Abstract:Physicochemical modification methods have been widely applied to increase resistant starch (RS) content of waxy starch, but their effects on the functional properties of non-waxy starches are not fully understood. In this study, five non-waxy rice starches with intermediate to very high apparent amylose contents (AAC) were modified by pullulanase (PUL), heat-moisture treatment (HMT) and citric acid (CA). RS contents, AAC, crystalline structures, pasting properties and thermal properties were analyzed. The three modification treatments were effective in increasing the RS contents, especially CA modification. PUL modified starches had relatively higher AAC and relative crystallinity (RC), and their crystalline patterns changed from A-type to mixed B + V type. Both HMT and CA increased gelatinization temperature significantly but had opposite effects on changing paste viscosity of different rice starches. Compared with other non-waxy rice varieties, high-amylose rice starch exhibited the highest RS, AAC, and RC after modification. This study provides practical information for improving the nutritional benefits of rice.

Abstract:<p>The physicochemical properties and structural changes of potato starch esterified with octenyl succinic anhydride (OSA) assisted with pulsed electric field (PEF) were investigated. Results showed that PEF treatment during esterification resulted in a significant modification of pasting properties. The pasting temperature at 2–6 kV/cm reduced by 7.6–15.1 °C for PEF-assisted OSA starches but only by 3 °C for OSA modified starch without PEF treatment as compared to that of native starch. PEF-assisted esterification could reduce the reaction time and improve the reaction efficiency over the control by 6.1–39.1%. A novel schematic model on structure-functionality relationship for PEF-assisted OSA modified starch was proposed. Structural disorganizations of starch induced lower pasting temperature and paste viscosity. The results suggest that PEF could be a potential eco-friendly and cost-effective physical technique to prepare starch products with desired paste behaviors and to broaden its application area especially in papermaking and textile industries.</p>

Abstract:Recent power system events have shown that voltage collapse can be a root cause of some widespread outages. The thrust of this paper is to discuss some means of mitigating system voltage depressions that are available through the scheme which utilizes both reactive current droop compensation and line drop compensation. The point that the voltage regulator controls can be acquired by a new method which is based on a widely accepted voltage stability analysis tool. This tool can determine which generators will have an impact on the maximum permissible loading of a bus and which will not. The dynamic analyses were carried out on the CIGRE Nordic test system to study the impact of control point location on time to collapse and prove that the new scheme can improve the voltage stability.
Pulsed electric field-assisted esterification improves the freeze-thaw stability of corn starch gel by changing its molecular structure

Abstract:The influence of pulsed electric field (PEF) combined with octenyl succinic anhydride (OSA) on the freeze-thaw stability of corn starch gel was investigated. After five freeze-thaw cycles, the syneresis value of OSA starch treated with PEF-assisted esterification for 15 min was lower by 29.5 %, while that of OSA starch without PEF treatment was lower by 10.17 %, compared to that of native starch. Low-field nuclear magnetic resonance data showed that the introduction of OSA groups greatly increased the water-holding capacity of starch. Results from differential scanning calorimetry (DSC) and X-ray diffraction (XRD) showed that the PEF-assisted esterification markedly hindered the re-formation of the helical structure of starch during freeze-thaw cycles. Moreover, PEF-assisted esterification improved the viscoelastic properties of the starch gel. It is found that the freeze-thaw stability of the PEF-modified starch depends not only on the degree of substitution but also on the starch molecular fine structure. PEF-assisted OSA starch with a high degree of substitution, a low content of amylose, and a high content of short amylopectin chains were found to have high freeze-thaw stability. This study shows that PEF-assisted esterification is a promising technique that should be used for preserving the quality of frozen foods.

