Abstract:To understand current practice of child feeding behaviors, and underlying factors influencing these practices in Asian Indian mothers, qualitative in-depth interviews were conducted with 27 immigrant Asian Indian mothers of children ages 5–10 years. Using the theory of planned behavior as a guiding framework, child feeding behaviors employed, beliefs about the outcomes of feeding behaviors, perceived ease or difficultly in practicing feeding behaviors, and social norms were explored during the interviews. Thematic analysis was conducted using coding and display matrices. Mothers were motivated by nutrition outcomes when practicing positive and negative controlling feeding behaviors. Outcomes related to preservation of Indian culture and values also influenced feeding behaviors. Pressuring to eat was often practiced despite the perception of ineffectiveness. Use of food rewards was found, and use of TV to control children’s food intake despite the clear understanding of undesirable nutrition outcomes was a unique finding. Asian Indian mothers need effective child feeding strategies that are culturally appropriate. Integrating cultural beliefs in nutrition education could help support existing motivation and behavior modification.

Community Solutions to Increase the Healthfulness of Grocery Stores: Perspectives of Immigrant Parents

Abstract:Grocery store environments are recognized as one of the most crucial community settings for developing and maintaining healthy nutritional behaviors in children. This is especially true for disadvantaged ethnic minority families, such as immigrants, who reside in the Detroit Metropolitan area and have historically experienced inequities that result in poor health outcomes. Rates of obesity and type II diabetes have affected Detroit 38% more than the rest of the state and nationwide. In 2019, almost 54% of children aged 0-17 in Metro Detroit lived in poverty, and 21.6% experienced food insecurity, compared with the state level of 14.2%. Moreover, nearly 50% of ethnic minority children in Metro Detroit consume sports drinks, and 70% consume soda or pop in an average week. The primary purpose of this study was to explore immigrant parents' perspectives on (1) how in-store Sugar-Sweetened Beverage (SSB) marketing impacts the purchasing behaviors of parents and the eating behaviors of toddlers, and the secondary objective was to (2) determine strategies to reduce SSB purchases and consumption within grocery environments from the viewpoints of immigrant parents. A qualitative multiple-case study design was used to achieve the aims of this study. Semi-structured individual interviews were completed with 18 immigrant parents of children aged 2 to 5 years old who were consumers in 30 independently owned full-service grocery stores within the immigrant enclaves of Detroit, Dearborn, Hamtramck, and Warren, Michigan. Three key thematic categories emerged from the parents' narratives. These themes were: (1) non-supportive grocery store environments; (2) acculturation to the American food environment; and (3) strategies to support reduced SSB consumption among young immigrant children. The findings of this study revealed widespread SSB marketing targeting toddlers within the participating independently owned grocery stores. Even if families with young children practiced healthy nutritional behaviors, the prices, placements, and promotion of SSBs were challenges to establishing and sustaining these healthy eating habits. The parents believed that planning and implementing retail-based strategies in collaboration with families and considering families' actual demands would assist in managing children's eating patterns and reducing early childhood obesity.
Lifecourse, immigrant status and acculturation in food purchasing and preparation among low-income mothers

Abstract:Objectives: This study investigates how lifecourse, immigrant status and acculturation, and neighbourhood of residence influence food purchasing and preparation among low-income women with children, living in the USA. This research sought to understand physical and economic access to food, from both 'individual' and 'community' perspectives. Design: This study used qualitative methodology (focus groups) to examine the mechanisms and pathways of food preparation and purchasing within the context of daily life activity for US- and foreign-born women, living in the USA. The study methodology analysed notes and verbatim transcripts, summarised recurring responses and identified new themes in the discussions. Setting and subjects: A total of 44 women were purposively sampled from two metropolitan areas in Massachusetts, USA, based on (1) neighbourhood of residence and (2) primary language spoken. All focus groups were conducted in community health centres and community centres co-located with offices of the special supplemental nutritional programme for Women, Infants, and Children. Results: Analysis of key response themes suggested that scarcity of food and physical access to food purchasing points did not influence food purchasing and preparation as much as (1) limited time for food shopping, cooking and family activities; and (2) challenges in transportation to stores and childcare. The study results demonstrated differing attitudes toward food acquisition and preparation between immigrant and US-born women and between women who lived in two metropolitan areas in the western and eastern regions of the state of Massachusetts, USA. Conclusions: The findings illustrate 'hidden' constraints that need to be captured in measures of physical and economic access and availability of food. US policies and programmes that aim to improve access, availability and diet quality would benefit from considering the social context of food preparation and purchasing, and the residential environments of low-income women and families.

