Abstract:The paper presents an original logical system for reasoning about groups of interacting, autonomous processes, i.e. multi-agent systems. In the paper, an agent is considered as a couple consisting of a set of methods and of a queue of tasks. We show that the logic is not decidable. It is done by the reduction from the recurring domino problem.

Abstract:Background Bioactive peptides derived from food proteins are continuing gain the momentum as an important constituent of functional food ingredients and nutraceuticals. Although there is a burgeoning body of literature about preparation, characterization and activity study of food-derived bioactive peptides and several bioactive peptides have been commercialized, there is lack of systemic review on the safety of food protein derived bioactive peptides. Scope and approach: This article reviews the possible formation of allergenic and toxic peptides from their parent proteins, as well as hazardous compounds during protein extraction, protein pretreatment, and bioactive peptides preparation. The impacts of administration dosage (including frequency) and length of bioactive peptides on safety are discussed. Finally, the challenges in researching the safety of bioactive peptides are also presented. Key findings and conclusions: Potential toxic and allergenic peptides, often showing biological activities, may be released during hydrolysis of food proteins. Amino acid racemization, peptide modification/derivation including the formation of iso-peptide bonds, and Maillard reaction may occur during protein extraction, sample pretreatment, and peptide preparation. The safety of bioactive peptides can also be affected by administration dosage (including frequency) and length of use. It is expected that this review can facilitate the development of effective strategies to address the safety concerns of food protein-derived bioactive peptides.

Abstract:The multiple functions of peptides released from proteins have immense potential in food and health. In the past few decades, research interest in bioactive peptides of plant origin has surged tremendously, and new plant-derived peptides are continually discovered with advances in extraction, purification, and characterization technology. Plant-derived peptides are mainly extracted from dicot plants possessing bioactive functions, including antioxidant, cholesterol-lowering, and antihypertensive activities. Although the distinct functions are said to depend on the composition and structure of amino acids, the practical or industrial application of plant-derived peptides with bioactive features is still a long way off. In summary, the present review mainly focuses on the state-of-the-art extraction, separation, and analytical techniques, functional properties, mechanism of action, and clinical study of plant-derived peptides. Special emphasis has been placed on the necessity of more pre-clinical and clinical trials to authenticate the health claims of plant-derived peptides.

Abstract:Plant-based proteins (PBPs), which are environmentally friendly and sustainable sources of nutrition, can address the emerging challenges facing the global food supply due to the rapidly increasing population. PBPs have received much attention in recent decades as a result of high nutritional values, good functional properties, and potential health effects. This review aims to summarize the nutritional, functional and digestive profiles of PBPs, the health effects of their hydrolysates, as well as processing methods to improve the digestibility of PBPs. The diversity of plant protein sources plays an important role in improving the PBPs quality. Several types of models such as in vitro (the static and semi-dynamic INFOGEST) and in silico models have been proposed and used in simulating the digestion of PBPs. Processing methods including germination, fermentation, thermal and non-thermal treatment can be applied to improve the digestibility of PBPs. PBPs and their hydrolysates show potential health effects including antioxidant, anti-inflammatory, anti-diabetic, anti-hypertensive and anti-cancer activities. Based on the literature, diverse PBPs are ideal protein sources, and exhibit favorable digestive properties and health benefits that could be further improved by different processing technologies. Future research should explore the molecular mechanisms underlying the bioactivity of PBPs and their hydrolysates.

