Abstract:Pineapple pomace is the waste produced during the processing of pineapple. Functional foods are growing enormous and attracted by consumers. Taking this into consideration, pomace incorporated yogurt was developed and its textural and rheological properties were evaluated during the long-term refrigerated storage of the product. The powder was found to have high levels of fiber (51%) and carbohydrate (31.24%) and low levels of fat (2.16%) and protein (4.88%) which pointed to its utilization as a fiber enhancing ingredient in the yogurt, which is a low fiber food. The pomace was added in different concentrations (0%, 0.1%, 0.25% & 0.5%) and the effect on the physicochemical, textural, and rheological properties of set-type yogurt during storage (15 days) was studied. The texture parameters, firmness, consistency, and cohesiveness had a significant variation ( p < 0.05) over the storage period, indicating reinforcement of the yogurt structure. Similarly, significant variations in pH, syneresis, and titratable acidity were observed for yogurt added with pineapple pomace (PP) when compared to control. Yogurt with PP added showed an inverse relationship between pH and titratable acidity during storage. Also, the viscosity of yogurt decreased with the increase in the concentration of PP and a rheological study pointed out the behavior of yogurt as shear-thinning. Sensory analysis at PP concentrations of 0, 0.1, and 0.25% showed good acceptability compared to 0.5%. This study confirmed the possible utilization of PP as a novel food ingredient and also this valorization technique has great potential in reducing pineapple cannery waste.
Physico-Chemical, Microbiological and Sensory Characteristics of Papaya Pulp-Milk Blends Fermented with a Probiotic Starter Culture

Abstract:Yoghurt is a popular fermented milk product across the globe. As consumers become more health conscious, there has been rising interest in probiotic yoghurts, fermented with bacteria that can promote human health, as well as yoghurts containing fruit pieces, juice or pulp, which increase the levels of phytochemicals, dietary fibre and some vitamins in the product. Generally, the fruit products are added only up to about 20%. Here we investigated the physicochemical, sensory and microbial properties of analogous fermented products containing milk, but consisting mainly of papaya fruit pulp. Formulations were made at different ratios ranging from 50-100% papaya pulp. Yoghurt (with 0% papaya) was made to serve as the control. Conditions for pasteurization prior to fermentation were optimized for the control of yeasts and molds. The products were fermented with a probiotic culture consisting of Streptococcus thermophilus + Lactobacillus acidophilus + Bifidobacterium spp. Sensory analysis on a 9-point hedonic scale revealed an increase in acceptability of the various attributes with increase in pulp. Formulations containing 80% to 100% papaya fruit were found to be most liked and of comparable quality to the control, having scores of ≥ 7 (ranging from moderately liked to liked very much)) in colour, taste, texture and overall acceptability. Compared to the control, these formulations were found to contain more ascorbic acid, riboflavin, niacin, folic acid, dietary fiber and carbohydrates. The control was however higher in thiamine, protein and fat levels. The products were stable under refrigerated storage (4 0C) for 3 weeks. In conclusion, we found that papaya pulp fermented with a probiotic starter culture, and containing up to 20% milk had good sensory acceptability. The health benefits of such products are worthy of further investigations.

Abstract:Background: The present investigation was planned to standardize a method for preparation of whey-based fermented probiotic beverage containing Alfonso mango (Mangifera indica) pulp. This study was undertaken in view of the fact that the probiotic foods can play an important role in promoting health and reducing public health care costs in a developing country like India. As such the whey is the major dairy by-product, which causes enormous environmental problems leading to enforcement of stringent laws by the pollution control authorities. The Indian dairy industry is exploring the ways to utilize whey in more economical way. Methods: The lab-made paneer whey (Indian milk curd) was utilized in the study. The fresh Alfonso pulp was used for value-addition of the product. The probiotic culture of Lactobacillus rhamnosus-MTCC-5463 was used for fermentation. The method was standardized and the product was subjected for its sensory evaluation. Result: It was observed that the whey-based probiotic beverage containing 15% Alfonso pulp (v/w) was liked most with mean score of 8.75 followed by 10% pulp with mean score 5.39 out of 9.0 in the nine-point Hedonic scale. The product containing 5% Alfonso pulp was disliked by the judges with a mean score of 4.54. It was concluded that the whey-based probiotic beverage containing 10-15% mango pulp can be prepared with probiotic viable counts of 107 cfu/ml. This would be one of the promising ways to utilize the whey and developing gastrointestinal health promoting product.

