Abstract:This study investigated the mechanism of changes in the 3D printing performance of cassava starch (CS) gels during freezing process from the perspective of multi-scale structure and gel properties. When the freezing time was before the subcooling period, the variation of 3D printing accuracy was mainly affected by starch retrogradation. During this period, the increase in the proportion of short-medium amylose(X∼100–5000) lead to an increase in the short-range ordered structure and crystallinity of CS, which in turn enhanced the storage modulus and structural recovery. In this circumstance the rigidity and support of the gel system increased, thus improving the printing performance of the 3D printed products. Conversely, the initiation of ice crystal expansion during and beyond the freezing time in the subcooling period damaged the short-range ordered structure of starch, leading to the increment of pore size and structural laxity in the sub-microstructure. Moreover, the free water content (A23) increased and the storage modulus decreased. These changes caused a reduction in the water-holding capacity and structural stability of CS gel, and thus decreased the printing accuracy of the final products. This study provides insight into 3D printing applied in the freezing process of starchy foods.
Freezing rate's impact on starch retrogradation, ice recrystallization, and quality of water-added and water-free quick-frozen rice noodles

Abstract:The study evaluated the effect of freezing rate on the quality of water-added quick-frozen rice noodles and water-free quick-frozen rice noodles. Results indicated that the retrogradation enthalpy, relative crystallinity, freezable water content, and cooking loss of water-added quick-frozen rice noodles were higher than those of water-free quick-frozen rice noodles with increasing storage time. Furthermore, ice recrystallization accelerated the deterioration of the quality of the rice noodles, resulting in the enlargement of the pores within the rice noodles and the formation of many pores on the surface. This phenomenon was particularly evident in the rice noodles of Y-40 °C (freezing with water at -40 °C) and Y-60 °C (freezing with water at -60 °C). After 28 days of frozen storage, the hardness increased by 83.83 % for rice noodles of Y-20 °C (freezing with water at -20 °C), while the hardness decreased by 51.68 % and 45.80 %, respectively, for rice noodles of Y-40 °C and Y-60 °C. Consequently, the impact of the freezing rate on the quality of water-added quick-frozen rice noodles is more pronounced than that of water-free quick-frozen rice noodles. Moreover, a higher freezing rate can delay the deterioration of the quality of frozen rice noodles by postponing starch retrogradation and inhibiting ice recrystallization.

Abstract:Starch is an important renewable resource, however, the performance of 3D printing inks prepared from it requires improvement. This study revealed the effects of different freezing temperatures (25 °C, 4°C, 0°C, -20°C, -40°C, -80°C) on the 3D printing accuracy of cassava starch (CS) gels in terms of starch gel properties (rheological properties, moisture distribution, submicroscopic structure) and multiscale structure (molecular size, chain length distribution, short-range ordered structure). As the freezing temperature decreased, the molecular size and the amylose (Am) content in CS gel were increased, particularly for short Am chains (X∼100-1000). This also resulted in a greater orderly structure of the starch, enhancing the elastic modulus of the gel. Moreover, the lower the freezing temperature, the higher mobility of water molecules within the gel matrix after thawed, which in turn caused the reduction of gel viscosity and facilitated the smooth squeezing of the gel. After freeze-thawing at cryogenic temperatures, the above changes in CS gel properties improved the stiffness and support performance of the gel structure, thereby enhancing the 3D printing precision. This study provides insights into the development of 3D printing technology for starchy food materials, emphasizing its potential to transform the customization of starch-based food processing by enabling customized food products, enhancing texture, and offering consumers personalized food choices and improved sensory experiences.
The Texture of Fresh Rice Noodles As Affected by the Physicochemical Properties and Starch Fine Structure of Aged Paddy

Abstract:The physicochemical properties and starch fine structure change during paddy storage, which may be beneficial for the qualities of rice-based products such as fresh rice noodles (FRN). In this study, the textural properties of FRN prepared from polished rice of six indica paddy cultivars after different storage period at 36 +/- 2 degrees C and 85% +/- 5% relative humidity were investigated. The pasting properties, solubility (S), swelling power (SP) of rice flour and morphology of the starch granules, chain length distribution of amylopectin were analyzed to determine factors that impact the texture of FRN. The chewiness and springiness of FRN increased, and the adhesiveness decreased with increase in storage duration. The setback (SB) and pasting temperature (PT) increased while the S and SP decreased with extension of storage duration (0-90 days). Chain length distributions of amylopectin also changed. Pearson correlation analysis revealed that cool paste viscosity (CPV) of indica rice flour, short chain (DP 6-12) and long chain (DP 37-60) of amylopectin were the most correlated parameters with adhesiveness of FRN. Our results may provide insights for selecting raw materials for production of high-quality FRN.

