Abstract:As a new deep-processing garlic product with notable health benefits, the accurate discrimination of processing stages and prediction of key physicochemical constituents in black garlic are vital for maintaining product quality. This study proposed a novel method utilizing hyperspectral imaging technology to both rapidly monitor the processing stages and quantitatively predict changes in the key physicochemical constituents during black garlic processing. Multiple methods of noise reduction and feature screening were used to process the acquired hyperspectral information. To differentiate processing stages, pattern recognition methods including linear discriminant analysis (LDA), K-nearest neighbor (KNN), support vector machine classification (SVC) analysis were utilized, achieving a discriminant accuracy of up to 98.46 %. Furthermore, partial least squares regression (PLSR) and support vector machine regression (SVR) analysis were performed to achieve quantitative prediction of the key physicochemical constituents including moisture and 5-HMF. PLSR models outperformed SVR models, with correlation coefficient of prediction of 0.9762 and 0.9744 for moisture and 5-HMF content, respectively. The current study can not only offer an effective approach for quality detection and assessment during black garlic processing, but also have a positive significance for the advancement of black garlic related industries.

Abstract:The chemical composition and nutritional content of garlic are greatly impacted by its production location, leading to distinct flavor profiles and functional properties among garlic varieties from diverse origins. Consequently, these variations determine the preference and acceptance among diverse consumer groups. In this study, purple-skinned garlic samples were collected from five regions in China: Yunnan, Shandong, Henan, Anhui, and Jiangsu Provinces. Mid-infrared spectroscopy and ultraviolet spectroscopy were utilized to analyze the components of garlic cells. Three preprocessing methods, including Multiple Scattering Correction (MSC), Savitzky-Golay Smoothing (SG Smoothing), and Standard Normalized Variate (SNV), were applied to reduce the background noise of spectroscopy data. Following variable feature extraction by Genetic Algorithm (GA), a variety of machine learning algorithms, including XGboost, Support Vector Classification (SVC), Random Forest (RF), and Artificial Neural Network (ANN), were used according to the fusion of spectral data to obtain the best processing results. The results showed that the best-performing model for ultraviolet spectroscopy data was SNV-GA-ANN, with an accuracy of 99.73%. The best-performing model for mid-infrared spectroscopy data was SNV-GA-RF, with an accuracy of 97.34%. After the fusion of ultraviolet and mid-infrared spectroscopy data, the SNV-GA-SVC, SNV-GA-RF, SNV-GA-ANN, and SNV-GA-XGboost models achieved 100% accuracy in both training and test sets. Although there were some differences in the accuracy of the four models under different preprocessing methods, the fusion of ultraviolet and mid-infrared spectroscopy data yielded the best outcomes, with an accuracy of 100%. Overall, the combination of ultraviolet and mid-infrared spectroscopy data fusion and chemometrics established in this study provides a theoretical foundation for identifying the origin of garlic, as well as that of other agricultural products.

