one. Proofs can then be decomposed as follows. First, an algorithm is shown to satisfy this relation. Second, proving that the algorithm satisfies its requirements necessitates reasoning about the execution of the algorithm in a fault-free environment only; faulty behavior can be ignored. This technique systematizes and simplifies proofs of fault-tolerant algorithms. The verification of the Oral Messages(1) algorithm is given as a simple illustrative example.
Occurrence and risk assessment of 3- and 2-monochloropropanediol (MCPD) esters in vegetable oils and related products from Zhejiang market

Abstract:3- And 2-monochloropropanediol fatty acid esters (3- and 2-MCPD esters) are contaminants of processed vegetable oils. In this study, vegetable oils and related products available 486 food samples from Zhejiang market were collected and analysed for 3- and 2-MCPD esters during 2016–2018. Food consumption data were taken from a food consumption survey of urban and rural residents in Zhejiang province performed in 2008 using data from 9646 subjects. Levels of 3-MCPD esters in foods ranged from not detected to 8.3 mg/kg, and the highest mean levels were found in vegetable oils with levels of 0.76 mg/kg. Esters of 2-MCPD levels ranged from not detected to 4.0 mg/kg, and the highest mean levels were found in instant noodles containing 0.40 mg/kg. The dietary intake of 3-MCPD was 0.62 μg/kg bw per day (mean) and 2.29 μg/kg bw per day (P97.5), and 2-MCPD esters intakes were 0.26 μg/kg bw per day (mean) and 0.87 μg/kg bw per day (P97.5). Vegetable oils were the main food source of dietary 3- and 2-MCPD esters intake. These findings suggested that the dietary exposure levels of 3-MCPD esters may pose a potential risk to the health for high consumers (P97.5) aged 4–17 when compared to the tolerable daily intake.
The inhibitory effects of sesamol and sesamolin on the glycidyl esters formation during deodorization of vegetables oils

Abstract:Background: Glycidyl esters (GEs) have attracted worldwide attention for their potential harm to human health. The GEs in edible oils mainly form during the deodorization of the oil refining processes. We used sesamol and sesamolin to inhibit the formation of GEs in model corn oil (MCO), model palm oil (MPO) and model rice bran oil (MRO) during a deodorization process. Results: The results showed that, in the three model oils, the total GE content was in the following order from highest to lowest: MRO (1437.98 μg kg-1 ) > MPO (388.64 μg kg-1 ) > MCO (314.81 μg kg-1 ). The inhibitory effect of the three antioxidants on the formation of GEs in the MCO was in the following order from strongest to weakest: tert-butylhydroquinone (TBHQ) > sesamol > sesamolin. Conclusion: When the mass percentage of sesamol was 0.05%, its inhibition percentage on GEs was close to the inhibition percentage of 0.02% added TBHQ. The present study provides a foundation for understanding how to inhibit the formation of GEs in oils by adding sesamol during the deodorization process.
Health risk assessment for dietary exposure to 3-monochloropropane-1,2-diol, 2-monochloropropane-1,2-diol, and glycidol for Italian consumers

Abstract:3-Monochloropropane-1,2-diol (3-MCPD), 2-monochloropropane-1,2-diol (2-MCPD) and 2,3-epoxy-1-propanol (glycidol), in their free form or esterified to fatty acids, are food contaminants formed during the refinement of oils and fats. We conducted a survey to quantify the levels of these compounds in 130 food items, in order to assess the exposure to them in food and the consequent health risk for consumers. Food samples, including infant formula, were analysed by gas-chromatography mass spectrometry with the indirect method, and we used the latest open access food consumption database for the Italian population for a probabilistic assessment of exposure. We adopted an in silico approach to fill the gap for the toxicity of 2-MCPD. The occurrence values for the three contaminants in food were in most cases lower than or comparable to those reported in previous surveys. Exposure assessment for the most exposed individuals (95thpercentiles of consumers only) of different age groups, gave values below the tolerable daily intake recommended by the European Food Safety Authority for 3-MCPD and below the simulated or predicted toxicity thresholds for 2-MCPD, indicating a negligible risk due to dietary exposure to these contaminants. For glycidol, however, estimated exposure indicated a non-negligible increase in cancer risk, and a margin of exposure <25,000 for younger population groups, indicating a potential health concern.

Abstract:Among consumed-vegetable oils, RBDPO (refined, bleached and deodorized palm oil) is indicated containing higher level of 3-MCPDE and GE, which have been classified as potentially carcinogenic and/or genotoxic to human. Those contaminants in RBDPO are formed during deodorization process with high temperature and also correlate with chloride content and quality of CPO as raw material. The maximum limit for 3-MCPDE and GE content in vegetable oil has been set at 2500 and 1000 μg kg-1, and as low as 750 and 500 μg kg-1 when used for production of baby food and cereal-based foods for infants and young children. The mitigation of 3-MCPDE and GE in RBDPO is quite challenging for palm oil refineries in producing a good quality of palm oil in term of sensory, stability, safety, and nutritional value, especially in Indonesia. It has been proven that modification of conventional refining process can reduce the 3-MCPDE and GE content. They are including pre-treatment of CPO by water washing to reduce the chloride content, alkali neutralization to remove any acids present in the oil prior to deodorization, using neutral bleaching earth, adding antioxidants after bleaching to reduce free radical-mediated formation of 3-MCPDE and GE, lowering the deodorization temperature with a longer time, and even double bleaching and/or double deodorization of the palm oil. Post-refining treatment using specific adsorbents is also applied to remove the 3-MCPDE and GE. However, palm oil refineries have to apply combination of several mitigation strategies to adequately reduce the levels of 3-MCPDE and GE, including using good quality of CPO with low FFA, chloride, and oxidized components content.

