Abstract:Although public interest in sustainable and safer products have steadily risen worldwide, research has shown a difference between consumer's willingness to purchase, and actual purchasing behavior, for which two main explanations exist, including a lack of accessibility and a poor knowledge of related attributes. Fortunately, the emergence of online food markets may improve this situation through convenient accessibility to sustainable food and detailed description about sustainability labels. This research uses a hedonic price analysis to compare the price premiums for the sustainability attribute in Chinese online and offline markets, using edible oil as a case. The specific objective is to test the different values of a sustainable attribute, a green food label, in two types of markets. Results show that the green food attribute could gain a price premium in the online market but not in the offline market, indicating the importance of the online channel for sustainable food sale in China. A big price mechanism difference between online and offline markets is also found, with regard to attributes of production method, variety, place of origin, packaging, and discount. These results provide a guide for firms' pricing strategies in online and offline markets.

Abstract:A holistic understanding of food sustainability is vital for making socially and environmentally conscious food choices. Sustainable diets have been defined by four dimensions: health, economics, environment, and society. The purpose of this study was to determine how metrics for nutritional quality, monetary cost, environmental impact, and social and cultural acceptability of foods and beverages vary across and within food groups and to identify which foods and beverages are optimally sustainable according to these metrics. Data from the Food and Nutrient Database for Dietary Studies (FNDDS) was linked with frequency of consumption, nutrient density, environmental impact, and cost data from publicly available databases. A sustainability index, based on the four dimensions, was developed to quantify overall sustainability. Nutrient density was correlated negatively with environmental impact and frequency of consumption but positively with cost (p < 0.001). Out of 5964 items, 165 were identified as optimally sustainable. Sustainability index scores varied within each food group. Less than 1% of optimally sustainable items were Dairy products, while 62% were Protein Foods—of which 92% were Plant Proteins. Few foods and beverages met the criteria to be considered optimally sustainable. However, Plant Protein foods may generally strike the best balance among these four indicators of sustainability. A holistic understanding of food sustainability is necessary to facilitate nutritious and environmentally conscious dietary choices that adhere to other needs, personal values, and preferences.

Abstract:A gap exists between consumer adoption of sustainable purchasing habits and the behavioural changes required to significantly decrease planetary environmental impact. Current ecolabels do not enable purchasing based on environmental impact, and an effective labelling scheme is required to change purchasing priorities. Using focus groups, ecolabels with components varying in the depth of environmental information conveyed, visual features employed, as well as product comparability and scalability of design, were evaluated by consumers with differing levels of environmental awareness. Independent, credible information accessible to consumers of varying environmental awareness was a participant priority. In-depth data communicated through a bar or pie chart with an interpretable holistic message across all environmental factors was preferred. Colour-coded components offering product comparisons and scalable to the size of the packaging, product value, and lifetime were most likely to empower environmentally motivated purchasing. Insights can inform the development of an effective ecolabelling scheme that equips consumers to adopt more sustainable purchasing habits.

Perceptions and preferences for environmentally sustainable food and associated factors: a cross-sectional analysis of a nationally representative survey of United States consumers

Abstract:Background: Consumers are increasingly interested in environmentally sustainable dietary patterns. However, specific signals (e.g., language, labels, logos, or packaging) American consumers use to identify environmentally sustainable products are yet to be explored. Objectives: To determine perception and preferences for environmentally sustainable food and associated health and demographic factors associated with consumers' use of signals for environmentally sustainable food products in a nationally representative survey of United States consumers. Methods: Repeated cross-sectional data were collected for the 2019 and 2020 annual online Food and Health Survey by the International Food Information Council. Three questions were analyzed: 1) the stated importance of environmentally sustainable food products, 2) signals consumers use to identify environmentally sustainable food/beverage products, and 3) the impact of environmental sustainability on food/beverage purchase decisions. Questions 2 and 3 were asked only from participants who stated environmental sustainability is important in question 1. Options provided for signals for environmentally sustainable products were recyclable packaging, minimal packaging, labeled organic, labeled locally grown, labeled sustainably sourced, and labeled non-genetically modified organisms (GMOs)/not bioengineered. Poisson regression and logistic regressions were performed to assess associations. Results: Of 1905 completers, 1059 (55.6%) answered that it was somewhat or very important that food products purchased/consumed were environmentally sustainable. Of those, 94% used ≥1 of the 6 signals to determine environmental sustainability when shopping. Some signals were selected despite little association with environmental sustainability (e.g., locally grown and non-GMO/not bioengineered). The number of signals consumers used was associated with education, race/ethnicity, health status, and the level of impact they reported that sustainability plays in their decisions. Associations between consumer characteristics and the use of different signals for environmental sustainability were heterogeneous. Conclusions: Even among consumers who value environmental sustainability in food products, specific signals used by different respondents varied across demographics and health characteristics.

