Abstract:The chemical composition and the nutritional quality of protein, fatty acids and chitin of adult field cricket Gryllus testaceus Walker were investigated. The adult insect contained: crude protein 58.3%; fat 10.3%, chitin 8.7% and ash 2.96% on dry matter basis respectively. The essential amino acid profile compared well with FAO/WHO recommended pattern except for cysteine and methionine. The fatty acid analysis showed unsaturated acid of the field cricket to be present in high quantities, and the total percentage of oleic acid, linolic acid and linolenic acid was 77.51%. The chitin content of the insect was 8.7% with a better quality than the commercial chitin that was prepared from shells of shrimp and crab. Therefore the chemical composition of the field cricket indicates the insect to be a good supplement to nutrition for food and feed, even a raw material for medicine.

Abstract:The proximate analysis, amino acid content and true amino acid digestibility and TMEn for poultry of adult Field crickets Gryllus testaceus Walker, were investigated. The insect was also used as partial replacement of protein supplements in the broiler diet on an equal CP percentage and TMEn basis. The results indicated that the adult insect contained: crude protein 58.3%; fat 10.3%, chitin 8.7% and ash 2.96% on dry matter basis, respectively The total amounts of methionine, cystine and lysine in the Field crickets were 1.93%, 1.01% and 4.79%, respectively, and their true digestibility coefficients, determined in cecectomized roosters, were 94.1%, 85% and 96%, respectively. The TMEn of this insect meal was 2,960 kcal/kg determined in cecectomized roosters. When corn-soybean meal diets were formulated on an equal CP percentage and TMEn basis, up to 15% Field cricket could replace control diet without any adverse affects on broiler weight gain, feed intake or gain:feed ratio from 8 to 20 d posthatching.

Abstract:Insect powders used in food products may lower the overall quality when compared to conventional counterparts. This preliminary study was used to develop and evaluate insect-based food products and to utilize them in a future consumer test. Pork sausage, dried pasta, and chocolate brownie formulations were developed to either contain NO cricket powder (Control) or have cricket powder (CP). The products were evaluated for proximate composition and product-dependent parameters. The protein content increased in the CP pasta and brownies (p 0.05). Fat content increased in both the CP pasta and brownies while it decreased in the CP sausage (p < 0.05). The CP sausage had a higher carbohydrate content than the Control (p < 0.05). Overall, this may be attributed to cricket powder being high in protein and fat while also containing dietary fiber. Cricket powder replacement may lead to noticeable color differences by increasing green and blue coloring in sausage and pasta (p < 0.05). Changes in textural properties (p < 0.05) may be attributed to cricket powder affecting protein solubility and emulsion stability in sausage while gluten formation may be interfered with in the brownies. Overall, cricket powder replacement had improved nutritional content with minor changes in quality parameters.

Abstract:Edible insects are repeatedly being considered as underutilized food candidate due to their high nutritional value. Although frequent acceptance of whole insects to consumer is still challenging, incorporation of insects in food as powder or paste has been suggested to increase their acceptability. Hence, Acheta domesticus and Gryllus assimilis were subjected to freeze drying, oven drying, and blanching to acquire a clear insight on the impact of the processing methods on the nutritional and physical properties of both species. Result showed that these three methods had limited effects on the proximate composition, fatty acid and amino acid profile but had significant impact on other parameters for both species. Vitamin B12 in A. domesticus did not change but G. assimilis changed due to the treatment. Freeze drying showed better lightness (L* value) and lower browning index for both cricket species. Oven drying and blanching resulted in lower lipid oxidation values than freeze drying for both cricket species; though lipid oxidation was in all cases well below the rejection limit. Esters were the predominant group of volatile compound in freeze and oven-dried cricket while least amount of volatiles were found in blanched cricket. The volatiles resulted from fatty acid oxidation were higher in freeze-dried crickets, while Maillard reaction products were found in oven-dried samples. Although freeze drying showed higher colour quality, oven drying exerted superior effect in terms of nutritional and flavour characteristics followed by blanching treatment.

