Abstract:In this study, the physicochemical, textural, rheological, bioactive, and sensory properties, and probiotic viability of synbiotic ice creams (containing inulin and Lactobacillus brevis PML1) were evaluated during frozen storage. The inulin-rich samples had higher carbohydrate and total solid contents and lower moisture content compared to other synbiotic samples; however, the pH value and acidity of the ice creams were not remarkably changed upon inulin addition. Although the addition of inulin led to a marked increase in the overrun, viscosity, and hardness of the formulations, the melting rate and fat destabilization were decreased in the inulin-enriched samples. The luminosity and chroma of the ice creams containing inulin were also more intense in comparison with other synbiotic ice creams. The antioxidant activity of the ice creams was improved when inulin was added as a prebiotic sugar in the formulations. Moreover, the synbiotic ice creams had higher thermodynamic stability, probiotic viability, and sensory properties than the inulin-free counterparts. The synbiotic ice creams (inulin + L. brevis PML1) could be therefore introduced as a novel functional product in the food industry.

Abstract:The health effects of probiotics depend on the concentration of living cells of these beneficial bacteria (more than 10 6 to 10 7 log CFU/g) in the foodstuffs at the time of consumption, as well as after the passage of the digestive system. Therefore, applying various protective compounds has been studied to protect probiotic microorganisms using the encapsulation method. Optimal formulation (Whey protein isolate (WPI): 57.22%, bio-cellulose (BC): 25%, inulin: 17.78%) was obtained based on particle size, zeta potential, microcapsule resistance to acidic conditions, and encapsulation efficiency analyses. In the second stage, probiotic ice cream samples with encapsulated and free probiotic and control sample (ice cream without probiotic) were produced. During storage for 50 days, the physical, chemical, sensory, and microbial characteristics of ice cream were investigated. The results indicated that the free probiotic decreased 0.97 logs from day 1 to day 50, while the encapsulated probiotic bacteria decreased 0.61 logs. Encapsulation significantly preserved the probiotic in the food substrate during storage. The present study indicated that the living cells of free probiotic were decreased (2 log CFU/g), although that of microencapsulated probiotic merely decreased by less than 1 log CFU/g cycle. This shows the cryoprotectant potential of BC used as a microencapsulating agent against damage at freezing temperature.

Abstract:Ca-alginate/chitosan microcapsules were made by electro-hydrodynamic processing. Two different microstructures were formed through the application of single- or double-stage procedures. Inulin or resistant starch, as prebiotic components, and Lactobacillus plantarum, as a probiotic strain, was incorporated into the microcapsules and their viability was monitored during the storage for 90 days. Microcapsules containing probiotic-prebiotic blends were employed as an ingredient in the formulation of ice-cream and bacterial survival was studied after the production and storage of the ice-cream. FTIR spectra confirmed the formation of polyelectrolyte complexes between alginate and chitosan. SEM images revealed that a chitosan layer thoroughly coated the Ca-alginate microcapsules formed through the double-stage procedure. After incorporation of either inulin or resistant starch into the microcapsules, the signal of the inulin was detected at 935 cm-1, and signals of the starch were traced at 1157 and 930 cm-1 in their FTIR spectra. Both polysaccharide matrices significantly improved probiotic survival during the storage of microcapsules. However, inulin-containing microcapsules showed a better performance than starch-containing ones as 7.23 ± 0.21 and 9.15 ± 0.33 log CFU g-1 of probiotics remained viable in them after storage at 25 and 4 °C, respectively. The microcapsules also improved the viability of probiotics after incorporating into ice-cream as 7.37 ± 0.12 and 7.82 ± 0.39 log CFU g-1 of bacteria were viable after 90 days in inulin- and starch-containing microcapsules, respectively. These findings suggest that such microcapsules could be used as an ingredient for the formulated functional foods.