Abstract:During the course of investigations on a species of Phagicola from Mugil cephalus L., the Striped Mullet, and M. curema Cuvier & Valenciennes, the White Mullet, we have had the opportunity to examine numerous specimens of Phagicola longicollis. Through the courtesy of Allen McIntosh, Parasitologist, Animal Disease and Parasite Research Branch, U. S. Department of Agriculture, the type slide, U. S. National Museum Helminthological Collection No. 38169, was obtained. This slide contains a number of specimens of P. longicollis (Fig. 1), two P. ascolonga (Witenberg, 1929) Price, 1932, and several Heterophyes heterophyes (Siebold, 1852) Stiles & Hassall, 1900. Phagicola longicollis can be readily separated from the 2 specimens of P. ascolonga by the fact that in the former the uterus never extends posteriorly beyond the testes while in the latter the uterus always extends beyond the testes. Other differences include shape of body, structure of gonotyl, and posterior extent of the oral appendage. We observed, on the type slide, some specimens (syntypes) of P. longicollis with 14, others with 15, and three with 16 oral spines in a single row. Some damaged specimens had less than 14 oral spines. The original description of this species by Kuntz and Chandler (1956) states: ". . . Mouth surrounded by single circle of 14, sometimes 15, spines, . . ." The late Dr. A. C. Chandler, in a personal communication (1957), stated: "... I counted the oral spines on several dozen specimens of Phagicola longicollis and found 14 in most, 15 in some, and thought I counted 16 in a few, but decided I had made an error. However, it is quite possible that there is a variation from 14 to 16 in this species, so some of the specimens on which you found 16 spines may belong to this species...." Dr. Chandler kindly sent us most of his specimens of P. longicollis and P. ascolonga for examination. Included in this material were specimens of a species of Phagicola that were obviously not P. ascolonga. Except for 1 specimen (Fig. 3) having a coronet of 17 oral spines in a single row and others having 16 oral spines they conform with the original description of P. longicollis. We feel, therefore, from the observations stated above, the description of P. longicollis should be expanded to include a variation of from 14 to 17 oral spines. Stunkard and Uzmann (1955) discuss the Ascocotyle-Phagicola complex. They conclude, "Decision on the taxonomic status of Phagicola should await more complete information, especially on the developmental stages of its members." Abstract:Background: American ginseng (Panax quinquefolius L.) and Asian ginseng (Panax ginseng Meyer) products, such as slices, have a similar appearance, but they have significantly different prices, leading to widespread adulteration in the commercial market. Their aroma characteristics are attracting increasing attention and are supposed to be effective and nondestructive markers to determine adulteration. Methods: The aroma characteristics of American and Asian ginseng were investigated using gas chromatography-mass spectrometry(GC-MS) and an electronic nose (E-nose). Their volatile organic compounds were separated, classified, compared, and analyzed with different pattern recognition. Results: The E-nose showed a good performance in grouping with a principle component analysis explaining 94.45% of variance. A total of 69 aroma components were identified by GC-MS, with 35.6% common components and 64.6% special ingredients between the two ginsengs. It was observed that the components and the number of terpenes and alcohols were markedly different, indicating possible reasons for their difference. The results of pattern recognition confirmed that the E-nose processing result is similar to that of GC-MS. The interrelation between aroma constituents and sensors indicated that special sensors were highly related to some terpenes and alcohols. Accordingly, the contents of selected constituents were accurately predicted by corresponding sensors with most R-2 reaching 90%. Conclusion: Combined with advanced chemometrics, the E-nose is capable of discriminating between American and Asian ginseng in both qualitative and quantitative angles, presenting an accurate, rapid, and nondestructive reference approach. Abstract:Abstract Purpose: Human hematopoietic stem cells (HSC) are thought to be a major target of radiation-induced leukemogenesis and also provide a relevant cellular model for assessing cancer risk. Cluster of designation 133+ (CD133+) is a marker found in human progenitor and hematopoietic stem cells. Our study examined the repair of radiation-induced DNA double-strand breaks (DSB) in CD133 + umbilical cord blood cells (UCBC). Materials and methods: After γ-irradiation, endogenous and induced DSB were evaluated in CD133 + UCBC, CD133 − UCBC and peripheral blood lymphocytes (PBL) in terms of phosphorylated histone 2A family member X (γH2AX) and tumor suppressor p53 binding protein 1 (53BP1) foci. Results: We found that repair signaling in CD133 + UCBC is different from CD133 − UCBC and PBL. These differences include lower endogenous DSB levels and higher 53BP1 recruitment. Conclusions: Our data, together with a recent report on radiation-induced γH2AX and 53BP1 foci in CD34 + cells, indicate enhanced DNA repair capacity in HSC as compared to mature lymphocytes.
Complementary assessment of nano-packaged garlic properties by electronic nose