Abstract:Even though plant proteins are more plentiful and affordable than animal proteins in comparison, direct usage of plant-based proteins (PBPs) is still limited because PBPs are fed to animals as feed to produce animal-based proteins. Thus, this work has comprehensively reviewed the effects of various factors such as pH, temperature, pressure, and ionic strength on PBP properties, as well as describes the protein interactions, and extraction methods to know the optimal conditions for preparing PBP-based products with high functional properties and health benefits. According to the cited studies in the current work, the environmental factors, particularly pH and ionic strength significantly affected on physicochemical and functional properties of PBPs, especially solubility was 76.0% to 83.9% at pH = 2, while at pH = 5.0 reduced from 5.3% to 9.6%, emulsifying ability was the lowest at pH = 5.8 and the highest at pH 8.0, and foaming capacity was lowest at pH 5.0 and the highest at pH = 7.0. Electrostatic interactions are the main way for protein interactions, which can be used to create protein/polysaccharide complexes for food industrial purposes. The extraction yield of proteins can be reached up to 86-95% with high functional properties using sustainable and efficient routes, including enzymatic, ultrasound-, microwave-, pulsed electric field-, and high-pressure-assisted extraction. Nondairy alternative products, especially yogurt, 3D food printing and meat analogs, synthesis of nanoparticles, and bioplastics and packaging films are the best available PBPs-based products. Moreover, PBPs particularly those that contain pigments and their products showed good bioactivities, especially antioxidants, antidiabetic, and antimicrobial. [Graphics] .

Abstract:Proteins are present in a wide range of our everyday foods and complex macromolecules made up of one or more polypeptide chains. From these common foods, a large number of bioactive peptides can be produced. An array of biological health effects has been attributed to these peptides, including antioxidative, antihypertensive, antidiabetic, anticoagulant, antithrombotic, anti-inflammatory, hypocholesterolemic and immunomodulating. The chemical structure of biologically active peptides is closely related to its specific biological activity. Furthermore, the amino acid composition and sequence information of peptide molecular chain have an important influence on its physiological activity. Food-derived bioactive peptides are typically released from animal and plant proteins via enzymatic hydrolysis under in vitro or in vivo conditions using different kinds of protease. However, the production, separation and purification of bioactive peptides with desired specific functions have become a focus and challenge. In addition, further studies are needed on the mechanism of action and multiple biological functionalities. Theresent review focuses on the recent biotechnological advances in the production, purification and identification of bioactive peptides were. Abstract:By-products of the meat processing industry which are often discarded as waste are excellent protein substrates for producing bioactive peptides through enzymatic hydrolysis. These peptides have tremendous potential for the development of functional food products but there is scanty information about the regulations on bioactive peptides or products in various parts of the world. This review focuses on the diverse bioactive peptides identified from different meat and meat by-products, their bioactivity and challenges associated in their production as well as factors limiting their effective commercialization. Furthermore, this report provides additional information on the possible toxic peptides formed during production of the bioactive peptides, which enables delineation of associated safety and risk. The regulatory framework in place for bioactive peptide-based foods in different jurisdictions and the future research directions are also discussed. Uniform quality, high cost, poor sensory acceptance, lack of toxicological studies and clinical evidence, paltry stability, and lack of bioavailability data are some of the key challenges hindering commercial advancement of bioactive peptide-based functional foods. Absorption, distribution, metabolism and excretion (ADME) studies in rodents, in vitro genotoxicity, and immunogenicity data could be considered as absolute pre-requisites to ensure safety of bioactive peptides. In the absence of ADME and genotoxicity data, long term usage to evaluate safety is highly warranted. Differences in legislations among countries pose challenge in the international trade of bioactive peptides-based functional foods. Harmonization of regulations could be a way out and hence further research in this area is encouraged.

Abstract:Environmental costs associated with meat production have necessitated researchers and food manufacturers to explore alternative sources of high-quality protein, especially from plant origin. Proteins from peanuts and peanut-by products are high-quality, matching industrial standards and nutritional requirements. This review contributes to recent developments in the production of proteins from peanut and peanut meal. Conventional processing techniques such as hot-pressing kernels, use of solvents in oil removal, and employing harsh acids and alkalis denature the protein and damage its functional properties, limiting its use in food formulations. Controlled hydrolysis (degree of hydrolysis between 1 and 10%) using neutral and alkaline proteases can extract proteins and improve peanut proteins' functional properties, including solubility, emulsification, and foaming activity. Peanut proteins can potentially be incorporated into meat analogues, bread, soups, confectionery, frozen desserts, and cakes. Recently, pretreatment techniques (microwave, ultrasound, high pressure, and atmospheric cold plasma) have been explored to enhance protein extraction and improve protein functionalities. However, most of the literature on physicochemical pretreatment techniques has been limited to the lab scale and has not been analysed at the pilot scale. Peanut-derived peptides also exhibit antioxidant, anti-hypertensive, and anti-thrombotic properties. There exists a potential to incorporate these peptides into high-fat foods to retard oxidation. These peptides can also be consumed as dietary supplements for regulating blood pressure. Further research is required to analyse the sensory attributes and shelf lives of these novel products. In addition, animal models or clinical trials need to be conducted to validate these results on a larger scale.