Abstract:<p>Pulsed electric field (PEF) is promising in food industry in modifying properties of materials. The influences of PEF pretreatment on hydrolysis, texture, multi-scale and semi-crystalline lamellar structure, thermal properties, and flavor of rice were investigated with two special treatments for high and low contents of slowly digestible starch and resistant starch, using enzymatic hydrolysis, scanning electron microscopy, differential scanning calorimetry, X-ray diffractometry, small angle X-ray scattering, attenuated total-reflection Fourier-transform infrared spectrometry, texture profile analysis, and gas chromatography-mass spectrometry (MS)-MS. Upon PEF pretreatment, the starch hydrolysis degree and glycemic index of cooked rice increased slightly; the hardness, springiness, cohesiveness and chewiness of cooked rice increased significantly (P < 0.05). PEF reduced the integrity of cell structure, altered the gelatinization enthalpy, relative crystallinity degree, semi-crystalline layered structure of rice lightly, without obviously changing the diffractive pattern type of rice grains. PEF pretreatment caused decrease of phenols and ketones and increase of acids and aldehydes in cooked rice.</p>

Abstract:The objective of this study was to investigate the dual modification of red rice starch using pulsed electric field (PEF) and α-amylase, focusing on morpho-structural, thermal, and viscoamylographic properties. Native starch (Control) underwent various treatments: PEF at 30 kV cm-1 (PEF30), α-amylase at 9.0 U mg-1 (AA0), and a combination of both (PEF30 + α and α + PEF30). The PEF30 + α treatment exhibited the highest degree of digestion (10.66 %) and resulted in morphological changes in the starch granules, which became elongated and curved, with an increased average diameter of 50.49 μm compared to the control. The starch was classified as type A, with a maximum reduction in crystallinity of up to 21.17 % for PEF30. The deconvolution of FT-IR bands indicated an increase in the double helix degree (DDH) for PEF30 and AA0, while the degree of order (DO) was reduced for PEF30, AA0, and PEF30 + α. DSC analysis revealed significant modifications in gelatinization temperatures, particularly for PEF30, and these changes were supported by a reduction in gelatinization enthalpy (ΔH) of up to 28.05 % for AA0. These findings indicate that both individual and combined treatments promote a decrease in starch gelatinization and facilitate the process, requiring less energy. Differences were observed between the formulations subjected to single and alternating dual treatments, highlighting the influence of the order of PEF application on the structural characteristics of starch, especially when applied before the enzymatic treatment (PEF + α). Regarding the viscoamylographic parameters, it was observed that AA0 presented higher values than the control, indicating that α-amylase enhances the firmness of the paste. The double modification with PEF + α was more effective in reducing syneresis and starch retrogradation, leading to improvements in paste properties. This study provided significant insights into the modification of red rice starch using an efficient and environmentally friendly approach.

Abstract:Porous corn starch preparation by enzymolysis and pulsed electric field treatment (PEF) and its physicochemical characterizations were investigated in this study. The best processing parameters of enzymolysis and PEF treatment designed by response surface methodology were 3.9 hr, 11.5 kV/cm applied for 18 ms, respectively, resulting in the highest oil absorption value of 130%. The solubility and transparency of native corn starch were increased after enzymolysis or PEF treatment, and the values were the highest when starch was treated with the combined method. Pasting temperature and gelatinization enthalpy of porous starch were higher than that of native starch, but then decreased significantly after PEF treatments. Scanning electron microscope images, specific surface area as well as X‐Ray Diffraction directly reflected the reinforcement effect of PEF treatment on the micropores formation of porous starch. These results indicate that PEF is expected to be used to assist the production of porous starch. Practical applicationsStarch materials are able to dehydrate water from ethanol due to the existence of numerous hydroxyl groups on the surface, porous starch granules possesses larger specific surface area, which increases the total number of hydroxyl groups on starch particles' surface. Increased surface area provides more reactive sites at which functionalized groups can be grafted to improve starch properties as well. In addition, numerous small pores enable porous starch to encapsulate compounds of several times its weight by the absorption and capillary flow of micropores, especially heat‐liable compounds like flavor molecules, plant essential oils, biologically functional compounds, for example, liquid flavors are unstable under heat processing, mixtures of which could be spry‐dried with porous starch to obtain flavor powder, prolonging the storage time of flavor compounds. And the combination of enzymolysis and PEF treatment is good for the micropores formation of porous starch, which could be used to produce porous starch for industrial application.