Abstract:It is crucial to initiate appropriate storage conditions for garlic depending on its properties. Fungal contamination can reduce the quality of garlic through changes in its properties which result in its aroma alteration. This study aimed to evaluate the effects of treatments such as fungal infection (FI), material of packaging (MP), and storage duration (SD) on various characteristics of garlic. An electronic nose was used complementarily to trace the aroma changes as a non-destructive indicator. The Fusarium oxysporum (FS), Alternaria embellisia (AL), and Botrytis allii (BT) fungi were adopted for inoculation. The low-density polyethylene (LDPE) and silicone nano-emulsions (SNE) were used for packing samples. The data were analyzed by diverse approaches such as ANOVA, PLS, PCA, LDA, and BPNN. The results revealed that the evaluated properties changed during the storage. The implementation of treatments altered the intensity of these changes. The highest values of weight loss (21.14%), color changes (50.21), and acidity (7.48) were observed in the FS-infected samples kept in LDPE for 28 days. The accuracy of PCA, LDA, and BPNN in the multivariate analysis of aroma had an increasing-decreasing trend. The best accuracy of PCA in categorizing the FI and MP treatments achieved in the twelfth day of storage (96%). The optimal accuracy of classifications based on FI and MP treatments was obtained at d#12 (100%) and d#24 (100%), respectively. The PLS exposed that the aroma changes in garlic had a high correlation with the changes of studied properties (R 2 ≥ .7), except for the mechanical properties.
Combining multivariate statistical analysis to characterize changes in amino acids and volatiles during growth of Lou onion pseudostems

Abstract:Background: The main edible part of the Lou onion is the pseudostem, which is highly valued for its distinctive flavour. However, harvesting decisions for the pseudostem are often based on size and market price, with little consideration given to flavour. By clarifying the growth of flavour in pseudostems, farmers and consumers may benefit from evidence-based insights that help optimize harvesting time and maximize flavour quality. Results: This study employed amino acid analysis and gas chromatography-ion migration spectroscopy (GC-IMS) to elucidate the compounds of the pseudostem across different growth phases, and 17 amino acids and 61 volatile substances. Subsequently, analysis revealed that 18 compounds, including arginine (Arg), aspartic acid (Asp), glutamic acid (Glu), valine (Val), (E)-2-nonenal, decanal, 2,4-nonadienal, 2-octenal, (Z)-4-decenal, 2,4-decadienal benzeneacetaldehyde, linalool, eugenol, (Z)-6-nonen-1-ol, methyl anthranilate, 2-acetylpyridine, 3-sec-butyl-2-methoxypyrazine, and 2,6-dichlorophenol, were the key compounds in determining the flavour characteristics of the pseudostems, as assessed by taste activity value and relative odour activity value calculations. In addition, correlation analysis, focusing on five amino acids and 38 volatile compounds with variable importance for predictive components scores of >1, identified anisaldehyde, eugenol, (Z)-6-nonen-1-ol, 2,4-decadienal, 3-sec-butyl-2-methoxypyrazine, Arg, Asp, and Val as the key differentiators and contributors to the pseudostems flavour profile. Conclusion: During the rapid growth of Lou onions just before the emergence of flower stems, the pseudostem exhibited the most prominent flavour, making this stage most suitable for harvesting compared to the regreening growth stage and the rapid growth period of the aerial bulbs. © 2024 Society of Chemical Industry.
The Physicochemical Properties, Volatile Compounds and Taste Profile of Black Garlic (Allium sativum L.) Cloves, Paste and Powder

