Abstract:Visible/near-infrared (Vis/NIR) spectroscopy was tested to predict the quality attributes of fresh pork (content of intramuscular fat, protein and water, pH and shear force value) on-line. Vis/NIR spectra (350–1100nm) were obtained from 211 samples using a prototype. Partial least-squares regression (PLSR) models were developed by external validation with wavelet de-noising and several pre-processing methods. The 6th order Daubechies wavelet with 6 decomposition levels (db6–6) showed high de-noising ability with good information preservation. The first derivative of db6–6 de-noised spectra combined with multiplicative scatter correction yielded the prediction models with the highest coefficient of determination (R2) for all traits in both calibration and validation periods, which were all above 0.757 except for the prediction of shear force value. The results indicate that Vis/NIR spectroscopy is a promising technique to roughly predict the quality attributes of intact fresh pork on-line.
[Prediction of Minced Pork Quality Attributes Using Visible and Near Infrared Reflectance Spectroscopy].

Abstract:The objective of the present study was to estimate minced pork meat quality using visible and near infrared (Vis-NIR) spectroscopy. Two hundred twenty five carcasses samples from longissimus dorsi muscle were scanned over the Vis-NIR spectral range from 350 to 1 015 nm and analysed for intramuscular fat (IMF), protein and moisture according to the official methods. Wavelet transform was employed to eliminate the spectra noise. Partial least square regression (PLSR) and support vector machine (SVM) were used to develop Vis-NIR spectroscopy models for chemical composition detection. According to calibration statistics, the best model to predict intramuscular fat content was developed by SVM with the denoised spectra, the correlation coefficient was 0.889 for calibration and 0.888 for validation. For protein and moisture, the best model was achieved with the PLS method with the correlation coefficient of 0.869 and 0.881 for protein calibration and validation sets and 0.877 and 0.848 for moisture calibration and validation sets, respectively. And all the ratios of standard deviation of validation set to root mean square error of prediction (RPD) were not more than 3.0. Results indicated that it was possible to predict chemical composition in minced pork meat. As a fast predictor of meat quality using Vis-NIR spectroscopy, it is necessary to improve the precision and the robustness of the model for practice.
Quantitative analysis and detection of adulteration in pork using near-infrared spectroscopy

Abstract:Authenticity is an important food quality criterion. Rapid methods for confirming authenticity or detecting adulteration are increasingly demanded by food processors and consumers. Near infrared (NIR) spectroscopy has been used to detect economic adulteration in pork. Pork samples were adulterated with liver and chicken in 10% increments. Prediction and quantitative analysis were done using raw data and pretreatment spectra. The optimal prediction result was achieved by partial least aquares(PLS) regression with standard normal variate(SNV) pretreatment for pork adulterated with liver samples, and the correlation coefficient(R value), the root mean square error of calibration(RMSEC) and the root mean square error of prediction (RMSEP) were 0.97706, 0.0673 and 0.0732, respectively. The best model for pork meat adulterated with chicken samples was obtained by PLS with the raw spectra, and the correlation coefficient(R value), RMSEP and RMSEC were 0.98614, 0.0525, and 0.122, respectively. The result shows that NIR technology can be successfully used to detect adulteration in pork meat adulterated with liver and chicken.
Raman spectroscopy combined with support vector regression and variable selection method for accurately predicting salmon fillets storage time

Abstract:The storage time of salmon is one of the critical indexes to evaluate salmon quality, while the traditional methods are costly, destructive and time-consuming. This study highlights the effectiveness of Raman spectroscopy combined with support vector regression (SVR) and variable selection method in the prediction of salmon storage time. The spectra of salmon fillets during storage at -18℃, 4℃ and 20℃ were collected by the portable Raman spectrometer. To decrease the model complexity and improve the model prediction accuracy, three spectral variable selection algorithms were investigated for model optimizing, including competitive adaptive reweighted sampling (CARS), successive projections algorithm (SPA) and hybrid method (CARS-SPA). Comparing the full spectral models with the models established based on the variables selected by above variable selection methods, the results showed that CARS-SPA coupled with SVR (CARS-SPA-SVR) produced the optimal prediction performance. The determination coefficient and root mean square error of prediction set (R2p and RMSEP) at -18℃, 4℃ and 20℃ can reach 0.9986 and 0.1606, 0.9988 and 0.1485, 0.9995 and 0.0371, respectively. Therefore, this study have proved that Raman spectroscopy coupled with CARS-SPA-SVR model is an effective strategy for rapidly, nondestructively and accurately predicting the storage time of salmon fillets stored at different temperature.