Abstract:Dalia, a wheat-based, particulate containing dairy dessert is popularly consumed as a breakfast food and is also considered as a health food. Though popular throughout Northern parts of the country, its limited shelf-life even under refrigeration imposes severe restrictions on its organized manufacture and marketing. In order to promote dalia dessert as a marketable product, in the present study, a process was developed for manufacture of instant dalia pre-mix, as a dry product with long shelf-life, which could be attractively packaged and easily reconstituted for consumption. During the investigation, the effect of different levels of milk solids and wheat solids was studied on dalia pre-mix quality by employing a central composite rotatable design (CCRD). The suggested formulation had 17.82 % milk solids and 2.87 % wheat solids. This formulation was found to be most appropriate for manufacture of instant dalia pre-mix with predicted sensory scores (Max. 100) of 85.35, 41.98 and 67.27 for mouthfeel, consistency and flavor, respectively; the viscosity of the product was 941.0 cp.

Abstract:Plant-based or non-dairy milk alternatives are a growing trend in new product development. The palmyrah ( Borassus flabellifer L) fruits have excellent nutritional and functional properties with unique organoleptic characteristics. Unfortunately, they are often wasted during their peak season due to limited industrial utilization. The present study was focused on the ready-to-serve beverage market. Coconut milk ( Cocos nucifera L.) based Palmyrah fruits pulp drink was developed with four product formulations by changing the pulp percentage (T1=0 %, T2=20 %, T3=40 %, and T4=60 %). Pulp was treated with acid and heat treatment to reduce and mask its bitterness. The proximate composition, physicochemical, functional, and microbial properties were determined for all product formulations. Results were analyzed using the parametric one-way ANOVA turkey test method at a 5 % significance level. Sensory properties were evaluated by performing nine point hedonic scale test using 30 semi-trained panelists and data were analyzed using the Friedman test. With compared to other formulations, T2 was selected with better physicochemical and sensory properties. The pH (5.2), TSS (12° Brix), titratable acidity (0.04), specific gravity (1.04), and viscosity (124 mm 2 /s) were not significantly varied during storage at room temperature. Moisture, fat, protein, carbohydrate, crude fiber and ash contents are 83.29 %, 3.4 %, 1.63 %, 23.49 %, 0.21 % and 1.55 % respectively. Functional properties were determined by DPPH (112 mg/ml) and Total phenolic content (GAE 35.31 mg/100 g). According to evaluation, the shelf-life of the product can be predicted as more than 12 weeks. Overall the study findings highlight that the newly developed coconut milk based palmyrah pulp drink is a marketable product boasting significant nutritional and functional properties. With its favorable sensory attributes, stability during storage and extended shelf life, this beverage holds great potential in the market as a desirable and healthful alternative for consumers seeking plant based and lactose free options.

Abstract:The present research work entitled “STUDY ON DEVELOPMENT AND STORAGE OF BLENDED PINEAPPLE (Ananas comosus L.) MANGO (Mangifera indica L.) CRUSH” was carried out at Post Harvest Lab, Department of Horticulture, Naini Agricultural Institute (NAI) SHUATS, Prayagraj (formerly Allahabad), U.P, INDIA, during 2021-2023. The statistical design adopted for the experiment was Completely randomized design (CRD) with three replications and Eight treatment combinations and the product was analyzed for quality parameters and sensory qualities at the interval of 15 Days till 45 Days of storage period at refrigerated conditions (40C). The present investigation revealed about the quality parameters viz. TSS, Reducing sugars, Non-Reducing Sugars and Total sugars, acidity content during storage of 45 Days .After 45 days of storage, Treatment T5 (Pineapple pulp 50%: Mango pulp 50%) was found superior having TSS (55.850Brix), acidity (0.89%), total sugars (45.42 %), reducing sugar (15.88%) and also give better result in sensory evaluation in colour (7.70), taste (8.02), aroma (8.01), texture (7.98), and overall acceptability (8.02) at refrigerated conditions (40C). Treatment T5 performed well in the economic investment with higher benefit cost ratio i.e., 1.83 which is quite higher than other treatments.
Utilization of durian seed for Monascus fermentation and its application as a functional ingredient in yogurt