Abstract:Black garlic is produced as a result of the so-called “fermentation processes” of whole heads or cloves kept under controlled conditions of temperature and humidity for several weeks. During this long-term heat treatment, garlic undergoes enzymatic and non-enzymatic browning reactions, which greatly change its taste, aroma, physicochemical, organoleptic and bioactive properties. Black garlic is most often produced in the form of cloves, and recently also in the form of paste and powder. This work focused on the comparison of functional properties of black garlic, such as volatile compounds, taste profile, total polyphenols content, antioxidant activity, color (CIE L*, a*, b*), water activity (aw), pH, soluble solids content (°Brix) and moisture content, depending on the form of its occurrence: cloves, spreading paste and powder. After long-term heat treatment, garlic was characterized by a higher content of dry matter and water-soluble solids, respectively at about 22% and 24% for spreading paste and 166% and 44% for powder. The conducted research showed significant differences in the bioactive properties of the tested garlic samples, with the lowest content of polyphenols and antioxidant properties in fresh, unprocessed garlic (6.05 ± 0.07 mg GAE/1 g d.m. and 232.95 ± 4.06 μM TEAC/1 g d.m., respectively), while in garlic subjected to long-term heat treatment, the total polyphenols content and antioxidant potential were two times higher than in the unprocessed garlic. The polyphenol content and antioxidant properties were the highest in the spread garlic (respectively, 15.16 ± 0.08 mg GAE/1 g d.m. and 638.46 ± 3.37 μM TEAC/1 g d.m.) and the lowest in the powdered samples (respectively, 11.02 ± 0.51 mg GAE/1 g d.m. and 541.71 ± 5.22 μM TEAC/1 g d.m.). Obtained black garlic samples gain completely different sensory characteristics determined using instrumental methods. In black garlic and its preparations, the intensity of unpleasant taste and aroma is reduced as a result of the appearance of metabolites during the long-term heat treatment, which in turn determined the specific, delicate sweet–sour taste and pleasant aroma, completely unrelated to the aroma of the unprocessed product. Taking into account the obtained results, it can be stated that black garlic, in the form of cloves, paste and powder, exhibits completely different properties than white garlic.

Abstract:Aroma profiles of ginseng samples at different ages were investigated using electronic nose (E-nose) and GC-MS techniques combined with chemometrics analysis. The bioactive ginsenoside and volatile oil content increased with age. E-nose performed well in the qualitative analyses. Both Principal Component Analysis (PCA) and Discriminant Functions Analysis (DFA) performed well when used to analyze ginseng samples, with the first two principal components (PCs) explaining 85.51% and the first two factors explaining 95.51% of the variations. Hierarchical Cluster Analysis (HCA) successfully clustered the different types of ginsengs into four groups. A total of 91 volatile constituents were identified. 50 of them were calculated and compared using GC-MS. The main fragrance ingredients were terpenes and alcohols, followed by aromatics and ester. The changes in terpenes, alcohols, aromatics, esters, and acids during the growth year once again confirmed the dominant role of terpenes. The Partial Least Squares (PLS) loading plot of gas sensors and aroma ingredients indicated that particular sensors were closely related to terpenes. The scores plot indicated that terpenes and its corresponding sensors contributed the most in grouping. As regards to quantitative analyze, 7 constituent of terpenes could be accurately explained and predicted by using gas sensors in PLS models. In predicting ginseng age using Back Propagation-Artificial Neural Networks (BP-ANN), E-nose data was found to predict more accurately than GC-MS data. E-nose measurement may be a potential method for determining ginseng age. The combination of GC-MS can help explain the hidden correlation between sensors and fragrance ingredients from two different viewpoints. (C) 2014 Elsevier B.V. All rights reserved.

Abstract:Introduction Distinguishing and categorizing the origin of garlic are highly significant, considering its widespread use as a flavoring agent. With billions of dollars annually in global trade, garlic is frequently susceptible to fraudulent practices. Methodology Paper spray ionization mass spectrometry (PS‐MS) was employed to quickly analyze garlic samples from distinct geographic origins: China and Brazil. The so‐generated PS‐MS data were treated with metabolomic multivariate approaches, and the garlic samples from these different geographic regions were easily discriminated. Results Brazilian garlic was characterized to contain higher levels of amino acids, such as arginine, proline, and valine, and organosulfur compounds, such as allicin, alliin, and l ‐γ‐glutamil‐ S ‐allyl‐ l ‐cysteine, compared to Chinese garlic. The PS‐MS data were treated employing multivariate approaches, typically used in the metabolomics field, and this protocol was promptly able to discern among both types of samples. Conclusion Hence, this combined strategy holds promise not only as an effective tool for the authentication of the geographical origin of garlic but also as a powerful means for biomarker discovery.