Abstract:Eight rice varieties with wide diversity in apparent amylose content (AC) were selected and planted in the early (HZE) and late season (HZL) in Hangzhou and in the winter season in Hainan (HN) for two consecutive years to study the genotypic and environmental effects on starch thermal and retrogradation properties of grain. Genotypic variation (all at P < 0.01) accounted for >56% of the total variation for onset (T(o)), peak (T(p)), and completion (T(c)) temperature, width at half-peak height (DeltaT(1/2)) of gelatinization, enthalpy (DeltaH(r)) of retrograded starch, percentage of retrogradation (R%), and 45.8% for enthalpy (DeltaH(g)) of gelatinization. Seasonal variation accounted for about one-fifth for T(o), T(p), and T(c) and one-third for DeltaH(g), but less for T(1/)(2), DeltaH(r), and R% of the total variation, indicating that T(o), T(p), T(c), and DeltaH(g) were highly affected by seasonal environment in addition to the genotypic variation. The T(o), T(p), T(c), and DeltaH(g) in HZL were much smaller than those in HZE and HN. Correlation analysis for the eight genotypes showed that AC was significantly correlated with DeltaH(g) (r = -0.83, P < 0.01) and R% (r = 0.734, P < 0.05). DeltaH(g) was also positively correlated with T(c) (r = 0.878, P < 0.05), but it did not have any correlation with DeltaH(r), whereas the latter was positively correlated with R% (r = 0.994, P < 0.001). The intercorrelation of T(o), T(p), T(c), and DeltaT(1/)(2) themselves was significant at P < 0.001. The correlation analysis results suggest that there are different molecular mechanisms to regulate thermal properties (T(o), T(p), T(c), and DeltaH(g)) and retrogradation properties (DeltaH(r) and R%) as affected by environmental conditions. The implications of the results for rice breeders and starch-based food processors are discussed.

Abstract:Amylopectin retrogradation is a serious problem in starch-based ready meals. In the current research, rice amylopectin was frozen by low temperature (−20, −30, and −60°C) and ultra-low temperature (−100°C), and then stored at 4°C for 21 days or at −18°C for up to 5 months to evaluate the retrogradation properties. Amylopectin retrogradation enthalpy of rice was determined by a differential scanning calorimetry. The results showed that low temperature and ultra-low temperature freezing can effectively retard amylopectin retrogradation during the freezing process and during frozen storage (−18°C) for at least 5 months. However, rice amylopectin still retrograded after the freezing process during chill storage at 4°C. The methods of low and ultra-low temperature freezing combined with frozen storage might be potentially very useful for food industry to produce high quality starch-based ready to eat meals.

Abstract:This study investigated the effects of four different freezing methods on the texture of rice dough reconstituted by glutinous rice starch and gluten, and the changes of properties of rice dough with different gluten ratios after liquid nitrogen (LF) treatment. The profiles of frozen rice dough were studied by texture analyzer, low-field NMR, SEM, FT-IR, DSC, CLSM, X-RD and RVA. Results revealed that with the slowing down of freezing rate, the damage of freezing process to starch granules and protein structure in frozen rice dough increases, resulting in the increase of damaged starch, the decrease of protein ordered structure, the change of bound water in frozen rice dough to free water, the decrease of frozen rice dough hardness and elasticity, the decrease of storage modulus (G') and the deterioration of frozen rice dough texture. The addition of gluten in frozen rice dough will increase the short-range ordered structure and crystal structure of starch, reduce the digestibility of starch, and change the viscosity characteristics of frozen rice dough. Based on the experimental results, adding 10 % gluten is more suitable for making frozen rice dough, while LF has the least effect on frozen rice dough texture.