Abstract:Total volatile basic nitrogen (TVB-N) is one of the key indicators for assessing fish freshness. This research employed near-infrared (NIR) and Raman spectroscopy methods to detect the TVB-N content in snakehead fillets. We extracted feature variables associated with TVB-N from NIR and Raman spectroscopy using Variable Crossover Point Arithmetic - Improved Reduced-Input Vector (VCPA-IRIV). Using these features, we established partial least squares (PLS) and One-dimensional Convolutional Neural Network (1D-CNN) models. Subsequently, data fusion strategies were employed to predict the TVB-N content. Notably, feature-level fusion in conjunction with Bayesian-optimized 1D-CNN, reached the best results, as evidenced by calibration and predictive correlation coefficients of 0.9677 and 0.9676 for TVB-N. These findings underscore the effectiveness of both NIR and Raman spectroscopy in evaluating fish freshness. The fusion of these two vibrational spectroscopy techniques enables a more rapid, efficient and comprehensive quantification of fish freshness.
Rapid and real-time prediction of lactic acid bacteria (LAB) in farmed salmon flesh using near-infrared (NIR) hyperspectral imaging combined with chemometric analysis

Abstract:In this study, hyperspectral imaging working in near-infrared (NIR) region (900–1700nm) was applied to evaluate surface lactic acid bacteria (LAB) spoilage of farmed salmon flesh during cold storage. Hyperspectral images of salmon samples were acquired at different storage times. Spectral information within regions of interest (ROIs) of images were extracted to relate to reference LAB values measured by standard pour plate method. Least-squares support vector machine (LS-SVM) algorithm was used to calibrate the full NIR range spectral data, resulting in regression coefficients of prediction (RP) of 0.929 with root mean square error of prediction (RMSEP) of 0.515. Competitive adaptive reweighted sampling (CARS) algorithm was employed to reduce the spectral redundancy and identify the most informative wavelengths (MIWs) most related with LAB prediction across the whole wavelength range. Eight individual MIWs at 1155nm, 1255nm, 1373nm, 1376nm, 1436nm, 1641nm, 1665nm and 1689nm were finally selected from the full 239 wavelengths. Based on the selected MIWs, a new optimised model named CARS-LS-SVM was established, leading to RP of 0.925 with RMSEP of 0.531. At last, the CARS-LS-SVM model was transferred to each pixel of hyperspectral images of samples and colour maps were generated for visualising the LAB spoilage process in salmon flesh. The overall results indicated that NIR hyperspectral imaging is very potential and could be used as a rapid, non-destructive and efficient technique for LAB evaluation in salmon flesh.

Abstract:Total volatile basic nitrogen (TVB-N) and total viable count (TVC) are two important indicators for evaluating and controlling the quality and safety of chicken fillets. The aim of this study is to evaluate two hyperspectral imaging techniques (visible near-infrared (Vis-NIR) and NIR) in combination with low-level and intermediate-level fusion strategies (LLF and ILF) for the prediction of multiple quality indicators of chicken fillets stored at 4 °C. Quantitative predictions using partial least squares regression (PLSR) were established after preprocessing and feature wavelength selection. The results showed that the data fusion strategy exhibited better performance in both indicators compared to individual data. The LLF strategy showed optimal performance in predicting the TVC content with an RP2 of 0.9275 and an RMSEP of 0.1889, while the ILF strategy was best in predicting the TVB-N content with an RP2 of 0.8652 and an RMSEP of 2.6094. Moreover, the optimal models based on selected bands were used to achieve visual maps of the TVB-N and TVC contents. Although validation with an independent batch of samples was not used, it was a feasibility and valuable study. The experiment results demonstrated that the fusion of two types of hyperspectral data can be successfully used to evaluation of chicken multiple qualities, and provided a potential method for monitoring and detection of meat qualities.