Abstract:As a widely consumed fermented milk product, yogurt undergoes constant development to increase its functional properties. Monascus purpureus-fermented durian seed, which has been proven to possess antioxidative properties, has the potential to improve yogurt properties. This study aimed to analyze the use of Monascus-fermented durian seed (MFDS) as a functional ingredient in yogurt and its effect on physicochemical properties, lactic acid bacteria (LAB) count, antioxidative properties, and consumer acceptability of set-type yogurt during refrigeration. Changes in physicochemical properties, including color, pH, titratable acidity, syneresis, LAB count, total phenolic content (TPC), and antioxidant activity were evaluated at 7-day intervals during 14 days of refrigerated storage (4 °C). Sensory evaluations were carried out for freshly made samples after 7 days of storage. The results showed that the addition of MFDS to yogurt gave significant effects on some of the parameters measured. Yogurt with added MFDS powder produced a more red color (L = 88.55 ± 1.28, a* = 2.63 ± 0.17, b* = 11.45 ± 1.15, c = 11.75 ± 1.15, H = 77.00 ± 0.64), reached the highest TPC (2.21 ± 0.46 mg/GAE g), antioxidant activity (0.0125 ± 0.0032 mg GAE/g), and syneresis (5.24 ± 0.51%) throughout 14 days of storage. The addition of MFDS only gave a slight difference to pH and titratable acidity, while no significant difference was made for LAB count. For sensory evaluation, the addition of MFDS, particularly the ethanol extract, to yogurt was well-liked by panelists. Citrinin content in MFDS yogurt can be decreased under the limits set. Overall, the addition of MFDS has a high potential of improving yogurt properties, particularly its antioxidative properties.

Abstract:This research explores the optimization of mango yogurt production, leveraging mango as the primary fermentation ingredient and Lacticaseibacillus paracasei strain Shirota (LcS) as the probiotic inoculum. Traditional yogurt, typically derived from animal milk, faces competition from plant-based alternatives. The research objective is to investigate the impact of inoculum ratios and sucrose concentrations on LcS density and sensory attributes, with a focus on the Substrate to Inoculum Ratio (S/I) as a critical parameter influencing microbial metabolism and population dynamics. Various inoculum ratios (1:1, 1:2, 1:4, 1:8 v/v) and sucrose concentrations (0%, 2.5%, 5%, 7.5%) were applied in mango yogurt production. Results from ANOVA analysis indicated significant differences in LcS density among inoculum ratios (F3,16 = 37.01, P = 0.000) and sucrose concentrations (F3,16 = 19.07, P = 0.000). The 1:2 inoculum ratio and 7.5% sucrose concentration emerged as optimal, as evidenced by stable pH conditions and lactic acid profiles within recommended standards. Sensory analysis, employing a 5-point hedonic scale for color, odor, taste, and texture evaluation, revealed moderate acceptance. In conclusion, this study introduces an innovative approach to mango yogurt production, highlighting the potential of specific inoculum ratios and sucrose concentrations for optimal results. The findings contribute to the broader landscape of plant-based yogurt alternatives, underscoring the need for ongoing refinement to meet commercial standards and ensure consumer satisfaction.
Development of a plant-based dessert using araticum pulp and chickpea extract: Physicochemical, microbiological, antioxidant, and sensory characterization