Abstract:Temperature-induced structural variations of retrograded starch gel during long-term storage were investigated in a real food system (wet starch noodles). Fresh starch noodles presented a B-type XRD pattern containing 8.82% crystallinity and 16.04% double helices. In the first 2 weeks, double helices of starch chain formed long-range ordered structure leading to increased crystallinity, and such structural transformation was positively correlated with increasing storage temperature (from 4 °C to 35 °C) and storage time. However, with the extension of storage time to 12 weeks, the disorganization of supra-molecular structure was likely to be observed by decreased crystallinity, double helix and water mobility. Besides, we propose that the area and intensity of Raman band at 2910 cm<sup>-1</sup> can be a good indicator for evaluating perfection of crystallinity in starch noodles. These results contributed to a better understanding of mechanisms underlying molecular order changes of retrograded starch gel product during long-term storage.

Abstract:The influences of various gelatin emulsion additions on gelatinization, rheology, retrogradation and structural properties of waxy rice starch (WRS) were investigated. The gelatin emulsion was uniformly dispersed in the starch pastes, which increased the particle size through agglomerating around the starch powder particles. As gelatin emulsion content increased, the pasting viscosity of WRS pastes significantly increased (P < 0.05), whereas its setback value, gelatinization and retrogradation enthalpy decreased. Rheological measurements indicated that the addition of gelatin emulsion did not change the shear thinning behavior of WRS pastes blends, and the storage modulus and loss modulus were positively correlated with gelatin emulsion content. During the heating stage of the pasting process, the interfacial organization consisting of gelatin undergoes disintegration and melting, reconfiguring the emulsion system. Gelatin dispersed in the interfacial and continuous phases interacts with starch to form hydrogen bonds and inhibit starch rearrangement. The starch-lipid complex formed by the interaction between lipids released from emulsion and starch is capable of destroying the crystalline region. Therefore, after 14 d of storage at 4 C-degrees, the relative crystallinity of WRS decreased by 72.4 % as the gelatin emulsion addition was increased from 0 % to 14 %. The addition of gelatin emulsion induced the formation of steric hindrance effects, which impeded the mobility of water molecules and improved freeze-thaw stability. These results may contribute to the creation of high-quality and innovative water-oil-starch mixture food products that remain fresh for a longer period.
Effects of storage temperatures on the starch digestibility of whole rice with distinct starch fine molecular structure

Abstract:Although the retrogradation of rice starch has been extensively investigated, there remain questions as to how storage temperature affects starch inter- and intramolecular interactions in cooked white rice, and the relationship of these interactions with the digestion rate. To this end, micromorphology, crystallinity polymorphisms, molecular interaction patterns and in vitro starch digestibility of 3 rice varieties kept under 5 different storage temperature programs (room temperature (RT), 4 °C, -18 °C, 4 °C/RT (4 °C for 24 h and then RT for 24 h),-18 °C/RT (-18 °C for 24 h and then RT for 24 h)) were investigated. As expected, a significant variance in starch digestibility was observed for samples after storage at different temperatures. Overall, storage at 4 °C could most effectively decrease the starch digestibility of retrograded rice. The digestion rate constant was for the first time found to be determined by short-range amylopectin intermolecular interactions rather than long-range starch molecular interactions, for all different storage conditions. Furthermore, the digestion extent was determined by both inter- and intramolecular interactions among starch molecules as well as by the long-range order of the retrograded double helices. These results could prove useful to devise storage regimes which use retrogradation to produce cooked rice with lower glycemic index.

Abstract:The impacts of both structural variations induced by low temperature and physiochemical changes induced by modified starch on the qualities of frozen raw noodles (FRNs) were investigated during long-term freezing storage. The addition of modified starch was a potentially effective method to delay the loss of FRNs qualities during storage. In this study, hydroxypropyl starch (HPS) and hydroxypropyl distarch phosphate (HPDSP) were added to improve the cooking and textural characteristics of FRNs. The cooking loss rate of FRNs with the addition of 12%HPS was consistent with that of the control (4.39 % and 4.37 %, respectively), while after 8 weeks of storage showed the significant decrease effect (5.01 % and 5.78 %, respectively). In addition, adding HPS or HPDSP could change the colour and lustre of FRNs to that preferred by consumers. When 6 % HPS or HPDSP were added, the FRNs showed the lowest of freezable water content during storage. The test results of FTIR showed the secondary structure of FRNs was maintained with the introduction of HPS or HPDSP during refrigeration, and the microstructure was improved during the frozen storage period. Consequently, the results provided a theoretical basis and new insight for the production and transportation of FRNs.