Abstract:To address the fast and nondestructive determination of salmon fillets storage time associated with its freshness, Fourier transform near-infrared (FT-NIR) spectroscopy coupled with advanced variable selection methods was attempted in this work. Fresh salmon fillets were divided into three groups and stored at -18°C, 4°C and 20°C, respectively. The spectra under each temperature were collected by a FT-NIR spectrometer with the range of 4000–11000 cm −1 . Advanced variable selection methods, including random frog (RF), successive projections algorithm (SPA), competitive adaptive reweighted sampling (CARS), CARS combined with SPA (CARS-SPA) and variable combination population analysis combined with iteratively retaining informative variables (VCPA-IRIV), were utilized to extract key feature variables and shrink variable space. The prediction models were constructed by using partial least squares regression (PLSR) based on full spectral variables and selected feature variables. Variable selection method VCPA-IRIV coupled with PLSR (VCPA-IRIV-PLSR) showed the best prediction performance in each temperature, with determination coefficients of prediction set (R 2 P ) of 0.9988, 0.9976 and 0.9998, and root mean square error of prediction set (RMSEP) of 0.145, 0.209 and 0.024 for -18°C, 4°C and 20°C, respectively. The overall results showed the great feasibility of FT-NIR combined with variable selection methods in the rapidly, nondestructively and accurately predicting freshness of salmon fillets stored at different temperatures.

A data fusion detection method for fish freshness based on computer vision and near-infrared spectroscopy

Abstract:Freshness is one of the most significant parameters of fish quality. This study aims to develop a new rapid non-destructive technique to assess fish freshness. Two different technologies including computer vision and near-infrared spectroscopy (NIR spectroscopy) were employed in the detection. Subsequently a new data fusion detection method was developed to improve the accuracy of classification by combining the inspection data of computer vision with that of NIR spectroscopy. Parabramis pekinensis bought from a local market were taken as experimental samples. The total volatile basic nitrogen (TVB-N) content of the samples was measured as an indicator of fish freshness using conventional methods. Computer vision and NIR spectroscopy were used to acquire image information for organoleptic changes and spectrum information for structural changes in the fish samples during storage, respectively. Principal component analysis (PCA) was used for data compression to reduce the dimensionality of the data set while essential information was retained, which made the analysis easier than it would have been for the original huge data set. A back propagation artificial neural network (BP-ANN) was used to build a prediction model by obtaining a non-linear relation between the fish freshness and the body changes during storage. The results showed that computer vision technology outperformed NIR spectroscopy techniques, for the BP-ANN model reached a 94.17% success rate in the training set and 90.00% in the prediction set using the computer vision technology, while the model of NIR spectroscopy reached 86.67% and 80.00% in the training set and prediction set respectively. This showed improved fish freshness classification using computer vision technology rather than the NIR spectroscopic method. Therefore, the data from the two techniques were considered simultaneously, using the classification model BP-ANN, which achieves the optimum performance of 96.67% and 93.33% corresponding to the training set and prediction set respectively using data fusion. Therefore, this demonstrated for the first time the feasibility and superiority of data fusion by integrating computer vision and NIR spectroscopy in the classification of fish freshness.