Abstract:Enzymatically-catalytic conversion of starch-based industrial waste into porous materials was enhanced by a moderate electric field (MEF). Changes in the hydrolysis rate, a-amylase activity and starch structure during MEF treatment (0-20 V, 0-400 Hz, room temperature and 0-2 h) were monitored and the hydrolyzed products were characterized by scanning electron microscopy, X-ray diffraction and water/oil adsorption analyses. The results showed that MEF enhanced enzymatic hydrolysis mainly by destroying starch structure, rather than by altering a-amylase activity. The average number of pores of hydrolyzed starch increased when voltage increased from 2 to 15 V, but a further increase of voltage caused the gelatinization of starch, thus making it unfavorable for the preparation of porous materials. The crystallinity of electrically-treated porous starches was decreased by 2.87-5.06%. The water and oil adsorption capacity of the porous starches was much higher than that of their native counterpart. Overall, this study extends the applications of electric field-based techniques in an enzymatic modification of biomaterials.

Abstract:Study evaluated the influence of ozonization (O3) time combined with pulsed electric fields (PEF) on the modification of bean starch structure. O₃ was used at a concentration of 0.045 g/L for 60 min (Oz1) and 120 min (Oz2) both individually and in combination with 30 kV/cm (P30). Carbonyl content was higher than the carboxyl content, especially with prolonged treatment times (Oz2), indicating partial oxidation. Additionally, higher levels of amylose and degrees of polymerization (DP ≥ 37 and DP 25-36) were observed in the oxidized starches, with significant changes only when combined with PEF. The main morphological and structural modifications included the presence of agglomerates, partial gelatinization, reduced crystallinity, and lower IR1047/1022 in the granules treated with PEF + O3. Oxidized starches exhibited higher solubility, resulting in lower values for rheological parameters, with PEF + 2 h of O3 (Oz2P) standing out. It can be used as prebiotics, controlled release agents and a texturizer for gluten-free foods.

Abstract:Starch, a polysaccharide primarily composed of amylose and amylopectin, serves as a critical energy source in plants. However, its native properties often limit its application in the food industry. To overcome these limitations, starch modification is essential for enhancing its technological characteristics. In this context, this review explored the impacts of pulsed electric field (PEF) technology on starch modification. PEF, along with other electrotechnologies, utilizes high-voltage electrical pulses to induce structural and chemical changes in starch granules, leading to improvements in properties such as gelatinization, solubility, viscosity, and swelling capacity. Although PEF is a non-thermal process, it enables significant structural and physicochemical modifications in starch. By avoiding high temperatures that can cause changes in color, flavor, and degradation of essential nutrients, PEF-modified starch results in better preservation of nutritional and sensory qualities, while also enhancing its performance in various industrial processes. Despite its advantages, challenges such as the need for standardized protocols and potential unwanted side reactions at high intensities remain. This review examined the effectiveness of PEF in modifying starch for enhanced technological applications in the food industry, addressing both its benefits and limitations. Additionally, the article provided a foundational overview of starch, including its chemical structure, functionalities, and sources, both conventional and non-conventional, ensuring a comprehensive understanding of how PEF can be applied to optimize starch properties for industrial use.

Abstract:This study aimed to enhance the synthesis of carboxymethyl starch (CMS) by induced electric field (IEF). Corn starch was alkalized, pumped into IEF system, and then reacted with monochloroacetic acid at excitation voltages of 0–400 V. IEF enhanced the carboxymethylation by accelerating the rate of OH − and ClCH 2 COO − attacking starch particles and slightly intensifying the thermal effect by ~7.1 °C (30 min). Compared with the control (0 V), IEF increased the degree of substitution and reaction efficiency by 0.056–0.148 and 9.37–24.56 %, caused more destruction in starch granular and crystal structure, and thus increased its water solubility, swelling power, and paste transparency. Furthermore, some new crystals were formed during IEF treatment, which enhanced the thermostability of CMS, showing an increase of the maximum decomposition temperature by 16–26 °C. Overall, the results classified that IEF could improve the carboxymethylation and enhance the thermostability of products, which provided guides for the applications of electro-techniques in starch modification involving charged species.