Abstract:To the Editor .—In their article in the AugustArchives(105:441-446, 1979), "Extratemporal Facial Nerve Grafting and Radiotherapy," Pillsbury and Fisch concluded that "radiotherapy had a detrimental influence on the return of facial movements after extratemporal facial nerve grafting." Since 1977, when Dr McCabe and I reported on cable nerve grafting and irradiation in cats, 1 I have performed five total parotidectomies followed by interposition cable grafting and postoperative irradiation. Four cases were epidermoid carcinoma and one was adenoid cystic carcinoma. The dose in each patient was 6,000 rads delivered during six weeks. Three of the patients, all of whom were older than 55 years, had less than satisfactory results. The other two, both younger than 45 years, have good facial function with symmetry at rest, eyelid closure and protection, no loss of fluid on eating, and mimetic function. Abstract:This paper develops a new compensation control scheme for two linked wheeled mobile robots with actuator failurs. First, a configuration of two linked two-wheel drive (2WD) mobile robots is described, and its kinematics and dynamics are modeled. Then, a multiple-model based control scheme is developed to compensate for actuator failures, consisting of a kinematic controller, multiple dynamic controllers and a control switching mechanism, which can ensure system stability and asymptotic tracking properties. Simulation results verify the effectiveness of the proposed control scheme.

Abstract:Objective: To investigate the occurrence data for 2-chloropropanol(2-MCPD) ester in edible vegetable oils purchased in Zhejiang Province during 2016-2020, and to estimate dietary exposures of 2-MCPD ester via vegetable oil. Methods: A total of 404 samples of edible oils were collected from markets, stores, online shopping in Zhejiang Province, the occurrence of 2-MCPD ester was detected by gas chromatography mass spectrometry from 2016-2020. Data of vegetable oils consumption was obtained from the survey result of urban and rural residents in Zhejiang Province in 2008. The exposure levels of 2-chloropropanol ester was calculated for people aged 4-6, 7-10, 11-17, 18-59 and 60 years old and older from the consumption of vegetable oils. Results: The detection rate of 2-MCPD esters in 404 samples was 82.7%(334/404) with the mean level of 0.32 mg/kg. Among them, the mean content of camellia oil was the highest with 1.23 mg/kg, followed by rice oil(0.69 mg/kg); sunflower oil, olive oil and soybean oil have relatively low average values, respectively with 0.11, 0.12 and 0.13 mg/kg. There are significant differences in 2-MCPD ester content in different types of edible oils of the same brand(P<0.05), the content of 2-MCPD ester in different brands of peanut oil was significant(P<0.05), but in different brands of corn oil was not statistically significant. Among the edible vegetable oil consumers, the average exposure of 2-MCPD esters in different age groups ranged from 0.21 to 0.69 μg/(kg·BW·d). Conclusion: 2-MCPD esters pollution is widespread in vegetable oils, the severity of pollution was affected by the type and brand of the edible vegetable oil, and the intake of 2-MCPD esters was relatively high among people with high vegetable oil consumption and the general population of 4-10 years old.

Official analytical methods for GEs and 3-MCPDEs, such as AOCS Cd 29a-13 and AOCS Cd 29b-13, require up to 16 h for chemical hydrolysis. Also, parallel experiments should be conducted to correct for the conversion of analytes during hydrolysis in AOCS Cd 29b-13. For AOCS Cd 29c-13 with the shortest operating time, the reaction time (3.5-5.5 min) and temperature of alkaline hydrolysis should be carefully controlled, implying the accuracy may be influenced by human errors. Here, we propose a novel method based on Candida rugosa lipase hydrolysis and direct detection of free form GEs, glycidol, which was achieved by sample preparation with modified QuEChERS, to prevent side reactions in previous approaches, and also to shorten the overall sample preparation time. Glycidol was directly analyzed without halogenation and derivatization, whereas 3-MCPD required derivatization for analysis by GC-MS. Our method showed good accuracy and precision in terms of repeatability, intermediate precision, and reproducibility (inter-laboratory precision). The limit of detection (LOD) and limit of quantification (LOQ) for glycidol were 0.02 and 0.1 mg/kg, which is sufficient for practical applications. The proposed method was further compared with AOCS Cd 29c-13 by determination of GEs content in commercial oil samples and spiked samples. Our method with a streamlined procedure seems to possess potential advantage of reduced errors from operational factors. This proposed method based on direct detection of glycidol may serve as a simplified alternative for routine analysis of GEs and 3-MCPDEs in edible oils.