Abstract:Black pregnant women in Chicago are disproportionately affected by maternal morbidity and mortality and are more likely to reside in neighborhoods that experience greater economic hardships and food apartheid than any other race/ethnicity. Addressing social determinants of health such as structural inequities, economic environment, and food apartheid issues may provide insights into eliminating Black maternal morbidity and mortality disparities. This study explores food choice determinants and dietary perspectives of young, urban, Black pregnant women. Two audio-recorded focus groups were conducted in Chicago, IL between March 2019 and June 2019 to discuss pregnancy experiences and factors affecting maternal nutrition. Thematic analysis was used to identify the codes, themes, and subthemes of the data. Data analysis was guided by the Social Ecological Model (SEM) as a theoretical framework. Eleven, young, Black women were recruited. Three major themes were discussed across the SEM levels that influenced food choice including food access, stress and family influences on eating, and the need for nutritional education during pregnancy. These choices were primarily rooted in the detrimental effects of food apartheid experienced within the participants' neighborhoods. Therefore, acknowledging, understanding, and addressing food apartheid and its impact on Black maternal health disparities is needed in clinical practice, research, and policy change.

Family Systems Cultural and Resilience Dimensions to Consider in Nutrition Interventions: Exploring Preschoolers' Eating and Physical Activity Routines During COVID-19

Abstract:Objective: To describe the weight-related family functioning of racial minority families with low income using family systems theory as an interpretive framework. Design: Primarily a qualitative study with interviews plus; descriptive demographics, anthropometrics, a family functioning measure, and food insecurity screening. Setting: Telephone interviews with families of preschool-aged children in an urban setting. Participants: Primary caregivers of preschool-aged children. Phenomenon of interest: Cultural impacts on family systems. Analysis: Interviews were audio-recorded, transcribed verbatim, and loaded into NVivo 12 for thematic analysis. Descriptive statistics. Results: The 23 participants were mothers and 2 maternal grandmothers. Seventy-four percent were African American, most children were normal weight (n = 15, 65%), mean family function scores were high, and more than half the families were at risk for food insecurity (n = 13, 56%). Acculturation and intergenerational eating-related cultural dimensions were discerned as the overarching themes influencing family cohesion. Family cohesion appeared to have helped the families adapt to the impact of coronavirus disease 2019. Conclusions and implications: Cultural dimensions such as acculturation and intergenerational influences appeared to be associated with social cohesion and family functioning around weight-related behaviors for these families. These findings add cultural and family resilience dimensions to family systems theory in nutrition interventions.

Abstract:BACKGROUND: Effective childhood obesity prevention programs for preschool children are limited in number and focus on changes in the child care environment rather than the home environment.PURPOSE: The purpose of this project was to develop and test the feasibility of a home environment obesity prevention program that incorporates mindful eating strategies and Social Cognitive Theory (SCT) constructs. <i>Home Sweet Home</i> is specifically designed for rural parents and grandparents of preschool-age children.METHODS: <i>HSH</i> was developed using community-based participatory research practices and constructs from the SCT. Three community-based education sessions were delivered. Pre- and post-intervention data were collected from 47 grandparents and mothers.F.RESULTS: Three of the four selected behavioral outcomes improved between pre- and post-intervention. The number of hours engaged in sedentary behaviors and intake of "red light" foods decreased while three of four mindful eating scores increased. Graduates of the program were able to decrease the number of "red light" foods available in their homes.DISCUSSION: Improvements in mindful eating and several key behaviors were observed after a three week mindful eating/home environment intervention.TRANSLATION TO HEALTH EDUCATION PRACTICE: Health educators should incorporate mindful eating strategies and use the SCT when designing childhood obesity prevention programs.