Abstract:The house cricket, Acheta domesticus L. (Orthoptera: Gryllidae) is one of the most important species of industrialized insects in the United States. Within the past five years the market of cricket powder as a food ingredient has been growing with increasing consumer interest on more sustainable sources of food. However, high labor costs of cricket production and high prices of cricket feed formulations result in cricket powder market prices much higher than other protein-rich food ingredients, making cricket powder only competitive within the novelty food market. In this study new diets formulated using by-products were developed using dietary self-selection followed by regression analysis. Crickets selected among seven different combinations of ingredients. Consumption ratios of food ingredients and by-products were used to determine macro and micro-nutrient intake. Regression analysis was used to determine the individual nutrient intake effect on cricket biomass production. Intake of vitamin C, sterol, manganese, and vitamins B1 and B5 had the most significant impact on live biomass production. Four diets were formulated based on this information and compared with a reference (Patton's 13) and a commercial diet. Although, crickets reared on Patton's diet 13 produced the most dry-weight biomass and developed the fastest, diet 4 (consisting of 92% by-products) generated the most profit (with a cost of $0.39 USD per kg) after an economic analysis that did not include the commercial formulation. Dry-weight biomass production was not significantly different among the four new diets and the commercial diet. This study demonstrated the value of dietary self-selection studies in developing oligidic insect diets and in studies of insect nutrition. This is the first such study involving farmed edible crickets and agricultural by-products. Four new cricket diet formulations contain between 62 and 92% agricultural by-products are included.

Extruded Corn Snacks with Cricket Powder: Impact on Physical Parameters and Consumer Acceptance

Abstract:Edible insects are more and more widely researched and presented as a good source of nutrients. Among the available raw materials, cricket powder (CP), obtained from roasted and crushed crickets, deserves attention because it can be used as an ingredient in many food products. The aim of this study was to determine the effect of CP addition on the physical and sensory properties of extruded corn snacks. In the extrusion process, five variants of corn snacks were produced with 2%, 4%, 6%, and 8% additions of CP, and with 8% CP and 2% baking powder. Snacks without CP addition were used as a control (R). The study also evaluated the storage life of the manufactured snack products based on their sorption properties. It was found that increasing the CP content in snacks has a significant effect on their characteristics, with a lower expansion ratio as the result of the higher CP content in the extrudates. CP increased the solubility and decreased the water absorption of the snacks. Color changes were also observed in the produced snacks. The more CP in the recipe, the darker the end product. In addition, the color parameters a* and b* were shifted towards red and blue in cross-sections of snacks with higher percentages of CP. According to the sensory analysis, CP additions up to 6% allow for obtaining sensory-attractive snacks. Statistical analysis of the results showed that the snack parameters, expansion ratio, and water absorption index are of the greatest importance for sensory acceptance. Therefore, when planning the incorporation of CP into this type of product, special attention should be paid to obtaining extrudates with appropriate parameters.

Abstract:Insect-containing products are gaining more space in the market. Bakery products are one of the most promising since the added ground insects can enhance not only the nutritional quality of the dough, but technological parameters and sensory properties of the final products. In the present research, different amounts of ground Acheta domesticus (house cricket) were used to produce oat biscuits. Colour, hardness, and total titratable acidity (TTA) values were measured as well as a consumer sensory test was completed using the check-all-that-apply (CATA) method. An estimation of nutrient composition of the samples revealed that, according to the European Union’s Regulation No. 1924/2006, the products with 10 and 15 g/100 g cricket enrichment (CP10 and CP15, respectively) can be labelled as protein sources. Results of the colour, TTA, and texture measurements showed that even small amounts of the cricket powder darkened the colour of the samples and increased their acidity, but did not influence the texture significantly. Among product-related check all that apply (CATA) attributes, fatty and cheesy flavour showed a significant positive effect on overall liking (OAL). On the other hand, burnt flavour and brown colour significantly decreased OAL. OAL values showed that consumers preferred the control product (CP0) and the product with 5 g/100 g cricket enrichment (CP5) samples over CP10 and rejected CP15.