Abstract:The demand for plant-based products has increased in recent years, due to several aspects related to health and environmental consciousness. This study aimed to produce and characterize a plant-based dairy alternative dessert based on araticum pulp and chickpea extract without added sugar and fat. Three formulations were prepared: Formulation 1 (F1): 20% araticum pulp + 80% chickpea extract; Formulation 2 (F2): 30% araticum pulp + 70% chickpea extract; and Formulation 3 (F3): 40% araticum pulp + 60% chickpea extract. All formulations' chemical composition, sensorial characteristics, viscosity, total phenolic content, antioxidant activity, and microbiological stability were analyzed during 28 days of storage at 4°C and a relative humidity of 23%. Energetic value ranged from 64 to 71 kcal/100g, and carbohydrate content from 9.68 to 11.06, protein from 3.38 to 3.04, lipids from 1.41 to 1.60, ashes from 0.53 to 0.59 and crude fiber from 0.86 to 1.34 g/100g among the formulations. The increase in the proportion of araticum pulp in the formulations reduced moisture content by 1.2 to 2.1% (F1: 84.2, F2: 83.2, and F3: 82.4), protein content by 3 to 9% (F1: 3.3, F2: 3.2, and F3: 3.0), and pH value by 5.8 to 10.7% (F1: 5.50, F2: 5.18, and F3: 4.91), and increased the TSS by 1.1 to 1.3-fold (F1: 8.36, F2: 8.98, and F3: 10.63 o Brix), total phenolics content by 1.5 to 2.0-fold (F1: 4,677, F2: 6,943, and F3: 10,112 gallic acid μmol/L) and antioxidant activity by 1.8 to 2.8-fold (F1: 1,974, F2: 3,664, and F3: 5.523). During the 28 days of storage at 4°C, the formulations F1 and F2 showed better stability of phenolic compounds and antioxidant activity; however, the formulation F3 showed acceptable microbiological quality up to 28 days of storage, higher viscosity, 8 to 16-fold higher than the formulations F1 and F2, respectively (F1: 238.90, F2: 474.30, and F3:3,959.77 mPa.s), antioxidant capacity and better scores in sensory analysis. The present study showed that the plant-based dessert elaborated with araticum pulp and chickpea extract might be considered a potential dairy alternative product with high antioxidant activity, protein content, and a viscosity similar to yogurt; however, its sensory aspects need improvement.

Abstract:The use of coconut milk as a raw material for yogurt has the potential to make yogurt and its benefits become a food product that can be consumed by everyone. Fortification of pineapple puree can maintain the quality of yogurt and has the potential to increase health benefits due to reducing the amount of fat. The aim of this research is to optimize the yogurt formulation regarding fermentation time and percentage of pineapple puree composition. The analysis carried out was total lactic acid bacteria and total plate count calculation, as well as pH, acidity, water holding capacity, viscosity, fat content, and fatty acid composition. The fermentation time variables used were 20, 24, 28, and 32 h, where 24-h fermentation time was the optimum fermentation time according to standards, with a total of lactic acid bacteria of 6.69 ± 0.03 log cfu/g, pH value of 4.45 ± 0.01, acidity of 0.46 ± 0.06%, water holding capacity 72.82 ± 0.03%, viscosity 2547 ± 55.84 cP, and fat content 15.12 ± 0.06%. Fortification of pineapple puree is carried out with composition percentage variables of 0, 4, 8, and 12%, where by fortification of 12% pineapple puree, it can maintain quality similar to unfortified coconut milk yogurt as well as lactic acid bacteria viability through 14 days storage and excel in water holding capacity (79.25 ± 3.06%), viscosity (3360 ± 38.13 cP), and low fat content (10.57 ± 0.08%). Lauric acid was the dominant fatty acid in the yogurt specimen (~ 64%).

