Abstract:Background Conventional methods employed for protein extraction from different food materials have many drawbacks, including accelerated protein denaturation, production of huge wastewater causing environmental hazards, high consumption of chemicals, high production cost, and low extraction yield. These limitations have created a major bottleneck for food industries, particularly in the utilization of plant-based proteins, which have been reported to lose their techno-functional properties due to their extraction methods Scope and approach To circumvent these limitations, innovative and green technologies such as enzyme-assisted extraction, deep eutectic solvent (DES) extraction, reverse micelles extraction, microwave-assisted extraction, ultrasonic-assisted extraction, and subcritical water extraction have emerged. These technologies have advantages over the conventional methods in terms of environmental safety, extraction efficacy, and improved techno-functional properties. However, the commercial adaption of these innovative methods is still in its infancy. Therefore, understanding the mechanism of these extraction methods is crucial for their exploration and industrial scale-up. Key findings and conclusions This review provides an updated insight on the conventional and novel protein extraction methods and their challenges in the food industry. The advantage of these novel methods, particularly on the techno-functional properties of plant-based protein and their efficacy in developed value-added protein ingredients, are extensively discussed. Furthermore, the mode of action for the new and eco-friendly protein extraction methods is extensively discussed. Furthermore, these methods' challenges and future perspectives are also reviewed.

Abstract:Plants have the potential to create chemical molecules that operate as a defense mechanism against pests, bacteria, and other animals. When consumed by humans or other animals, these chemical substances can have a negative effect on the body. There are a number of antinutritional factors such as saponins, polyphenols, phytic acids, lathyrogens, alpha amylase inhibitors, lectins are found in plant-based diet particularly in different cereals and pulses consumed by Indian population in their day-today life. Anti-nutrients are one of the main factors that lower the bioavailability of nutrients. Micronutrient deficiency and mineral deficiencies can be caused by these compounds. To minimize the levels of these anti-nutrient elements, a variety of traditional approaches and technology can be applied. Fermentation, germination, milling, autoclaving, soaking, and other processing procedures and technologies are used to lower anti-nutrient content in foods. It is feasible to minimize the amount of antinutrients in foods by adopting a variety of approaches alone or in combination. The toxic and anti-nutrient properties of these chemicals in their natural state are of concern but there are also some beneficial effects reported about these compounds on human body at low concentrations. Therefore, this review highlights the different antinutritional factors found in Indian crops and their negative and positive impacts on health along with various approaches and technologies applied for reduction of these compounds from food.

Abstract:Summary Proteins from animal sources have for many centuries been used as the conventional food proteins in the food industry to produce a variety of food products. This is mainly attributed to their functional properties that range from foaming ability and stability to emulsification and gelation. However, animal husbandry has a greater impact on the environment compared to crop production. Thus, research on the potential use of plant‐based proteins which could be more sustainable, cheaper, and environmentally friendly has continued to be the focus of many academics and the food industry. Even though studies have been carried out to investigate the functional properties of plant‐based protein sources, there is still a need to understand the challenges that exist in the extraction and the functional characteristics of proteins from plant sources which could be used as a more feasible exchange for animal‐based proteins. Therefore, this review aims to contribute to the existing knowledge on the extraction, characterisation, and functional properties of plant‐based proteins. To this end, relevant literature was searched on several databases such as EBSCO HOST and Science Direct. Google Scholar was also used as a complementary search engine. Research that has addressed the extraction and functional characterisation of proteins from plant sources was critically evaluated and the findings are discussed herein. Additionally, the pinch points that exist in the use of plant‐based proteins as alternatives to animal proteins in food processing are highlighted in this review.

Abstract:The growing plant protein market has encouraged the use of various emerging and novel techniques for protein extraction, which results in a high-quality protein. The extracted protein can aid in developing plant-based meat analogues with meat-like texture and sensory attributes. Improvement in plant protein's functional and nutritional properties could further augment its market. The present review focuses on the potential of power ultrasound to enhance the application of plant protein. The review highlights the ultrasound-assisted extraction (UAE); and ultrasound treatment of proteins and their effect on different properties such as solubility, emulsification, rheological changes, surface hydrophobicity, and thermal stability. The secondary structure of the proteins modifies due to cavitation, which results in enhanced techno-functional properties of the proteins. In addition, the review discusses how ultrasonication can reduce the allergenicity and antinutritional factors present in the plant-sourced proteins.