Abstract:The objective of this work was to explore the effect of two encapsulating polysaccharides (sodium alginate and carrageenan) on the viability of probiotic bacteria (L. acidophilus) in ice cream and under simulated gastrointestinal (GIT) conditions. For the purpose, probiotic cells were encapsulated in sodium alginate and carrageenan by an encapsulator using standard operating conditions. Ice cream was manufactured by adding free and microencapsulated probiotics. The survival of free and encapsulated probiotics was monitored over a period of 120 days at − 20 °C. Furthermore, the survival of free and encapsulated probiotic bacteria under the simulated GIT conditions was investigated. The results of the study showed that encapsulation significantly (p < 0.05) improved the cell survival of probiotics in ice cream compared to free cells (non-encapsulated). The viable cell count of probiotic bacteria in the free-state in ice cream was 9.97 log cfu/ml at 0 day that decreased to 6.12 log cfu/ml after 120 days. However, encapsulation improved the viability of the probiotics in the prepared ice cream and GIT. The cell count of probiotics encapsulated with sodium alginate and carrageenan was 9.91 log cfu/ml and 9.89 log cfu/ml respectively at 0 day that decreased to 8.74 log cfu/ml and 8.39 log cfu/ml respectively after 120 days. Similarly, during simulated gastrointestinal assay, the survival rate of encapsulated probiotic bacteria in simulated gastric solution and intestinal solutions was higher than that of free cells. In the case of encapsulated bacteria, only three log while for free cells seven log reduction was recorded. Sodium alginate microcapsules exhibited better release profile than carrageenan. Conclusively, the incorporation of encapsulated probiotics had a significant effect on quality parameters and sensorial characteristics of ice cream.

Abstract:The aim of the present study was to evaluate the upshot of microencapsulation on the stability and viability of probiotics in carrier food (ice cream) and simulated gastrointestinal (GIT) conditions. Purposely, Lactobacillus casei was encapsulated with two different hydrocolloids, that is, calcium alginate (Ca‐ALG) and whey protein concentrate (WPC) by using encapsulator. The obtained microbeads were characterized in terms of encapsulation efficiency and morphological features. Afterward, the probiotics in free and encapsulated form were incorporated into ice cream. The product was subjected for physicochemical, microbiological, and sensory attributes over a storage period of 80 days. Microencapsulation with both hydrogels significantly (p < .05) improved the viability of probiotics in both carrier food and simulated GIT conditions.The initial viable count of probiotics encapsulated with Ca‐ALG and WPC was 9.54 and 9.52 log CFU/ml, respectively, that declined to 8.59 and 8.39 log CFU/ml, respectively, over period of 80 days of storage. While nonencapsulated/free cells declined from 9.44 to 6.41 log CFU/ml during same storage period. Likewise, during in vitro GIT assay, encapsulated probiotic with Ca‐ALG and WPC showed 0.95 and 1.13 log reduction, respectively. On other hand, free probiotics showed significant 3.03 log reduction. Overall, microencapsulated probiotic exhibited better survival as compared to free cells. Moreover, the amalgamation of encapsulated and free probiotics affected the physicochemical (decrease in pH and increase in viscosity) was and sensory parameters of ice cream during storage.

Abstract:Cyanobacterial phycobiliproteins, such as phycoerythrin (PE) and phycocyanin (PC), are colored potential bioactive proteins that have antioxidant and antimicrobial properties. In this study, we formulated a new food prototype based on PE and PC-fortified low-fat yogurt and cream cheese. Four distinct low-fat yogurt and cream cheese products were manufactured, including a control group (No PE and PC), samples produced with phycoerythrin (+ PE), samples produced with phycocyanin (+ PC), and samples produced with both phycoerythrin and phycocyanin (PC + PE). Afterwards statistically compared the physicochemical composition, colorimetric properties, antioxidant and antimicrobial activities, and sensory profile of the fortified foods at 4 °C and 8 °C for 28 and 42 days. Additionally, we confirmed that PE and PC are not toxic to Caenorhabditis elegans at concentrations up to 1 mg/mL. The results showed that the MIC of PE and PC against E. coli was significantly higher than against S. aureus (3.12 ± 0.05 μg/mL vs. 1.56 ± 0.01 μg/mL, respectively; p ≤ 0.05). Additionally, the maximum diameter of the inhibition zone of PE and PC against S. aureus was significantly higher than against E. coli (6.6 ± 0.011 mm vs. 11.66 ± 0.02 mm, respectively; p ≤ 0.05). Results of color parameters showed that the control group had significantly higher L* values than the samples enriched with PE and PC. Moreover PE and PC significantly increased the a* and b* values respectively. The amount of ΔE in the control yogurts and cream cheese was higher than in the samples with PE and PC. Overall, the results showed that adding PE and PC had a significant effect on all measured factors ( p < 0.01). Cream cheeses and low-fat yogurts enriched with either PE or PE + PC had the greatest antioxidant activity and the lowest number of psychrophilic bacteria and mold, and yeast counts at the end of the test period. Therefore, low-fat yogurt and cream cheese containing cyanobacterial PE and PC can be considered an innovative dairy product for the food industry. This study marks the initial effort to employ PE and PC derived from Nostoc sp. and Spirulina sp. as antioxidant and antimicrobial agents in the food industry.