Abstract:Methods of food bioactive preparation, extraction, purification, and identification were concluded. The functions of FBPs that could be utilized in food and medical industries were summarized. The taste mechanisms of FBPs and its influence on food were explored. New methods of constructing carriers of FBPs to enhance their stability and bioaccessibility were introduced. Functional peptides constitute a class of small molecular peptide chains with specific functions in biology and are typically composed of various amino acids. The chemical‐synthesis methods for preparation of functional peptides can bring high toxicity to the human body. Therefore, there is a growing need to explore alternative, safter sources to obtain bioactive peptides. Food‐derived bioactive peptides (FBPs) stand out as an ideal substitution offering safety and accessibility that can be used in health products and pharmaceuticals to elicit their effects. Presently, the extraction, purification, functional properties, and bioavailability of FBPs have been poorly summarized. This review aims to address this gap by summarizing key aspects of FBPs, covering their source, methods of preparation, extraction, isolation, purification, and identification. Additionally, the review explores the functional characteristics and mechanism underlying FBPs. Emphasis is placed on strategies to enhance the stability and bioaccessibility of FBPs, crucial for their successful application in the food and medical industries. Existing research findings suggest that adopting appropriate methods can extract FBPs with high yield and purity. FBPs exhibit both in vitro and in vivo biological activities regulating relevant pathways, showcasing their potential in the medical field. In the quest for improved stability, the application of nanomaterials emerges as a promising strategy. These advancements collectively hint at a bright future for FBPs in both food and medical matrices. As the field progresses, further exploration and refinement of extraction techniques, functional properties, and bioavailability will contribute to unlocking the full potential of FBPs in various applications.

A 59-year-old man with mild hypothermia presented with NCPE after passive external rewarming following accidental immersion in water. The patient's course was uneventful after 48 h, allowing immediate withdrawal of assisted ventilation and supplemental oxygen.