Abstract:The by-products generated from the processing of fruits and vegetables (F&V) largely are underutilized and discarded as organic waste. These organic wastes that include seeds, pulp, skin, rinds, etc., are potential sources of bioactive compounds that have health imparting benefits. The recovery of bioactive compounds from agro-waste by recycling them to generate functional food products is of increasing interest. However, the sensitivity of these compounds to external factors restricts their utility and bioavailability. In this regard, the current review analyses various emerging technologies for the extraction of bioactives from organic wastes. The review mainly aims to discuss the basic principle of extraction for extraction techniques viz. supercritical fluid extraction, subcritical water extraction, ultrasonic-assisted extraction, microwave-assisted extraction, and pulsed electric field extraction. It provides insights into the strengths of microencapsulation techniques adopted for protecting sensitive compounds. Additionally, it outlines the possible functional food products that could be developed by utilizing components of agricultural by-products. The valorization of wastes can be an effective driver for accomplishing food security goals.

Abstract:Even though plant proteins are more plentiful and affordable than animal proteins in comparison, direct usage of plant-based proteins (PBPs) is still limited because PBPs are fed to animals as feed to produce animal-based proteins. Thus, this work has comprehensively reviewed the effects of various factors such as pH, temperature, pressure, and ionic strength on PBP properties, as well as describes the protein interactions, and extraction methods to know the optimal conditions for preparing PBP-based products with high functional properties and health benefits. According to the cited studies in the current work, the environmental factors, particularly pH and ionic strength significantly affected on physicochemical and functional properties of PBPs, especially solubility was 76.0% to 83.9% at pH = 2, while at pH = 5.0 reduced from 5.3% to 9.6%, emulsifying ability was the lowest at pH = 5.8 and the highest at pH 8.0, and foaming capacity was lowest at pH 5.0 and the highest at pH = 7.0. Electrostatic interactions are the main way for protein interactions, which can be used to create protein/polysaccharide complexes for food industrial purposes. The extraction yield of proteins can be reached up to 86-95% with high functional properties using sustainable and efficient routes, including enzymatic, ultrasound-, microwave-, pulsed electric field-, and high-pressure-assisted extraction. Nondairy alternative products, especially yogurt, 3D food printing and meat analogs, synthesis of nanoparticles, and bioplastics and packaging films are the best available PBPs-based products. Moreover, PBPs particularly those that contain pigments and their products showed good bioactivities, especially antioxidants, antidiabetic, and antimicrobial. [Graphics] .

Abstract:The recent trend in consumption of plant-based protein over animal protein opens up a new avenue for sustainable agriculture practice, less environmental impact and greenhouse gas emission. The modification of plant-based proteins by novel non-thermal technologies includes the structural transformation followed by the modulation of their functional properties that are exploited to develop a protein ingredient system for application in food formulation. This review explores the impact of non-thermal process technologies on structural modification of plant proteins followed by improvement in protein's function in food formulation. Novel concepts articulating the impact of non-thermal technologies on structural and functional modification of plant proteins affecting it's digestibility and bioavailability are addressed. Limitations and prospects of applying non-thermal technologies in developing an alternative plant-based protein food system are also summarized. Non-thermal processes are considered as the emerging technologies that results in conformational changes in secondary, tertiary and quaternary structure of plant proteins which helps in modification of functional properties without jeopardizing the organoleptic properties and bioactivity of the protein. Abstract:The present-day consumer is not only conscious of the relationship between food consumption and positive health, but also keen on environmental sustainability. Thus, the demand for plant-based proteins, which are associated with nutrition and environmental sustainability. However, the plant-based protein industry still demands urgent innovation due to the low yield and long extraction time linked with traditional extraction methods. Although ultrasound is an eco-innovative technique, there exist limited data regarding its impact with plant-based protein. In this paper, the scientific principles of ultrasonication with regards to its application in plant-based protein research were reviewed. After comparing the cavitational and shearing impacts of different ultrasonic parameters, the paper further reviewed its effects on extracted protein characteristics and techno-functional properties. Additionally, current technological challenges and future perspectives of ultrasonication for the plant-based protein industry were also discussed. In summary, this review does not only present the novelty and environmental sustainability of ultrasound as a plant-based protein assisted-extraction method, but also highlights on the correlation between protein source, structure and subsequent functional properties which are important crucial factors for maximum application of ultrasound in the growing plant-based protein market.