Abstract:Edible insects have recently attracted attention as an alternative sustainable protein food source. However, consumer aversion remains the major obstacle to successful implementation in the food industry due to their shape and unpleasant odor. Here, we evaluated and compared odor-active compounds from untreated Gryllus bimaculatus (UGB), hot-air dried GB at 70 °C for 10 h (AGB), freeze-dried GB (FGB), steam-heated GB at 121 °C and 14.5 psi for 15 min (SGB), and defatted GB by hexane (DFGB). Each sample was analyzed using gas chromatography-mass spectrometry (GC-MS) and gas chromatography-olfactometry (GC-O). The most volatile compounds were detected in UGB, followed by SGB, DFGB, AGB, and FGB by GC-MS analysis. In GC-O analysis, fourteen compounds were identified as cricket or cricket-related odor among twenty identified compounds. Cyclododecane had the strongest cricket-related odor found only in UGB. DFGB received the lowest total scores of intensity for cricket-related odors, while SGB received the highest scores. It seems that defatting could reduce cricket-related odors. This study may provide theoretical information for the GB odors according to the four processing methods.

Abstract:Background: In the fields of food science and technology, sensory evaluation is extensively studied to assess personal perception and acceptability. However, studies on Thai consumers' personal perceptions of and acceptability of food products containing crickets have not been conducted. Objectives: The overall goal of this study was to find out how well-liked two food products containing house crickets were by Thai customers in good health regarding their sensory qualities. Methods: The 3-point Just-About-Right (JAR) scale measured the foods' sensory characteristics, including thickness, color, odor, sweetness, and saltiness. Food product approval among consumers was assessed using the 9-point Hedonic scale. Nutrient density was measured using the nutrient-rich foods (NRF) index, highlighting the potential health benefits of these products. Results: For every attribute, the goodness-of-fit score of the cricket puffed rice (CPR) was higher than 70%. The cricket-galangal chili paste (CGCP) received a score of greater than 70% for color and odor, but the sweetness was required more since it had a JAR score of 53.3 percent. The customer acceptance scores of CPR and CGCP were 6.63-7.60 and 6.60-7.50 on the 9-point Hedonic scale. The NRF indices of the CPR and CGCP were 19.19 and 20.44 (intermediate levels). Conclusion: There was no need for improvements in the cricket puffed rice product, but cricket-galangal chili paste should be improved. Further study on nutrition facts is required.

Abstract:Globally, there is growing interest to integrate cricket-based ingredients (flour) into food products to combat food and nutrition insecurity. However, there is lack of information on in-depth nutrient profile of the two cricket species ( Scapsipedus icipe and Gryllus bimaculatus ), which are the most widely consumed in Africa. Here we determined the nutrient composition of two cricket species and compared them with published records of key animal and plant sources. Our results revealed that the crude protein contents of S. icipe and G. bimaculatus were similar (56.8 and 56.9%, respectively) and comparable to those of animal protein sources. Both cricket species had balanced amino acid profiles that are superior to that of animal and plant sources, except for histidine and cysteine. The protein digestibility of S. icipe and G. bimaculatus ranged between 80 and 88%, which is comparable to that of common plant foods but slightly lower than that of animal proteins. The iron, Zinc, and potassium contents were considerably higher in both cricket species compared to that of plant and animal sources. The calcium contents of both crickets ( S. icipe and G. bimaculatus ) was superior to that of plant and animal origin except for kidney beans and eggs, respectively. Riboflavin, thiamine, and folic acid concentrations of S. icipe and G. bimaculatus were superior to that of the conventional sources. Vitamin A levels were significantly higher in S. icipe compared to G. bimaculatus . This implies that S. icipe and G. bimaculatus can adequately contribute to our daily required nutrient intake. Thus, integrating cricket flours into ready-to-eat food products would address some of the most pressing nutritional deficiency challenges that many developing countries have to grapple with, particularly high risk to serious health problems such as anemia, poor pregnancy outcomes, hypertension, increased risk of morbidity and mortality, stunted growth and impaired physical and cognitive development. We conclude that edible crickets present unique opportunities for improving food and nutritional insecurity status of both resource-poor and Western populations.