Black garlic: transformation effects, characterization and consumer purchase intention

Abstract:Black garlic is produced from chemical and biochemical reactions when the fresh garlic bulb is submitted to specific temperature and moisture conditions. The aim of this study was to evaluate quality and nutritional changes on bulbs before and after the transformation in black garlic, presenting the new product for the consumer, evaluating the purchase intention. Commercial garlic bulbs cv. Amarante were obtained and transformed in black garlic. The color, proximate composition (moisture, crude lipid, crude protein, crude fiber, ash and nitrogen-free extract), total sugars, total phenolics content and antioxidant activity were evaluated on fresh and black garlic bulbs. The transformation of garlic in black garlic resulted in an increase on crude lipid, crude protein, total sugars, antioxidant activity and total phenolic content. A multivariate analysis was performed and the characteristics of nutritional interest were positively related to the black garlic samples and a completely separation of the products before and after processing can be observed, affirming the physical, chemical, nutritional and sensory attributes difference. Only 20% of the surveyed consumers affirmed that they already knew the product and 55% classified the product after visual evaluation between “liked slightly” and “liked very much”, with 62% of purchase intention by the interviewed consumers.

Abstract:This study employed headspace solid phase micro‐extraction gas chromatography mass spectrometry (HS‐SPME‐GC–MS) coupled with multivariate statistical analysis to identify characteristic volatiles in various grades of Zhenjiang Aromatic Vinegar (ZAV). Two volatile compounds were discriminated as key compounds for differentiating the grades of ZAV. This study employed headspace solid phase micro‐extraction gas chromatography mass spectrometry (HS‐SPME‐GC–MS) coupled with multivariate statistical analysis to identify volatile markers in various levels of Zhenjiang Aromatic Vinegar (ZAV). A full range of 40 volatile organic compounds (VOCs) were identified and categorized into acids, alcohols, esters, aldehydes, ketones, heterocyclic compounds and others. Principal component analysis (PCA) and hierarchical cluster analysis (HCA) demonstrated a clear clustering effect among different levels of ZAV, indicating distinct volatile characteristics at the relative content level. Furthermore, using Orthogonal partial least squares discrimination analysis (OPLS‐DA), 20 significant volatile organic compounds (VOCs) were identified as markers for distinguishing between the various levels of ZAV. To differentiate among the levels of ZAV, two volatile compounds, acetic acid and n‐hexanol, were identified as characteristic volatile compounds using a combination of Venn diagram, analysis of variance (ANOVA) and boxplot analysis. The results showed notable variations in VOCs among ZAV samples of different grades. Acetic acid and n‐hexanol can serve as reliable markers for grade distinction, providing valuable technical and theoretical support for the production and quality control of ZAV.

Abstract:Abstract Controlling the quality and health of foodstuffs is of great importance. The quality of foods like garlic is strongly influenced by the conditions of processing. Fungal infection is one of the most common hazards of garlic productivity that can affect its processing as well. This research aimed to use the E-Nose to investigate the aroma of garlic as a quality control factor influenced by different treatments such as type of processing, type of fungal infection, and time elapsed since the date of inoculation. The data was investigated and categorized through different methods such as principal component analysis (PCA), linear discriminant analysis (LDA), Support vector machine (SVM), and backpropagation neural network (BPNN). The Index of deterioration toughness increased during the monitoring period. In the analysis of the data related to the unprocessed whole (UW), dried slices (DS), garlic powder (PO), and garlic tablet (TA), the PCA included 55%, 75%, 47%, and 53% of the data, respectively. The LDA was able to classify the aroma of UW, DS, PO, and TA samples based on the TFI treatment with an accuracy of 90%, 93.33%, 88.89%, and 60%, respectively. Also, the BPNN classified the aromas of UW, DS, PO, and TA samples based on the TEI treatment with an accuracy of 90%, 95.6%, 72.2%, and 82.2%, respectively. The results revealed that the aroma alteration can be used as a comprehensive factor in the quality control of processed products. As well, the type of processing had significant effects on the severity of decay caused by fungal infection. Graphical Abstract