Abstract:This study addresses the need for effective protein extraction and characterization to unlock the potential of underutilized plant resources like Brosimum alicastrum Swartz nuts, aiming to enhance their value as functional ingredients in food applications. Extraction methods, including pH modulation, ultrasound-assisted extraction, and enzymatic hydrolysis, are employed to enhance technofunctional and bioactive properties. The protein extracts are evaluated for solubility, emulsifying capacity, foaming properties, and water/oil-holding capacities to assess their technofunctional potential. Additionally, the bioactive properties, such as antioxidant and anti-inflammatory activities, are analyzed to explore potential health benefits. The results demonstrate that integrated extraction techniques significantly improve the yield and quality of Brosimum alicastrum Swartz nut proteins. Enzymatic hydrolysis, in particular, produces hydrolysates with superior bioactive properties. These findings highlight the potential of Brosimum alicastrum Swartz proteins as valuable ingredients for the food and pharmaceutical industries, promoting the utilization of underexploited plant resources for sustainable and health-promoting applications.

Abstract:In recent years, there is a huge growth in the popularity of plant-based proteins due to their health-promoting effects, being environment friendly, overcoming malnutrition and sustainability challenges. Cereals, pseudo cereals, oilseeds, legumes and nuts are the major sources of plant proteins and they exhibit several health-promoting effects like cholesterol-lowering, antimicrobial, antioxidant, antidiabetic and antitumor. In comparison to animal proteins, they have not been explored as key ingredients due to limitations in their functional properties like solubility, gelation, water holding capacity (WHC), emulsifying and foaming properties. These techno-functional properties play an important role in the development of plant-based food products such as beverages, bakery and meat analogues. Also, the digestibility of plant-based proteins is lower than animal proteins due to the presence of various antinutritional factors (ANFs). Utilizing novel and emerging processing technologies like high-pressure processing, microfluidization, electrospraying, pulsed electric field, cold plasma technology and ultrasounds for processing plant proteins can considerably enhance the quality, functionality and digestibility of protein isolates, concentrates and hydrolysates. Modifications brought by these techniques increase the application of plant proteins as an encapsulating agent, emulsifier, texturizer, film former and foam stabilizer. This review provides an overview of different processing techniques employed to improve their physicochemical, rheological, structural, nutritional and techno-functional properties and to increase their application as a functional ingredient.

Abstract:The world's growing population and evolving food habits have created a need for alternative plant protein sources, with pulses playing a crucial role as healthy staple foods. Dry beans are high-protein pulses rich in essential amino acids like lysine and bioactive peptides. They have gathered attention for their nutritional quality and potential health benefits concerning metabolic syndrome. This review highlights dry bean proteins' nutritional quality, health benefits, and limitations, focusing on recent eco-friendly emerging technologies for their obtaining and functionalization. Antinutritional factors (ANFs) in bean proteins can affect their in vitro protein digestibility (IVPD), and lectins have been identified as potential allergens. Recently, eco-friendly emerging technologies such as ultrasound, microwaves, subcritical fluids, high-hydrostatic pressure, enzyme technology, and dry fractionation methods have been explored for extracting and functionalizing dry bean proteins. These technologies have shown promise in reducing ANFs, improving IVPD, and modifying allergen epitopes. Additionally, they enhance the techno-functional properties of bean proteins, making them more soluble, emulsifying, foaming, and gel-forming, with enhanced water and oil-holding capacities. By utilizing emerging innovative technologies, protein recovery from dry beans and the development of protein isolates can meet the demand for alternative protein sources while being eco-friendly, safe, and efficient.