Effect of oxidized starch on the storage stability of frozen raw noodles: Water distribution, protein structure, and quality attributes

Abstract:Freezing is a popular method of food preservation with multiple advantages. However, it may change the internal composition and quality of food. This study aimed to investigate the effect of modified starch on the storage stability of frozen raw noodles (FRNs) under refrigerated storage conditions. Oxidized starch (OS), a modified starch, is widely used in the food industry. In the present study, texture and cooking loss rate analyses showed that the hardness and chewiness of FRNs with added OS increased and the cooking loss rate decreased during the frozen storage process. Low-field nuclear magnetic resonance characterization confirmed that the water-holding capacity of FRNs with OS was enhanced. When 6% OS was added, the maximum freezable water content of FRNs was lower than the minimum freezable water content (51%) of FRNs without OS during freezing. Fourier-transform infrared spectroscopy showed that after the addition of OS, the secondary structures beneficial for structural maintenance were increased, forming a denser protein network and improving the microstructure of FRNs. In summary, the water state, protein structure, and quality characteristics of FRNs were improved by the addition of OS within an appropriate range.
Mechanistic study on the effect of hydroxypropyl corn starch, guar gum and compound phosphates on the freeze-thaw quality of quick-frozen kuey teow

Abstract:Kuey teow is one of the delicacies of Guangdong, China and is a gluten-free noodle dish made from rice. It has a short storage period and extending the shelf life by quick freezing induces quality deterioration due to temperature fluctuations. To improve its freeze-thaw frozen storage quality, this paper examined the effects of hydroxypropyl corn starch (HCS), guar gum (GG), and compound phosphates (CP) on the quality of quick-frozen kuey teow during freeze-thaw cycles. The mechanism was investigated by identifying changes in the moisture status, aging degree of the starch, and textural and cooking characteristics. The results showed that all three additions improved the toughness, chewiness and steaming characteristics of the kuey teow, with CP significantly enhancing chewiness. XRD and FTIR results revealed that GG more significantly inhibited the decrease of starch crystallinity, while HCS inhibited starch aging. GG, HCS and CP all improved the hydration characteristics and water holding capacity of rice starch. GG enhances the ability of starch to bind more tightly with water, resulting in a more uniform water distribution and a more continuous and tight structure of the kuey teow. This study will provide a theoretical basis for compounding and optimizing the quick-freezing of kuey teow.

Abstract:Freezing process is one of the key steps in making frozen cooked noodles. Ice crystal formed in freezing process affects the quality of frozen cooked noodles. In this paper, we studied the effect of freezing treatment on frozen cooked noodles. Frozen cooked noodles were evaluated for microstructure and texture properties explored with a scanning electron microscope and texture analyzer at − 20 °C, − 30 °C and − 40 °C respectively. The results indicated that the microstructure and texture properties of frozen cooked noodles were significantly (<em class="EmphasisTypeItalic">P </em>< 0.05) improved by a lower freezing temperature than a higher temperature. This present study also showed that the freezing rate is not the only parameter responsible for microstructure and texture properties that occur during freezing; the difference of flours also can be a factor. These findings, if generally applicable to frozen cooked noodle products, could have important economic implications for the convenience of the food industry.

Abstract:Frozen staple food, attributed to its favorable taste and convenience, has a promising development potential in the future. Frequent freezing and thawing, however, will affect its quality. This study simulated several freeze–thaw cycles (FTC) that may occur during the cold chain process of frozen oatmeal cooked noodles (FOCN) production to consumption. The quality changes and their mechanisms were elucidated using methods such as differential scanning calorimetry (DSC), low-field nuclear magnetic resonance (LF-NMR), Fourier-transform infrared spectroscopy (FTIR), confocal laser scanning microscopy (CLSM), texture analysis, and sensory evaluation. The freezable water content of the FOCN decreased because of the FTC treatment, and the relative content of total water in FOCN also decreased accordingly. The increase in β-Turn after FTC induced disorder in the secondary structure of proteins, causing the protein microstructure to become loose and discontinuous, which in turn reduced the water-holding capacity of FOCN. Additionally, FTC reduced the chewiness and sensory score of FOCN. This research will contribute a theoretical foundation for optimizing the cold chain process.