Abstract:ABSTRACT: Objective: This cross-sectional study aimed to assess the level of social connectedness (SC) in African-American low-income families with young children attending a pediatric primary care clinic and examine its relationships with food insecurity and parental well-being. Methods: This cross-sectional analysis used data from the Healthy Children and Families program, a cohort intervention study addressing food insecurity, conducted by an urban pediatric clinic serving low-income predominantly African-American families. Twenty-seven families completed baseline screening tools, including the Social Provisions Scale five-question short form (SPS-5) to measure SC, a modified version of the United States Department of Agriculture (USDA) Household Food Security Survey Module six-item short form to assess food insecurity, and the Parental Stress Index Short Form to measure parental stress. Descriptive statistics, correlations, and partial correlations were conducted to analyze the data. Results: The average SPS-5 composite score was 14.5 on a scale of 5 to 20. Moderate negative correlations were identified between SC and food insecurity, weaker when controlled for parental stress. Strong negative correlations were identified between SC and parental stress that held when controlled for food insecurity. Conclusion: In this study, we propose a conceptual framework highlighting the complex interplay of social connectedness with other social determinants of child health. The findings align with the 2023 Surgeon General's Advisory on the epidemic on the healing effects of social connection and provide insight into the value of incorporating SC assessments into routine screenings in pediatric primary care settings. Further research is needed to explore causal relationships and evaluate the effectiveness of interventions designed to enhance SC in diverse populations.

Parent Mealtime Practices and Rules for Feeding Young Children

Abstract:Introduction Obesity prevalence is disproportionately high among Black and Hispanic children. Feeding practices have been shown to be associated with the development of excess weight. We explored differences by race/ethnicity in parent behaviors related to portions and family dining rules. Methods February 2024 survey of a nationally representative sample of 1,083 parents of a child 3-10 years old. Census-based sampling weights were applied to generate bivariate comparisons between Black, Hispanic, and White parents. Results Black and Hispanic parents were more likely than White parents to use predetermined portions from packaging (8% vs. 8% vs. 1%, respectively) and less likely to give slightly less than the adults in the family (62% vs 67% vs 72%); similar proportions say they allow the child to choose the amount to take (27% vs 20% vs 24%). Black parents were more likely than Hispanic and White parents to report their child must finish everything on their plate (25% vs. 12% and 11%, p<0.01) and cannot have dessert unless they finish everything else (39% vs 28% vs 30%, p=.297), and less likely to disallow sweetened beverages during dinner (24% vs 29% vs 36%, p=.016). About one-quarter of parents (23%) will "often" make something different for their child if they don't like what the rest of the family is having, with no differences by race/ethnicity. Conclusion Findings suggest that Black parents are more likely to have practices that may encourage consumption of excess calories. Pediatricians should provide guidance and resources to help families adopt healthy dietary practices.

A convenient way to represent fatigue crack growth in structural adhesives

Abstract:The present paper examines crack growth in a range of aerospace and automotive struc- tural adhesive joints under cyclic-fatigue loadings. It is shown that cyclic-fatigue crack growth in such materials can be represented by a form of the Hartman-Schijve crack- growth equation, which aims to give a unique and linear 'master' representation for the fatigue data points that have been experimentally obtained, as well as enabling the basic fatigue relationship to be readily computed. This relationship is shown to capture the ex- perimental data representing the effects of test conditions, such as R-ratio and test tem- perature. It also captures the typical scatter often seen in the fatigue crack-growth tests, especially at low values of the fatigue crack-growth rate. The methodology is also shown to be applicable to both Mode I (opening tensile), Mode II (in-plane shear) and Mixed- Mode I/II fatigue loadings. Indeed, it has been demonstrated that the fatigue behaviour of structural adhesives under both Mode I and Mode II loadings may be described by one unique 'master' linear relationship via the Hartman-Schijve approach.
Challenges and Facilitators to Promoting a Healthy Food Environment and Communicating Effectively with Parents to Improve Food Behaviors of School Children