Abstract:Front-of-Package (FOP) labels have been used to inform consumers about the nutritional quality, specific attributes, and, more recently, the sustainability impact of food products. For nutritional labels, there is evidence that all-encompassing labels providing a summary score of a product's nutritional quality are effective in influencing consumer behavior, however less is known about the impact of sustainable labels. This research compares an all-encompassing sustainable label summarizing several sustainable product's features into one score, to a one-trait sustainable label focusing on one sustainable attribute. Two controlled online experiments compare an all-encompassing label (i.e., Eco-Score) to a one-trait label (i.e., organic label) and test how their presence influences consumers' willingness to pay. Study 1 (N = 290) shows that a positive all-encompassing sustainable label (Eco-Score B) does not result in a greater willingness to pay for a box of cereal when compared to no label, and to a one-trait sustainable label (organic), even though the Eco-Score incorporates the product's organic attribute in its assessment. Study 2 (N = 577) shows that consumers were willing to pay less for a product featuring an all-encompassing positive Eco-Score label, compared to the same product with an organic label. It also tests a mechanism behind this effect related to the perceived benefits evoked by the label: while the Eco-Score is perceived as only providing environmental benefits, the organic label also provides more concrete health benefits (i.e., it is good for one's health). Implications for public policy are discussed.

Abstract:The current food system is unsustainable. It encourages unhealthy food choices, increasing the risk of non-communicable diseases, and has a substantial environmental impact, responsible for around a third of all anthropogenic greenhouse gas emissions. Improving both public and planetary health will require dietary change. To promote this transition, it is crucial to understand how consumers conceptualise healthy and sustainable eating. The aim of this review was to examine how adults from high-income countries interpret healthy and sustainable eating, with a specific focus on Ireland and the UK. As healthy eating and sustainable eating are often conceptualised as distinctive constructs, we explored each of these separately before examining how consumers perceive them together. Most consumers have a reasonable understanding of what constitutes a healthy diet, with many echoing aspects consistent with dietary guidelines. However, consumers perceptions of healthy eating often extend beyond these health-centric recommendations, incorporating concepts such as the pleasure of eating and supporting mental well-being. Sustainable eating, on the other hand, is less well understood. Most consumers overemphasise the importance of eating local, organic food and reducing packaging and underestimate or are unaware of the environmental impact of red meat consumption. These findings provide a clear opportunity to improve public awareness of healthy and sustainable diets. Moreover, they emphasise the need to promote the synergies between healthy and sustainable dietary practices. However, knowledge alone will not be enough to change behaviour. Future interventions should also seek to overcome consumers competing dietary priorities and create system-wide changes.