Evaporation Change and Global Warming: The Role of Net Radiation and Relative Humidity

Abstract:[1] The change in evaporation over the oceans in climate models is analyzed from the perspective of air-sea turbulent fluxes of water and energy. The results challenge the view that the change in evaporation is predominantly constrained by the change in the net radiation at the surface. For fixed net radiation change, it is found that (1) robust increases in near-surface relative humidity and (2) robust decreases in turbulent exchange coefficient lead to a substantial reduction in evaporation below the rate of increase implied by the net radiation alone. This reduction of evaporation is associated with corresponding changes in the sensible heat flux. In addition, a net imbalance in the surface energy budget under transient greenhouse gas forcing provides a further reduction in the evaporation change in climate models. Further results also suggest that it might be more physical to view the evaporation change as a function of relative humidity change rather than net radiation. In this view, the relative humidity controls the net surface shortwave radiation through changes in low-level cloudiness and the temperature controls the net surface radiation through the changes in longwave radiation. In addition, the results demonstrate the dominant role of both the air-sea temperature difference and relative humidity over, for example, wind speed in reducing the evaporation change in climate models below the Clausius-Clapeyron rate.

Abstract:Abstract This study evaluated the effect of microencapsulation and addition of mango peel powder on the survival of Lactobacillus acidophilus and Bifidobacterium lactis, overrun, apparent viscosity, and overall acceptability of symbiotic ice cream during storage at -20 °C for 180 days. Six formulations of vanilla-flavored ice cream were prepared: three with addition of probiotic cultures at a concentration of 108 CFU/g and 0, 2%, and 3% mango peel powder microencapsulated in a sodium alginate matrix, and three with free addition. Analytical evaluations were performed after 1, 30, 60, 90, 120 and 180 days of storage. The results showed that microencapsulation of probiotics and prebiotics statistically influenced (p 106 CFU/g, 72.97% overrun, 292 mPA apparent viscosity, and good overall acceptance (7.6 points) equivalent to “I like it very much”.

Abstract:Probiotic lactic acid bacteria have been widely studied, but much less was focused on probiotic yeasts in food systems. In this study, probiotic Saccharomyces cerevisiae var. boulardii CNCM I-745 was employed to prepare ice cream added with and without inulin (1%, w/v). Metabolomics analysis on the effect of inulin showed 84 and 147 differentially expressed metabolites identified in the ice cream samples from day 1 and day 30 of storage (-18 °C), respectively. Various potential functional metabolites were found, including citric acid, ornithine, D-glucuronic acid, sennoside A, stachyose, maltotetraose, maltopentaose, maltohexaose, maltoheptaose, cis-aconitic acid, gamma-aminobutyric acid, L-threonine, L-glutamic acid, tryptophan, benzoic acid, and trehalose. Higher expression of these metabolites suggested their possible roles through relevant metabolic pathways in improving survivability of the probiotic yeast and functionality of ice cream. This study provides further understanding on the metabolic characteristics of probiotic yeast that potentially affect the functionality of ice cream.