Optimization of Spray Drying Conditions for Developing Nondairy Based Probiotic Sohiong Fruit Powder

Abstract:The interest in nondairy-based probiotic foods has significantly increased due to lactose intolerance, casein allergy, and associated cholesterol risks. Fruit-based products could be an excellent alternative option. In the present work, Sohiong (Prunus nepalensis) juice has been used for the development of a possible probiotic product. Sohiong juice was enzymatically extracted and fermented with probiotic Lactobacillus plantarum subsp. plantarum. The fermented juice was then spray dried to make a probiotic powder. The spray-drying process conditions including maltodextrin concentration (12–25% w/w), inlet temperature (120–140°C), and inlet feed rate (120–240 ml/h) were optimized using response surface methodology. The responses evaluated were drying yield, moisture content, encapsulation efficiency, and color difference. The results showed that the optimum conditions for the production of Sohiong juice powder with acceptable quality were 120°C inlet temperature, 12% w/w maltodextrin concentration, and 201 ml/h feed rate. A powder yield of 57.68% at a moisture content of 3.95% could be achieved with an encapsulation efficiency of 85.75%. The viable probiotic cell count in the Sohiong powder was more than the recommended value of 6.0 log CFU/g up to 36 days when stored at ambient condition and up to 104 days under refrigerated condition suggesting the feasibility of developing spray-dried nondairy probiotic powder from Sohiong juice.

Abstract:Dairy is a preferred product in most of the households in various forms, ranging from milk, butter, curd to sweets, chocolates, hot beverages, etc. The aim of this study was to investigate the Consumer choice and Consumer preferences towards dairy products. In this study, more than twenty articles were collected and reviewed. Recently published articles were collected from the high impact factor journals consisting of the primary data related to dairy products. Based on this source, the objectives were framed and the results were obtained. The result obtained in this study showed that the major factor influencing the consumer towards dairy was the quality and nutrient content present in it. Socio-demographic characteristics also determined the consumer choices towards dairy-based products, especially the education and income level. And also, price plays a significant role in consumer choice in choosing dairy products followed by promotion in the marketing mix. The examination of consumer choice and preferences determined that quality and nutrient content were the major reason for influencing consumers.

Techno-functional properties and enhanced consumer acceptance of whipped fermented milk with Ficus carica L. By-products

Abstract:The development of new fermented milks formulations enriched with fruit by-products may widen the existing market offer of products matching consumer demands on novel, and "no artificial added sugars" products. Unmarketable fig fruit, food by-product, could be considered as a potential ingredient to develop a new dairy product. The aim of this study was to study the consumer acceptance of fermented milk enriched with different percentage of pasteurized fig purée (by-products) and their technological properties. It was found that the quantity of fig puree added influenced fermented milks texture and spontaneous syneresis. Formulations containing 40% fig puree showed the highest values of firmness, consistency, cohesiveness, and viscosity index with improvements seen from 20% fig puree addition. Furthermore, the inclusion of fig puree in fermented milks reduced the levels of lactic acid bacteria comparing with control samples, but the microbial load was higher than 106 UFC g-1 LAB (estimated counts in MRS) and 9 UFC g-1 LAC (estimated counts in M17). Polyphenolic content increased with fig puree percentage, enhancing antioxidant activity. Volatile compound analysis identified hexanoic acid, acetoin, and butanoic acid as predominant in enriched fermented milks. It is also worth highlighting that sensory evaluation revealed better ratings for texture and sweetness acceptance in formulations containing 30% and 40% of fig puree, correlating with instrumental data. Overall, the quality parameters were maintained and even improved, leading to high consumer acceptability ratings.
Investigating the impact of milk protein, inulin, and honey on quality attributes of goat milk yoghurt