Abstract:Background Childhood obesity is a major public health concern and families play an important role. Improving strategies to reach parents and directing tailored nutrition education to them is needed. Purpose To investigate the challenges and facilitators to promoting a healthy environment at home and to identify communication preferences to inform intervention strategies for effectively reaching low-income urban minority families. Procedure Semi-structured focus group interviews were conducted with four groups involving 16 low-income urban parents (94% female; 88% Hispanic/Latino, 12% African American) of elementary school children. Interviews were transcribed and analyzed applying Social Cognitive Theory and using in-vivo coding. Main Findings The most common barriers to parents providing healthy foods to their children were accommodating child preferences and familial opposition. Parents showed intentionality to engage in healthy behaviors, and often shared procedural knowledge for reaching health goals. The analyses of desired communication channels yielded major preferences: tailored information, information provided through multiple mediums, appropriate duration/frequency of messages, and presented from a voice of authority. Conclusion and Implication While parents expressed desires to be healthy, the home food environment presented substantial challenges. Multi-media supports such as workshops, flyers, and text messaging may be useful to facilitate the sharing of information to minimize the tensions between intentionality and reaching desired goals to be healthy. Some parents thought that information received through text messaging could be easily shared and would act as a voice of authority to support child behavior change.

The Role of Maternal and Child Characteristics in Chinese Children’s Dietary Intake Across Three Groups

Abstract:Abstract Objective To examine whether mothers’ early-life food insecurity (ELFI), pressuring to eat feeding practices (PEP), and child effortful control (EC) are associated with child dietary intake within and across three Chinese ethnic groups. Method Participants included 119 Chinese international immigrants in the United States, 230 urban nonmigrant, and 468 rural-to-urban migrant mothers and preschoolers in China. Mothers reported on their ELFI, PEP, and their children’s EC and dietary intake. Results Controlling for maternal and child body mass index, age, and gender, multiple group path analyses revealed that maternal ELFI was positively associated with PEP in all groups, which in turn was positively associated with child unhealthy diet in all groups, but negatively associated with child fruits and vegetables (F&V) consumption in the urban nonmigrant group only. Also, EC was positively associated with child F&V diet for all groups. Moreover, the indirect effect of ELFI on children’s unhealthy diet through PEP was significant only for immigrant children with lower levels of EC, but not those with higher levels of EC. Conclusions Our findings highlighted the long-lasting effect of mothers’ ELFI on their feeding and child eating. Mothers’ pressuring to eat played a central role in the association between their past experiences and children’s diet. Also, children’s poor EC abilities might exacerbate the adverse effect of mothers’ ELFI through PEP, resulting in more unhealthy eating. These findings can contribute to the design of contextually based intervention/prevention programs that promote young children’s healthy eating through maternal feeding practices and children’s EC abilities.

Abstract:Background Children from families who immigrated to the U.S. may consume a lower-quality diet compared to their U.S.-born peers. However, specific features of their dietary patterns, which could be a focus for improving diet quality, are not well-studied. Objective To examine dietary patterns that distinguish interpersonal variability in dietary intake and explore the association of dietary patterns with nutrient intake and weight status. Design This study was a cross-sectional analysis of baseline data from the Live Well randomized controlled trial collected between 2009 - 2010. Participants/setting 313 children (3 – 12 years) whose mothers immigrated to the U.S. from Latin America and resided in Somerville, MA. Main outcome measures dietary patterns (derived using principal component analysis); nutrient intake (derived from dietary data collected using the Block Food Screener); and weight status (categorized using BMI z-score based on measured height and weight) Statistical analyses performed Nutrient intake levels were compared across quartiles for dietary patterns using ANCOVA. Multivariable logistic or linear regression models were used to determine the associations between dietary pattern scores and odds of overweight or obesity or BMI z-scores. Results Two dietary patterns emerged: "fruits and vegetables" (FV) and "meat and sweets" (MS). Highest adherence to the FV pattern was associated with more healthful nutrient intake and lower odds of having overweight or obesity (OR = 0.37, 95%CI = 0.16, 0.98) but not BMI z-score (β = -0.07, 95%CI = -0.51, 0.36) compared with the lowest adherence. Adherence to the MS pattern was associated with less healthful nutrient intake but not with the odds of experiencing overweight or obesity (OR = 0.48, 95%CI = 0.16, 1.46). Conclusions A healthful dietary pattern in children of families who immigrated to the U.S. from Latin America may include a variety of fruits and vegetables. Longitudinal studies should be conducted to further assess the role of dietary intake patterns on health of these children.