Abstract:Farming edible crickets has environmental and nutritional benefits, as well as social benefits such as livelihood diversification. Commercial feeds for poultry and fish farming are often used to feed crickets, and in recent years, crop and food-processing by-products have also been used to improve sustainability. However, the design of feed for crickets has not been standardized. Here, we investigated growth and development of the Asian field cricket, (Audinet-Serville) (Orthoptera: Gryllidae), fed on different forms of the same diet. Body weights and the rate of development were significantly greater in crickets fed on millimetre-order granules than in crickets fed on micrometre-order powder. The result suggests that the granular form is easier for to grasp and ingest than the powdery form, or that greater hydrophobicity of the powdery form inhibits digestion. Simply feeding millimetre-order granules may contribute to the development of feed design for farming edible crickets.

Abstract:Edible insects have been recognised as an alternative food or feed ingredient due to their protein value for both humans and domestic animals. The objective of this study was to evaluate the ability of both near- (NIR) and mid-infrared (MIR) spectroscopy to identify and quantify the level of adulteration of cricket powder added into two plant proteins: chickpea and flaxseed meal flour. Cricket flour (CKF) was added to either commercial chickpea (CPF) or flaxseed meal flour (FxMF) at different ratios of 95:5% w/w, 90:10% w/w, 85:15% w/w, 80:20% w/w, 75:25% w/w, 70:30% w/w, 65:35% w/w, 60:40% w/w, or 50:50% w/w. The mixture samples were analysed using an attenuated total reflectance (ATR) MIR instrument and a Fourier transform (FT) NIR instrument. The partial least squares (PLS) cross-validation statistics based on the MIR spectra showed that the coefficient of determination (R2CV) and the standard error in cross-validation (SECV) were 0.94 and 6.68%, 0.91 and 8.04%, and 0.92 and 4.33% for the ALL, CPF vs. CKF, and FxMF vs. CKF mixtures, respectively. The results based on NIR showed that the cross-validation statistics R2CV and SECV were 0.95 and 3.16%, 0.98 and 1.74%, and 0.94 and 3.27% using all the samples analyzed together (ALL), the CPF vs. CKF mixture, and the FxMF vs. CKF mixture, respectively. The results of this study showed the effect of the matrix (type of flour) on the PLS-DA data in both the classification results and the PLS loadings used by the models. The different combination of flours (mixtures) showed differences in the absorbance values at specific wavenumbers in the NIR range that can be used to classify the presence of CKF. Research in this field is valuable in advancing the application of vibrational spectroscopy as routine tools in food analysis and quality control.

The Potential for the Use of Edible Insects in the Production of Protein Supplements for Athletes

Abstract:Several types of proteins are used in athletes' supplementation; nevertheless, given the problem of protein deficiency in the world and the growing need for ecological sources of protein, it is very interesting to study the quality of alternative protein sources, such as insect protein. This study investigated the nutritional value, micronutrient content, amino acid profile, and chemical score of banded cricket protein quality in the form of flour, defatted flour, and a protein preparation, as well as popular commercial protein supplements. In addition, in vitro digestion was performed, and the antiradical activity of the hydrolysates was compared. Generally, the defatted cricket flour was the most similar to commercial supplements regarding nutritional value because it contained 73.68% protein. Furthermore, the defatted flour was abundant in essential minerals, such as iron (4.59 mg/100 g d.w.), zinc (19.01 mg/100 g d.w.), and magnesium (89.74 mg/100 g d.w.). However, the protein preparation had an amino acid profile more similar to that of commercial supplements (total content of 694 mg/g protein). The highest antiradical activity against ABTS·+ was noted for the defatted flour (0.901 mM TE/100 g) and against DPPH· for the cricket flour (2.179 mM TE/100 g). Therefore, cricket can be considered an organic protein source for the production of valuable protein supplements.