Abstract:Advances in perinatal care have improved the chances for survival of extremely low birthweight (<800 grams) and gestational age (<26 weeks) infants. A review of the world literature reveals that among regional populations, survival at 23 weeks' gestation ranges from 2 to 35%, at 24 weeks' gestation 17 to 62% and at 25 weeks' gestation 35 to 72%. These wide variations may be accounted for by differences in population descriptors, in the criteria used for starting or withdrawing treatment, in the reported duration of survival and differences in care. Major neonatal morbidity increases with decreasing gestational age and birthweight. At 23 weeks' gestation, chronic lung disease occurs in 57 to 86% of survivors, at 24 weeks in 33 to 89% and at 25 weeks' gestation in 16 to 71% of survivors. The rates of severe cerebral ultrasound abnormality range from 10 to 83% at 23 weeks' gestation, 9 to 64% at 24 weeks and 7 to 22% at 25 weeks' gestation Of 77 survivors at 23 weeks' gestation, 26 (34%) have severe disability (defined as subnormal cognitive function, cerebral palsy, blindness and/or deafness). At 24 weeks' gestation, the rates of severe neurodevelopmental disability range from 22 to 45%, and at 25 weeks' gestation 12 to 35%. When compared with children born prior to the 1990s, the rates of neurodevelopmental disability have, in general, remained unchanged. We conclude that, with current methods of care, the limits of viability have been reached. The continuing toll of major neonatal morbidity and neurodevelopmental handicap are of serious concern.

Abstract:This paper sets out the rationale for ensuring that all pregnant women have access to skilled health care practitioners during pregnancy and childbirth. It describes why increasing access to a skilled attendant, especially at birth, is not only based on legitimate demand and clinical common sense, but is also cost-effective and feasible in resource-poor countries. Skilled attendants need to be supported by a health system providing a legal and policy infrastructure, an effective referral system and the supplies that are necessary for effective care. A skilled attendant providing skilled care will help achieve the goals of reducing both maternal and child mortality. Health care professionals as individual practitioners, leaders and informers have an important role in making this a reality.
Alginate Nanoencapsulated Synbiotic Composite of Pomegranate Peel Phytogenics and Multi-Probiotic Species as a Potential Feed Additive: Physicochemical, Antioxidant, and Antimicrobial Activities

Abstract:A synbiotic composed of alginate nanoencapsulated prebiotic (pomegranate peel phytogenics) and multi-species probiotics (Lactococcus lactis, Lactobacillus plantarum, Lactobacillus paracasei, and Saccharomyces cerevisiae) has been developed as a potential eco-friendly alternative to antibiotics. The physicochemical properties of the encapsulated synbiotic were evaluated, and its gastric and storage tolerance, as well as its antioxidant and antimicrobial activity, were tested and compared to that of the non-encapsulated synbiotic (free synbiotic). The results showed that the prebiotic pomegranate peel ethanolic extract contained seven phenolic compounds, with cinnamic being the most abundant (13.26 µL/mL). Sodium alginate-CaCl2 nanocapsules were effective in encapsulating 84.06 ± 1.5% of the prebiotic's phenolic compounds and 98.85 ± 0.57% of the probiotics. The particle size of the alginate-CaCl2 nanoencapsulated synbiotic was 544.5 nm, and the polydispersity index and zeta potential values were 0.593 and -12.3 mV, respectively. Thermogravimetric analysis showed that the alginate-CaCl2 nanoencapsulated synbiotic had high thermal stability at high temperatures, with only 2.31% of its weight being lost within the temperature range of 70-100 °C. The count of viable probiotics in the nanoencapsulated synbiotic was significantly higher than that in the free synbiotic after exposure to gastric acidity and storage for six months at room temperature. The percent inhibition values of the nanoencapsulated synbiotic and ascorbic acid (as a standard antioxidant) were comparable and significantly greater than those of the free synbiotic. The half-maximal inhibitory concentrations (IC50) of the nanoencapsulated synbiotic and ascorbic acid were significantly lower than those of the free synbiotic (3.96 ± 0.42 µg/mL and 4.08 ± 0.79 µg/mL for nanoencapsulated synbiotic and ascorbic acid, respectively, vs. 65.75 ± 2.14 µg/mL for free synbiotic). The nanoencapsulated synbiotic showed the highest significant antimicrobial activity against Escherichia coli (ATCC 8739). Both the nanoencapsulated and free synbiotics showed antimicrobial activity against Staphylococcus aureus (ATCC 6538), similar to that of gentamicin, although the nanoencapsulated synbiotic showed significantly higher inhibition activity compared to the free synbiotic. The nanoencapsulated synbiotic showed antimicrobial activity comparable to gentamicin against Pseudomonas aeruginosa (ATCC 90274), whereas the free synbiotic showed the least antimicrobial activity (p < 0.05). Both synbiotics showed significantly higher antimicrobial activity against Salmonella typhi (ATCC 6539) than gentamicin. Both synbiotics showed antifungal activity against Aspergillus niger and Aspergillus flavus, with a stronger effect observed for the nanoencapsulated synbiotic. However, the activity of both synbiotics was significantly lower than that of fluconazole (an antifungal drug).
Co-extrusion Encapsulation of Probiotic Lactobacillus acidophilus Alone or Together with Apple Skin Polyphenols: An Aqueous and Value-Added Delivery System Using Alginate