Abstract:A rapid, simple and environmentally friendly supercritical fluid extraction and supercritical fluid chromatography coupled to mass spectrometry (SFE-SFC-MS/MS) method has been developed for the analysis of nine phenolic compounds in garlic. Through the optimization of the SFE parameters using response surface methodology (RSM), 15 phenolic compounds were successfully extracted at 50 °C in 9 min with the addition of 30% methanol using a method that was automatic, efficient, green and prevented oxidation. Moreover, the operating conditions of the SFC-MS/MS were also optimized for the analysis of the SFE extracts. 15 phenolic compounds in the garlic showed good separation performance on a Shim-pack UC-X Diol column, and 0.1 mM oxalic acid and 1 mM ammonium formate in methanol were chosen as the most suitable mobile phase components. Furthermore, a calibration curve was developed using a matrix-matched standard, and 9 phenolic compounds showed good linearity (R2 > 0.99). The limits of detection of the 9 phenolic compounds varied from 0.6 to 12 ng/g, and the quantifications ranged from 2 to 40 ng/g. The validation data also showed acceptable recoveries for 9 phenolic compounds, and the relative standard deviations (RSDs) for the overall precision were lower than 10%. The developed method has been utilized to analyze the phenolic compounds in garlic from different geographical areas of China (Cangshan, Jinxiang, Pizhou, Dali), which suggests that this off-line SFE-SFC-MS/MS method could be adapted to the quantitative analysis of phenolic compounds in garlic.

Abstract:Black garlic (BG) is essentially a processed food and obtained through the transformation of fresh garlic (FG) (Allium sativum L.) via a range of chemical reactions (including the Maillard reaction) and microbial fermentation. This review provides the up-to-date knowledge of the dynamic and complicated changes in major components during the conversion of FG to BG, including moisture, lipids, carbohydrates (such as sugars), proteins, organic acids, organic sulfur compounds, alkaloids, polyphenols, melanoidins, 5-hydroxymethylfurfural, vitamins, minerals, enzymes, and garlic endophytes. The obtained evidence confirms that BG has several advantages over FG in certain product attributes and biological properties (especially antioxidant activity), and the factors affecting the quality of BG include the type and characteristics of FG and processing technologies and methods (especially pretreatments, and processing temperature and humidity). The interactions among garlic components, and between garlic nutrients and microbes, as well as the interplay between pretreatment and main manufacturing process, all determine the sensory and nutritional qualities of BG. Before BG is marketed as a novel snack or functional food, more research is required to fill the knowledge gaps related to quantitative monitoring of the changes in metabolites (especially those taste-active and/or biological-active substances) during BG manufacturing to maximize BG's antioxidant, anticancer, antiobesity, anti-inflammatory, immunostimulatory, anti-allergic, hepatoprotective, cardioprotective and oxidative stress-/hangover syndrome-reducing functions, and beneficial effects on memory/nervous systems. Assessments of the quality, efficacy, and safety of BG should be performed considering the impacts of BG production conditions, postproduction handling, and intake methods.