Abstract:Acheta domesticus is an insect offering several nutritional and technological opportunities for the food industry. After a positive safety assessment as novel foods by the European Food Safety Authority, whole A. domesticus ingredients aspire to gain their share on consumers’ plates. Through a systematic literature review, we describe the nutrient, microbiological, and toxicological profiles of undried and dried forms of A. domesticus. Both dried and undried forms contain a vast array of macro and micronutrients, with protein and minerals reported in considerable amounts in the dried forms. A heating step is the minimum requirement to meliorate the microbiological safety and stability of both forms. The toxicological profile of A. domesticus does not raise safety concerns per se, with the concentrations of contaminants in A. domesticus forms dependent on the contaminants’ level in the insects’ feed. Considerations of how to produce harmonized and robust compositional data on edible insects are discussed.

Abstract:Unconventional protein sources are currently extensively studied as food ingredients. This study aimed to evaluate the effect of 1.5% and 3% field cricket powder (GB) and 2-8% of its mixture (1:1) with spirulina powder (S) on the nutritional value, physicochemical properties, and sensory characteristics of corn extrudates. Additionally, 2% baking powder (BP) was added to assess its impact on the properties of the enriched extrudates. The results showed that both GB and GB + S improved nutritional value, with protein content increasing by up to 46% and higher levels of essential amino acids, particularly leucine and valine. However, these ingredients decreased the expansion ratio (by up to 15%), colour lightness (by up to 30%), and yellowness (by up to 47%) and increased the hardness (by up to 25%) of the corn extrudates. The S addition positively influenced product storage stability but decreased its sensory acceptance, especially aroma and taste. The BP addition mitigated the negative effects of higher GB and GB + S concentrations, particularly on sensory characteristics. In conclusion, incorporating up to 6% of the GB + S mixture provides a higher protein content with only minor changes to the product's characteristics compared to GB. Ratings exceeding 4.2 points indicate the good acceptability of these snacks.

Abstract:This study aimed to improve the visual aspects and chemical, techno-functional and rheological characteristics of Gryllus bimaculatus cricket powder through the use of different solvents, with the objective of using it as a protein source in food production. Four treatments (pH 5 aqueous solution, ethanol 20%, ethanol 99.5%, and hexane) were applied to the powder, and analyses were conducted to assess changes in the previously mentioned parameters. The results showed that the treatments led to an increase in protein concentration (from 55.4 to 72.5%) and a decrease in fat concentration (from 33.0 to 6.8%) in ethanol 99.5% treated powder, as well as a reduction in anti-nutritional compounds concentration, such as tannins (from 13.3 to 5.9 g/kg), in pH 5 treated powder, which is important for the nutritional value of the final product. The color of the powders was improved, being lighter after hexane and ethanol 99.5% treatments due to the removal of melanin with the defatting process. Flowability, water, and oil holding capacity were also improved in the defatted powders. All the results suggest that the main composition of the powder directly influences the analyzed parameters. These findings suggest that cricket powder treated with solvents can be used as a protein source in different food applications.

However, a research gap remains on the applications of insect chitosan, especially as it relates to their potential use as food packaging material. Chitosan from two reared cricket species (Acheta domesticus and Gryllodes sigillatus) was evaluated for use as food packaging material. Cricket chitosan films (CCF) were structurally similar to commercial shrimp chitosan films (SCF) at controlled glycerol levels, as seen by shared spectral peaks in FT-IR analyses. Mechanical properties of CCF showed they had equal or greater tensile strength when compared to commercial SCF, although flexibility was lower. Scanning electron microscopy showed increased roughness of microstructure, likely increasing the tortuosity. As a result, CCF had improved water vapor permeability compared to commercial SCF. Melanin complexes present in cricket chitin and chitosan increased hydrophobicity and decreased light transmittance. This study also revealed that intrinsic species differences, which occur during insect and crustacean exoskeleton development, could have effects on the functionality of chitosan packaging materials. Overall, CCF were found to be as effective as commercial SCF, while providing additional advantages. CCF derived from reared crickets have good mechanical and barrier properties, and improved water resistance and light barrier characteristics. Edible cricket chitosan has the potential to be used as bio-based packaging material for food and pharmaceutical applications.