Abstract:The topic of consumer food choice has received much attention among researchers and stakeholders within the food industry. However, in order to better facilitate food consumption towards a more sustainable direction, we need increased knowledge and understanding of factors that influence consumers' food choice. This study is a systematic review of reviews conducted between 2017 and 2021, summarising and synthesising reviews on food choice. The aim is to provide an update of the current knowledge on consumer food choice, point out what is already known, and identify knowledge gaps to enable a prioritisation for future research. The analysis highlights decisive factors in food choice, i.e. product, available information, price, context, personal and group influences and sensory perceptions. The synthesis of findings follows a socioecological model, integrating four different levels of the social and environmental systems: the physical food environment, the social and community level, interpersonal relations and, finally, individual characteristics such as psychological and behavioural factors. Results show that behavioural patterns, influenced by strong informal institutions, such as culture and norms, can be difficult to break; for example, changing into more sustainable food behaviour. The findings suggest that more interdisciplinary research and studies in real-life settings are needed to grasp the complexity of food choice. This would allow for us to better understand consumers as social beings shaped by, among other things, the physical environment, social interactions, and culture.

Abstract:Nutrient profiling and front-of-pack labeling (FOPL) have been developed to categorize food products as more or less healthy based on their nutrient content and to easily communicate this information to consumers. The goal is to change individual food choices toward a healthier diet. Since global climate change has recently become an urgent matter, this paper also aims to investigate the correlations between different food health scales, including some FOPLs currently adopted by one or more countries, and several sustainability indicators. For this purpose, a food sustainability composite index has been developed to summarize environmental indicators and compare food scales. Results indicate, as expected, that well-known healthy and sustainable diets are strongly correlated with both environmental indicators and the composite index, while FOPLs based on portions or on 100 g show moderate and weak correlation values, respectively. Within-category analysis has not found any associations that explain these results. Hence, 100 g standard, on which FOPLs are usually developed, seems not to be the ideal basis for developing a label that aspires to communicate healthiness and sustainability in a unique format, as required by the need for simple messaging. On the contrary, FOPLs based on portions appear to be more likely to achieve this goal.

Abstract:ABSTRACT Human and planetary health goals have coalesced within consumer food choices. Food‐based dietary guidelines provide expert recommendations on what to eat, however, adherence is low and few include sustainability recommendations. This systematic review sought to extract consumer behavioural findings specifically related to ‘healthy sustainable diets’ to gain insights into the levers of food‐related behavioural change. Data analysed from 57 studies reveal that while 27 discrete behavioural theories underpinned conceptualisation of research, just three dominate this literature: Theory of Planned Behaviour, Transtheoretical Model and Social Practice Theory. Correspondingly, studies were mainly concerned with motivation, attitudes, intentions and practices. Promising research directions are emerging from investigations into the roles of emotions, meat attachment and types of knowledge. Those sustainable healthy food behaviours (SuHeFB) most investigated were meat consumption reduction, plant‐based food consumption, and alternative‐to‐animal protein food product acceptance. In addressing the perplexity surrounding consumer inertia in altering dietary habits, this review provides a comprehensive SuHeFB construct typology and a justification for directing research attention towards the phenomenon of amotivation. In addition, 31 future research questions are posited under six related SuHeFB themes.

Impact of color-coded and warning nutrition labelling schemes: A systematic review and network meta-analysis