Abstract:This study presents one novel aqueous delivery system that was produced by co-extrusion technology using 1 % and 0.5 % alginate solutions as the shell wall and the core medium, respectively, to encapsulate probiotic bacteria (PB) Lactobacillus acidophilus alone or in combination with a value-added apple skin polyphenol extract (ASPE). The survival of PB was evaluated in a model milk drink at 4 °C for 50 days and under acidic conditions (in acidic water at pH 2 and 37 °C for 120 min). Two types of ASPE were prepared using an ethanolic or aqueous method and subjected to analyses of total extracted polyphenol content (TEPC), total antioxidant activity (TAA), vitamin C content, uronic acid (UA) content and polyphenol (PP) composition. The microencapsulation efficiency for all the obtained alginate beads was >96 %, with the beads in roughly spherical shape and with smooth and intact surfaces. The PB co-encapsulated with an ASPE had significantly (P < 0.05) greater viability in milk than the unencapsulated PB in milk. After 50 days of storage at 4 °C in milk, the cell loss was only 0.13 and 0.16 log CFU (colony forming units)/mL milk for the PB co-encapsulated with the aqueous or ethanolic ASPE, respectively, compared with 1.1 log CFU/mL milk for the unencapsulated PB and 0.34 log CFU/mL milk for the PB encapsulated without ASPE. The co-encapsulation of PB with an aqueous or ethanolic ASPE also greatly protected PB against the current strong acidic condition with cell loss 2.61 and 2.78 log CFU/g fresh bead, respectively. A much lower cell loss was detected for the PB encapsulated alone (3.08 log CFU/g fresh bead) than for the unencapsulated PB (5.41 log CFU/g fresh bead). The differences between the aqueous and ethanolic ASPE in TAA and bioactive contents apparently caused the difference in PB viability in milk or the current acidic system, which potentially leads to a slightly varied nutritional value of the final encapsulated products. It is feasible and beneficial to use apple skin (a fruit waste) as a bioactive ingredient (containing polyphenols, pectin and vitamin C) to preserve the viability of PB via encapsulation technology. The selection of an aqueous or ethanolic ASPE ultimately depends on the required bioactive composition and PB viability of the final encapsulated product.

Abstract:In this study, cornelian cherry (Cornus mas L.) peel (CCP) was incorporated into a probiotic ice cream formulation containing Bifidobacterium lactis to investigate the potential effect of CCP on the viability of B. lactis in the ice cream after simulated gastrointestinal stress and during 120 days of storage. Furthermore, the effect of the addition of CCP (3, 6, and 9%) on bioactive compounds, antioxidant activity, and physicochemical and sensory attributes of the ice cream was evaluated. The results showed that the addition of CCP significantly enhanced vitamin C, total polyphenols, total anthocyanin content, and antioxidant activity of the ice cream. During frozen storage of the ice cream, phenolic compounds and anthocyanins were quite stable, but vitamin C significantly decreased. The addition of CCP had no significant effect on the viability of B. lactis throughout the freezing process, but increments of 6% and 9% CCP increased the viability of B. lactis in the ice cream and after simulated gastrointestinal processes in all storage periods. These findings imply that CCP is a promising candidate to be used for producing functional ice cream.