Abstract:This study investigates the potential of brewer’s spent grain (BSG) as a cost-effective alternative to soybean meal in the diets of house crickets (Acheta domesticus) to enhance sustainable cricket rearing. BSG, a by-product of the brewing industry, was chosen due to its local availability and high protein content (38%). Here, the impacts of varying levels of BSG substitution (0%, 10%, 20% and 30%) on the growth performance, nutrient utilisation, chemical composition, and volatile compound profiles of crickets over a 45-day period was assessed. Crickets were reared under controlled conditions and divided into five groups, each receiving one of the experimental diets. Growth performance parameters, including body weight, average daily gain, and feed conversion ratio, were measured. Chemical analysis of the crickets and their diets was conducted, focusing on protein efficiency ratio, apparent dry matter digestibility (ADMD), and nitrogen retention. Volatile compounds were identified using gas chromatography-mass spectrometry. Crickets fed BSG diets exhibited higher protein deposition and lower fat content compared to those on a commercial diet, suggesting BSG’s potential to improve protein quality while reducing fat accumulation. ADMD was also higher in BSG-fed crickets, likely due to the prebiotic effects of components such as β-glucans and arabinoxylans. Additionally, the inclusion of BSG up to 30% in cricket diets reduced production costs by up to 29% compared to a commercial diet. Volatile compound analysis revealed that crickets fed BSG diets produced different odour profiles, with 2-heptanone, a compound with a fruity aroma, detected only in BSG-fed crickets. These findings suggest that BSG is a viable and sustainable ingredient for cricket feed, offering both economic and nutritional benefits while also influencing the sensory characteristics of crickets. Further research is recommended to optimise BSG inclusion levels and explore its broader applications in insect and animal farming.

Abstract:ABSTRACT Total lipid content and polyunsaturated fatty acid (PUFA) composition of six species of insects (mole cricket, ground cricket, spur‐throated grasshopper, giant water bug, true water beetle and water scavenger beetle) were determined. The total PUFA ranged from 726 mg/100 g in water scavenger beetle to 2883 mg/100 g in ground cricket; 18:2n‐6 was the major PUFA in most insects, except in spur‐throated grasshopper where the predominant PUFA was 18:3n‐3. The C20 PUFA, 20:4n‐6 and 20:5n‐3 were only found in aquicolous species, 149 and 57 mg/100 g in water scavenger beetle, 233 and 92 mg/100 g in true water beetle, and 569 and 264 mg/100 g in giant water bug, respectively. Total monounsaturated fatty acid (MUFA) content ranged from 714 mg/100 g in water scavenger beetle to 5889 mg/100 g in giant water bug; total saturated fatty acid (SFA) content ranged from 653 mg/100 g in water scavenger beetle to 5432 mg/100 g in giant water bug. The major MUFA in all insects was 18:1 and predominant SFA was 16:0. Results also showed the ratios of n‐6/n‐3 ranged from 0.3 in spur‐throated grasshopper to 31 in mole cricket. The aquicolous edible insects may be an alternative source of C20 long‐chain PUFA.

Abstract:The rising demand for sustainable protein sources has encouraged interest in alternative food products like meat analogues. This study explores formulating meat analogues using cricket powder (CP) and rice flours, comparing them with soy protein-based analogues. CP exhibited a higher soluble protein content (5.9%) than soy protein powder (4.7%), enhancing textural properties by forming fiber-like structures, increasing firmness and adhesion, and reducing chewiness. Despite having a lower water holding capacity (WHC) than soy analogues, all samples outperformed chicken breast WHC. Under freezing conditions, CP and rice flour combinations formed multilayered structures in protein gels. The optimal formulations were CP and sticky rice flour (ratio 6:1) with respect to their texture properties, fiber structure, and nutritional value. This study highlights the potential of cricket powder and rice flour combinations as viable meat analogue ingredients, addressing the need for sustainable protein sources in the food industry.