Abstract:Background: Suboptimal diets are a leading risk factor for death and disability. Nutrition labelling is a potential method to encourage consumers to improve dietary behaviour. This systematic review and network meta-analysis (NMA) summarises evidence on the impact of colour-coded interpretive labels and warning labels on changing consumers' purchasing behaviour. Methods and findings: We conducted a literature review of peer-reviewed articles published between 1 January 1990 and 24 May 2021 in PubMed, Embase via Ovid, Cochrane Central Register of Controlled Trials, and SCOPUS. Randomised controlled trials (RCTs) and quasi-experimental studies were included for the primary outcomes (measures of changes in consumers' purchasing and consuming behaviour). A frequentist NMA method was applied to pool the results. A total of 156 studies (including 101 RCTs and 55 non-RCTs) nested in 138 articles were incorporated into the systematic review, of which 134 studies in 120 articles were eligible for meta-analysis. We found that the traffic light labelling system (TLS), nutrient warning (NW), and health warning (HW) were associated with an increased probability of selecting more healthful products (odds ratios [ORs] and 95% confidence intervals [CIs]: TLS, 1.5 [1.2, 1.87]; NW, 3.61 [2.82, 4.63]; HW, 1.65 [1.32, 2.06]). Nutri-Score (NS) and warning labels appeared effective in reducing consumers' probability of selecting less healthful products (NS, 0.66 [0.53, 0.82]; NW,0.65 [0.54, 0.77]; HW,0.64 [0.53, 0.76]). NS and NW were associated with an increased overall healthfulness (healthfulness ratings of products purchased using models such as FSAm-NPS/HCSP) by 7.9% and 26%, respectively. TLS, NS, and NW were associated with a reduced energy (total energy: TLS, -6.5%; NS, -6%; NW, -12.9%; energy per 100 g/ml: TLS, -3%; NS, -3.5%; NW, -3.8%), sodium (total sodium/salt: TLS, -6.4%; sodium/salt per 100 g/ml: NS: -7.8%), fat (total fat: NS, -15.7%; fat per 100 g/ml: TLS: -2.6%; NS: -3.2%), and total saturated fat (TLS, -12.9%; NS: -17.1%; NW: -16.3%) content of purchases. The impact of TLS, NS, and NW on purchasing behaviour could be explained by improved understanding of the nutrition information, which further elicits negative perception towards unhealthful products or positive attitudes towards healthful foods. Comparisons across label types suggested that colour-coded labels performed better in nudging consumers towards the purchase of more healthful products (NS versus NW: 1.51 [1.08, 2.11]), while warning labels have the advantage in discouraging unhealthful purchasing behaviour (NW versus TLS: 0.81 [0.67, 0.98]; HW versus TLS: 0.8 [0.63, 1]). Study limitations included high heterogeneity and inconsistency in the comparisons across different label types, limited number of real-world studies (95% were laboratory studies), and lack of long-term impact assessments. Conclusions: Our systematic review provided comprehensive evidence for the impact of colour-coded labels and warnings in nudging consumers' purchasing behaviour towards more healthful products and the underlying psychological mechanism of behavioural change. Each type of label had different attributes, which should be taken into consideration when making front-of-package nutrition labelling (FOPL) policies according to local contexts. Our study supported mandatory front-of-pack labelling policies in directing consumers' choice and encouraging the food industry to reformulate their products. Abstract:The plethora of alternative food labels emerging in the marketplace reflects consumer interest in informed and sustainable purchasing. However, consumers' preferences vary with respect to the sustainability metrics represented by labeling programs. The goal of this project was to characterize public university students' perceptions of product parameters commonly represented by food labels for produce (e.g., cost, taste, certified organic, locally grown). A consumer survey ( n = 338) was conducted at two university dining halls, located in close proximity to major residence hall communities which house approximately 2600 students. Culinary, health and cost attributes (taste, nutritional value, price and appearance) were ranked as more influential in determining purchasing decisions than sustainability attributes related to production and sourcing. While sustainability values were not as influential in driving purchasing behaviors as compared with product attributes, they were important to approximately 50% of the survey respondents. By identifying the sustainability values of students and their willingness to pay more for specific types of sustainable food, results from this study can inform efforts to align priorities of campus dining services with the values of their student patrons, as well as identify educational opportunities around agriculture and food production.

A focused ethnographic study on the role of health and sustainability in food choice decisions