Abstract:In this present study, a three-factor Box-Behnken, response surface methodology (RSM) design was employed to optimize the skimmed milk powder (SMP)/whey protein concentrate (WPC) ratio (0.25-0.75%w/v) as a source of milk protein, inulin (1-2%w/v), and honey (4-6%w/v) for production of high-quality goat milk yoghurt (GMY). The resulting ANOVA and response surface equations revealed the significant effect (p < 0.05) of these variables on the various attributes such as total solid (%), pH, titratable acidity [(LA) % by weight], syneresis (%), DPPH (% inhibition), viscosity (m.Pa⋅s), whiteness index (WI), and overall acceptability (OA). The coefficient of determination (R2) for all response variables ranged from 0.88 to 0.99. Lack-of-fit tests resulted in non-significant F-values. The optimal conditions were determined as SMP/WPC at 0.36%w/v, inulin at 1.00%w/v, and honey at 6.00%w/v. The optimum values for total solid, pH, titratable acidity, syneresis, DPPH, viscosity, WI, and OA were 22.03, 4.46, 0.77, 6.34, 25.20, 182.30, 76.29 and 8.37, respectively with desirability value of 0.95.

Abstract:Current trends and changing consumer needs indicate a great opportunity for innovations and developments in functional beverages. Scientific and clinical evidence is also mounting to corroborate the consumer perception of health from healthy beverages. So, the aim of this study was to develop probiotic cheese whey or milk permeate-based beverages fermented by 1.0% Lactobacillus acidophilus or L. paracasei and enriched with10% papaya pulp (as prebiotic) and 1.0% stevia leaves extract (as natural sweetener). Four fermented probiotic whey and four milk permeate-based beverages were prepared and investigated for probiotic microbial counts, pH values, titratable acidity and sensorial attributes during storage period at 5±1°C for 10 days. Results of pH values and titratable acidity of the beverages indicated no significant differences between the whey or permeate beverages. However, functional permeate beverages containing stevia extract had slightly higher probiotic viability than whey beverages during cooled storage. Fermented permeate-based beverages were appraised with relatively high overall score over the whey-based beverages. The final beverages were characterized with good sensory properties and a highly viable count of probiotic <108 cfu/mL during 10 days of cooled storage. So, it is strongly advised to produce such a healthy probiotic whey or permeate beverages which fortified by papaya pulp and sweeted with stevia leaves extract.
Development of a lemongrass-based kefir beverage and evaluation of its quality of life

Abstract:This study investigates the development and quality assessment of a lemongrass-based kefir beverage fermented with milk kefir starter cultures. Lemongrass powder was incorporated at concentrations ranging from 0 to 2.25 %. The results revealed that the optimal concentration of 1.00 % significantly enhanced sensory attributes, including flavor and overall acceptability, with scores of 8.44±0.05 and 8.15±0.18, respectively, compared to the control scores of 7.04±0.08 and 7.90±0.10. During a 16th day storage period, the kefir beverage exhibited increased acidity from 0.32 % (control) to 0.58 % (2.25 % lemongrass) and a decrease in pH from 7.21 (control) to 4.27 (2.25 % lemongrass). Total soluble solids (TSS) increased from 15.70±0.47°Brix to 22.62±0.52°Brix as lemongrass concentration rose. Antioxidant activity, measured by DPPH radical scavenging, improved from 57.88±0.41 % (control) to 69.72±0.48 % (2.25 % lemongrass). Additionally, microbial analysis indicated that the viable counts of lactic acid bacteria (LAB) throughout the storage period, while yeast counts were sustained. These findings indicate that incorporating lemongrass powder into kefir enhances not only its nutritional profile but also its sensory appeal, making it a promising functional beverage option. Overall, this research contributes valuable insights into the potential applications of lemongrass in dairy-based functional foods.