Abstract:Volatile compounds are the main chemical species determining the characteristic aroma of food. A procedure based on headspace solid-phase microextraction (HP-SPME) coupled to gas chromatography-mass spectrometry (GC-MS) was developed to investigate the volatile compounds of sweet potato. The experimental conditions (fiber coating, incubation temperature and time, extraction time) were optimized for the extraction of volatile compounds from sweet potato. The samples incubated at 80 °C for 30 min and extracted at 80 °C by the fiber with a divinylbenzene/carboxen/polydimethylsiloxane (DVB/CAR/PDMS) coating for 30 min gave the most effective extraction of the analytes. The optimized method was applied to study the volatile profile of four sweet potato cultivars (Anna, Jieshu95-16, Ayamursaki, and Shuangzai) with different aroma. In total, 68 compounds were identified and the dominants were aldehydes, followed by alcohols, ketones, and terpenes. Significant differences were observed among the volatile profile of four cultivars. Furthermore, each cultivar was characterized by different compounds with typical flavor. The results substantiated that the optimized HS-SPME GC-MS method could provide an efficient and convenient approach to study the flavor characteristics of sweet potato. This is the basis for studying the key aroma-active compounds and selecting odor-rich accessions, which will help in the targeted improvement of sweet potato flavor in breeding.

Abstract:This study aimed to characterize the growth properties of the four dominant endophytes from garlic and explore their effects on the black garlic fermentation. Four bacteria showed a certain heat resistance (more than 7 Lg CFU/mL of vegetative cells at 50 °C) and a wide pH growth range of 5–9. The allicin and 5-HMF in black garlic caused their limited decreases (7.45%–69.73% for allicin and 17.78%–30.68% for 5-HMF). Four strains were also found to have 7.70–31.91 U/mL of neutral protease, 3.32–16.72 U/mL of alkaline protease and 0.65–0.81 U/mL inulinase activities. Furthermore, the browning degree of black garlic increased by 0.81%–2.78% due to the inoculation of B. methylotrophicus, B. amyloliquefaciens and B. subtilis, while B. licheniformis slowed down the processing. Further analysis showed that a 27.70%–99.47% increase in the reducing sugar content was closely associated with the higher browning samples. Multivariate analysis revealed that the black garlic at different processing times was clearly distinguished from one another, but the differences caused by different strains were limited. The results first confirmed that the microbial strains were involved in the fermentation of black garlic at low temperatures by mainly affecting the levels of monosaccharides.

Abstract:Seven parameters of the headspace solid phase micro-extraction (HS-SPME) for extracting volatile compounds from cabbage were optimized comprehensively for the first time. A total of 75 volatiles were identified and quantified in 10 cabbage cultivars, mainly including aldehydes, hydrocarbons, esters, isothiocyanates, alcohols, ethers, nitriles and thiazoles. Dimethyl ether was the most abundant volatile. There were 24 volatiles with the odour activity values (OAVs) greater than 1 making large contributions to the cabbage flavor. Pungent aroma was the strongest odour, followed by green and fruity aromas. In short, the overall OAV of purple cabbages were generally higher than that of green cabbage. The volatile profile of 10 cabbage cultivars could be distinguished on the basis of radar fingerprint chart (RFC), hierarchical cluster analysis (HCA) and principal component analysis (PCA). Therefore, this study not only developed a feasible method to distinguish different cabbage cultivars, but also established a theoretical basis for the genetic improvement of cabbage flavor.

Abstract:An electronic nose (E-Nose) and gas chromatography-ion mobility spectrometry (GC-IMS) were used to analyze the volatile flavor compounds (VFCs) of the enzymatic hydrolysate of Lanmaoa asiatica and its Maillard reaction products (MRPs). E-Nose sensors have strong response signals to sulfide, nitrogen oxides, alcohols, and aldehyde ketone, and the aroma profile was increased after the Maillard reaction (MR). According to GC-IMS, A total of 84 known compounds were identified. Aldehydes, ketones and alcohols are the main VFCs. After MR, the concentrations of some alcohols decreased, and the concentration of pyrazines and ketones increased. Principal component analysis (PCA) and similarity analysis showed that the enzymatic hydrolysate and MRPs were different and could be effectively distinguished. In conclusion, this study clarified the changes in VFCs before and after the MR. The results can provide a theoretical basis for the quality control and flavor changes during the processing of Lanmaoa asiatica and provide a new method for flavor analysis of edible mushrooms and their products.