Abstract:This study aimed to explore the roles of starch structure in α-amylase-catalyzed hydrolysis under moderate electric field (MEF). Corn starch was gelatinized by controlling the temperature procedure of rapid viscos-analysis, and then the pre-gelatinized starch (3.0 g) was treated by MEF (2.5 and 5 V/cm) in the presence of α-amylase (1.5 mL). Only a slight hydrolysis occurred for native starch, showing minor increases in reducing sugar content (RSC, ∼0.19 mg/mL), slight changes in granular and semicrystalline structure, and decreases in thermostability (the maximum decomposition temperature (T max ) decreased from 322 to 300 °C). The densely-packed semicrystalline within starch granules was destroyed by pre-gelatinization, thus enhancing the hydrolysis and further decreasing the thermostability, presenting RSC values of 0.63–0.92 mg/mL and T max of 291–292 °C. Moreover, some special crystals were formed by IEF-induced orientation of hydrolyzed starch chains. Overall, these results confirmed that the semicrystalline structure of starch dominated in MEF-assisted hydrolysis, which could provide guidance for the application of electro-based techniques in starch modification.

Abstract:The study aimed to investigate the cooperation of maize starch and ferulic acid under physical mixing (PM), heat treatment (HT) and extruded treatment (ET) and its impacts on postprandial blood glucose level. PM did not influence the surface structure, or long/short-range order of maize starch, yet it decreased rapidly digestive starch (RDS) content to 65.82 +/- 1.67% and increased resistant starch (RS) content to 20.58 +/- 1.71%. In the HT group, maize starch-ferulic acid (HMS-FRA) complexes was formed, maintaining A-type crystal structure, and binding amount increased as the addition of ferulic acid increased. And maize starch had the lowest RDS and highest RS, moreover, its postprandial blood glucose value was 7.93 +/- 0.64 mmol/L center dot h when added 2.0% (w/w) ferulic acid. Besides, in the ET group, the crystal type of extruded maize starch-ferulic acid (EMS-FRA) complexes changed to A + V type. ET also led to increased RS content, with postprandial blood glucose level significantly reduced (6.16 +/- 0.80 mmol/L center dot h) in EMS-2.0FRA. These results demonstrated that ferulic acid could form maize starch-ferulic acid complexes through ET, and effectively reducing its postprandial blood glucose level. Our results will provide an idea for the production of functional staple food.

Abstract:This study explored the potential application of physical combined enzyme treatment to modify starch granules. Starch was modified by exposure to cold plasma (CP) for 1, 3, and 9 min and to pullulanase (PUL) for 12, 24, and 36 h. Individual treatments with CP and PUL somewhat modified starch structure and physicochemical properties. Nevertheless, compared with native starch and individual treatments, CP–PUL combined treatment significantly (p < 0.05) promoted the subsequent structural modification, increased the short-chain ratio and the amylose content, reduce the molecular weight and the relative crystallinity, and disturb the short-range order. CP also improved the properties of PUL-modified starch, including enhanced solubility, thermal properties and resistance to enzymatic hydrolysis but worsened swelling power and peak viscosity properties. This research provides a new perspective for the rational application of CP–PUL co-treated starch in the food industry.

Abstract:Pulsed electric field (PEF) technology was used to extract starch from Q. robur flours using low-intensity electric fields (0 and 0.1 kV/cm) and study the impact of PEF on the structure and properties of acorn starch concerning commercial starch. PEF technology is an advantageous method for starch extraction than the aqueous steeping from an industrial perspective since reduces extraction time and allows for continuous processing of larger suspension volumes. PEF technology preserved the amylose and amylopectin contents, hydrogen bonds, and diffraction patterns, as well as the starch native properties. Hence, PEF could be used to obtain native starches, but future studies should verify its economic viability. Acorn starches have lower damaged starch content, gelatinization temperatures, enthalpies, improved pseudoplastic behavior, reduced in-vitro digestibility, and lower resistance to deformation compared to commercial corn starch. The higher solubility and swelling power of acorn starches up to 80 °C make them a suitable food additive in fermented yogurt and milk products and thus help to value acorn and acorn starches. Hence, acorns can be used to obtain native starches, a food ingredient with a wide range of food and non-food usage, using PEF.