Abstract:Food protein-derived peptides have been recognised as an important category of functional food materials, which exert various bioactivities and possible health-promoting impacts in human beyond their traditional nutritional values (Hern andez-Ledesma & Hsieh, 2017; Aguilar et al., 2019). Bioactive peptides could be produced by food processing processes such as fermentation, etc., from longer polypeptides or proteins. A growing body of scientific evidence has demonstrated that peptides bearing characteristic sequences can prevent various lifestyle-related diseases such as diabetic, hypertension and atherosclerosis. In addition to bioactivities, current peptide researches focus on physiological stability in the gastrointestinal tract as well as intestinal absorption to understand the bioaccessibility and bioavailability of bioactive peptides (Matsui, 2018). This special issue summarises current understandings on bioaccessibility and bioavailability of food protein-derived bioactive peptides, which also include a review on clinical aspects of bioactive peptides, as well as future challenges and ongoing research needs in the field of peptide science. Written by world renowned leading scientists, it is hoped that the knowledge and insights gained from this special issue will lead to further development in the rapidly growing field of bioactive peptides from food proteins. Epidemiological studies have revealed that consumption of milk and fermented dairy products is inversely associated with elevated blood pressure and with many of the risk factors of the metabolic syndrome and combats against hypertension and vascular dysfunction. An overview of the potential blood pressure lowering components present in dairy products with a special focus on casein-derived tripeptides was described. Dairy proteinderived bioactive peptides (DBPs) have potential benefits for human health. However, their transport mechanisms and bioavailability from intestinal lumen to bloodstream are not well understood. Understanding of their transport mechanisms across the intestinal membrane (peptide transporter 1, paracellular route, transcytosis and passive transcellular diffusion) and the bioavailability of DBPs in animal and human studies were highlighted. Current research on in vitro and in vivo absorption of these compounds and factors that play a key role in this process provides better understanding of the in vitro and in vivo bioavailability and bioaccessibility of peptides. Peptides display diverse structural features because of their varied amino acid compositions. The structural diversity often imparts them complex physiological functions or possible health-beneficial effects. Some small peptides (di-/tripeptides) exert preventive effects against conditions such as hypertension, hypercholesterolaemia and atherosclerosis. Despite their health benefits, a limited understanding of peptide absorption may hinder their extensive application. Therefore, in vitro and in vivo findings on the intestinal absorption of small peptides and potential factors affecting their absorption were emphasised. Bioactive peptides can be protected from the gastrointestinal environment by microencapsulation. Microcapsules obtained by spray drying using maltodextrin/gun arabic in optimal formula preserved the a-glucosidase, a-amylase and dipeptidyl peptidase-IV inhibitory activity of P. lunatus peptides after in vitro gastrointestinal digestion. Lupine (Lupinus angustifolius L.) protein (in wholemeal and protein isolates) was biodegraded using Pediococcus acidilactici in submerged and solid-state fermentation conditions. Biodegradation improved the antioxidant properties, modulated the antimicrobial properties and led to higher in vitro and in vivo digestibility and functionality of the lupine in treated rats. Diabetes mellitus is a complex disorder caused by insufficient insulin production or insulin resistance. It was to update the state-of-the-art regarding the origin, structural characteristics, action and potential mechanisms of bioactive peptides on the key enzymes and proteins, i.e., a-amylase, a-glucosidase. Epidemiological studies have shown that soy consumption is associated with lower incidence of various diseases, including cancer. Over the past decades, soy proteins and derived peptides have been considered as potential preventive agent against the initiation, promotion and progression of cancer. Abstract:Plant proteins have recently gained market demand and momentum due to their environmentally friendly origins and health advantages over their animal-derived counterparts. However, their lower techno-functionalities, digestibility, bioactivities, and anti-nutritional compounds have limited their application in foods. Increased demand for physically modified proteins with better techno-functionalities resulted in the application of different thermal and non-thermal treatments to modify plant proteins. Novel physical processing technologies (NPPT) considered 'emerging high-potential treatments for tomorrow' are required to alter protein functionality, enhance bioactive peptide formations, reduce anti-nutritional, reduce loss of nutrients, prevention of damage to heat liable proteins and clean label. NPPT can be promising substitutes for the lower energy-efficient and aggressive thermal treatments in plant protein modification. These facts captivated the interest of the scientific community in designing novel functional food systems. However, these improvements are not verifiable for all the plant proteins and depend immensely on the protein type and concentration, other environmental parameters (pH, ionic strength, temperature, and co-solutes), and NPPT conditions. This review addresses the most promising approaches of NPPT for the modification of techno-functionalities of plant proteins. New insights elaborating the effect of NPPTs on proteins' structural and functional behavior in relation to other food components are discussed. The combined application of NPPTs in the field of plant-based bioactive functionalities is also explored.

Abstract:The application of plant proteins in new food products is rapidly expanding worldwide driven by consumers demanding healthy, sustainably produced, and non-animal proteins. Major sources of plant protein include cereal grains, tree nuts, oilseeds, legumes, and pulses. Their protein content ranges from 6 to 45%, but many plant proteins typically have suboptimal levels and ratios of essential amino acids. Plant proteins is associated with many health benefits due to the presence of bioactive compounds which are claimed via in vivo and in vitro studies to show several biological activities and properties related to health promotion such as anti-inflammatory, antimicrobial, antidiabetic, and antioxidant properties. However, some of them are recognised as antinutritional factors and present inhibitory effects on the digestion of proteins. Other adverse effects associated with plant proteins include allergy (induced by the allergenic proteins) and coeliac disease (triggered by the gluten proteins). Beyond their roles in nutrition and health, the value of plant proteins extends to provide functional uses in food applications through processes such as solubilisation, emulsification, foaming, gelation, and dough formation. These functionalities play an integral role in the development of plant proteins-based foods such as meat analogue, beverages, bakery, and pasta products.