Abstract:Plant-based protein products, represented by "plant meat", are gaining more and more popularity as an alternative to animal proteins. In the present review, we aimed to update the current status of research and industrial growth of plant-based protein products, including plant-based meat, plant-based eggs, plant-based dairy products, and plant-based protein emulsion foods. Moreover, the common processing technology of plant-based protein products and its principles, as well as the emerging strategies, are given equal importance. The knowledge gap between the use of plant proteins and animal proteins is also described, such as poor functional properties, insufficient texture, low protein biomass, allergens, and off-flavors, etc. Furthermore, the nutritional and health benefits of plant-based protein products are highlighted. Lately, researchers are committed to exploring novel plant protein resources and high-quality proteins with enhanced properties through the latest scientific and technological interventions, including physical, chemical, enzyme, fermentation, germination, and protein interaction technology.

Abstract:Plant-based proteins have recently attracted particular interest owing to their sustainable origins, economical costs and health benefits compared to animal-based counterparts. However, most of them have limited applications due to their inferior functionality, which is the consequence of poor-aqueous solubility, complexity and sensitivity to environmental stress conditions such as pH, salt and temperature. Additionally, plant proteins are often embedded in hemicellulose, lignin and other poorly digestible polysaccharides, which further reduce their bioavailability. Therefore, the modulation of plant proteins to improve their technological and industrial applications, and make them more accessible in general, is highly sought after. The modification of plant proteins by altering their physicochemical properties provides the possibility to improve and diversify their techno-functionality and biological activities as well as addressing their limitations. The selection of protein modification method should be done carefully from the final application view especially in food products since it can influence the protein functional, nutritional and organoleptic properties. Therefore, discussing different modification methods with their advantages and disadvantages is particularly timely. This review highlights and discusses the modification methods for plant proteins in order to make their applications in foods more feasible by improving their flavor, nutrition and techno-functional attributes, which will open up new opportunities within different plant-based food products.

Abstract:To investigate the effect of L-neutral amino acids on tissue levels of methyl mercury in the adult animal, rats were infused into the external jugular vein with solutions containing a) 0.05 mM 203Hg-MeHgCl and saline, b) 0.05 mM 203Hg-MgHgCl-0.1 mM L-cysteine, c) 0.05 mM 203Hg-MeHgCl-0.1 mM L-cysteine-0.1 mM L-cysteine-0.1 mM L-methionine, d) 0.05 mM 203Hg-MeHgCl-0.1 mM L-leucine, or e) 0.05 mM 203Hg-MeHgCl-0.1 mM L-cysteine-0.1 mM L-leucine, Groups of animals were sacrificed at 3 min. 7 hr, and 96 hr. Brain, kidney, and liver 203Hg radioactivity was measured by means of gamma-scintillation spectrometry. Brain 203Hg concentrations L-cysteine treated animals were significantly higher compared with saline treated animals (P less than 0.05) at 3 min., 7 hr and 96 hr. The coinjection or coinfusion of methyl mercury with L-cysteine and L-methionine abolished the L-cysteine-mediated brain 203Hg uptake (P less than 0.05), at each sacrifice time. Kidney and liver 203Hg concentrations were not significantly different in any of the treatment groups compared with controls, irrespective of the sacrifice time. Furthermore, the percentage of diffusible 203Hg (non-protein bound) at each sacrifice time was not statistically different irrespective of the treatment assigned. These results suggest that methyl mercury L-cysteine conjugates in the plasma may share a common transport step with the L-neutral amino acid carrier transport system and indicate the presence in brain capillaries of a transport system capable of selectively mediating methyl mercury uptake across the capillary endothelial cell membrane.

Abstract:Plant-based protein ingredients are an emerging solution to the environmental and health issues associated with animal-based proteins. Pulses have become a promising source of these plant-based ingredients. In order to produce functional proteins from pulse grains, extensive processing must be conducted to extract their proteins. These processing steps have consequential effects on the composition and structure of the resulting proteins which may modify their functional properties. This study reviews the most prominent options for each unit operation of pulse protein processing such as extraction, isolation, and drying. It also emphasizes the benefits and drawbacks of such methods and their effects on the pulse protein functionality. Furthermore, enzymatic hydrolysis is discussed as an optional processing step that is thought to counteract loss of functionality associated with pulse protein isolation. However, review of enzymatic hydrolysis literature reveals methodological issues in which insoluble and nonfunctional fractions of pulse protein hydrolysates are removed before analysis. This literature may draw into question the validity of the conventional wisdom that enzymatic hydrolysis is always beneficial to protein functionality.