Abstract:In order to improve the retrogradation of rice starch (RS) and the quality of rice products, soy protein isolate (SPI), whey protein isolate (WPI), and rice flour were mixed and further extruded into mixed flour. The physicochemical properties and morphology of starch of extruded rice flour (ERS) and starch of extruded mixtures of SPI, WPI, and rice flour (SPI-WPI-ERS) were analyzed. The distribution of amylopectin chain length, molecular weight, microstructure, crystallinity, short-range ordered structure, pasting properties, and thermodynamic properties of RS, ERS, and SPI-WPI-ERS were measured. The results showed that, compared with rice starch, the proportion of long-chain starch, total starch content, and molecular weight were decreased in ERS and SPI-WPI-ERS, but the proportion of short-chain and amylose content was increased. The short-range order structure was destroyed. The water absorption of ERS and SPI-WPI-ERS was much higher than rice starch at 55 °C, 65 °C, and 75 °C, but lower than that of rice starch at 95 °C. Therefore, the retrogradation characteristics of SPI-WPI-ERS were improved. The setback of rice starch products was reduced and the setback of SPI-WPI-ERS was lower than that of ERS. Overall, the retrogradation of rice starch was delayed by adding exogenous protein and extrusion technology, and the application range of rice flour in staple food products was broadened.

Abstract:High temperature (HT) is the major environmental factor affecting grain starch properties of cooking rice cultivars. However, little information has been available on the effect of environmental temperature on the starch granule size distribution of rice grains. In this paper, five indica rice genotypes, including the wild type (9311) and its four mutants differing in amylose content (AC), were used to investigate the effect of environmental temperature on the starch granule size distribution, as well as its relation to AC and gelatinization properties of rice starch. Two temperature treatments (HT and NT) at filling stage were imposed to rice plants under the controlled temperature chambers. The result showed that HT increased the average diameter of starch granules and enhanced the proportion of large starch granules (LSG, D > 2.6 mu m) by number, volume and surface area, respectively. However, influence of HT on GT and starch granule size distribution was relatively independent of their alteration in AC level for different rice genotypes. Therefore, HT-induced increase in the average diameter of starch granules and LSG percentage was strongly responsible for the higher starch gelatinization temperature and inferior cooked palatability of HT-ripening rice grains, which be not inherently associated with their varying AC level. Effects of Sodium Chloride and Freeze–Thaw Cycling on the Quality of Frozen Cooked Noodles Made of Potato Flour

Abstract:The study aimed at exploring how the presence of sodium chloride and freeze‐thaw cycles influence the quality of frozen cooked noodles. The results showed that the multiple freeze‐thaw cycle worsened both the textural characteristics and the post re‐heating overall sensory quality of frozen cooked noodles, but the addition of modified potato flour combining with sodium chloride in wheat flour alleviated this deterioration. In addition, the negative effects of freeze‐thaw cycles on textural characteristics, cooking loss, and water absorption of frozen cooked noodles were reduced under the addition of 1.0% – 1.5% sodium chloride, but then improved considerably with >1.5 % sodium chloride addition. The results indicated that partial substitution of wheat flour by potato flour combined with addition of a proper amount of sodium chloride could alleviate the damage caused by generation of ice crystals during the freeze‐thaw cycles and improve the quality properties of the frozen cooked noodles.

Dynamic development of changes in multi-scale structure during grain filling affect gelatinization properties of rice starch

Abstract:Rice was collected over the entire grain filling period (about 40 days) to explore the multi-structure evolution and gelatinization behavior changes of starch. During the early stage (DAA 6-14), the significant reduction in lamellar repeat distance (10.04 to 9.68 nm) and relative crystallinity (26.6 % to 22.7 %) was due to initial rapid accumulation of amylose (from 9.38 % to 14.05 %) and short amylopectin chains. Meanwhile, the decreased proportion of aggregation structure resulted in a decrease in the gelatinization temperature and a narrowed range of gelatinization temperature also indicated an increase in homogeneity as starch matured. Gelatinization enthalpy was mainly controlled by aggregation structure, which was negatively and positively related to the amylose content and the degree of order respectively. Peak viscosity of starch pasting increased and reached a maximum (924 cP) at DAA-21 due to larger granule size. Amylose and short amylopectin chains with degree of polymerization 6-12 showed positive and negative correlation with short-term retrogradation ability (setback value) respectively. The dynamics of different scale structure during grain filling had varying degrees of impact on gelatinization properties.