Abstract:In the United States, typical dietary patterns are not necessarily healthy and sustainable. In order to shift diets, we need to provide support to individuals in a way that reflects what matters most to them. In this study, we aimed to identify the considerations that are most important to individuals regarding food-related decisions, and to determine how those considerations relate to specific foods, with a focus on health and environmental sustainability. In a sequential mixed-methods design, we first conducted 27 semi-structured interviews with participants in California and Nebraska. These interviews included a free-listing activity, where we used a technical construct of salience, Smith's S Index, to identify the considerations that were most important to our participants. We followed up with 20 of those participants to complete a pile-sorting survey, where participants sorted and rated 42 food items for price, taste, health, convenience, familiarity, and environmental impact. Our findings showed that the most salient considerations cited by our participants were price, health, taste, and time. There was consensus for how participants rated the foods for price, taste, convenience, and familiarity. However, there was only weak consensus for how participants rated the foods for health impact, and no consensus for how participants rated the foods for environmental impact. There was also disagreement on how to sort new plant-based products intended to replace or substitute meat and other animal-based foods. These findings have implications for how to communicate about healthy and sustainable diets. They highlight conflicting considerations, disagreement in classification of new products, and limited consensus for perceived health and environmental impact of foods, which present challenges to the achievement of diets that are healthy and environmentally sustainable in the United States.
Segmenting consumers of meat and dairy products from five European countries: Implications for promoting sustainable food choices

Abstract:Accelerating the transition of agri-food systems towards higher sustainability requires greater understanding of consumers' decision-making related to sustainable food choices, together with competing drivers which may result in unsustainable food choice demand. Meat and dairy production systems negatively contribute to greenhouse gas targets, unless sustainable production methods are applied, and these are understood by consumers and used in food choices. The psychological factors determining consumers' attitudes towards sustainably produced meat and dairy products were assessed. Data were collected through an online survey across five European countries (Czechia, Spain, Sweden, Switzerland, and the United Kingdom) ( n = 2490) in November 2021. The results showed consumers perceived food sustainability to be less important than sensory and healthiness attributes. UK consumers showed the strongest intentions to increase consumption of sustainably produced meat and dairy products. In contrast, Swiss consumers demonstrated the weakest intentions. A two-stage cluster analysis based on consumers' perceived attribute importance identified four distinct segments: low food involvement (19.6 %), high food involvement (31.9 %), price-sensitive (23.2 %), and health- and sustainability-involved (25.3 %) consumer segments. Respondents in low food involvement and price-sensitive consumer segments tended to be younger and have lower environmental preservation attitudes and were more prevalent in Switzerland and Czechia. Those in high food involvement and health- and sustainability-involved consumer segments perceived higher importance of food sustainability and were more prevalent in Spain and Sweden. These respondents expressed greater intentions to increase consumption of sustainably produced meat and dairy products, at the same time being more likely to recognise the utility of sustainability labelling information. Animal welfare information was perceived to be most important for respondents in all the segments with the exception of those in the price-sensitive consumer segment. Building on the results, recommendations for promoting consumer sustainable food choices are proposed.

Abstract:Sustainable development is growing in importance in today's climate crisis. With the percentage of sales via digital channels increasing annually and consumers becoming aware of the environmental impact of their choices, a huge opportunity presents itself for promoting sustainable goods online if designers can find an effective way to raise awareness in consumers. Using a simulated e-commerce site (webshop), we investigated whether the presence or absence of sustainability labels displayed next to product images influenced users' product selections. There was a significant association between the presentation of sustainability labels and the number of selected sustainable products. Overall, participants were familiar with sustainability labels and indicated willingness to pay 'extra' for sustainable products, while there was more variation in the way they felt that sustainability labels influenced their product choices. The findings highlight the complexities of factors influencing purchasing decisions and the need for more design-inspired research in this area. Whilst user interface design may be an effective means to influence sustainable product choices, design should also enable consumers to make informed product choices, while still providing a 'fair' e-commerce environment.