Abstract:Background: The total volatile basic nitrogen (TVB-N) is the main indicator for evaluating the freshness of fish meal, and accurate detection and monitoring of TVB-N is of great significance for the health of animals and humans. Here, to realize fast and accurate identification of TVB-N, in this article, a self-developed electronic nose (e-nose) was used, and the mapping relationship between the gas sensor response characteristic information and TVB-N value was established to complete the freshness detection. Results: The TVB-N variation curve was decomposed into seven subsequences with different frequency scales by means of variational mode decomposition (VMD). Each subsequence was modelled using different long short-term memory (LSTM) models, and finally, the final TVB-N prediction result was obtained by adding the prediction results based on different frequency components. To improve the performance of the LSTM, the sparrow search algorithm (SSA) was used to optimize the number of hidden units, learning rate and regularization coefficient of LSTM. The prediction results indicated that the high accuracy was obtained by the VMD-LSTM model optimized by SSA in predicting TVB-N. The coefficient of determination (R2), the root-mean-squared error (RMSE) and relative standard deviation (RSD) between the predicted value and the actual value of TVBN were 0.91, 0.115 and 6.39%, respectively. Conclusions: This method improves the performance of e-nose in detecting the freshness of fish meal and provides a reference for the quality detection of e-nose in other materials. © 2024 Society of Chemical Industry.
Application of Near-Infrared Hyperspectral Imaging to Predicting Water Content in Salmon Flesh

Abstract:Near-infrared hyperspectral imaging technique was employed in the present study to determine water contents in salmon flesh rapidly and nondestructively. Altogether 90 samples from different positions of salmon fish were collected for hyperspectral image scanning, and mean spectra were extracted from the region of interest (ROI) inside each image. Sixty samples were randomly selected as calibration set, and the remaining 30 samples formed prediction set. The full-spectrum and water contents were correlated using partial least squares regression (PLSR) and least-squares support vector machines (LS-SVM), which were then applied to predict water contents for prediction samples. A novel variable extraction method called random frog was applied to select effective wavelengths (EWs) from the full-spectrum. PLSR and LS-SVM calibration models were established respectively to detect water contents in salmon based on the EWs. Though the performances of EWs-based models were worse than models using full-spectrum, only 12 wavelengths were used to substitute for the original 151 wavelengths, thus models were greatly simplified and more suitable for practical application. For EWs-based PLSR and LS-SVM models, satisfactory results were achieved with correlation coefficient of prediction (Rp) of 0. 92 and 0. 93 respectively, and root mean square error of prediction (RMSEP) of 1. 31% and 1. 18% respectively. The results indicated that near-infrared hyperspectral imaging combined with chemometrics allows accurate prediction of water contents in salmon flesh, providing important reference for the rapid inspection of fish quality.
Rapid Detection of Total Viable Count in Intact Beef Dishes Based on NIR Hyperspectral Hybrid Model

Abstract:The total viable count (TVC) of bacteria is an important index to evaluate the freshness and safety of dishes. To improve the accuracy and robustness of spectroscopic detection of total viable bacteria count in a complex system, a new method based on a near-infrared (NIR) hyperspectral hybrid model and Support Vector Machine (SVM) algorithms was developed to directly determine the total viable count in intact beef dish samples in this study. Diffuse reflectance data of intact and crushed samples were tested by NIR hyperspectral and processed using Multiplicative Scattering Correction (MSC) and Competitive Adaptive Reweighted Sampling (CARS). Kennard-Stone (KS) and Samples Set Partitioning Based on Joint X-Y Distance (SPXY) algorithms were used to select the optimal number of standard samples transferred by the model combined with root mean square error. The crushed samples were transferred into the complete samples prediction model through the Direct Standardization (DS) algorithm. The spectral hybrid model of crushed samples and full samples was established. The results showed that the Determination Coefficient of Calibration (RP2) value of the total samples prediction set increased from 0.5088 to 0.8068, and the value of the Root Mean Square Error of Prediction (RMSEP) decreased from 0.2454 to 0.1691 log10 CFU/g. After establishing the hybrid model, the RMSEP value decreased by 9.23% more than before, and the values of Relative Percent Deviation (RPD) and Reaction Error Relation (RER) increased by 12.12% and 10.09, respectively. The results of this study showed that TVC instewed beef samples can be non-destructively determined based on the DS model transfer method combined with the hybrid model strategy. This study provided a reference for solving the problem of poor accuracy and reliability of prediction models in heterogeneous samples.