Abstract:Probiotics, which offer various health benefits can face challenges in terms of stability during food processing, storage, and gastrointestinal digestion. Therefore, this study aimed to improve the stability and survival of probiotics during various processing conditions and storage. To address this issue, the study was designed to microencapsulate Lactobacillus reuteri DSM 17938 within plant proteins (specifically rice protein (RP) and pea protein (PeP)) and their Maillard reaction conjugated with inulin by spray-drying. The encapsulation efficiency (EE%), stability during storage and temperature, and the viability after simulated gastrointestinal digestion of the microcapsules were examined. The results demonstrate that individual proteins exhibited lower EE%; however, the Maillard conjugates showed increased EE%, with RC (rice protein conjugates) displaying a higher EE% (96.99%) than PC (pea protein conjugates) (92.87%) ( p < 0.05). Fourier Transform Infrared Spectroscopy verified the interaction between different functional groups of the proteins and Maillard conjugated and indicated the successful encapsulation of Lactobacillus reuteri DSM 17938 cells. The results also suggested that RC-encapsulated probiotic cells exhibited maximum survival upon gastrointestinal transit, with a decline of only 1.24 and 1.52 log CFU/g after gastric and complete simulated gastrointestinal digestion, respectively. The viability of probiotics encapsulated with RC and PeC showed improvement compared to those encapsulated with RP and PeP, particularly during refrigerated and room temperature storage, thermal challenge, and simulated gastrointestinal transit. Overall, these findings suggest that plant proteins and prebiotic inulin conjugates could serve as promising new encapsulation matrices for the encapsulation of probiotics in food applications.

Abstract:The aim of this study was to enhance the viability of probiotic strains Pediococcus pentosaceus KID7, Lactobacillus plantarum KII2, Lactobacillus fermentum KLAB6 and Lactobacillus helveticus KII13 in gastrointestinal transit, freeze-drying condition and during storage time by microencapsulation using a combination of alginate, fenugreek gum and locust bean gum. The microcapsules were prepared using various ratio of alginate to fenugreek gum to locust bean gum and tested for its dissolution in colonic fluid. The combination that efficiently dissolved in colonic fluid was selected for co-encapsulation of the probiotic strains and prebiotics to produce synbiotic microcapsules. Further, we observed that the bacteria encapsulated with alginate-fenugreek gum-locust bean gum (AFL) matrix tolerated gastrointestinal condition efficiently compared to non-encapsulated bacteria. The encapsulated bacterial cells retained higher viability than non-encapsulated cells during freeze-drying condition and subsequent storage for 3 months at 4°C. These results show the utility of AFL matrix in microencapsulation of probiotics for use in food industry.

Effect of encapsulation on the stability and survivability of Enterococcus faecium in a non-dairy probiotic beverage

Abstract:The main objectives of this work were to study the survivability of five probiotic lactobacilli strains in sour cherry juice and citrate buffer with similar pH values (pH 3.5) during storage at 4 °C as well as to encapsulate the strain with the least survival in calcium alginate beads. Enterococcus faecium from probiotic strains in sour cherry juice exhibited the least survival; therefore, this strain was selected for studying the protective effect of microencapsulation in calcium alginate beads. Microencapsulated probiotic cells were incorporated into sour cherry juice and then exposed to harsh conditions (e.g. heat treatment, low pH, and simulated gastrointestinal fluids). Changes in the probiotic survivability, pH and titratable acidity of sour cherry juice were monitored during 60 d. D-values of free cells, calculated at 60, 70 and 80 °C, were 4.87, 1.48 and 0.43 min, respectively; while, those of microencapsulated cells were 9.41, 3.73 and 1.26 min, respectively. The decrease in the number of free E. faecium after exposure to low pH values (e.g. 2.5, 2 and 1.5) was 2.81, 3.74 and 4.18 log CFU/mL, respectively. Freshly prepared and 30-d old microencapsulated cells, maintained at 4 °C in sour cherry juice, showed 1.31, 2.13, 2.37 and 2.19, 2.46, 3.26 log CFU/mL reduction after exposure to similar pH conditions, respectively. The number of free and encapsulated probiotic cells after incubation in simulated gastric and gastrointestinal fluids was 5.86 and 4.81 and 8.05 and 6.61 log CFU/mL, respectively. The sensory attributes of probiotic sour cherry juice samples containing encapsulated cells were better than those fortified with free probiotics.