Abstract:Abstract Context Assessing the overall sustainability of a diet is a challenging undertaking requiring a holistic approach capable of addressing the multicriteria nature of this concept. Objective The aim was to identify and summarize the multicriteria measures used to assess the sustainability characteristics of diets reported at the individual level by healthy adults. Data Sources Articles were identified via PubMed, Scopus, and Web of Science. The search strategy consisted of key words and MeSH terms, and was concluded in September 2022, covering references in English, Spanish, and Portuguese. Data Extraction This systematic review followed the PRISMA guidelines. The search identified 5663 references, from which 1794 were duplicates. Two reviewers independently screened the titles and abstracts of each of the 3869 records and the full-text of the 144 references selected. Of these, 7 studies met the inclusion criteria. Data Analysis A total of 6 multicriteria measures were identified: 3 different Sustainable Diet Indices, the Quality Environmental Costs of Diet, the Quality Financial Costs of Diet, and the Environmental Impact of Diet. All of these incorporated a health/nutrition dimension, while the environmental and economic dimensions were the second and the third most integrated, respectively. A sociocultural sustainability dimension was included in only 1 of the measures. Conclusion Despite some methodological concerns in the development and validation process of the identified measures, their inclusion is considered indispensable in assessing the transition towards sustainable diets in future studies. Abstract:UN's sustainable development goals view ethical consumption as a multi‐dimensional construct addressing production and consumption‐related sustainability challenges. The present study is the first to assimilate the five dimensions of ethical consumption—concern for environment, love of organic, preference for fair trade, regard for animal welfare, and anti‐consumption/boycott movements—in a single review. This framework‐based review using Theory‐Context‐Characteristic‐Methods (TCCM) and employing Scientific Procedures and Rationales for Systematic Literature Reviews (SPAR‐4 SLR) protocol, thoroughly synthesizes the state of knowledge, identifies research gaps and proposes directions for future research in ethical consumption. The authors review 123 articles from 2000 to 2024 sourced from SCOPUS by thoroughly examining antecedents, mediators, moderators, outcome variables, and interrelationships for all five dimensions. The authors recommend applying new consumer personality theories instead of familiar frameworks, adopting qualitative methods and longitudinal designs with multicultural and cross‐national focus, and testing novel mediation and moderation mechanisms in clarifying interrelationships.

The Impact of Food Nutrition Labels on Consumer Behavior: A Cross-national Survey and Quantitative Analysis

Abstract:This study explores the impact of food nutrition labels on consumer behavior through a cross-national survey and quantitative analysis. Globally, food nutrition labels have become an essential reference for consumers when choosing food products, and their significance is increasingly evident. Firstly, we found that the accuracy of food nutrition labels significantly influences consumer behavior. Accurate label information helps consumers make informed purchasing decisions, choosing healthier and more nutritious foods. However, inaccurate or misleading label information can lead to consumer misunderstanding, potentially triggering unhealthy eating habits or excessive intake of certain nutrients. Secondly, the readability and comprehensibility of food nutrition labels are also crucial factors affecting consumer behavior. Labels that are easy to read and understand provide more authentic and accurate product nutrition information, helping consumers quickly grasp the main ingredients and nutritional value of foods. Therefore, when designing food labels, manufacturers should focus on improving information readability and comprehensibility to facilitate consumer access to the required information. Furthermore, our research indicates that health claims and nutrition facts tables on food nutrition labels positively guide consumers' health awareness. An increasing number of consumers are beginning to pay attention to the nutritional content and health value of foods, preferring those labeled with health claims or nutrition facts tables. These labels not only provide scientific dietary advice to consumers but also help them control calorie intake and maintain healthy eating habits. In the cross-national survey, we also observed variations in consumer attention to food nutrition labels across different countries and regions. In developed countries, consumers tend to place a higher emphasis on food labels, whereas in developing countries, due to a lack of nutritional knowledge, consumer attention to food labels is relatively low. Therefore, manufacturers and governments should tailor strategies to increase consumer awareness and utilization of food nutrition labels based on the characteristics of consumers in different regions. Finally, quantitative analysis further confirms the impact of food nutrition labels on consumer purchasing decisions. Information on labels, such as calorie content, fat, fiber, sugar, etc., can help consumers make more scientific and reasonable choices for their food products. Meanwhile, health slogans and related certification marks on labels can increase consumer recognition of the product's health value, thereby enhancing their willingness to purchase. In summary, food nutrition labels have a profound impact on consumer behavior. To ensure that consumers can make informed purchasing decisions, manufacturers and governments should strive to improve the accuracy, readability, and comprehensibility of food nutrition labels, and strengthen the popularization and education of related knowledge.