Abstract:A nondestructive and rapid method using near-infrared (NIR) hyperspectral imaging was investigated to determine the spatial distribution of fat and moisture in Atlantic salmon fillets. Altogether, 100 samples were studied, cutting out from different parts of five whole fillets. For each sample, the hyperspectral image was collected with a pushbroom NIR (899–1,694 nm) hyperspectral imaging system followed by chemical analysis to measure its reference fat and moisture contents. Mean spectrum were extracted from the region of interest inside each hyperspectral image. The quantitative relationships between spectral data and the reference chemical values were successfully developed based on partial least squares (PLS) regression with correlation coefficient of prediction of 0.93 and 0.94, and root mean square error of prediction of 1.24 and 1.06 for fat and moisture, respectively. Then the PLS models were applied pixel-wise to the hyperspectral images of the prediction samples to produce chemical images for visualizing fat and moisture distribution. The results were promising and demonstrated the potential of this technique to predict constituent distribution in salmon fillets.
Predicting pork freshness using multi-index statistical information fusion method based on near infrared spectroscopy

Abstract:In this work, the near infrared spectroscopy (NIR) technology was applied to nondestructively evaluate the freshness of pork. The total volatile basic-nitrogen (TVB-N) and pH value of pork were detected as freshness evaluation indicators. A multi-index statistical information fusion (MSIF) modeling method based on variable selection was proposed to evaluate pork freshness. In the experiment, the proposed MSIF was compared with other state-of-the-art variable selection methods. Results showed that the proposed method achieved the best generalization performance and stability. The prediction correlation coefficient (Rval) and root mean square error (RMSEP) of MSIF were: Rval = 0.8618 and RMSEP = 3.910 for TVB-N content, Rval = 0.9379 and RMSEP = 0.1046 for pH value. The research demonstrated that NIR combined with MSIF has the potential for rapid and nondestructive determination of pork freshness, and so hopefully to provide a promising tool for monitoring meat quality and enriching the extracted information from food industry.
Application of SVR to NIR prediction model for protein and moisture content in hairtail surimi

Abstract:To observe the feasibility of the application of Support Vector Regression(SVR) in surimi by near infrared spectroscopy(NIRS) analysis,NIR diffuse reflectance spectra and experimental values of protein and moisture content of 73 surimi samples were processed with SVR,and NIRS calibration models of protein and moisture content were established.This is the first attempt to apply near infrared spectroscopy with determination of major components in Trichiurus japonicus surimi.The results of internal and external verification with leave-one-out(LOOCV) and independent samples showed that SVR model's predictive ability was good,the correlation coefficient of protein and moisture is 0.90 and 0.96 in LOOCV.Therefore,NIR spectroscopy with SVR can predict protein and moisture content in surimi and can be applied to the rapid evaluation of the quality of surimi.

Abstract:In this study, chemometrics were employed to explore the relationship between sensory evaluation and physicochemical indicators of sea bass (Lateolabrax japonicus). Through principal component analysis, cluster analysis, and Pearson correlation analysis, three pivotal indicators were identified: protein content, b* value, and condition factor. Leveraging the grey relational analysis, weights were assigned to these three core quality indicators, resulting in a comprehensive sea bass quality evaluation model: Y = 0.911 × protein (g/100 g) + 0.742 × b* + 0.747 × condition factor. Moreover, near-infrared spectroscopy combined with chemometrics were employed to evaluate the quality of sea bass. The different origins of sea bass were accurately distinguished using orthogonal partial least squares discriminant analysis. The partial least squares regression model was constructed for predicting the critical quality indicator, protein content, with R2P of 0.926. This study offers new insights for developing rapid, economical, and reliable methods for assessing aquatic product quality.
Off-flavor profiling of cultured salmonids using hyperspectral imaging combined with machine learning