Quantum differences in oral susceptibility of voles, Microtus pennsylvanicus, to virulent Francisella tularensis type B, in drinking water: implications to epidemiology.

Abstract:Shedding nephritis in voles with chronic tularemia is the probable source of frequent contamination of streams over wide areas of the northern hemisphere. However, voles inoculated parenterally with as few as one dex viable cells of Francisella tularensis palaearctica succumb uniformly to acute tularemia, whereas voles, beavers, and muskrats often thrive in waters contaminated with the organism. Nevertheless, water-borne epizootics do occur in these animals, and at these times streams are heavily contaminated. In attempts to determine the lethal dose, per os, of the bacteria to voles, it was found that there are stable, 'order-of-magnitude' differences in susceptibility of individual weaned voles reared under uniform conditions. Also, voles thus infected often became chronically infected with bacteriuria. It is proposed that the most susceptible voles are responsible for amplification of water contamination and thus for initiation of water-borne epizootics in hygrocolic mammals and for frequent mild infections in man.
New insights into tailoring physicochemical and techno-functional properties of plant proteins using conventional and emerging technologies

Abstract:In recent years, there is a huge growth in the popularity of plant-based proteins due to their health-promoting effects, being environment friendly, overcoming malnutrition and sustainability challenges. Cereals, pseudo cereals, oilseeds, legumes and nuts are the major sources of plant proteins and they exhibit several health-promoting effects like cholesterol-lowering, antimicrobial, antioxidant, antidiabetic and antitumor. In comparison to animal proteins, they have not been explored as key ingredients due to limitations in their functional properties like solubility, gelation, water holding capacity (WHC), emulsifying and foaming properties. These techno-functional properties play an important role in the development of plant-based food products such as beverages, bakery and meat analogues. Also, the digestibility of plant-based proteins is lower than animal proteins due to the presence of various antinutritional factors (ANFs). Utilizing novel and emerging processing technologies like high-pressure processing, microfluidization, electrospraying, pulsed electric field, cold plasma technology and ultrasounds for processing plant proteins can considerably enhance the quality, functionality and digestibility of protein isolates, concentrates and hydrolysates. Modifications brought by these techniques increase the application of plant proteins as an encapsulating agent, emulsifier, texturizer, film former and foam stabilizer. This review provides an overview of different processing techniques employed to improve their physicochemical, rheological, structural, nutritional and techno-functional properties and to increase their application as a functional ingredient.

Abstract:Dairy and plant-based proteins are widely utilized in various food applications. Several techniques have been employed to improve the techno-functional properties of these proteins. Among them, pulsed electric field (PEF) technology has recently attracted considerable attention as a green technology to enhance the functional properties of food proteins. In this review, we briefly explain the fundamentals of PEF devices, their components, and pulse generation and discuss the impacts of PEF treatment on the structure of dairy and plant proteins. In addition, we cover the PEF-induced changes in the techno-functional properties of proteins (including solubility, gelling, emulsifying, and foaming properties). In this work, we also discuss the main challenges and the possible future trends of PEF applications in the food proteins industry. PEF treatments at high strengths could change the structure of proteins. The PEF treatment conditions markedly affect the treatment results with respect to proteins' structure and techno-functional properties. Moreover, increasing the electric field strength could enhance the emulsifying properties of proteins and protein-polysaccharide complexes. However, more research and academia–industry collaboration are recommended to build highly effective PEF devices with controlled processing conditions.

Abstract:With the growth of the population, the global demand for sustainably produced protein is continuously increasing. However, the health issues and environmental impact of meat as a traditional, primary source of protein have long been controversial. Nowadays, fungal protein is considered to be a promising new source of protein due to its environmentally friendly, energy efficient and nutritious properties. This review provides an overview of superior nutritional properties of different sources of fungal proteins from yeast, mould and macrofungi, with a special focus on unique health-related bioactivities. Besides, the preparation technology and applications in food processing of fungal protein are summarized for the first time and concluded with an outlook on its future research directions. Different fungi-derived proteins have high protein content, along with complete and balanced amino acid composition. Some of the proteins and peptides in fungi, especially mushrooms, have great potential for improving human health and treating or preventing diseases. The different forms of fungal proteins obtained through green and economical fermentation processes, followed by stepwise fractionation and extraction processes, have a wide range of applications in food processing, such as meat analogues, enzyme preparation and food additives. For better exploiting fungal proteins value in the future, systematic strategy should be established among their characteristics, production, processing technologies, and specific application scenarios.