Abstract:Corn starch was dually modified using thermostable α-amylase and pullulanase to prepare resistant starch (RS). The concentration of starch liquid, the amount of added thermostable α-amylase, the duration of enzymatic hydrolysis and the amount of added pullulanase were optimized using RSM to increase RS content of the treated sample. The optimum pretreatment conditions were 15% starch liquid, 3 U/g thermostable α-amylase, 35 min of enzymatic hydrolysis and 8 U/g pullulanase. The maximum RS content of 10.75% was obtained, and this value was significantly higher than that of native corn starch. The degree of polymerization (DP) of the enzyme-modified starch decreased compared with that of native starch. The scanning electron microscopy (SEM) and differential scanning calorimetry (DSC) were performed to assess structural changes in native and pretreated starch. The effect of dual enzyme pretreatment on the structure and properties of corn starch was significant. Unlike the untreated one, the pretreated corn starch showed clear pores and cracks. Significant differences in RS contents and structural characterization between starch pretreated and untreated with dual enzymes demonstrated that the dual enzyme modification of corn was effective in enhancing RS contents.

Abstract:This study applied ferulic acid, sinapic acid, and p-coumaric acid to synthesise esters with cassava starch and investigated their digestibility, GI and starch structure alterations. Starch after esterification contained less rapidly digestible starch (as low as 44.59%) and more resistant starch. Sinapic acid starch ester (SASE) had the lowest hydrolysis rate, which was 61.04% in this study. The GI of ferulic acid, p-coumaric acid, and sinapic acid starch esters were 53.5, 58.4, and 47.1, respectively. They were all significantly decreased compared with native cassava starch (81.5) (P < 0.05). The steric hindrance of phenolic acid moiety and increased hydrophobicity led to the reduced digestibility of starch esters. All these results indicated that phenolic acid starch esters could help to reduce postprandial blood glucose spikes, and therefore became a potential tool for diabetes management.

Abstract:Methods: This is a secondary analysis of data from 61 out of 71 patients who underwent mastectomy for breast cancer. Patients were randomized to either placebo (Group P; n = 27) or intravenous lidocaine (Group L; n = 34, bolus 1.5 mg/kg at induction, then infusion at 2 mg/kg/hr, up to 2 hours after the end of surgery) in a prospective double-blind design. CPSP was assessed at 6 months after surgery. Stepwise logistic regression analysis was performed to assess the efficacy of lidocaine.

Abstract:Extrusion processing of plasticized cassava starch, a prominent industrial crop, with chemical additives offers a thermo-mechanical approach to modify starch structures through physical and chemical interactions. This research investigates the interaction and morphology of thermoplastic cassava starch (TPS) blended with tetrasodium pyrophosphate (Na4P2O7), sodium tripolyphosphate (Na5P3O10), sodium hexametaphosphate (Na6(PO3)6), sodium erythorbate (C6H7O6Na), and sodium nitrite (NaNO2) via twin-screw extrusion. The effects of these additives on the chemical structure, thermal profile, water absorption, and solubility of the TPS were examined. The high temperature and shearing forces within the extruder disrupted hydrogen bonding at α-(1-4) and α-(1-6) glycosidic linkages within anhydroglucose units. Na4P2O7, Na5P3O10 and Na6(PO3)6 induced starch phosphorylation, while 1H NMR and ATR-FTIR analyses revealed that C6H7O6Na and NaNO2 caused starch hydrolysis. These additives hindered starch recrystallization, resulting in higher amorphous fractions that subsequently influenced the thermal properties and stability of the extruded TPS. Furthermore, the type and content of the added modifier influenced the water absorption and solubility of the TPS due to varying levels of interaction. These modified starch materials exhibited enhanced antimicrobial properties against Escherichia coli and Staphylococcus aureus in polyester blends fabricated via extrusion, with nitrite demonstrating the most potent antimicrobial efficacy. These findings suggest that starch modification via either phosphorylation or acid hydrolysis impacts the thermal properties, morphology, and hydrophilicity of extruded cassava TPS.