Abstract:Off-flavors can have significant impacts on the quality of salmonid products. This study investigated the possibility of comprehensive off-flavor profiling considering both olfactory and taste sensory perspectives by combining near-infrared hyperspectral imaging (NIR-HSI) and machine/deep learning. Four feature extraction algorithms were employed for the extraction and interpretation of spectral fingerprint information regarding off-flavor-related compounds. Classification models, including the partial least squares discriminant analysis, least-squares support vector machine, extreme learning machine, and one-dimensional convolutional neural network (1DCNN) were constructed using the full wavelengths and selected spectral features for the identification of off-flavor salmonids. The 1DCNN achieved the highest discrimination accuracy with full and selected wavelengths (i.e., 91.11 and 86.39 %, respectively). Furthermore, the prediction and visualization of off-flavor-related compounds were achieved with acceptable performances (R2 > 0.6) for practical applications. These results indicate the potential of NIR-HSI for the off-flavor profiling of salmonid muscle samples for producers and researchers.
A pH-Responsive colourimetric sensor array based on machine learning for real-time monitoring of beef freshness

Abstract:A novel strategy based on a pH-responded colourimetric sensor array (CSA) was developed by combining it with machine learning models to effectively monitor the freshness of beef in real time through the detection of total volatile basic nitrogen (TVB-N) contents. A total of 168 colour features were calculated and effective colour features sensitive to the changes in TVB-N contents were extracted by sequential forward selection (SFS), random forest (RF), and principal component analysis (PCA). Besides, the linear regression model of partial least squares regression (PLSR) as well as nonlinear regression models of random forest regression (RFR) and support vector machine regression (SVR) were established to predict TVB-N values of beef at 28 °C based on full and effective colour features. The RF-SVR model had the best performance with a corresponding determination coefficient of prediction (R p 2 ) of 0.9596, a root-mean-square error of prediction (RMSEP) of 1.89 mg/100 g, and a relative prediction deviation (RPD) of 4.98. Moreover, the CSA based on the RF-SVR model was applied to the quantitative analysis of beef freshness at 4 °C storage, validated by using a standard method for the detection of TVB-N contents in beef samples. The results illustrated that the CSA as an objective and nondestructive tool can monitor TVB-N contents for the evaluation of beef freshness with the help of machine learning.

Abstract:Freshness is a key indicator for assessing the nutritional and safety qualities of fish products. This study aims to apply the convolutional neural network (CNN) for modeling the Raman spectra data, for the rapid classification of the freshness grades of sea bass ( Lateolabrax japonicus ) fillets. Results suggested that the classification accuracy of CNN model was superior to principal component analysis (PCA), partial least squares discriminant analysis (PLS-DA), and support vector machine (SVM) based on Raman spectra data. In addition, analysis of variance (ANOVA) was demonstrated effective for extracting the Raman spectral features for CNN modeling. Based on the feature-selected CNN model using ANOVA, the average accuracy for identifying sea bass fillets freshness was improved to 90.6% and the testing time was reduced to 0.44 s. In particular, the classification accuracy for the second-grade freshness was significantly improved to 80.2% compared with the CNN model with full-band Raman spectra. This research provided an exemplar for combining the portable Raman spectrometer with deep learning for the rapid and non-destructive analysis of food quality.

Abstract:Carbachol and norepinephrine induce glycogen breakdown in rat submaxillary glands incubated in vitro. These effects are suppressed by specific inhibitors of cholinergic receptors (atropine, a muscarinic blocker) and of adrenergic receptors (propranolol, a beta-blocker and phentolamine, an alpha-blocker). The beta-adrenergic effect seems to be mediated through the adenosine 3':5'-monophosphate system, whereas the alpha-adrenergic and cholinergic effects are dependent of Ca2+ influx into cell. In the two latter systems, it is suggested that a direct activation of phosphorylase b kinase by calcium takes place. These data clearly indicate that glycogenolysis in rat submaxillary glands in vitro can be independently affected by sympathetic and parasympathetic agents via specific receptors.