Abstract:Assessment of healthy eating practices among a sample of non‐Hispanic Black mothers indicates the importance of interpersonal support in making healthy choices. Mothers are intent on preparing healthy foods for their children, but not themselves due to lack of time and energy. Maternal diet is a key predictor of child diet, yet an in‐depth inquiry into the barriers and facilitators for the adoption of healthy eating behaviours during the post‐partum period is lacking, specifically for non‐Hispanic Black mothers. This study used qualitative research methods to investigate healthy eating practices among a sample of non‐Hispanic Black mothers participating in a family‐based obesity prevention intervention. In‐depth interviews were conducted with 22 mothers who participated in the Mothers and Others: Family‐based Obesity Prevention for Infants and Toddlers intervention trial. Interviews were audio‐recorded and transcribed verbatim. A deductive and inductive process was used to develop a consensus codebook; once the data were coded, matrices were developed to explore the data and identify similarities and differences between respondents. Relevant themes were identified, and salient quotes were used to illustrate each theme. Mothers believed that time and taste were significant barriers to eating healthy. Social influence and social support had both positive and negative influences on mothers' ability to adopt healthy eating behaviours. Despite their children often being a facilitator to healthy eating, many mothers struggled with finding the time, energy and desire to focus on themselves when it came to healthy eating. Many mothers were intent on preparing healthy meals and snacks for their children but did not prepare them for themselves. Future interventions should focus on the importance of role‐modelling healthy eating behaviours for their children and include behaviour change strategies that incorporate skill‐building activities emphasizing time‐saving methods for planning and preparing healthy meals and snacks for the whole family to eat.

Abstract:Focus groups were conducted with parents, other caretakers, and teachers of urban, African-American preschool children attending Head Start. The research goal, congruent with the concept of cultural humility, was to elicit target population members' perspectives on the nature, importance, prevalence, and causes of overweight and obesity in their community, with an emphasis on childhood obesity. Themes that emerged revealed that participants defined obesity as a more extreme state than the medical definition, these same participants had a complex view of the relationships of weight and health, stressed numerous environmental factors contributing to obesity. Moreover these participants tended to offer suggestions for health professionals and those designing nutrition education interventions.