Abstract:Fermented drinks are regarded as healthy food due to their probiotic nature. Vegan consumers who choose sustainable diet and people allergic to dairy products demand alternatives for dairy products. We aimed to develop a non-dairy plant-based yogurt from peanut, oats, and coconut milk. Yogurt was formulated with addition of sugar, corn starch, pectin, and xanthan gum. Simplex-lattice mixture design was applied to optimize the composition of the yogurt and achieve the desired rheological properties, sensory attributes, and syneresis rate. Our results revealed that the formulation containing 7.13 mL of peanut milk, 10 mL of oats milk, and 7.86 mL of coconut milk showed low syneresis rate, desired viscosity and flow behavior, as well as high overall acceptability. We found that increased amounts of peanut and oats milk improved the product’s viscosity due to high protein contents. However, coconut milk enhanced the taste and flavor of the yogurt. Flow behavior depended on viscosity and stabilizers used in accordance with the power law model. Syneresis rate was influenced by the viscosity of the yogurt. The utilization of corn starch, pectin, and xanthan gum not only improved the texture but also helped achieve the desired viscosity and flow behavior. The nutrient composition, physicochemical properties, and high sensory characteristics of the yogurt based on peanut, oats, and coconut milk allow using it as a cow milk alterative in the diet of people with lactose intolerance.
Prebiotic frozen dessert processed with water-soluble extract of rice byproduct: Vegan and nonvegan consumers perception using preferred attribute elicitation methodology and acceptance

Abstract:The objective of this study was to assess the perceptions (using the preferred attribute elicitation [PAE] methodology) and acceptance of frozen dessert processed with water-soluble extract of rice byproduct and added with prebiotic components (long-chain inulin, medium-chain inulin, oligofructose, or polydextrose, 5 g/100 g) by vegan or nonvegan consumers. Most of the elicited attributes (9 out of 13 attributes, yellow color, brightness, creamy appearance, passion fruit aroma, sweet taste, passion fruit flavor, acid taste, sour taste, and creamy texture) were considered important for the characterization and/or acceptance of the frozen dessert formulations by both groups (vegan and nonvegan), but the order of importance was different between the groups. The sensory profile (Rv = 0.48, P = 0.03 in MFA) of the frozen dessert formulations was similar between vegan and nonvegan groups, and polydextrose contributed to increase firmness/consistency of the frozen dessert, while long-chain inulin contributed to the increase in the creaminess of the products. Finally, oligofructose and polydextrose could reduce the sour taste of the products. The consumers gave scores from 6 to 8 in a 9-point hedonic scale for the products, suggesting suitable acceptance. However, vegan consumers gave lower scores for the same products. In conclusion, PAE methodology can be used to compare the perception of different consumer groups, and vegan and nonvegan consumers have a similar perception about prebiotic frozen dessert processed with water-soluble extract of rice byproduct. Furthermore, the frozen dessert developed had suitable consumer acceptance, although vegan gave lower scores than nonvegan consumers. PRACTICAL APPLICATION: This is the first study involving the development of prebiotic frozen dessert from water-soluble extract of rice byproduct and application of PAE to assess the sensory perception of vegan and nonvegan consumers. The results are important for the industry as they indicate that the PAE methodology can be used to characterize food products, compare the perception of different consumer groups, and elicit attributes that are important for the products, suggesting that universal marketing strategies could be used and that the developed frozen dessert could serve both vegan consumers and those on conventional diets.

Abstract:This study was undertaken to develop low sugar, high protein aloe vera Shrikhand. Shrikhand is a traditional Indian sweet popular in western Indian states of Maharashtra & Gujarat. Sweet is a special component of Indian food. High intake of sweet can lead to various health problems. Thus, people are now more conscious about eating sweets. Diabetic and obese people are restricted to have sweets. Thus, it is the concept of making sweet available to generic population in a healthy form. The developed Aloe Shrikhand is rich in protein. It contains 50% less sugar than the product available in market. It also contains Aloe vera pulp that has added nutritional benefits. It was formulated and analysed for its physical, biochemical and sensory properties. The nutritional properties were determined on the basis of physiochemical characterization such as moisture content (49.8%), ash content (0.76%), total fats 7.72g /100g, Carbohydrates 20g/100g, protein (20g/100g) along with microbial testing. Organoleptic analysis based on the attributes of colour, favour, texture, taste, and odour showed that the product was liked very much (Hedonic rating 8) by the panelist. A suitable packaging of the product was selected taking into considerations the properties of the product and shelf life study was carried out and observed that the product has shelf life of 15 days from the date of manufacture. Thus, it can be a healthier alternative for the sweet Shrikhand available in the market and can be included in diet.