Abstract:<p class="a-plus-plus">The global community is in a quest for nutritional and environment-friendly resources as a part of their food habit. The ubiquitous trend of veganism tied with the increasing apprehensions towards animal welfare, negative impact on human health and the environment has escalated the demand for meat alternatives mainly plant-based meat analogues (PBMA). Protein-rich bioresources such as cereals, vegetables, and algae have been explored to mimic animal meat in a similar flavour, texture, sensory and aromatic properties. This review aims to summarize the recent advancements in functional food technology based on vegetal proteins, a comparative account of traditional and commercially available meat alternates. The literature search for the last 10 years shows the rise in research on plant ingredients to develop novel human foods. A brief account of various production methods and their processing effects to improve the structural and techno-functionality of PBMA is suggested for designing sustainable food. The different combinations of plant and animal proteins are discussed to enhance the nutritional aspect, organoleptic profile and shelf-life of available food products. The positive feedback resulted in booming food industries across the world, incorporating vegetal proteins. The global market trend introducing well-established and promising food brands is listed to discuss the prospects of PBMA.</p>

Abstract:Recent scientific evidence suggests that food proteins not only serve as nutrients, but can also modulate the body’s physiological functions. These physiological functions are primarily regulated by some peptides that are encrypted in the native protein sequences. These bioactive peptides can exert health beneficial properties and thus are considered as a lead compound for the development of nutraceuticals or functional foods. In the past few decades, a wide range of food-derived bioactive peptide sequences have been identified, with multiple health beneficial activities. However, the commercial application of these bioactive peptides has been delayed because of the absence of appropriate and scalable production methods, proper exploration of the mechanisms of action, high gastro-intestinal digestibility, variable absorption rate, and the lack of well-designed clinical trials to provide the substantial evidence for potential health claims. This review article discusses the current techniques, challenges of the current bioactive peptide production techniques, the oral use and gastrointestinal bioavailability of these food-derived bioactive peptides, and the overall regulatory environment.

Abstract:Bioactive peptides and protein hydrolysates are recently gaining importance. Being functionally active they are used as ingredients in products like fortified fermented dairy products, oil-based products, bakery, soy and beverages. Bioactive peptides and hydrolysates isolated from Acacia catechu (Pep-RTYM), Astragalus membranaceus (AM-1), Angelica sinensis (Asipeps), Trigonella graecum (EFPH) and Azadirachta indica (NSPH) showed anti-hypertensive, anti-ageing, anti-oxidative, anti-inflammatory, anti-diabetic, antihyperglycemic, and anti-cancerous activity respectively. Traditionally, such peptides were in use in medicines due to the presence of functional amino acid groups such as imidazole, sulfhydryl, hydroxyl, and carboxyl responsible for specific bioactivity. Different conventional (enzymatic hydrolysis, microbial fermentation and chemical hydrolysis) and non-conventional methods (HHP, MAE, Ohmic, PEF, and SWE) were used to extract them from different plant parts viz. stem, leaves, roots, flowers, fruit and seeds. Among all these methods enzymatic hydrolysis has emerged as the foremost choice for generating bioactive peptides due to its capacity to yield specific products while maintaining mild conditions, eliminating residual organic solvents, and toxic chemicals from the final peptide preparations. However, the industry is driven to explore other avenues due to the significant enzyme cost, modest yields, and the restricted availability of enzymes suitable for food-grade applications. The present paper is a review study that explores variations in extraction and purification techniques for identifying bioactive peptides and protein hydrolysates. It emphasizes their potential utility in food, pharmaceutical and industrial applications.