Abstract:Abstract Purpose of Review With the increasing global demand for protein, there is a critical need to make nutritious and cost-effective protein from alternative sources widely accessible. Dry fractionation emerges as a promising technology for producing sustainable, protein-rich raw materials from plants such as pulses. This paper offers an overview of recent advancements in the extrusion of dry-fractionated plant proteins (DFPPs) for applications in meat analogues. Recent Findings Fibrous meat analogues can be produced from plant-based proteins through both high- and low-moisture extrusion processes. Dry-fractionated pulse proteins, which are products with high protein content (exceeding 70%), can be utilised either independently or blended with protein isolates or other ingredients. However, it is important to note that dry-fractionated protein can have adverse effects on the colour, sensory characteristics, and textural properties of the extruded products. Consequently, adjustments in extruder parameters are necessary to create fibrous materials incorporating DFPPs effectively. Summary This review article provides insights into technologies employed for protein extraction, options for enhancing their functional and sensory properties (including addressing beany tastes), and various techniques developed to achieve a fibrous and meat-like texture.

Abstract:This perspective article delves into the current state of the art pertaining to the nutritional aspects of plant-based meat and identifies future opportunities for improvement in this line of research. A comparative overview of the macro- and micronutrients of plant-based meat products vis-à-vis conventional animal meat is presented in the initial section. This article explains the differences in their nutritional profiles, highlighting the advantages (equivalent protein content, low saturated fat, source of dietary fiber) and challenges (incomplete amino acid profile, anti-nutrients, and low bioavailability of nutrients) of plant-based alternatives. Emphasis has been placed on the health challenges posed by anti-nutrients in plant-based meat and the role of phytase as a promising solution for mitigating these concerns. The latter sections of this article highlight the ability of phytase enzymes to cause a substantial reduction in phytic acid content and improve the absorption of iron and zinc from the food matrix while not affecting the textural attributes of end products. By deliberating on these critical factors, the article aims to contribute to the ongoing dialogue on the nutritional aspects of plant-based meat and the scientific strategies to mitigate the nutritional challenges currently associated with this category of alternative protein products.

Modifying the plant proteins techno-functionalities by novel physical processing technologies: a review

Abstract:Plant proteins have recently gained market demand and momentum due to their environmentally friendly origins and health advantages over their animal-derived counterparts. However, their lower techno-functionalities, digestibility, bioactivities, and anti-nutritional compounds have limited their application in foods. Increased demand for physically modified proteins with better techno-functionalities resulted in the application of different thermal and non-thermal treatments to modify plant proteins. Novel physical processing technologies (NPPT) considered 'emerging high-potential treatments for tomorrow' are required to alter protein functionality, enhance bioactive peptide formations, reduce anti-nutritional, reduce loss of nutrients, prevention of damage to heat liable proteins and clean label. NPPT can be promising substitutes for the lower energy-efficient and aggressive thermal treatments in plant protein modification. These facts captivated the interest of the scientific community in designing novel functional food systems. However, these improvements are not verifiable for all the plant proteins and depend immensely on the protein type and concentration, other environmental parameters (pH, ionic strength, temperature, and co-solutes), and NPPT conditions. This review addresses the most promising approaches of NPPT for the modification of techno-functionalities of plant proteins. New insights elaborating the effect of NPPTs on proteins' structural and functional behavior in relation to other food components are discussed. The combined application of NPPTs in the field of plant-based bioactive functionalities is also explored.

Abstract:Concerns about maintaining a balanced diet have raised the attention to protein bioavailability and nutrition of plant-based meat analogs (MAs). Understanding the digestibility of proteins in MAs and their influencing factors is essential for researchers, manufacturers, and consumers. Depending on the formulation and processing conditions, the protein aggregating status, protein-non-protein component interactions, and the morphology of fibrous structures vary significantly and directly affect protein digestibility. The current review first describes methods used to assess the protein digestibility of MAs, followed by a discussion on the effects of individual ingredients and processing conditions on protein digestibility and the underlying mechanisms. Future strategies to enhance protein digestion in MAs are also discussed. Data availability No data was used for the research described in the article.