Abstract:Prebiotics-based encapsulation aids in improving the structure of microbeads and the survivability of probiotics. The current study focused on the exploration of a prebiotic-based encapsulation system (alginate-inulin) to improve the viability of probiotics under in vitro and carrier food. Probiotic ( L. acidophilus ) was encapsulated by the ionotropic gelation method. Microbeads with inulin inclusion were found to be compact and smooth with the highest encapsulation efficiency (98.87%) among the rest of the treatments. Alginate-inulin-based microbeads showed the highest count (8.41log CFU) as compared to other treatment as well free cells under simulated gastrointestinal conditions. Furthermore, alginate-inulin encapsulation maintained recommended (10 7 –10 8 log CFU/ml) probiotic viability in carrier food throughout the storage period. Probiotic encapsulation aids in controlling the post-acidification of the carrier product (yogurt). The results of this study indicated that the alginate-inulin-based encapsulation system has promising potential to ensure the therapeutic number of probiotics in vitro as well in carrier foods.
Anthocyanin-Colored Microencapsulation Effects on Survival Rate of Lactobacillus rhamnosus GG, Color Stability, and Sensory Parameters in Strawberry Nectar Model

Abstract:Abstract Probiotic microencapsulation is a promising way to produce functional food, while their stability and sensory acceptability still a challenge. This study aims to enhance the functional properties of strawberry ( Fragaria × ananassa , cultivar Camarosa) nectar and sensory acceptance using novel anthocyanin-colored microencapsulation of Lactobacillus rhamnosus . Four formulations (F1–F4) of coated materials (alginate, whey protein, and pullulan) integrated with anthocyanin pigment were used for encapsulation. The physical properties of microencapsulated probiotics (size, color, efficiency, stability, and survival rate) and quality parameters of nectar (pH, anthocyanin, and sensory acceptability) during 4 weeks of storage at 4 and 25 °C were evaluated. All formulations exhibited high encapsulation efficiency (> 89%), medium bead size (406–504 μm), and proper color (red color). The microencapsulated cells were stable in simulated gastrointestinal and processing conditions (up 7 log10 CFU mL −1 ) compared to free cells. F4 (alginate 2% + anthocyanin 0.1% + whey protein 2% + pullulan 2% + cocoa butter 1% + L. rhamnosus GG) showed the greatest viability in nectar during storage (6.72 log10 CFU mL −1 /4 °C/4 weeks), while a significant decrease in pH (< 2) and anthocyanin (< 60 mg 100 g −1 ) was observed in nectar-containing free cells. The sensory scores with a difference-preference test as exploratory and preliminary responses revealed that colored probiotic microcapsules enhanced the sensory characters (up to 4 weeks) and commercially accepted (> 80% agreed) of strawberry nectar. Results demonstrated that anthocyanin-colored alginate-whey protein-pullulan matrix had the potential to enhance probiotic viability in functional nectar without negative impact.

Abstract:ABSTRACT: The aim of this study was to investigate the influence of the addition of prebiotics rice bran, inulin and hi-maize, on the survival of Lactobacillus acidophilus in alginate microparticles obtained by external ionic gelation followed by freeze-drying. The microparticles size ranged from 127.5μm to 234.6μm. Microparticles added from the different prebiotics demonstrated an increase in the protection of the microorganism, which presented greater viability against the gastrointestinal simulation. As for storage under different conditions, rice bran treatment at 25oC kept probiotics viable for 30 days. Under storage conditions -18°C and 7°C, treatments containing prebiotics hi-maize and rice bran maintained viable probiotic microorganisms for a period of 60 days.