Abstract:Introduction: Consuming a nutrient poor diet can negatively affect the health status of an individual. Recent increases in African immigration into the U.S. has called for more research on the health and health behaviors of this growing population. Little is known about how acculturation (as measured by place of birth and length of time in the country) affects nutrient intake and diet quality among Non-Hispanic Blacks in the U.S. We aim to address this gap in knowledge by studying the association between acculturation, nutrient intake, and diet quality among a large sample of Non-Hispanic Black adults. Hypothesis: We hypothesize that foreign-born (FB) Blacks who immigrated to the U.S. less than 10 years ago are more likely to meet national recommendations for diet and nutrient intake compared to FB Blacks who immigrated more than 10 years ago and U.S. born Blacks. Methods: We analyzed cross-sectional data from the 2005-2016 cycles of the National Health and Nutrition Examination Survey (NHANES). The analytical sample comprised 7,073 Non-Hispanic Blacks who we categorized into three groups: FB Blacks less than 10 years (3.35%), FB Blacks greater than 10 years (7.42%), and U.S. born Blacks (89.23%). We analyzed each participant's 24-hour recall data to determine if they met 2015-2020 Dietary Guidelines for Americans (DGA) recommendations for intake of specific nutrients (e.g., saturated fat, fiber, sugar, cholesterol, sodium, etc.). We used logistic regression to assess differences across the three groups in regards to odds of meeting DGA recommendations for nutrient intake. Results: Compared to U.S. born blacks and FB Blacks (≥10 years), FB Blacks (<10 years) had significantly higher odds of meeting DGA recommendations for most nutrients after adjusting for all covariates (e.g., age, gender, education level, poverty level, etc.). Specifically, FB Blacks (<10 years) had significantly higher odds of meeting recommendations for saturated fat (OR: 2.7; 95% CI: 1.6-4.6), cholesterol (OR: 1.7; 95% CI: 1.2-2.5) and sodium intake (OR: 2.2; 95% CI: 1.2-4.3) compared to U.S. born Blacks. FB Blacks (≥ 10 years) had significantly higher odds of meeting recommendations for total fat and dietary fiber compared to U.S. born Blacks. Conclusion: FB Blacks (<10 years) had higher odds of meeting DGA guidelines for nutrient intake compared FB Blacks (≥10 years) and U.S. born Blacks. These findings further highlight the importance of acculturation and its impact on dietary intake among immigrant populations. Future studies should evaluate how acculturation influences overall health status and chronic disease risk across the African diaspora in the U.S.

Parents' perceptions of child feeding: a qualitative study based on the theory of planned behavior

Abstract:Objective: The aim of this qualitative study was to investigate the child-feeding behaviors and attitudes of parents of children aged 2 to 5 years, within the theory of planned behavior (TPB) framework. Methods: Semistructured telephone interviews were conducted in October 2011. The interviewer conducted and recorded the interviews from a community health center, to interviewees who were in their own home environment. Verbatim transcription of interviews preceded manual coding of data. Emergent themes were mapped into a matrix against a priori-coded TPB constructs (attitudes, beliefs, subjective norms, perceived behavioral control, and behavioral intention). Results: Twenty-one consenting parents participated in interviews. Participants were predominantly tertiary-educated (65%) mothers (85%) who were older than 30 years (76%). Parents believed that optimal child nutrition is important but difficult to achieve. Behavioral intention to change feeding practices was limited by a belief that child's dietary intake is above average compared with their peer group. Perceived control over child dietary intake was influenced by food advertising, extended family, and peer influences. Parents supported targeting nutrition education directly at children and a policy approach to offset the costs of fresh foods by taxing "junk" foods. Conclusions: The application of TPB to child feeding may explain the disparity between parents' child-feeding intentions and behaviors. Parents' feeding behaviors are more influenced by peers than by dietary guidelines. Future interventions need to target parents' perceived child-feeding responsibilities, influence subjective norms, and increase parents' perceived control over child feeding. Peer nutrition education is proposed as an intervention model.
Exploring Feeding Practices and Food Literacy in Parents with Young Children from Disadvantaged Areas

Abstract:Early childhood provides an opportunity to optimize growth and development and parents play a fundamental role in forming healthy eating habits in their children. A healthy diet improves quality of life and wellbeing and reduces the risk of chronic disease. The aim of this research was to explore parents’ experiences of feeding 0–5-year-old children and food literacy behaviors. This qualitative study employed a general inductive inquiry approach. Participants were recruited through community-based parenting organizations in disadvantaged areas. Eight focus groups were conducted with 67 parents (92.5% female) living in socially disadvantaged areas within metropolitan Perth of Western Australia. Ten themes emerged from the preliminary analysis and were aligned with domains of relatedness, autonomy, and competence within the self-determination theory. Themes included relatedness (1) feeding is emotional, (2) variations in routine and feeding structures, (3) external influences, autonomy (4) power struggles, (5) it must be quick and easy, (6) lack of strategies for feeding autonomy, competency (7) whatever works, (8) healthy is important but for some unattainable, (9) improvements in food literacy skills, and (10) conflicting information overload. This research informed the development of a food literacy program for parents. Parents faced many challenges when trying to provide healthy food. This research has shown parents would benefit from support to achieve healthy eating practices for their families.
